Jade’s Letter I can’t wait for the Easter weekend – I’m planning already. It’s a chance to catch up with family and friends and share a couple of meals. My children are still young enough to enjoy an egg hunt, so I make the most of it with decorations and eggs and follow with a lunch for the grown-ups. I’m going to try the delicious recipes you’ll find in this catalogue – they look easy enough even for me! One of my favourite things about Easter is hot cross buns – done my way! Toasted Hot Cross buns – lashings of butter, then sprinkled with cinnamon and brown sugar before popping under the griller until it bubbles. Try it you won’t be disappointed! Best Ever Flourless Chocolate Cake This is the most delicious chocolate cake and on top of that it’s very easy and never disappoints. The recipe was influenced by Elizabeth David, an English Cookery writer who helped redefine English Cooking and wrote 8 books between 1950 and 1984. This cake has certainly stood the test of time. Keep the ingredients in your pantry and fridge and you can whip one up in no time. INGRED I EN TS

METHOD

• 250gm dark, bitter chocolate

1. Preheat oven to 180°C.

• 150gm caster sugar

2. Melt chocolate, sugar and butter in a bowl sitting over a pot of simmering water.

• 150gm butter • 100gm ground almonds • 5 free range eggs, separated

3. Remove from heat, stir thoroughly to combine, mix in ground almonds, then beat in egg yolks one at a time. 4. Beat egg whites until stiff and peaky. Stir a couple of spoonfuls into the chocolate mixture to lighten it before gently folding in the rest. 5. Turn into a buttered and floured 20cm round or square cake tin. Bake for 40 to 50 minutes. 6. Leave in the tin to cool. Dust with icing sugar to serve.

Roast Spatchcock with Orange and Olives This is a wonderful recipe – it’s quick and easy, looks impressive and tastes delicious. There’s no standing over the stove – it cooks itself while you enjoy the company of your guests. After you’ve cooked it a couple of times – you can make it your own recipe by adding or changing a few ingredients. I NGR ED I EN TS

METHOD

• 4x 500gm spatchcocks, butterflied (your supplier will do this for you)

1. Preheat oven to 200°C.

• 2 oranges

3. Cut two cheeks off the orange and then cut each into 3 wedges.

• 1 tsp fennel seeds

4. Squeeze 1 cup orange juice.

• 1 tsp dried oregano • 20 kalamata olives • 350gm vine tomatoes (left whole or halved) • 3 garlic cloves, thinly sliced • 4 thyme sprigs • 1 ½ cups (250ml) white wine • 2 tbsp olive oil • 1 large sweet potato, peeled • ½ cup flat leaf parsley leaves

2. Line 2 large baking pans with baking paper.

5. Place spatchcocks, skin side up in one pan with the orange wedges and juice, fennel seeds, oregano, olives, tomatoes, garlic, thyme, wine and 1 tablespoon of oil. 6. Thinly slice sweet potato (a mandoline is ideal) – arrange in one layer in the second pan. Drizzle or spray with olive oil. 7. Bake spatchcocks and sweet potato for 40 minutes, turning the potato once (keep your eye on the potato and remove if it is colouring too much). 8. Once the spatchcock is golden and cooked through, remove from oven. Quarter spatchcocks and divide among plates. Scatter with parsley, extra thyme leaves and spoon over any pan juices. Serve with the sweet potato and simply dressed lettuce leaves.

S U G G E STED VA R I ATI ONS • Add some fennel quarters when baking, decorate with fennel fronds. • Bake with red onion quarters. • For a one pot dish – you can even add some small new potatoes (halved) and omit the sweet potato.
