Green and white is an all-time favourite and always looks fresh. For an eye-catching mixed arrangement, select contrasting shapes for the flowers – for example hydrangeas and tulips will look good together because they have different shapes. A FEW TIPS:

Make a batch of fabulous pancakes to share with your mum. This recipe is so simple - you only need five basic ingredients, and the mixture is ready in under 3 minutes, (plus 30 minutes resting).
• 2 eggs
• 13/4 cup milk
• 1 teaspoon vanilla essence
• 2 cups self-raising flour
• 1/3 cup caster sugar
• Butter for cooking, plus extra, to serve
• Maple syrup to serve
1. Whisk eggs, milk, and vanilla together in a jug. Sift flour into a large bowl. Stir in sugar. Make a well in the centre, add the milk mixture and whisk until just combined.
2. Heat a large non-stick frying pan over medium-low heat. Grease the pan with butter or spray with cooking oil. Using 1/4 cup mixture per pancake, cook two pancakes for 2 minutes or until bubbles appear on surface. Turn and cook for a further 1-2 minutes or until cooked through. Transfer to a plate. Cover loosely with foil to keep warm. Repeat with remaining mixture, greasing pan with butter or cooking oil between batches.
3. Serve with maple syrup, extra butter, and some blueberries for breakfast or for an extra touch of decadence, add some ice-cream.
1. Don’t mix the batter too much: this is the most important tip. Overmixing the batter stops the raising agent from aerating, which results in a tough, dense dough and therefore rubbery pancakes. Mix the ingredients until just combined (in fact, this is the one occasion lumps in the batter are allowed).
2. Let the batter rest: Allow the batter to rest for 30 minutes before cooking. This allows the flour particles in the batter to expand, resulting in fluffy pancakes.
3. Use the right temperature: Use a medium-low heat to allow the pancakes to cook slowly, so they cook through to the centre and don’t burn.
4. Use a heavy-based, non-stick frypan: The thicker base means the heat on the bottom will be less intense and provide a more even heat, so the pancakes are less likely to burn.
5. Grease with butter: But here’s the trick - melt the butter first and use paper towel or pastry brush to coat the pan, rather than throwing in a knob of butter directly into the pan. This will give the pancakes a nice crispy edge.
6. Don’t flip too early: Make sure the pancakes are cooked evenly before flipping them in the pan – wait until lots of bubbles form on the surface and start to pop, then flip them.
7. Keep cooked pancakes warm in a low-temperature oven or covered with foil.
