As the school gears up for its annual holiday show, founder Meghan Kelly, also known as “Miss Meghan,” took a moment to speak with us about the group’s history and the international dance competitions they have lined up for 2016. Meghan grew up with all four grandparents of Irish heritage. As a child, she wanted to be a ballerina, but her culturally-minded parents insisted on Irish dance lessons. It turned into a real passion for her and in college, Meghan started casually teaching at her local Irish dance hall before finally opening her own studio in Coventry in 2011. Meghan’s sister, Kathleen, also teaches dance at KSID, and their students range from as young as three years old to “grandparent-aged.” “Part of KSID’s motto has always been ‘Smile, Sparkle, Shine,’” shares Meghan. “We want kids and dancers to

have inner confidence in what they’re doing – to be unique, proud and to shine.” The classes are more performancedriven and less focused on competition; Meghan encourages all of her class participants to become part of a “true team of performers” and to gain confidence onstage, although certain students have begun to move into professional dance careers. Meghan notes that her very first dancer, now 16, recently traveled to Europe and competed in Germany, coming in first place out of the competition, and was accepted into a professional Irish dance camp. In addition to the end-of-season shows in June featuring all kids as performers, the top dancers participate in a special holiday show each year. This year the show, called Merry and Bright, will take place on December 19 at Rhode Island College’s Sapinsley Hall. “I’ve always loved Christmas and the holidays in general, so I have a lot of fun with it,” says Meghan. “It’s great to take

Irish dance and put it into a holiday context – many people don’t realize how well Irish dance can lend itself to holiday tunes. It’s about more than just St. Patrick’s Day or Irish pubs.” Kelly currently has many events lined up to celebrate KSID’s tenth year. Some students will be heading to Brighton, England in April 2016 to compete in the World Irish Dance Association (WIDA) European & World

Championships. Another competition that KSID will participate in are the WIDA All Irelands in Belfast, Northern Ireland in June, while others will head to Disney World to dance in the fall. Back to the Past The Newport Historical Society reopens its collection after 14 months and some major renovations, the Newport Historical Society has reopened the doors of its Resource Center. Built in 1905 and not significantly updated since an addition in 1915, the building was something of

an artifact itself. “We were both comprehensive and lean with the updates,” says Executive Director Ruth Taylor. “We replaced just about all of the systems.” That means all the creature comforts

we as citizens of the 21st century take for granted; new plumbing, new electricity, climate control, the works. Not to mention a new, glass enclosed entrance with an accessible ramp and elevator, and a gallery space which will see the first of many rotating exhibits going up before the end of the year. “People don’t realize that Newport had a very important role in early national and international history,” Ruth explains, “[and this] is the Smithsonian of Newport.” Pieces in the Society’s collection include documents, photos and artifacts – the usual suspects of any historical preservation society – but there are some truly unique pieces, like a locket containing locks of George and Martha Washington’s hair, and an electrical

generator similar to the one Benjamin Franklin had used. “His brother was here running the printing press,” Ruth informs, “So it’s not surprising that that generator was here as well.” In addition to the multimillion dollar improvements made to the Society’s headquarters, they’ve also received full endowment from the Helen D. Buchanan Trust for their prestigious Buchanan-Burnham internship program, considered to be among the best training programs for graduate students interested in museum studies and public history. Five Questions with Paul Pelletier, Strolling Violinist A Wakefield musician talks about 70 years of performing “En amour avec musique.” It means “in love with music,” and Paul Pelletier certainly is. Paul has played the violin for the past seven decades, and based on our conversation, he’s just as in love with the soothing sounds of this string instrument now as he was when he started playing at the age of 11. Glimpse into Paul’s “musical, emotional journey” as a strolling violinist. Why the violin? Just a love of the instrument – I couldn’t wait to get my hands on the violin and it has remained with me through the years. My father had [also] played the violin. He played folk music in Canada, and would make his violins out of cigar boxes. When I first got started, he hadn’t played in 35 years, but he could still tune my violin. Do you have a favorite piece to play? What appeals to the public is my favorite. Classical, French, German, Irish, show tunes. I customize my performances to the crowd. I can go back in repertoire almost 100 years – [it’s like] going back in time. It’s a lot of fun; I like to make a party out of it. I know you’re a musician, but can you sing, too? I performed at a fundraiser for Governor Thompson years ago with a group I had that played German music. The last tune we played was “Edelweiss” from The Sound of Music. For some reason, I grabbed the mic and sang. [At the end

of the night] we were outside and the governor was getting into his limousine, but he came back and looked at me and said, “you have a beautiful voice.” Now, wouldn’t he say something about the violin that I’d played all night? But that one lousy song he compliments. Can you believe the irony? What are some of your most memorable performances? I performed in the 1985 Pavarotti Concert – that’s my highlight. [But I also] played in a restaurant called Gundlach’s in Plainville, MA years ago. I walked in on a Friday night and I stayed there for 14 years. I’ve played for proposals, and for couples on Valentine’s Day, adding that little touch of romance in the background. forgive me for asking, but why haven’t I ever heard of a strolling violinist? This style, strolling musicians, is a lost art. Years ago, when there were no radios, how did people communicate with music? They saw it live. You don’t see it anymore; it’s an oddity. But once I get playing, I think people are awe-struck – they have an appreciation for it. T

here are famous rocks all over the world: Plymouth Rock, the Rock of Gibraltar and WWE’s wrestler-turned-actor Dwayne “The Rock” Johnson. What they have in common is that they are solid, are nice to look at and have great back-stories. South County has its own rock legend: The Narragansett rune stone. This seven-foot-long by five-foot-high stone has two rows of Runic letters on it, and it is unclear where the markings came from. Traditionally, a rune stone is a large stone marked with Runic symbols, typically of Scandinavian origin. The Narragansett rune stone’s widely accepted story starts with a quahogger discovering it off of Pojac Point in December of 1984. Many came to the conclusion that the inscriptions were of Nordic origin. Nevertheless, wherever it came from and whoever carved it is still up for debate. After going missing in the summer of 2012 when an irate property owner sunk it somewhere in Narragansett Bay to ward off curious rune stone visitors, it was recovered in the summer of 2013, stored at the University of Rhode Island’s Narragansett Bay Campus, and finally found a permanent home in

Wickford’s Old Library Park this past October. “The Old Library Park was chosen because it is a very secure location, which is attractive and adjacent to convenient parking,” says Wickford Town Historian G. Tim Cranston who helps out town elected officials and staff with history questions. He also helps any town residents or visitors with any questions that they might have. “Wickford is one of the state’s premier historic locations and is a natural choice for the stone’s new home. The rune stone is attractive to people because of the mystery surrounding it and all the incredible ‘what if’ possibilities that it possesses.” Although the rune stone was first discovered in the tidal zone in 1984, aerial photographs show that it was once on land. A 2012 report by the Coastal Resources Management Council shows that in 1939 the stone was upland, most likely buried and subject to the effects of the elements like freezing and thawing. This means that the original location of the stone was not in the tidal zone. Since Pojac Point has taken significant storm damage over the years, by 1975 the surrounding land had eroded, and the stone became subject to tidal effect. Over the years, there have been

many attempts at translating the two lines of text on the stone, dating the stone and establishing who carved it. In 1986, Paul Chapman posits a translation for the suspected Norse carvings in the New England Antiquities Research Association (REARA) Journal to be roughly “(Beware), in this area are terrible bears.” According to him, this inscription would make sense, seeing as bears were historically in this area, and a threat to humans. In spring of 1991, Suzanne O. Carlson reconsiders the rune stone in her REARA Journal article, mentioning that O.G. Landsverk, author of Runic Records of the Norsemen in North America came to the conclusion that the “inscription appears to be a genuine Norse Runic carving. [However], I have been unable to find a hidden date in your inscription. It is my belief that it was carved by someone who tried to imitate similar runic inscriptions which do not have concealed dates.” Suzanne comes to the conclusion that there are pros, cons, unknowns and conclusive evidence for and against the authenticity of the stone. She also translates the carvings and comes up with the word Skraumligr, which means something akin to “in a screaming state

river,” or “screaming river.” In 2010, the mystery of the rune stone piqued the interest of an engineer by the name of Valdimar Samuelsonn. According to the research he’s done, he thinks there’s a strong possibility that some of the New England rune stones – yes there are more than one – have Icelandic origin. Suzanne’s translation of the Narragansett rune stone correlates with an Icelandic river named Skraumligr, which “comes down from a steep mountain valley into a narrow canyon.” In the springtime during snow melt or heavy rains, the water apparently gushes out of the canyon, which would make the translation of a screaming river accurate. This leads Vladimar to think that the scribe of the Narragansett rune stone could have come from the vicinity of the Skraumigr river in Iceland. A man by the name of Everett C. Brown Jr. even claimed that as a teenage boy he carved the rune stone in 1964. Everett’s family vacationed at Pojac Point, and he asserts that during the summer of 1964, and only during low tide, he used a sledgehammer and an awl or punch to carve Runic characters that he had read about in an encyclopedia into the stone. He also contends that he was trying to spell out the Viking word for “Indians” phonetically. A criminal investigation performed by the RI Department of Environmental Management’s Division of Law Enforcement produced an alternative story. Former residents of the area came forward to speak out against this claim, citing that they have seen the markings prior to the alleged carvings by Everett. “I’m interested in [the rune stone] because I do believe that Europeans came to the new world earlier than we generally think and this stone may be proof positive of that possibility,” says Tim. “If it is indeed a marker from Icelandic or Norse explorers, it really helps to rewrite history in some respects. Folks should come by and not only see the rune stone and decide for themselves what it might be, they should also check out historic Wickford. Lots

of people have spoken to me over the last few months about new and intriguing methods to date the stone’s carvings. So lets hope someone comes up with a way to clear up some of the mystery.” Imagine the possibility of Nordic explorers coming to North Kingstown long before anyone thought possible. Instead of Columbus Day, perhaps we’ll start celebrating a new discovery day. We’ll never know, however, until the Narragansett rune stone can be conclusively dated and a translation be given that multiple sources can agree upon. Back pay it forWard by donating your time, resourCes or dollars For those of us that are fortunate, our biggest gripes about the holiday season are the traffic, gift wrapping and what to buy that annoying co-worker you got stuck with in your office Secret Santa. But for many vulnerable Rhode Islanders, meeting basic needs are their number one concerns. From food to shelter, we have neighbors that need our help this season. Here’s how to make a difference.

shop for a Cause According to RI Kids Count, one in five kids in our state lives below the federal poverty line. That statistic, which is nearly 45,000 children, is absolutely staggering, but you can make a small difference by contributing to a holiday giving program. Child & Family, one of the state’s largest providers of housing and support for foster children, organizes an annual Adopt-A-Family program. Here’s how it works: you fill out an online form specifying how many children you will purchase gifts for. The recommended amount per child is $100$150, and the non-profit makes it clear that your gifts are the only gifts these children will receive on the holidays. Once you make your selection, you’ll receive some information about that child, like their name, age and clothing size. You’ll also get their holiday wish list, which makes it quite easy to shop for. If you can’t afford this on your own, get creative and make this a family-wide tradition, or pull together a few co-workers who can all chip in. Gifts get wrapped and

dropped off just in time to make a child light up on Christmas Day. What feels better than that? Everybody can get behind helping a young child with clothes or toys – or even becoming a foster parent – but older children often get forgotten about in the charitable mix. Adolescents at risk already have the odds stacked against them, and this also rings true during the holidays. That’s why Foster Forward has a teenage specific Holiday Gift Campaign. The non-profit provides all types of support and programming to foster parents and children in DCYF care. Much like other adopt-a-family programs, donors will receive a teen’s name, interests and gift requests. The non-profit event, which was started by three Pawtucket-based business owners as a way to give back to Rhode Islanders in need, serves hot, healthy meals to over 2,000 homeless and at-risk individuals, many of them children. Coats, gloves, toys and other in-demand items will also be distributed this day, along with some much needed holiday cheer. Volunteers are needed for everything from greeting and seating attendees to serving them food. Through a statewide network of meal sites, food pantries and shelters, the Rhode Island Community Food Bank serves roughly 60,000 Rhode Islanders each month. That already dire statistic tends to surge even more during the winter, as wallets get tighter due to increasing heating costs. While food drives are abundant this time of year at sites like supermarkets and banks, you can donate and get a behind-the-scenes volunteer experience at the Food Bank’s Holiday Food Drive & Open House. When Pamela and Jim Balutis married in New York more than 30 years ago, the two honeymooned in the Ocean State. The experience made quite an impression. In more recent history, the two discussed where they would eventually like to retire, and they decided the beauty of South County, the friendliness of its people and its convenience to other charming cities and towns made it the perfect place to proverbially put up their feet and unwind. Five years ago, the couple discovered a spacious home on Wickford Point, a coveted coastal community on a peninsula flanked by Mill Creek and Fishing Cove. “When we saw the house for the first time, we were so taken by the ocean view and the uncharacteristic floor plan that we knew at that moment we had a jewel we could renovate to our liking,” says Pamela. The good news was they were not in a rush. Both Jim and Pamela

were living and working in Massachusetts and they also had a comfortable pied-aterre in New York. So they took inventory of what they needed to do and created a comprehensive renovation plan that they could tackle step by step with a trusted contractor before they would settle there in post-retirement permanency. “We had to gut all four and a half baths, gut the kitchen, put in new floors, hire an architect, add a porch, put on a dormer, paint the house, put on a new roof, put copper on the roof where needed, paint the inside, refurbish floors, all new sliders, put in a stone wall, [redo] the driveway with granite… and with that comes plumbers, electricians, tile, glass companies, and the list goes on,” says Pamela. The couple interviewed a trio of builders and was most impressed with David Tegan of Tegan & Company, a North Kingstown-based build and design firm, who has more than 15 years’ experience

in the field. “We did run into revocation problems but [he] was able to take those challenges we had and remedy them,” she says. “If it wasn’t for him, and his expertise and knowledge, as some of what we have is high tech, it never would have come out so great.” Over those five years, Jim and Pamela would drive down from Massachusetts to check in on the renovation’s progress and evaluate plans for the next steps. They knew their situation was a little different from many as they had a long term plan, and Tegan & Company would work on other projects in-between many of the Balutis home’s phases. Pamela says Dave’s easy going personality made the process an enjoyable one throughout. “He’s very conscientious,” she describes. “There were things that didn’t fit that he just made fit!” One of the things she’s referring to include, for example, is the over-sized glass panes for the upstairs

master bath shower enclosure (from Kent County Glass in Coventry) that required scaffolding to be put up along their bedroom’s balcony get to get the glass inside. When it came to the interior aesthetic, Pamela counted on family ties. “I’m fortunate enough to have a sister who is an interior decorator in Connecticut. She helped me with colors in the house and to update the bathroom, as well as helping to pick out materials for everything from custom bedspreads to curtains.” Pamela says hitting the road every weekend to see each project through become the norm, whether it was to Wickford Point to see the work first hand, to New York City to find unique pieces and materials (specifically to the well-known A & D Building, which is full of kitchen, bath and design showrooms that Pamela says is a place “where one can expand their views and ideas”), or to Warwick to find the perfect tile at the Kitchen &

Bath Gallery at Supply New England. “I was very particular about what I wanted,” concedes Pamela. That might be an understatement. Pamela says during this process, she was struck by lighting fixtures she saw in an editorial spread in Architectural Digest. The lights were placed over the kitchen sink and were exactly what she was looking for. She called the magazine but naturally, the staff would not release the contact information of the homeowner. But what they did offer Pamela, to reward her tenacity, was the contact information for the photographer who shot the spread. She phoned the photographer who needless to say shoots many homes for magazines, described the home and the lights and any other details she could muster hoping it would ring a bell. “By God, he did it. He located them, “she says. And though it took her a month to establish contact and get the information on the lights so

she could have the same ones in North Kingston, Pamela is quite pleased with how the space, and the entire home, has turned out. “We’re kind of homebodies anyway, so the house is important,” she explains. Though they adore the whole place, Pamela and Jim have a special affinity for the sunroom, or the “New York” room, as they casually call it, because many of the furnishings from their Big Apple apartment, which they have since bid adieu to, now reside there. “We are surrounded by windows, look out at the ocean, and the warmth of the sun coming in is so pleasing and relaxing.” Five years, it seems, has been well worth the wait.

A Mindfulness Revolution Revitalizing your life in All That Matters’ 40 day yoga and lifestyle program

I thought that the 40 Day Revolution was going to be about yoga. The intensive program, offered by yoga studio/whole living haven All That Matters, gives students 20 days to break old patterns about fitness, nutrition and mindfulness, and 20 to make better ones. During the 40 Days, the website says, students will “Work with specific tools to change old habits into new healthy choices for lasting change, learn how to meditate with weekly lessons and group sessions, understand the best way to practice yoga for your body and gain new insights into your eating patterns.” But mostly, I thought, it was about trying to squeeze as much time on the yoga mat as possible. The program, based on Baron Baptiste’s book 40 Days to Personal Revolution, was taught by ATM owner Joan Dwyer at their newly opened Providence studio. (The Wakefield location of All That Matters just marked its 20th anniversary. There’s also a new East Greenwich location.) As part of the 40 days of “living with intention,” as Joan called it, there were weekly support meetings where we gathered to talk about our progress and learn new techniques. The theme for the first meeting, and the first week of the program, was Intelligence: being aware and present, not just in our lives, but in our “inner worlds,” and using the innate intelligence around us to guide our yoga practice. It sounds intimidating, but it wasn’t. We talked about little lifestyle changes that work towards a larger goal. As the meeting wound down, Joan passed out circles of paper to everyone. “Write your intention for this program on here,” she said. “Whatever you want to get out of this.” I looked down at my paper, and thinking about all of the changes I had been considering in my life, and all of the doubt that came with them, scribbled “trust myself.” I’m a “say yes and figure it out later,” person. I have a very hard time letting

any opportunity pass. It leads to great experiences, but it’s a life of sensory overload. I’ve taken yoga classes over the last couple of years, and loved the quiet of the practice: no phones, no talking, nothing so much as even paying attention to the people around you. You’re there to stretch out your body, clear your mind and replenish your spirit. But even though I love it, I struggle to maintain a real yoga schedule amid all of life’s distractions. What appealed to me about the 40 Days was that I would have a good reason to get there, and the external motivation would help me become more disciplined about my yoga practice and my overall physical fitness. What terrified me about the 40 Days is that it was going to take up all of my time, that I would struggle to work all of the classes into my overbooked schedule. During the first week, I tried to schedule yoga around my other obligations, penciling in 7am classes. I quickly figured out that when you’re stretched to your limit already, getting two hours less sleep isn’t really an option. During the first meeting, Joan told us that three weekly yoga classes was a good goal, but we could do as many as we wanted. I only made it to yoga twice that week, but since Joan made it clear that nobody would be checking my attendance, I didn’t feel like I was failing. I just felt like I needed a better balance – because when I was on the mat, I wanted to find more time to be on the mat. In the second week, the theme was Breath, and focusing on the vitality that it brings to your body and mind. I cleared my evenings, and filled them up with yoga classes. My friends were more than happy to swap out cocktails for yoga, with the added bonus that they called me “inspiring” over Saturday morning brunch after our 10am Relax and Restore class. The theme for week three was Roots, “connecting to our sense of inner knowing and feeling more firmly rooted in who we truly are.” I was at

the studio for a class, and I happened to look at my intention on the intention tree. “Trust yourself,” it said. I had meant to write “trust myself,” but I was so mentally disconnected, so distracted by details and to-do lists that I wasn’t even present inside my own mind. I had been talking to myself like my soul was a separate entity from my person. Trust yourself, I had written. I was shocked to read it, but even more to feel how far I had come in reconnecting to my innermost self. Before this program I don’t even know if I would have realized that mental distance – meaning to say “myself” and saying “yourself” – is a problem. But after observing how much more connected I feel to myself, to my life, to my relationship, I knew this is something I want to keep working on. During week four, Flexibility, our meeting (and our written materials) put this query to us: “we found our innate intelligence, our roots, and we know how to breathe into a situation. How do we take this purified self to the streets?” Once I started to think about that question, I realized I was already taking my new self into the streets. I noticed changes within myself – how much quicker I could release stress and anxiety, how I was taking time to appreciate small moments of beauty all around me, how I felt more present in my own life. In the middle of week five, Union, I found myself on a short trip to New York, with the last minute problem of not having a place to stay. We were exhausted

and cold, sitting on a bench on the High Line, making phone call after phone call to Airbnb to get them to fix the situation. I hung up the phone and my boyfriend and I started walking again, when I spotted a little alcove. It turned out to be a sitting area over the street, with a sunset view all the way across lower Manhattan. We sat down, which is not something I take the time to do, even on a good day. “This is gorgeous,” I said to him. “This is what this whole program is about. When there’s all this stress and difficulty around you, there are still moments of beauty. This 40 days is teaching me to be mindful enough to see them.” We were still stranded in New York, but that moment was perfect. In the final week of the program, I found myself looking back on what I thought it was going to be about, and comparing it to what I had experienced. Yes, I did yoga. A lot of yoga. But the journey I took on my mat wasn’t leading to a better downward-facing dog, or nicer calf muscles (though I did get both of those). It was leading to a better mental place, one where I care about taking care of myself as much as I care about taking care of the people I love, or as much as I care about meeting my deadlines, or checking off items on the never-ending to-do list. The time on my yoga mat created space for stillness and reflection in my life, and I carry that with me all the time, not just in the studio. The end of the program wasn’t really the end: it was the groundwork for a fresh perspective on my life. December 2015 | SO RHODE ISLAND

A Taste of Mexico South of the border flavor in South County Mexican

the 2011 US Economic Census, there are no fewer than 38,000 Mexican restaurants in the United States – more than Chinese restaurants, seafood shacks or Italian bistros. Most people know that salsa has overtaken ketchup as America’s favorite condiment, but did you know that tortillas outsell hot dog buns or that tortilla chips trump potato chips? Rhode Island isn’t exactly part of the national trend, because we have more pizza places and hamburger spots than taco stands. In recent years, however, the trend is changing, and we’re not just talking about more Taco Bells and Chipotles. In Providence, El Rancho Grande and Tallulah’s Tacos have filled the Mexican void since Casa Lupita closed. Now, South County is joining the Mexican food bandwagon with Jalisco. Jalisco is located in the former Friendly’s Restaurant on State Street (aka Route 1) in the heart of Westerly’s shopping district. The outside shape of the restaurant still bares the bone structure of Friendly’s, but inside, the restaurant has been transformed. The bright lights of the former ice cream shop have given way to a restaurant that evokes the feeling of dining in

old Mexico. From the artwork on the walls to the soundtrack playing while I dined, I felt like I was back on one of my vacations south of the border. Instead of an ice cream counter, there’s a cozy seven-seat bar. After taking a walk down Watch Hill’s East Beach on one of the first cold autumn afternoons, I visited Jalisco for a late lunch. As any good Mexican restaurant would have, Jalisco has a wide variety of margaritas and cervezas (beers) to pair with your food. Margaritas come in small (12 oz.), jumbo (18 oz.) or by the pitcher (60 oz.), and you can choose frozen or on the rocks. In addition to traditional lime, you can also try one of their flavored margaritas – strawberry, raspberry, mango, peach, banana or piña colada. My crew skipped the margaritas and ordered a round of Modelo Especials ($4.25). Along with our cervezas, we enjoyed the complimentary basket of warm tortilla chips and salsa. The chips were very good, and the salsa was on the mild side, so it would be fine for everyone, even if they’re not spicy food mavens like myself. The menu at Jalisco is enormous and a bit overwhelming. We had to look over the menu for a long time

before placing our order. To make sure we tried a variety of appetizers, we started with the Appetizer Jalisco ($11). The platter came with two taquitos, two jalapeño poppers, a cheese quesadilla and a tostada. We enjoyed everything on the platter. The taquitos (sometimes known as flautas) were good, stuffed with shredded beef and slightly overdone on the ends. I loved

the jalapeño poppers and the cheese quesadilla because the cheese in each of them was exceptional. Rarely does a cheese quesadilla excite me, but because the cheese was so good, this quesadilla really stood out. The tostada was topped with seasoned ground beef and was very tasty. The whole platter was accompanied by guacamole, sour cream and pico de gallo. The entrée portion of the menu was broken down into House Specialties, Fajitas, Chicken Specialties, Steak Specialties, Seafood Specialties and a section where everything can be ordered a la carte. The Carnitas ($11.99) I ordered was a large portion of twice-cooked pork. The pork was well seasoned and not at all dry, as some carnitas can be. My mountain of pork was served with flour tortillas, guacamole, pico de gallo, shredded lettuce, shredded cheese and diced tomatoes. I had enough pork for three meals – dinner, lunch the next day and a topping for nachos later in the week. As if I didn’t already have enough food, my entrée was accompanied by a side dish of Mexican rice and refried beans. One friend ordered the Yolandas ($10.25), which consisted of three chicken enchiladas topped with cheese and enchilada sauce, lettuce, sour cream and tomatoes.

They were accompanied by Spanish rice and refried beans. It was a very large portion, and my friend loved the chicken. Two of my friends were in the mood for burritos ($3.75) and ordered them from the a la carte menu. The shredded chicken was better than the ground beef, but my friends were more than satisfied with their meals and commented for the price they weren’t expecting such a large burrito. Another friend also ordered from the la carte menu and chose the Steak Chimichanga. The ranchero sauce wasn’t spicy, and it was creamier than most ranchero sauces I’ve sampled and my friend found it to be quite delicious. Jalisco is definitely a spot where

families can feel comfortable. The atmosphere is casual, and they offer a $4.95 kids menu, which includes an entrée, side dish and drink. Best of all, if you go on Sunday, kids eat free (with the purchase of an adult meal). Just like the rest of America, I love Mexican food. I love it so much I’ve been on vacation to Mexico eight times. Jalisco reminds me a lot of my time in Mexico, minus the fact that you can drink the water in Westerly! So, when a Mexican food craving strikes, instead of booking a flight to Cancun, head to Jalisco. When they ask if you want another margarita, say “por que, no?” as they do in Mexico. Why not? You can have a fiesta of your own.

A Taste of Naples It’s all about the dough in the South County Commons A New Kind of Dinner Pairing

I don’t believe it’s

a stretch to say that we have an embarrassment of riches when it comes to Italian food in Rhode Island. Furthermore, we have as many styles of pizza as we do favorite beaches. There’s bakery pizza, stuffed pizza, thick crust, thin crust, grilled, wood-fired and coal-fired. Nevermind all the variations using pizza dough: calzones, breadsticks, garlic knots, dessert pizza. So when there’s a new restaurant that focuses on pizza, it’s got to be different and it’s got to be special. This is where Pasquale’s Pizzeria Napoletana comes in. Owner and chef Pasquale Illiano was born and raised in Naples and wanted to bring a taste of home to Rhode Island. Having lived in America for 20 years and spending the last 14 of them making NY-style pizza at Vetrano’s in Westerly, Pasquale decided it was time to return to his roots. So, on his 20th anniversary of living in America, he opened Pasquale’s Pizzeria Napoletana in South County Commons, and considers himself to be the culinary ambassador of Naples. “I wanted to bring something 100% Naples when it comes to pizza,” explains Pasquale. “When people travel to Naples, what you find there is what you will find at Pasquale’s.” Aside from a few secret ingredients that Pasquale will be taking with him to the grave, he shared some very basic, and very delicious staples: natural yeast for his

dough, Sicilian natural sea salt, organic tomatoes from the slopes of Mt. Vesuvius, buffalo mozzarella imported from Naples, pasta imported from Gragnano – a small village in the Naples region that has been making spaghetti for centuries – and Neapolitan salami, to name a few. And the dough, it must be discussed. “The Neapolitan crust is a soft, yet lightly chewy crust,” explains Pasquale. “It’s not crusty; it’s not meant to be crispy in any way, ever. The crust is very fluffy, airy and soft – not soggy. It’s a delicate pizza. Made only with flour that comes from Italy.” Not surprisingly, even the wood-fired oven was made in Naples and heats up to between 800 and 900 degrees, which translates to a very short cooking time. However, man cannot live on pizza alone. In addition to the Neapolitan pizza, think classic Italian dishes like fettuccine with cream of parmesan cheese, pistachio pesto and crispy pancetta. For dessert, try the Nutella pizza with a little bit of Kosher salt, powdered sugar and toasted hazelnuts. If you’ve never been to Naples, here’s your chance. It’s not a plane ride away or someplace you need to take a week’s vacation to arrive at – it’s in South County. Chocolate Dreams Confession: I am only a member of the Godiva Rewards Program to get a free piece of chocolate every month. If I were a better person, perhaps I would buy chocolate or learn how to make it myself. Until recently, I didn’t think I would do either. Then I came across Hallie A. Baker’s book Turtle Truffle Bark, a how-to recipe book specifically for making different types of chocolate. “If it’s the first time you’ve worked with chocolate, I really think starting simple is key,” Hallie explains. “Having said that, I’d go with [making] the straightforward, but super tasty, Pretzel Bark. Foraging is a word that has popped up a lot more recently within the food world. More hardcore than farm to fork, it has sent authenticity-obsessed chefs wandering fields and forests in search of your rather expensive dinner. Enter Ryan Bouchard and Emily Schmidt, a couple combining their passion for mushrooms, with their talents in photography and cooking, respectively. Currently known as Southern New England Mushroom Hunters, the pair are launching the Mushroom Hunting Foundation in the new year. This nonprofit will continue their current offerings of classes, guided walks and more, but also look to publish more printed work and video content. The foundation’s mission is to promote and teach safe mushroom hunting as well as other outdoor activities. How did you become interested in mushrooms and mushroom foraging? Ryan: We both love the outdoors. With mushrooms, there are many, many different kinds. Once you start paying attention to them, there are suddenly an endless variety of life forms you’ve never seen before. But once we actually cooked and ate some wild mushrooms, we were instantly hooked. Thanks to RI Mushroom Company, we’re all of a sudden seeing a lot more varieties of foraged and cultivated mushrooms at the farmer’s markets. Does it seem like mushrooms could be “a thing” for RI? Emily: Mushrooms are definitely gaining importance in RI’s food industry, and across the nation. The Ocean State is a great state for food and there are lots of great chefs and creative home cooks.

What are some resources for the new mushroom hunter? Emily: The internet can be useful, but it can also cause trouble. You never know if the person typing to you actually knows their mushrooms. We recommend taking a class with

us. We arrange private classes, which can be for a single person, a family or small group of friends, or for a large audience. We have several different classes: guided mushroom walks, cooking demonstrations and livingroom slideshow classes using our alllocal photography. What are your best finds in RI for mushrooms, and what are your favorites to eat? Ryan: We love finding some of the famous edibles, like Black Trumpets, Lion’s Mane and King Boletes. But we have gotten equal pleasure from the Bog Bolete, the Pine Spike, the Hedgehog Mushroom, the Beefsteak Polypore, the Jelly Tooth… there are so many unique varieties. Many have flavors bearing no resemblance to anything else on Earth. We also love the Sand Laccaria. In fact, we feel it should be the official mushroom of the Ocean State, because it grows right on the beach. It does require careful brushing to remove the sand, but it’s delicious, and it has beautiful purple gills. There’s a bit of a stereotype that floats around with mushroom foragers,

associating them with people looking for hallucinogenic varieties. Have you encountered this at all? Emily: There are actually a ton of different types of people who are into mushrooms for lots of reasons. Nature lovers, hikers, cooks, farmers, photographers… lots of people love to find mushrooms. Hippies are just one of the many demographics. Ryan: When you go to a big mushroom hunting event, like a foray or a seminar, it’s all about the science of learning about mushrooms – mycology. Good mushroom hunters stay up to date with the science, and doing that is actually fun because mushrooms are so fascinating to study. People who just want to get wasted find themselves out of place. We certainly can’t teach people the subtle science of mushroom identification if they’re seeing imaginary colors. After intently foraging, do you feel like you see mushrooms everywhere when you are just walking around? Ryan: Not exactly. But after a great day spent hiking and scanning with our eyes for one particular kind of mushroom, and finding it many times, we’ll both see visions of it when we close our eyes to sleep. Emily: We’ll start laughing because both of us keep seeing Black Trumpets, rising up out of the darkness.

Jigger’s Diner Jigger’s strives to make creative twists on old favorites, and to use the freshest ingredients, with the least amount of preservatives. For breakfast, try one of their takes on Eggs Benedict, like Country Ham Eggs Benedict with classic pit ham. Jigger’s Signature Three Egg Omelets come in variations like the Meat Lovers Supreme with sausage, bacon, ham and American cheese. Try a traditional breakfast sandwich, or the Triple Decker Monte Cristo. They also serve Belgian waffles, buttermilk pancakes, French toast, gingerbread pancakes and Johnny cakes with simple toppings (fresh fruit, chocolate syrup, maple

syrup) or outrageous ones (fire roasted Fuji apples, a scoop of ice cream, crushed Reese’s Peanut Butter cups). For lunch, you could choose the healthy route with an Apple Walnut and Chicken salad, or you could indulge in a fresh pressed burger, like the Buffalo Bleu. Grilled panini like the Georgia Turkey ’n Slaw (with Swiss, house coleslaw and Thousand Island) and the Garden Panini (spinach, broccoli, tomato, avocado and mozzarella) are great options, as are a variety of sandwiches like the Grilled Salmon and Avocado Wrap. Don’t leave without an ice cream float made with Yacht Club Soda and Eclipse syrup, or a classic Rhode Island Ice Cream Cabinet.

Equal parts artist, craftsman and picker, Kevin Travers evolves his cast of characters step by step

Mister Roboto Carpentry and sculpture collide in the creations of American Revolution Design Kevin Travers never intended to become an artist. It wasn’t his childhood dream – he never studied art in school or took any studio classes in sculpture. Yet somehow during the course of building a 25-year career in carpentry and remodeling while simultaneously raising a family, art found him, and now it plays a huge role in his life and goals for the future. Born in Pawtucket and raised in East Providence and Charlestown, Kevin studied carpentry at Chariho Tech in Wood River Junction in high school. Following school, he gave many years of hard work to a contractor based in Stonington, CT, only to lose his job when the 35-year-old business went belly up in the economic crash of 2008. After a couple of years with little success finding steady work, Kevin decided to branch out and start his own remodeling firm in Hope Valley about five years ago; he named it American Revolution Design. “It kind of just rolled off the tongue one day, and I went with it,” says Kevin.

As his business grew, Kevin found himself pulled towards something new in order to cultivate and apply skills in furniture renovation and design. It was his first step in a more creative direction, while still serving as a functional and easily marketable craft. One Easter, Kevin decided to make something fun for his daughter and nieces. He gathered found objects and shopped for needed parts to construct three “bunny bots” to give to the kids. Little did he know it would be the start of a whole new chapter in his life; his family had never seen anything like them, and Kevin’s wife immediately asked, “What else can you make?” “So I went and found out!” Kevin laughs. Using found objects and mostly recycled parts, Kevin began making dozens of his own unique toy characters. He brought some to a couple of art shows, where they were well received with several purchased. What started off as an accidental hobby is something that Kevin hopes to one day turn into a real business venture, and he is already

in the concept stages of a new website and thinking about marketing, branding, clothing, prints and animated storyline options. “I took a two-day class given by a Pixar animator at New England Tech to learn about character development and story writing. I’m just trying to make connections in the industry right now,” says Kevin. “I’m learning some of the software, how to reproduce my art through that format. I don’t know where it will take me, but I love doing it and the feedback has been great.” Kevin has taken a “slow and steady wins the race” approach to managing his career while cultivating his passions, and it’s certainly working. Almost entirely self-taught, he takes time each day to work on building his designs piece by piece, just like his sculptures. Many of his designs are one-ofa-kind and not for sale; he prefers to go through the copywriting and trademarking process first. He will happily do sculpture work on commission, but for now, he’s biding his time before spreading the word about his characters and is patient about selling them. Keep an eye out, though, because you might be hearing a lot more about Kevin and his characters in the near future.
