Jade’s Letter With Christmas on our doorstep, it seems 2022 has flown by and its already time to count the sleeps until trees are put up and the festivities begin. Christmas is by far my favourite time of year, but with this excitement a smooth fun Christmas season is only possible with planning. There are so many questions to answer before the preparation even starts. Who’s turn is it to host the family Christmas meal? Am I going to buy a freshly cut tree for that beautiful pine scent or pull out my faithful everlasting tree? Are we doing gifts for all the adults or Kris Kringle? What should be added to the Christmas playlist? The earlier all the questions have an answer, the earlier I can prepare. This year my biggest question is which of our beautiful Christmas themes will roll through the house. A splash of colour with Carnival for the kids, a fresh and breezy Tropez or the always classic Woodland?

Gingerbread Family Gingerbread is so delicious and will have your kitchen smelling like Christmas while baking. This recipe makes 16 large or 32 small gingerbread people. INGRED I EN TS

ME T H OD

• 125g unsalted butter, softened • ½ cup (90g) light brown sugar • ⅔ cup (230g) golden syrup • 2½ cups (375g) plain (all-purpose) flour, sifted • 1 tsp bicarbonate of (baking) soda, sifted • 2 tsp ground ginger • 1 tsp mixed spice

1. Place the butter and sugar in the bowl of an electric mixer and beat for 10–12 minutes or until pale and creamy. Scrape down the sides of the bowl, add the golden syrup, flour, bicarbonate of soda, ginger and mixed spice. Beat until a smooth dough forms. 2. Roll the dough out between 2 sheets of non-stick baking paper to 5mm thick. 3. Refrigerate for 30 minutes or until firm. 4. Preheat oven to 190°C. Line 2 baking trays with non-stick baking paper. Using a gingerbread-man-shaped cutter, cut shapes from the dough. Re-roll dough as necessary. Place on the trays and bake for 8–10 minutes or until golden. Allow to cool on the trays. 5. If decorating, wait until the gingerbread is totally cool. Use Royal Icing or there’s a cheat’s way – you can buy writing icing at the supermarket! They’re just as yummy without any decorations, so don’t stress. TIPS If the dough feels too soft at any stage, refrigerate it for a few minutes before continuing. Freeze any leftover dough, wrapped in plastic wrap, for up to 2 months.

Decorate Your Christmas Tree 1. Start with the lights. Add dimension by working the string of lights under and over each branch, pushing some of the lights closer to the trunk. Start from the bottom and work your way to the top of the tree. 2. Layout and group your decorations by colour and size. Start by placing all of one colour onto your tree, and then move on to the next. This will allow you to spread your decorations out for a more uniform look. 3. Once the tree is complete, continue your festive theme onto your presents, with coordinated wrapping paper, ribbon, and gift tags. For bulky or unusually shaped gifts, try using stockings and sacks.
