FOR those of us who doubt Australia still being a lucky country, spend a few minutes talking with Gei Lin Thang Kinta. The life he, wife Kee Om Paw, and their three daughters now enjoy in Bright is a far cry from that which he fled from his native Chin State in Burma/ Myanmar. “The majority of Chin people live in villages in the hills, where there is no electricity or running water, and people live a simple, though hard life,” he said. “Forced labor, persecution against Christians and ethnicity, and discrimination are part of everyday life in Chin State. “Produce grown by families is routinely taken by the military for their own needs. “I had to flee from Chin State and Burma in 2004.” His fortunes didn’t improve greatly when he fled either, initially in Thailand but then became a refugee in Malaysia, ending up in an immigration detention prison. “As a result of malnutrition and living in a cramped cell with other inmates, I lost the use of my legs,” he said. “I was cared for at a Catholic hospital in Batu Arung until I could walk again.” His health slowly improved and things began to look up when he was eventually issued a humanitarian visa by the Australian High Commission in Kuala Lumpur, and he arrived in Australia with his wife and oldest daughter in June 2008.

What’s in your garden: We have an extensive vegetable garden, including zucchini, lettuces, tomatoes, silverbeet, spinach, pumpkins, as well as a lemon tree and tallow trees out the front. What do you enjoy about gardening: Eating the fresh vegetables – home grown has a different flavor. Favorite plant/spot in your garden: David said his favorite plant is the lettuce.
Water saving/conservation tip: We are careful in our water saving – we try to keep the soil moist but don’t over water it. Your tips to keep gardens in top shape: We turn the soil over regularly to keep weeds to a minimum, and during hot weather like we are experiencing right now, hang shade cloth over some of the sensitive plants, such as the lettuce.

PEOPLE often say to me, “I don’t know much about gardening; I just mow the grass�. Gardening can be seen as a boring chore, an occasional activity or an enjoyable pastime - or it can become a lifelong passion. In fact, many keen gardeners started not knowing much about gardening either. The passion may develop slowly, starting with a few potted plants or a desire to have a neat patch of healthy green lawn. Maybe you try growing a few flowers or vegetables. It wasn’t until I owned my first home that I became slightly interested. The early 1980s, the era of the native garden, inspired me to plant numerous amounts of unsuitable native trees and shrubs, edge with railway sleepers and cover with bark mulch. Then forget, so called no maintenance gardening. The next house was a blank canvas, a bare block so I wanted to create an English style garden. I read gardening books, watched TV gardening programs and copied other people’s ideas. I joined a garden club, did a six week gardening course and thought I would learn everything. Little did I know at the time, but a lifelong passion had begun. One course led to another and I

Nowadays, there are plenty of ways to learn more about gardening from TV programs, magazines and of course, the internet. Join a garden club or become involved in a community garden. These are great ways of meeting seasoned gardeners with a plethora of experience and helpful advice. Finally, check out workshops and courses on offer at local neighborhood centres or TAFEs, you just might find something to interest you and who knows, you may develop a lifelong passion too. I have been working in the horticulture industry for over 20 years now and my way of relaxing is to come home and garden. But I do know one thing, a lifetime isn’t long enough to learn everything about gardening, so celebrate the success, acknowledge the failures and keep on your journey of lifelong learning. Their journey continued, with the family becoming Australian citizens on Australia Day last year, and now he runs a cleaning and home maintenance service. “We love the home we have made here, and the relaxed Australian lifestyle,” he said. “Our favorite places in Bright are the paths along the river, the playground and the swimming places. “We love the natural beauty of the area. “It is very similar to Chin State. “And everyone is kind, that is how life should be.” Former Cairo resident Mosti Lashin also loves Australia’s freedom. “It’s the freedom of speech here – people are very accepting,” the Wangaratta resident said.
“People do not care about issues like background, skin color or faith. “It makes life a lot easier – people are friendly and connect, and there is that sense of community.” Mosti came to Australia from Egypt about a decade ago, aged 20, and has lived in different parts of Victoria and studied laboratory medicine at RMIT, gaining citizenship six years ago. Since moving to Wangaratta a year ago and settling into work at Dorevitch Pathology, he and his girlfriend Catherine have embraced the local lifestyle, even hosting some overseas friends during the Wangaratta Festival of Jazz. “We enjoy a coffee and a walk, and love going to the movies,” Mosti said.

they are not passing the infective stages of the worms in the feces. Dogs and cats should be dewormed every three months throughout their lives to ensure control of intestinal worms. On the other end of the scale are the much more serious diseases that can be transmitted from pets or livestock. Some of these, like Rabies, are thankfully absent from Australia. However, there are a number of illnesses that do present a risk, especially in rural Australia. Q Fever is a disease caused by a bacteria that can be carried by cattle, sheep and goats. It usually causes flu-like symptoms in humans (lethargy and fever) that resolve over a few weeks. However, in 10-20 per cent of cases people develop a prolonged infection that creates chronic fatigue and lethargy, which becomes a major ongoing problem. There is a vaccination against Q Fever that is recommended for all those working with livestock. Leptospirosis is another bacterial infection that humans can contract, particularly on dairy farms. The bacteria are shed in the urine of infected animals and can contaminate cuts and abrasions on
the skin or enter through our mucosal membranes (eyes, nose and mouth!). It causes fever, muscle pain, headaches, nausea and sometimes bloodshot eyes. Treatment is usually successful with antibiotics, but recovery can be prolonged the longer the infection has been in place. Livestock can be protected from leptospirosis with a vaccination and humans can help prevent infection by covering any cuts on the hands or arms with waterproof dressings, wearing long gumboots, long sleeved shirts and pants and a waterproof milking gown. Washing your hands after being in contact with livestock before eating is also important. These are two of the most significant zoonotic diseases that farmers may encounter, but protection and prevention strategies when implemented properly should prevent any unwanted infections. A ZOONOTIC disease is one which can be transmitted from animals to humans. There are various different diseases that fall into this category. Some are minor problems, whereas others can be very serious. Fortunately good hygiene and knowledge of the risks can help ensure we stay unaffected by these zoonotic diseases. On the simple end of the scale, humans can be affected by parasites that our pets carry. Predominantly this means fleas, mites and intestinal worms. Keeping our pets free of fleas by using regular flea preventatives helps to keep us from being bitten as well. Flea control is best achieved using monthly spot-on or tablet treatments such as Advantage, Frontline or Comfortis. Intestinal worms tend to cause problems in younger children who are perhaps not the best at washing their hands after patting their dog or cat. Teaching young children good habits when it comes to washing hands and not putting their hands in their mouths after patting pets is the first part of preventing the spread of worms. The other major part is regular deworming of cats and dogs to ensure

Telling cod apart BY ROB ALEXANDER, WANGARATTA A BUMPER Murray cod season has also meant an increase in the number of protected trout cod being caught in local waterways, particularly the Ovens River. While there is no doubt efforts to repopulate North East waterways with the native trout cod are having an effect - with reports of some trout cod caught up to 75cms - it remains illegal to keep any of the species, irrespective of their size. Local fisheries officers are concerned some anglers may be miststaking trout cod for Murray cod, so in this week’s column we are looking at how to tell the difference. Eye stripe Trout cod usually have a black or at least dark horizontal stripe on the side of the head, level with the pupil of the eye, although sometimes the stripe is missing, broken or indistinct. Juvenile Murray cod can also have this stripe but only in small fish well under legal size, which must be released anyway. If you see an eye stripe, let it go. Head & body markings, coloration Murray cod generally have an overall olive green coloration, often with a vivid white belly. The markings are of a mottled appearance, although they appear more spotted in very large individuals. The same general coloration and patterning continues right across the body and head. Trout cod generally have a more bluegrey coloration with a grey belly which often looks ‘dirty’, especially under the chin. The dark markings have a more speckled appearance and usually reduce in number and size over the head, and are sometimes almost completely absent there. The base color of the fish often intensifies over the

head profile with a relatively blunt, broad snout, whereas trout cod have a straight or slightly convex profile with a more pointed, narrower snout. The head profile can be confused by the shoulder of the fish which in larger specimens can make a straight head look concave to the casual observer. If it has a pointy snout, let it go. Other points There is no difference in the shape, coloration or position of the fins. Overall body shape, except as noted above is also the same. Trout cod are generally more aggressive than Murray cod and often out fight them. Some anglers describe trout cod as being like ‘Murray cod on steroids’.

head, giving rise to the alternate name ‘blue nose cod’. Do not rely on body color alone to identify a fish as a Murray cod - many trout cod have a distinctly greenish color. If the head looks different to the body in coloration or markings, let it go. Lower jaw The lower jaw is shorter than the upper in trout cod, but this can be hard to see in a fish on the end of the line in the water. In Murray cod the lower jaw is either the same length or slightly longer than the upper. If it has a short lower jaw, let it go. Head shape Murray cod generally have a concave

Sister act A COUPLE of days before Christmas, I was driving downtown when I passed an elderly nun who’d taught me in my primary school days. My main recollection of her was that she’d once been quite nasty to me. I’d been hurt by her mean-spirited comment - a comment that seemed to have been made with the express intention of embarrassing me in front of my peers. She’d made me spell out my name and, when I’d only gotten as far as ‘C.A.T’ , she’d pounced on me, saying that that is exactly what I was; “a cat!”. This shocked me as I was a friendly kid but I assumed (even at the time) perhaps I was simply being made the scapegoat for some ‘cattiness’ that had, indeed, been happening in the class. The irony of someone so ‘Godly’ being so deliberately mean was not lost on my eight year old self and it caused me to wonder why some people ever became nuns. Clearly some of them were not good with children. Nor, I suspected, even liked kids. But I guess, back in those days, when you became a nun you pretty much had to choose between being a nurse or a teacher. For anyone with an aversion to blood, teaching might have seemed like the easier option. Well anyway, that incident stayed with me over the years and I still feel somewhat indignant when I think about it. After all, if I was such a shocker, I wonder what Dear Sister would say about some children today – those who are downright rude and uncooperative with their teachers and bullies with their peers. I’m sure Little Missy Catty (aka Me) would seem like an absolute angel by comparison! But I guess it was what it was, and I’ll never know what was going on in her life at that time. Was she struggling with her faith? Was there conflict within the order? Did she miss her family terribly? Or was she just having a bad day? Who knew? The whole experience opened up a little window of worry for me because, for the first time in my life, it occurred to me that perhaps being a nun wasn’t much fun (I’d previously thought it would be cool
BY CATHERINE WARNOCK to wear the robes and be all mysterious and holy). My worry was rooted in the ‘fact’ - decreed by some other, presumably well informed, Catholic kids - that at least one child in every family was supposed to become a nun or a priest. Well, I was the youngest of five and none of my older siblings were showing any signs of taking up the cloth. I concluded, therefore, that I must be the one! Admittedly, I suspected I’d have an ally in Dad if I chose to buck the system and pull out. After all, he was a Protestant and loved a rowdy religious argument. I figured he’d get a bit of a kick out of supporting his renegade kid. As I saw it, the main problem with me becoming a nun was that I simply wasn’t holy enough - or interested. I could barely stand an hour long mass, let alone having to endure several a day! And what about swimming? Or being a ballerina? Or having a boyfriend or getting married? And what about those eight future children I’d already named? And what about having my head shaved (I assumed all nuns were bald under their habits)? And what about sleeping over at the Nunnery? How would I do that when I got homesick on a one-nighter at my friend’s house? All this played on my eight year old mind, until someone finally enlightened me that the ‘one nun in every family’ rule was not a rule at all. I heaved a sigh of relief. Well anyway, I was thinking about all this as I watched my old teacher shuffling across the road. She’s an old lady now and I wondered how her life has been. For whatever reason, she had chosen a difficult path and I hoped it had all been worth it for her. I hoped her faith had grown and flourished. “Merry Christmas,” I whispered almost reverently, as her bowed, tired old frame hobbled away; “…you old cat.” Oops! Clearly, a teensy bit of residual resentment still there.

Wangaratta’s new bridge, 1855 WANGARATTA at last has a bridge across the Ovens. A most spectacular structure it was – built, it was said, to a Canadian design, which spanned the stream in a single arch, and constructed by gangs of men using American axes for the first time in the colony. Streams of goldfield traffic deserted Ovens Street and the punt across the Ovens, and Murphy Street became the new main thoroughfare.

Squeeze all the water from the cabbage and put the cabbage in a bowl. Add the pork, chives, soy sauce, rice wine, sesame oil, ginger and cornflour. Stir to combine, drain off any excess liquid. Place a heaped tablespoon of the filling in the centre of each wrapper. Spread a little water along the edge of each wrapper and fold the wrapper over to make a half moon shape. Use your thumb and index finger to form small pleats along the sealed edge. With the other hand, press the two opposite edges together to seal. Place dumplings on a baking tray that has been lightly dusted with cornflour. Do not allow the dumplings to sit for too long, or they will go soggy. Heat one tablespoon of oil in a frying pan; add a single layer of dumplings and cool for two minutes, shaking the pan to make sure they don’t stick.

Add 75ml water (1/3 cup), cover and steam for two minutes, then uncover and cook until water has evaporated. Repeat with the remaining dumplings. Serve with red rice vinegar or a dipping sauce. ONE of the great pleasures of having time off over the holidays is being able to browse through cookbooks for inspiration and dabble with those recipes you’ve marked and wanted to try. It was while doing this that I discovered a simple recipe for the perfect peppercorn sauce, and it’s a taste sensation which has become a favorite on the table whenever beef is on the menu. It also helped me stumble across a new ingredient; these addictive stems of green peppercorns which come in a jar from Vietnam and are now packing their incredible punch in every dish I throw them into. More pain for manufacturing
THE first days and weeks of school are both a relief for parents and a massive excitement for children beginning a new year at school. However, for some children this is a time that heightens anxiety, leading to fatigue, sleep issues, toileting issues and behavioral issues in general. Some children experience uncharacteristic bursts of anger, shyness or need for attention. Naturopath’s top tips to reduce anxiety in school aged children: For prep age: Serve your last night’s dinner to them as an after school snack. Children are normally ravenous by 3.30 and are happy to eat a larger amount during this time. Then at dinner time offer snack foods such as yoghurt, fruit, nuts and seeds, dips and vegetable sticks etc. Normally by 6pm children of this age group are exhausted, cranky and not really interested in eating a large meal. Changing when they eat their main meal for the short term ensures they are receiving vital nutrients,

SO, Prime Minister Tony Abbott and Minister Joe Hockey have said ‘no’ to the request from Coca-Cola Amatil for assistance to upgrade their Shepparton manufacturing plant. So what, you say. The average weekly wage in Australia is nearly $74,000 and in manufacturing this figure is around $67,000. So, if a typical worker at SPC Ardmona is being paid $24 or $25 an hour, and I understand this is fairly accurate, doesn’t this equate to a yearly income around $50,000 way short of the average weekly wage. The government is saying there are some extraordinary things in the agreement between the company and the union. Some 60 years ago when I was working for the SEC at the Newport Power Station we received an allowance for having to work in extreme heat as generators failed when generating capacity was exceeded (what’s different to now) as well as a dirt allowance. So why shouldn’t they not be entitled to a “wet allowance” when their clothes get saturated by the spraying of water onto the fruit and vegetables as they go about doing their jobs? I guess no one has spelt out that the award rate for a level two worker in the food industry is $16.85 an hour, just a little over the national minimum wage. The Shepparton area has always been considered the “Food Bowl” of Australia - rich fertile soil, in normal years a very adequate water supply which makes it so attractive, and so easy to get to the large markets in Melbourne and Sydney. I can remember (former deputy Prime Minister) Tim Fischer pushing for the very fast train to travel through Shepparton, so perishables can be forwarded to Asia from Darwin within a couple of days of harvesting. Of course the government is entitled to say ‘no’ that companies should stand on their own two feet, but is this the right time to close the door on support, especially in Victoria and South Australia? I just wonder what the future holds for the other big industry centred around Shepparton since we have seen the takeover of Warrnambool Cheese and Butter by overseas interests in our milk and cheese production.

We have seen the demise of manufacturing plants in Echuca and Girgarre in the last couple of years, not forgetting that SPC Ardmona closed its Mooroopna plant and consolidated in Shepparton a few years ago too, so let’s hope we are able to continue to support the locals. I am pleased the Victorian Government has chosen to develop some plan of action in support of SPC Ardmona so it is able to retain viability and continue operations in the area. Premier Denis Napthine said although SPC Ardmona faced “a very challenging situation”, the Goulburn Valley had a “strong future” as a food bowl for Australia and the world. “We would like to work with SPC Ardmona, and Coca-Cola Amatil, to look at what opportunities there may be to deliver economies of scale, those efficiencies, those productivity savings to provide viable food production here in the Goulburn Valley,” he said. It brings back memories to me as a young lad visiting the Rosella factory in Richmond, where father was required to be on hand to repair the huge conveyor belts on which tonnes of fruit, onions and tomatoes were loaded, and ladies sitting on each side of the belts removed the bad fruit before it went to the cooking boilers. Truckload after truckload, being delivered in season, and plenty of weekend work to process them whilst still fresh. They were the days. It is not as if the government of us taxpayers was tipping in the requested $25 million into the pockets of Coca-Cola Amatil, but into modernisation of an ageing plant. It is important that we retain our manufacturing entities and I wonder if thought should be given to directing some of our foreign aid budget to purchasing Australian tinned fruit and sending this to the countries receiving foreign aid. Just a thought.
