Jade’s Letter With the drop in temperature and shorter days it’s inevitable that we’ll be spending more time inside - picnics in the park are replaced with indoor dinner parties and al fresco drinks exchanged for cosy evenings by the fire, with a glass of wine and a good book in hand. As our lifestyles naturally change with the seasons, so too should our homes. While we rug up in coats and scarves, our homes will also benefit from some extra layers - swap your Summer linens for tactile fabrics like velvet and wool. Replace overhead lighting with the warm glow of lamps and the soft flickering of candlelight. Cook up new recipes to share with family and friends, gather around the table and reminisce or make new memories. Transition your usual vase of flowers to bunches of greenery and sculptural branches - they are equally as beautiful and even more long-lasting. There’s a certain magical quality to Winter, and I’m ready to embrace it and enjoy all the season has to offer!

Cauliflower & Bacon Soup Is there anything more comforting than a bowl of homemade soup served with crusty bready? A large bowl of this easy cauliflower and bacon soup is hearty enough for a meal or serve a small bowl as an entrée. I NGR ED I EN TS

M ETHOD

• 40gm softened butter

1. Heat butter and oil in a non-stick frying pan over medium heat, add bacon and fry, stirring occasionally, until crisp (10-12 minutes). Add rosemary and stir until it starts to turn crisp (1 minute). Reserve the bacon, rosemary and oil mixture.

• 2 tbsp olive oil • 8 streaky bacon rashers, diced • 1 tbsp rosemary • 1 onion finely chopped • 2 garlic cloves, coarsely chopped • 1 small cauliflower (about 1kg), coarsely chopped • 500ml (2 cups) chicken stock • 2 tbsp crème fraîche (or to taste)

2. Add half the reserved oil to a saucepan over medium heat, add onion and garlic and stir until softened (10-12 minutes). 3. Add cauliflower, stock and 500ml water, bring to the boil, then reduce heat to medium and simmer until cauliflower is tender (10-15 minutes). 4. Remove from heat, add crème fraîche, blend with a hand-held blender until smooth (or transfer to a food processor and blend till smooth). Season to taste. 5. Serve topped with bacon and rosemary and drizzle over remaining oil to taste.

Persian Nut Bars This delicious, guilt free (no refined sugar) Middle Eastern nut bar will become a family favourite. It’s easy to make and even easier to eat! Keep it in the fridge as it can become a little sticky as it warms up. Recipe from Poh Ling Yeow, Poh & Co on SBS. INGRED I EN TS

METHOD

• ½ cup honey

1. Preheat the oven to 180˚C. (160˚C fan forced). Line a 21cm × 17cm baking tin with baking paper, leaving excess paper overhanging on all four sides which will make it easier remove from the tin.

• 80gm raw almonds, roughly chopped • 75gm pistachio kernels, roughly chopped • 160gm (1 cup) sunflower seeds • 35gm (½ cup) shredded coconut • Finely grated zest of ½ orange • 1 tsp ground cardamom • ½ tsp salt • Pinch saffron threads • 1 tsp rosewater or orange blossom water (optional)

2. Heat the honey in a small heavy-based saucepan until just warmed through but not boiling. 3. Meanwhile, combine the almonds, pistachios, sunflower seeds and shredded coconut in a heatproof bowl. Add the orange zest, cardamom and salt and stir to mix. 4. Add the saffron to the warmed honey, then pour over the almond mixture and add the rosewater. Stir until all the ingredients are well coated with the honey. Tip the mixture into the lined baking tin, spreading it evenly, then press to form a compact layer. 5. Bake for 20 minutes or until golden brown, then immediately use a wooden spoon or spatula to press the surface firmly to flatten. Leave to cool completely in the baking tin. 6. Use the overhanging baking paper to remove the nut bar mixture from the tin and place it on a chopping board. Cut into 7cm × 4cm bars and serve.
