Jade’s Letter After a rollercoaster couple of years, this may just be the Christmas to really celebrate. I’m planning already…the tree, decorations, ordering presents (and hiding them from the children), a playlist for Christmas day, and of course the food. I always make lists and plan – it takes away the stress and lets me enjoy the day and celebrate being together which is really what it is all about this year. I have grown up with family traditions and they will always part of my Christmas, but we also make new traditions with the children – something for them to take forward as part of their Christmas memories. Family, traditions, enjoying precious moments, and making memories – it’s what this Christmas is all about. ST YLI ST ’S TI P S A forest of mixed trees is an easy and effective centre piece. Start with the tallest trees spaced along the table, then add the others in order of height, mixing colours, and textures. Position taller trees so they don’t obscure guests from one another – conversation must flow for a successful celebration.

This Christmas deserves to be special. Traditionally trees can be put up at the beginning of Advent, (the fourth Sunday before Christmas). This year, that’s Sunday 28 November 2021, so for all the early birds, it’s time to get ready. Choose a theme that you can carry from the tree to the table, the front door, and even the wrapping paper – it will give your home a cohesive look. You can see here we’ve echoed the colours of the baubles with our beautiful Christmas wrapping paper. Always add the lights to the tree first, it’s more difficult to do this after you’ve added baubles and decorations. Sort the baubles into colours – add one colour at a time to get a consistent look. Once you’ve finished one colour – move on to the next until you’ve added all your decorations.

Outdoor entertaining is a relaxed and easy way to celebrate any meal over the holidays. Keep it simple – add some pretty baubles and our famous bonbons and your table is set. Our range of Christmas paper placemats and serviettes will make cleaning up child’s play.

Twinkle twinkle little star There is nothing like candlelight for setting the mood for a celebration. This works beautifully with a limited colour palette, glass candlesticks, elegant glassware, and some clear galaxy baubles, all chosen to reflect the light and add some sparkle to the table.

STY LI ST ’S TI P S I’m usually a minimalist when it comes to decorating, but at Christmas my tip is “nothing succeeds like excess”. We’ve kept true to the classic theme but have used multiples of the same items in green and white, so although there’s a lot here - it doesn’t look cluttered.

A beautiful table setting. It’s easy to set a beautiful table with a little bit of planning. Select a colour scheme for the crockery, napery, and decorations. Keep the main colours to a minimum – we’ve used primarily green and white with some touches of red and some brushy trees in metallic colours. The vine lights used down the centre of the table add a little touch of magic. It’s important to have different layers, heights and textures and to add some finishing touches – we’ve used our gift cards as place cards.

Vivacious and vibrant - nothing says ‘Christmas’ like a classic red and green theme and when it’s paired with fresh, white tableware this traditional colour scheme is sure to impress.

There’s nothing nicer than a fresh, simple meal over the holiday season. A beautiful marmalade baked ham, a fresh tomato, mozzarella and basil salad with some condiments, and fresh bread is the perfect low-key lunch. For those with a sweet tooth a decadent hazelnut and chocolate meringue torte is the perfect end to the meal before a well-deserved afternoon nap.

Marmalade Glazed Ham This easy to cook, spectacular looking glazed ham is perfect for any day over the holiday season. Serve with a couple of different mustards, some cornichons, a salad, and fresh bread for an easy lunch or dinner. Toasted ham and cheese sandwiches made from leftovers will be a winner too. • 1 cup (340g) orange marmalade • ½ cup (125ml) orange juice

1. Preheat oven to 200°C. Place the marmalade, honey and orange juice in a saucepan over high heat and whisk to combine. Bring to the boil and cook for 5–7 minutes or until thickened slightly. Set aside to cool slightly.

• 5–6 kg ham leg, skin removed and trimmed*

2. Using a small, sharp knife, score the ham fat in a diamond pattern and cover the hock with aluminium foil.

• Cloves, for studding

3. Place the ham on a lightly greased wire rack in a baking dish lined with non-stick baking paper. Push a clove into each diamond and brush with the glaze. Cook for 40–50 minutes, brushing with the glaze every 10 minutes, or until the ham is golden and caramelised.

• ¼ cup (90g) honey

* To remove the skin, use a sharp knife to score the skin around the hock, then use your fingers to gently remove the skin from the ham. Trim any excess fat.

Hazelnut Meringue Cake A crowd-pleasing meringue cake topped with seasonal berries is a delightful finish to the meal. Make it your own – whipped vanilla cream with some crushed raspberries between layers works just as well. I NGR ED I EN TS

For the meringue

1. For the meringue, heat the oven to 180°C/fan160°C/gas 4. Draw an 18cm circle on each of 4 sheets of baking paper, then use to line four lightly oiled baking sheets.

• Vegetable oil for greasing • 150g hazelnuts, toasted • 385g caster sugar • 7 large free-range egg whites • ½ tsp white wine vinegar For the PX chocolate cream • 200g dark chocolate (70% cocoa solids), broken into small pieces • 60ml pedro ximénez sherry or a splash of almond extract • 100g soft light brown sugar • 800ml double cream

2. Grind the nuts in a food processor with 1 tbsp of caster sugar until finely ground – don’t overgrind or it will become oily. 3. Put egg whites in a spotlessly clean mixing bowl and whisk with an electric hand mixer to stiff peaks (they shouldn’t droop when the beaters are removed). Add the remaining caster sugar to the whites a tbsp at a time, whisking back to stiff peaks each time. Once you’ve added half the sugar, start adding in larger quantities, whisking back to stiff peaks each time. Once all the sugar has been added, whisk in the vinegar to form stiff peaks, then fold through the hazelnuts with a metal spoon or balloon whisk. 4. Spoon or pipe the meringues in circles onto the baking paper to give three flat circles and the fourth circle swirled a bit thicker (this will form the top layer). Bake for 40 minutes until the edges are crisp and set and the insides are still gooey. 5. Take out to cool for 20 minutes on the trays, then transfer carefully to wire racks or boards to cool fully. 6. For the PX chocolate cream, put the chocolate, sherry and brown sugar in a large, heatproof bowl set over (but not touching) a pan of barely simmering water. Melt, stirring very occasionally, until smooth, then remove from the heat, stir in 150ml of the cream and leave to cool to just above room temperature. Whip the rest of the cream to soft peaks, then gently fold through the chocolate mixture with a balloon whisk, being careful not to over mix it or it will become grainy. 7. Put one meringue on a serving platter and spoon (or pipe) a quarter of the cream on top. Repeat with the following meringues, finishing with the thicker meringue. Top with cream and pile on the raspberries. Top with icing sugar.
