WITH her career having taken her into the competitive world of international winemaking, it is hard to believe Lilian Carter initially had second thoughts about getting involved in the industry. Though surrounded by vineyards and winemaking, with her parents heavily involved in the industry, she was “wary about taking the obvious path”. Somewhat reluctantly she began to work with her family and at neighboring wineries in her spare time. “It opened my eyes to the intensity of harvest,” Lilian said. “The smell of freshly crushed grapes before the sun comes up is the smell of vintage. “Now I can’t imagine doing anything else.” As well as working in China, she calls Rutherglen home and recently became the winemaker at Symphonia Wines, immersed in the burgeoning King Valley wine industry. It’s an opportunity she is relishing, saying the Symphonia vineyard, owned by Peter and Suzanne Evans, and nurtured by previous winemaker Robert Paul, is “incredibly unique”. “It was established 30 years ago by Peter Read, and he was visionary for the early 1980s, planting a range of alternative varieties; petit manseng, pinot gris, savagnin, tannat, saperavi, and tempranillo as well as some more traditional varieties,” she said. WITH tall purple spikes, silver grey foliage and aromatic leaves and flowers, lavender is a pretty and fragrant addition to any garden. Lavandula, commonly referred to as lavender, is a member of the mint family with over 40 species in cultivation. Dating back to biblical times, lavender has been widely used over the centuries for its aromatic and healing properties. These days, lavenders are commonly grown as ornamental plants in gardens, used for medicinal and culinary purposes and grown commercially for essential oils. Modern flower colors range from pink to purple and white. Lavenders do best in full sun. They will grow in part shade but can become leggy with reduced flowering. Good drainage is essential as the roots can easily rot if too wet. Clay soils in particular hold too much moisture, which can cause lavender to ‘drown’. A well-drained, sandy or gravelly soil is ideal. To help with drainage, plant lavenders on a mound or slope. They also do well in pots and containers.

Lavenders can flower from winter through to late summer depending on the variety and growing conditions. Prune lavender after flowering to prevent the plant becoming woody. Cut back by half to two thirds leaving only a small amount of foliage. Don’t cut into the older woody growth, or it may not re-shoot. Lavenders don’t need much fertiliser, but can be fed with blood and bone after pruning. Some of the varieties available include English lavender, ‘Hidcote’ with silver grey leaves and masses of violet flowers. ‘Alba’ has fragrant white flowers and ‘Rosea’ is a pretty dwarf variety with pale pink flowers. French lavender has toothed leaves and purple velvet like flowers. Plant lavenders as a hedge or in mixed borders with other Mediterranean plants like rosemary, sage, rock rose, geraniums and iris for a stunning and colorful effect. Happy gardening.

“It has a vibrant food scene, excellent vineyards, an interesting history and a strong community,” she said. “It’s beautiful and slightly off the beaten track, so people really feel a connection with the area after visiting. “It will continue to carve out its identity as a region that produces interesting cool climate wines with clarity, purity, and a true sense of place.” Lilian’s work has seen her make wine for high profile companies such as Pernod Ricard and Chandon, and even now she continues to wear a number of winemaking hats. She helps guide small-medium Victorian wine businesses from production through to sales, works with a private Chinese wine company to help them establish a new vineyard and winery, produces her own wine and still helps out on the family vineyard as much as possible. “Each situation is unique and provides learning opportunities… it’s all part of gaining experience and then applying it,” Lilian said. “In any given day I could be on the phone to Australia from a remote western Chinese vineyard or emailing China from Australia, hosting an educational tasting in Shanghai or driving a tractor in Rutherglen.” Lilian will be sharing her wine knowledge and expertise during the La Dolce Vita celebration in the King Valley this weekend. The winery, located at 1699 Boggy Creek Road, Myrrhee, will be holding “bottling your own wine” sessions, short walking tours of the vineyard and offer the opportunity to test your

THERE is nothing quite like sitting outside on a warm summer evening having a barbecue and a few drinks with family and friends. Most dogs will enjoy this too, especially when the odd snag finds its way to the ground or when everyone has left and the barbecue is cleaned. But as much as they love it there are a few things at a barbecue that are potential health risks to our pets. Sausages and other barbecue meats are full of fat (and flavor) which can lead to pancreatitis in dogs. The pancreas is an organ that releases enzymes and hormones aiding in digestion of food. A high fat meal, among other possible causes, can lead to the pancreas becoming inflamed and cause severe abdominal pain, lethargy, in some cases vomiting, diarrhoea and anorexia. This is a potentially life threatening condition which can require hospitalisation and intravenous fluid therapy with recurrent episodes likely. When cleaning the barbecue, although tempting, don’t throw the charcoal and fat residues onto the garden where the dog can find it. As with the sausages this mixture is full of fat and can cause gastrointestinal upsets or pancreatitis. What’s a sausage without onions on top?
Onions make every barbecue that much better but are also a big no-no for our pets. Onions damage the red blood cells which circulate through the body providing oxygen and nutrients to the body and clearing waste products. The damage causes a decrease in their circulating number which causes a range of clinical signs including pale gums, increased heart and respiration rate, lethargy and depression. Severe toxicity can require a blood transfusion. Alcohol is a definite no for pets. It is rapidly absorbed and causes neurological signs such as difficulty walking, sedation, decreased mentation and decreased body temperature. In high doses it can be fatal. Ethanol, the toxic component in alcoholic beverages, is also found in uncooked bread dough and rotten apples. So for those who make their own bread, make sure the dough is well out of reach of hungry animals. Enjoy the summer, but don’t give in to the puppy dog eyes. CATCH OF THE WEEK
Getting kids hooked on fishing THE Wangaratta carp muster was a huge success last weekend. I will not go into it too much here, but more than a dozen European carp were taken out of the One Mile Creek, in an effort to help native species and the health of the creek. It was just wonderful to see so many kids fishing, and so many wonderful parents introducing their kids to this great sport. These kids are the future of fishing and we need to get as many of them as possible involved so that in years to come there will be so many fishermen that no government authority will ever be game enough to take fishing away from our kids and grandkids and their kids after that. While I was walking around talking to the kids, I managed to sneak in a few fishing reports from parents happy to pass on some information. There have been some massive trout caught in Lake Hume over the last few months, and a few are still turning up. This may slow down as the water starts to warm up though. Many of them have been caught as a by-catch

WITH ANITA McPHERSON This wine has an amazing, cherry bomb aroma and earthy fruit flavor which goes so well with meats, like a chewy slice of your Italian neighbor’s homemade salami. Its ripe cherry and red berry fruit flavor almost seems touched with smoky eucalypt, giving the wine a satisfying substance and earthiness. Perhaps it’s a reflection of being aged for a year in Hungarian and French oak, but there’s a complexity which is even handed and balanced, and a long, lingering flavor. And in recognition of that balance, I plan to keep a glass of it in one hand whenever I’ve got a sausage in the other. The Great Hotel Massacre, 1912 DISTRICT hotels were laid low when the Licences Reduction Board put the cleaner through almost half the hotels in the area. The hotels affected by having their licences withdrawn included the Royal Oak at Carraragarmungee, the Bontharambo Hotel at Boorhaman, the Royal Oak on the corner of Rowan and Grey Streets in Wangaratta, the Albion Hotel in Springhurst, the Albion in Eldorado, and the Australia, which was possibly the oldest of the hotels to be delicensed, having been a licensed house for about 50 years.
A VERY long time ago, when I first started cooking, I went to an Asian cooking class. This class was held by a Mr Lau, who now is a well known restaurateur. I still use his chicken and sweet corn recipe to this day. Method: Chicken stock Boil 500gm chicken bones in 1200ml water with one carrot chopped, one celery stick chopped and one onion chopped, simmer for one and a half hours. Strain and discard the solids. The final volume of stock should be about 900ml. Leave overnight so you can then skim off any fat. Method: Soup Bring stock to boil. Add creamed corn, diced chicken, salt, pepper and soya sauce. Simmer for three minutes. Mix the cornflour with a little water to make a paste, then add
enough to just thicken. You may not need all the cornflour. Using a medium to high temperature, add beaten egg slowly with quick stirring, turn the heat off immediately. Taste and add more seasoning if needed. Garnish with the chopped spring onions.

AS the weather heats up it becomes easier to make salads and vegetables a central part of your meal instead of just an accompaniment to meat. Are all fats the same?
Make or break time
THERE are three types of fats - monounsaturated, polyunsaturated and saturated fats. Most foods contain a mix of the three but are classified into the category with the most predominate type, eg olive oil is classified as a monounsaturated fat even though it contains a small amount of saturated fat. When reducing the amount of fat in your diet you need to ensure that there are sufficient amounts of mono and polyunsaturated good fats in your diet. These fats assist in fat burning, assist in the absorption of fat soluble vitamins such as Vitamin D, E and A, and omega 3 fatty acids. Healthy fats also assist in maintaining or correcting the ratio of healthy cholesterol in our body and diet. Like all things in life fats should be enjoyed in moderation and incorporated into a diet that includes plant based products, proteins, fibre and ample amounts of water. Monounsaturated fats are often referred to as a “good” fat.

They assist in lowering the total and “bad” cholesterol and raise “good” cholesterol. Food sources: olives and their products, avocado, almonds, cashews, macadamia, pecans and pistachios. Polyunsaturated fats include omega 3 and 6 fats. With many health benefits such as reducing total cholesterol levels, reduce inflammation, improve cognitive function, and improve the function of arteries and lower blood pressure.
Food sources: sesame oil, seeds-pumpkin, sunflower, linseed. Nuts- walnuts, pine, Brazil. Oily fish such as salmon. Saturated and trans fats are classified as “bad” fats. These fats increase total cholesterol, increase obesity, and increase the risk factors of heart disease, diabetes, stroke and increase blood pressure. Food sources: palm oil, baked goods, deep fried foods, hydrogenated or partially hydrogenated vegetable oil.

SO what’s new, the Australian car manufacturing industry is in crisis. Ford has already announced closure, and GMH could be headed in the same direction and if so, what future for Toyota? My reading included an article that said Holden would cease to make the Commodore ute, as sales have been crushed by a flood of imports of pick-ups from Thailand. One in five new vehicles sold this year has come from Thailand, second only to Japan. Australian-made cars account for less than one in 10 of all new vehicle deliveries, with local production at its lowest level since 1957. And to think that Toyota production lines of HiLux style pickups are not all made in Japan, with most being of Thailand origin where labor rates are about twenty per cent of Australia’s. The automotive industry is a major employer and significant contributor to the economy, but it is in crisis, and without an urgent commitment from the government it could be over before year’s end. The Prime Minister said a week or so ago he wanted to create new jobs and protect those already in existence. Unless the government acts quickly the 46,000 Australians who are directly employed in the industry – and many of the 200,000 employees in the component and parts industries directly attributable to the car industry - will be out of work. There are 180 component companies and with the number of cars manufactured here this is too many, so rationalisation and mergers in this part of the industry is vital to survival. Of the one million cars sold in Australia last year, 220,000 were Australian-made, but 80,000 of these were exported. Supporting this industry is the big question and Senator Kim Carr says ”the question is not, can Australia afford an automotive industry? The real question is can Australia afford to see this

And the answer is no.” The Labor Government had been supporting the industry to the tune of $2.7 billion over the past five years for a return on investment of $26 billion, which is not a bad return. The new government has said it will provide $1 billion over five years, effectively cutting more than $1.7 billion from the subsidy. I often thought myself that too much was being channelled into support for the car industry, but then my reading showed that more is spent on grain, sheep and beef subsidies than in the car industry. It’s interesting to note that the government of every other car-making country around the world understands the value of the auto industry to their economy. It’s probably the reason the USA spends the equivalent of $264 per person supporting car making, Germany some $90 per person, but Australia a mere $18. There is not a car on the road that isn’t supported by a government somewhere. Holden has 168 plants around the world and if we want their investment and jobs for Australians then we need to fight for it. I realise the high Australian dollar has been a major factor in increased production costs of 30 per cent, but we need to become more efficient in our ways of production. I just wonder if support could be offered in a different way, such as giving some sort of incentive for people to purchase new Australianmade vehicles with no GST attached, rather than subsidies to the manufacturers. I suppose then the argument would be that we are disadvantaging those overseas manufacturers who are able to source much cheaper labor and therefore produce a much cheaper product as I still see these being subject to GST.
