We love a relaxed table surrounded by beautiful greenery - let your landscape do the talking. For the perfect Spring setting, keep your tableware simple and fresh. Set up outdoors, arrange some freshly picked flowers from the garden, and enjoy the fresh air and delicious food.

STYLIST’S TIP

• 1/2 cups coarsely chopped walnuts, for topping cake

• 1¼ cups powdered sugar

• 1 cup granulated sugar

• 2 teaspoons baking soda

• 225g cream cheese

2. Whisk flour, baking soda, salt, and cinnamon in a medium bowl until very well blended.

4. Add the dry ingredients in three parts, gently stirring until they disappear and the batter is smooth. Stir in the carrots, nuts, and raisins.

5. Add the cake batter to the prepared cake pan.

7. Minwhile, in a large bowl, beat the cream cheese with a handheld mixer on medium speed until creamy. Beat in the powdered sugar, a 1/4 cup at a time, until fluffy.

• 1 cup coarsely chopped walnuts

INGREDIENTS

8. Pour in the whipping cream. Beat on medium speed for three minutes, or until the frosting is whipped and creamy. Chill covered until ready to frost the cake.

• 1¼ cups canola or other vegetable oil

• 1/3 cup heavy cream

• 1/2 cup raisins

• 1 teaspoon vanilla extract

• 1 cup brown sugar

METHOD

9. When the cake is completely cool, frost the top and sides of the carrot cake with a butter knife or small spatula to swirl the frosting around. Decroate with a handful of nuts around the edge or finish with a handful on top.

Carrot and Walnut Cake

“This is our favourite recipe for carrot cake! It is 100% made from scratch, easy to make, versatile, and utterly delicious.” Recipe from Adam and Joanne Gallagher on inspired taste.

• 1½ teaspoons ground cinnamon

FOR CREAMY FROSTING

1. Position a rack in the middle of the oven. Grease a 9-inch round cake pan, line the bottom with parchment paper and then grease the top. Heat the oven to 175ºC.

6. Bake until the top of the cake is springy when touched and when a toothpick inserted into the center of the cake comes out clean, 35 to 45 minutes. Allow to cool.

3. In a separate bowl, whisk the oil, granulated sugar, brown sugar, and vanilla. Add the eggs, one at a time, whisking after each one.

• 1/2 teaspoon fine sea salt

• 2 cups all-purpose flour

• 3 cups grated peeled carrots, 5 to 6 medium carrots
