Pulled Lamb with Pomegranate Glaze Ingredients • 4 garlic cloves, chopped • 2 tsp ground cinnamon • 2 tsp ground cumin • 1 tbsp dried oregano • 1 lemon, quartered, pips removed • 1½ kg bone-in lamb shoulder joint
• 2 red onions, cut into wedges • 1L carton pomegranate juice • 2 tbsp clear honey • 250g natural yogurt • 100g tub pomegranate seeds, or seeds from 1 fresh pomegranate • Small handful mint leaves, chopped
Method 1. Put the garlic, cinnamon, cumin, oregano and lemon in a blender with 1 tsp salt and 2 tsp black pepper. Blend until smooth. Put the lamb in a large roasting tin and tip the marinade over the top. Massage all over the lamb and leave for 24 hrs in the fridge, or up to 2 days. 2. Remove lamb from the fridge 1 hr before cooking. Heat oven to 160C/140C fan/ gas 3. Scatter the onions around the lamb, tucking some underneath, then pour over the pomegranate juice. Cover the lamb with foil and cook for 4 hrs. 3. Remove the foil, carefully pour the meaty pomegranate juices from the tin into a large saucepan and add the honey. Increase oven to 220C/200C fan/gas 7, re-cover the lamb and continue cooking for 30 minutes. Meanwhile, bubble the cooking liquid over a high heat until reduced, thick and syrupy – this may take up to 30 minutes. 4. Pour the sticky pomegranate glaze over the lamb and onions and return to the oven for another 30 mins, uncovered, until the glaze is bubbling and just starting to char, and the lamb is really tender. Mix the yogurt, most of the pomegranate seeds and mint leaves in a small bowl. Shred the lamb at the table and serve with the sticky onions and the minty pomegranate yogurt. Scatter over the remaining pomegranate seeds.
“Any left overs of the pulled lamb can be transformed into a ragu to be served with pasta or polenta.” This is a very easy and forgiving recipe – timing is not crucial – and it gives you plenty of time to do other things while it is slowly cooking and sending beautiful aromas through your home. There are plenty of great accompaniments for the lamb – keep it simple with boiled potatoes tossed in a little bit of oil and mint and some simple green beans (or add some toasted almonds for some more texture).

Home Made Hot Cross Buns Ingredients • Melted butter, to grease • 490g (3 1/4 cups) Bread & Pizza Plain Flour • 170g (1 cup) sultanas • 2 tablespoons mixed peel • 2 tablespoons caster sugar • 1 teaspoon (7g/1 sachet) dried yeast • 1 teaspoon mixed spice • 1 teaspoon ground cinnamon • 1 teaspoon ground nutmeg • Large pinch of salt
• 250ml (1 cup) warm milk • 50g butter, melted • 1 egg, lightly whisked • Plain flour, to dust • Butter, to serve GLAZE • 70g (1/3 cup) caster sugar • 80ml (1/3 cup) cold water • 40g (1/4 cup) plain flour • 2 tablespoons cold water
Method 1. Brush a baking tray with melted butter. Combine the flour, sultanas, mixed peel, sugar, yeast, mixed spice, cinnamon and nutmeg in a large bowl. Stir in the salt. 2. Make a well in the centre. Add the milk, butter and egg. Use a wooden spoon to stir until just combined. Use your hands to bring the dough together in the bowl. 3. Turn onto a well-floured surface. Knead for 10-15 minutes or until smooth and elastic. Brush a large bowl with melted butter. Place dough in the bowl. Turn to coat. Cover with plastic wrap or a damp tea towel. Place in a warm, draught-free place to prove for 1 1/2 hours or until dough doubles in size. 4. Preheat oven to 200°C. Punch down the centre of the dough with your fist. Turn onto a lightly floured surface. Knead for 2-3 minutes or until dough is smooth and elastic and has returned to its original size. Divide into 12 equal portions. Shape into balls. Place, side-by-side, on the prepared tray. Place in a warm, draught-free place for 30 minutes or until dough has risen 1-2cm. 5. To make the cross paste, combine the flour and water in a bowl until a smooth paste forms. Transfer to a piping bag fitted with a 2mm plain nozzle. Pipe in a continuous line along the centre of each row of buns. Repeat in the opposite direction to make crosses. Bake for 20 minutes or until golden and the buns sound hollow when tapped on the base. 6. Meanwhile, to make the glaze, place sugar and water in a saucepan over medium heat. Cook, stirring, for 3 minutes or until sugar dissolves and mixture thickens slightly. 7. Brush the tops of the buns with the glaze. Serve hot with butter.
