WINE TALK WITH
ANITA
THE constant hum of birdsong breaks the early morning silence of the country homestead Cath and Richard Watter and their five children call home near Peechelba. Native plants flourish throughout their 100 acre property, and you may even catch a glimpse of an odd koala nestled in the trees. For the Watter family, creating a welcome environment for flora and fauna is part of their passion to preserve the environment for the future. “We’ve always had a love of bird watching in particular,” Cath said. “And we were struck by the diversity of bird life in the area.” The historic property has gone from being a quarry in the early settlement of the area, to rural land, with the previous owners (the Colville family) helping to establish many trees on the property. The Watters placed a covenant on the property three years ago, and have been working with the conservation organisation Trust For Nature to help implement a management plan. Richard said that despite a dry few years, trees planted on the property are establishing well and native plants are flourishing – often popping up of their own accord. “It’s amazing what grows back,” he said. continued page |

IT’S been a terrific year for citrus with bumper crops. The good autumn rains led to an abundance of flowers and fruit set with heavy yields. Our lemonade tree has been laden with fruits which we have been eating and enjoying for a couple of months. Lemonade is a cross between a mandarin and a lemon, but is a lot sweeter, less acidic, and very refreshing. As the tree is nearing the end of its fruiting season, with new flowers already forming for the next crop, now is the time to do some maintenance. The lemonade tree had grown rather tall, with a couple of branches breaking in recent strong winds. The growth had also become rather obtrusive with twiggy growth on the lower part of the trunk. It is not necessary to prune citrus to produce fruit but the trees can be trimmed to maintain the height and shape after fruiting. The tree was pruned back down to picking height, shaped and the lower growth removed. The tree was then fertilised and the mulch topped up. During the pruning process the

last of the fruit was removed. Because they have fairly soft skin, lemonades don’t keep as long as other citrus but the juice can be squeezed and frozen in ice block trays. Another way to enjoy lemonade and other citrus is to make cordial. The recipe I use is from an old cookbook from the seventies, my old high school cookbook. The recipe needs six citrus and any type of citrus can be used but I love lemonade cordial made just with lemonades. Citrus cordial needs: 6 lemonades, or oranges, lemons, or limes in any combinations, 3 cups sugar, 6 teaspoons each of citric and tartaric acid and 1.5 litres boiling water. Place the sugar, acids and some grated zest in a bowl. Pour over the boiling water and stir well until the sugar is dissolved. Cool then store in a screw top bottle and refrigerate. It keeps for up to a month. Happy gardening.

VETS CORNER
Transporting your cat to the vet
HAPPY SIGHT: An everlasting daisy, diamond firetail and green hood orchid can be seen on the Watters’ covenant.
The couple now witness a diverse range of birds and wildlife on their property, varying from year to year. One of these species is the distinctive diamond firetail. “They have gone from hardly being seen to now having a substantial colony, said Richard. Barking owls, brown tree creepers and hooded robins are other frequently spotted bird species, while koalas, goannas and wedge tailed eagles are often sighted. Cath said the whole family enjoys spotting birds and animals, often taking long walks or bike rides together to see what’s out there. “I think it is important to pass on a respect for the environment to children, she said. “It’s good for the kids, it gives you
a whole perspective on things. The couple said it is not only a matter of establishing trees on a property – other plant life needs to be established to attract native birds to a property, such as the everlasting daisy and the green hooded orchid. The property also features a number of nesting boxes for feather gliders, and currently has sensor cameras installed to monitor the local deer population. The Watter family is among a growing number of owners across the North East making a concerted effort to increase the biodiversity on their properties, helped by Trust For Nature. For more information about Trust For Nature go to: www.trustfornature.com.au.
MOST cats are not particularly happy travellers. The rewards of exploring somewhere new at the end of a journey does not enthuse the average feline in the same way as it does the canine adventurer. Cats are usually strongly bonded to their own territory and feel very vulnerable in a strange environment. Naturally, it is no surprise that one of the reasons commonly cited by pet owners for not seeking veterinary care includes the cat’s stress or fear associated with the practical difficulties of transporting cats to receive veterinary care. Routine annual health check-ups with your vet are just as important for cats as they are for dogs. It is well known that preventative veterinary care can improve quality of life, detect illness earlier and therefore, reduce the long term expenses associated with a pet’s health care. CATCH OF THE WEEK
FISHING FOCUS
Geared up for cod season
BY ROB ALEXANDER, WANGARATTA
Name:
Yvonne Richards, Wangaratta
Catch:
Snapper
Size
6.2kg
Location:
Port Phillip Bay
Bait: COMMON CATCH: Peter Jung with a typically undersized Murray cod from the King River, which he caught late last season.
WELL it’s almost here folks, the eagerly anticipated 2013 Murray cod season. It does not open until midnight this Saturday night, so don’t be tempted to jump the gun. I am expecting the Ovens and King rivers to both fish very well as soon as the season opens. Anywhere along the Ovens River from Myrtleford downstream to Bundalong will be well worth a look. The area between Wangaratta and Whorouly tends to have a lot of smaller cod in it, with legal sized cod being few and far between. Closer to Myrtleford a few bigger Murray cod nudging 70cm get caught more frequently, while the Buffalo River is also known for producing quite a few cod around the 70cm mark each season as well. Between Wangaratta and Peechelba the Ovens River is a very popular and easily accessible fishery. Despite this, many Murray cod get caught each year with an odd legal sized cod, and the occasional
monster Murray cod turning up. From Peechelba to Bundalong there seems to be fewer Murray cod, but a better chance of catching a bigger fish, or a yellowbelly as a by-catch. The Kiewa River downstream of Kergunyah will be worth fishing as well once the season opens, but be careful of the strong currents, especially if you are kayak fishing. The Broken River anywhere from Benalla downstream should fish well, but kayaking will be hard with the low water levels. I am expecting Lake Mulwala to fish a little slower than usual based on last season’s reports, however, I am expecting some quite large fish to turn up down there this season due to the smaller number of fish than usual over the last two seasons. If you are specifically targeting very large Murray cod, then your best bet would be to fish the Murray River, especially anywhere downstream of Lake Mulwala.
Silver whiting on a 3/0 circle hook
The Catch: Yvonne caught the fish while on the bay with a charter boat company called Think Big Fishing, who encourage people to try saltwater fishing in the Port Phillip Bay.

BOOK
Every Man and His Dog by David Darcy IN the middle of January 2013, David Darcy packed his cameras, two of his dogs (Eggbert and Doc), and himself into his ute, and set off for three months of travel across the length and breadth of Australia. Every Man and His Dog is the culmination of this journey across Australia, a glorious documentation of the relationship between Aussie blokes and their canine best friends. Published by Murdoch Books
Manchester United LAST week, as my colleagues and I replaced freshly washed doona covers in readiness for next term’s group sessions, I commented that I wished there was a simpler way to do it. I always seem to get into a tangled mess, lose the doona corners in the middle of the process (meaning I end up nearly having to climb into the thing to find them) and generally get very frustrated. By the time I’ve finished I’m puffing like I’ve just competed in the Doona Wrangling Championships (Veteran’s Class). My colleagues just smiled knowingly and declared they had a fail-safe, absolute cinch of a technique that even I couldn’t muck up. First of all, you turn the doona cover inside out (in fact, one colleague mentioned that she actually washes, folds and stores her doona covers inside out, in readiness for the next wrangling….I mean, bed-making….session). You then put your hands up inside the doona. You grab hold of the two top corners of the cover and then grab the two top corners of the doona. Holding the two together firmly, you then do a shimmy, a wriggle and a shake, and “Hey Presto” your doona is in the bag. Literally. Well, that sounded all very fine and, I must admit, when I tried it with the queen size doonas we were using at work, it all went swimmingly. However, as is always the way, when I tried this at home, unsupervised, it was a very different story. For starters, we have a king size bed (yes, I know that sounds like I’m bragging and maybe I am, coz I just luuuuurve my big bed). This means everything’s a bit bigger and so, when I tried to put my hands up into the cover corners, I got swamped by material and couldn’t see a thing. Eventually, I found the corners and flailed around trying to find the corresponding corners of the doona. Once these were secured, I tried the shimmy, wriggle, shake but all that happened was that I ended up with a big lump in the middle of the doona cover, meaning I still had to go through the frustrating process of pulling everything into place.
BY CATHERINE WARNOCK And, of course, that wasn’t the end of it. My bedding has a perverseness not usually seen in inanimate objects. You see, the doona must be inserted in a different way for each individual doona cover, and of course, I can never remember which one goes which way. I know I could mark the corners of the doona to say “This Side Up” or something, but then I’d have to mark each of the covers to match and I would probably end up even more confused. The spouse walked in and saw me struggling and commented that it really shouldn’t be such an effort to change a doona cover. If I wasn’t wrapped in my doona-straightjacket at the time, I might have thumped him, because it’s not like he’s ever helped much in the whole bed-making thing over the years. He thinks his only part in this activity is when I require the mattress to be turned around. On these occasions, he may deign to stay a few minutes extra and help with the sheets, but he’s gone at the first opportunity. But I guess I shouldn’t be too surprised. Manchester’s really not his thing. I calculated that in 30 years plus of marriage, he’d never actually purchased one single item of manchester. That was, until we bought the king size bed and, at the persuasive bidding of the salesman, he lashed out and bought some bedding to go with it. I realised at that moment, why I’ve never really involved him in the manchester thing. He paid over $200 per pillow (yes, per pillow) for a couple of concrete-like slabs (I used mine once, almost cracked my head on it and relegated it to the spare room) and some weird kind of arctic underlay that supposedly keeps you (mortuary slab) cool in the summer. That too, has mysteriously gone missing …. and will stay that way, if I have my way. And I will, I can assure you. After all, I am Queen of the Manchester in this house (doona-wrangling fails notwithstanding, of course).

WINE TALK
IN MY KITCHEN
Pfeiffer Wines
Zucchini masala
2011 Cabernet Sauvignon Around $24.00
WITH ANITA McPHERSON I can keep enjoying lovely wine like Pfeiffer’s Cabernet Sauvignon. It has a deep purple and red color and a nose that reminds me of a vibrant, fruits of the forest homemade conserve. Matured in French oak, the flavor is deep and rich with a tumble of blackberries, cherries and black currants, but also with the lift of savory olive and herb. With great body and length of flavor, we found the wine worked nicely with chargrilled steak and just a simple rocket salad dressed with olive oil, allowing the wine to speak for itself. And it does so eloquently. Taste the range at the cellar door in Wahgunyah or visit www.pfeifferwines.com.au.

Milawa Butter Factory, 1891 THE butter factory which grew to become one of the biggest in the area, to be renowned overseas for the quality of its butter, and the source from which sprang the North Eastern Co Store, was officially opened on November 27, 1891.
WHAT to do with zucchini is a question I always get asked. You can pickle them, grate, add flour and make fritters, and then there is this curry, which is simple, packed with flavor and is delicious with rice. It can also be made ahead, and the flavor improves with time. Method Heat two tablespoons of vegetable oil in a saucepan. When hot, add fennel and cumin seeds and fry for 10 seconds. Add the onion, garlic, ginger and green chilli; reduce the heat and fry gently for 5 minutes. Add the cumin, coriander, turmeric, cinnamon, chilli, salt and pepper and stir for about a minute, until fragrant. Add the tomatoes and two tablespoons of water and stir for 2-3 minutes until paste-like. Add zucchini and stir well. Cover and cook over a moderate heat for 5 minutes, then uncover and cook for a further 10 minutes, until the sauce is thick and clings to the just soft zucchini. Stir in the fresh coriander and season with the lemon juice just before serving.

THERE is not a lot to like about getting older, but it seems to me like there is a bright side to almost everything. Just around the time when you start rolling your eyes at someone you love for telling you the same story about their childhood for the hundredth time, you realise you have kind of forgotten it anyway. And it’s strange that you have to turn the television up louder than you ever had to before to hear what people are saying, but the neighbors seem to be playing their music louder every day. But the best part is your eyes begin to fail right about the time more wrinkles and grey hairs turn up out of nowhere, so if you haven’t got your glasses on you don’t get too much of a fright. I’m hoping like hell my sense of smell and taste remain in tip top shape for as long as possible so

Men and weight loss
My superannuation pension
SO often we hear of weight management issues in relation to women, with men burying their heads in the sand, dismissing this serious health issue saying things like “it’s just middle aged spread” or “it’s my beer baby”. Healthy weight management is not just looking good or getting back into jeans that you wore 10 years ago. Serious health issues occur as a result of excessive and long term weight gain. We all know that obesity and weight gain increase your risk factors of contracting diabetes, cardiovascular disease, stroke, liver disease, increasing blood pressure, as well as putting extra pressure on your joints, ligaments and can lead to depression or low self esteem in some cases. This leads to a reduced quality of life and even the length of your life. Too often we dismiss less common signs and symptoms of excess weight to other things. These include: excessive gas (both burping and flatulence), snoring, candida, skin irritations, metabolic syndrome, elevated cholesterol and triglycerides,

elevated blood sugar levels, shortness of breath, sleep apnoea, poor sperm quality, low libido, digestive dysfunction such as irritable bowel, constipation or diarrhoea, just to name a few. All of the above diseases or signs and symptoms of obesity or increased weight gain are reduced or eliminated with reducing central obesity, coupled with the maintenance of a healthy weight range. Weight management shouldn’t rely on pills,
powders or potions. The basis of a sustainable weight management program should include whole foods that are easily accessible, easy to prepare and taste delicious. Changes to lifestyle are difficult for some and should be supported and monitored by your health care professional. Don’t let poor diet and lifestyle choices reduce your quality of life and cut short your time with your loved ones.

SO the time has come for a member to commence a pension from a Self Managed Superannuation Fund and I need to know what I need to do as the trustee. CPA Australia considers there are at least five necessary steps you must take. First of all you must review your trust deed. Many parts of the deed will influence what type of pension income can be paid, how these pensions are to be structured, operated and administrated, and what type of member can receive a pension. Of course you have kept the trust deed up to date with frequent reviews and it complies with present taxation laws. Then you must ask a question - Why is your fund paying a pension? Depending on the member’s age, as trustee you should prepare documentation to show the member’s superannuation benefit can be paid. A person needs to meet preservation rules which are different for those aged between 55 and 59 and those between 60 and 64. It may be the governing rules state a pension must be paid when a member reaches the age of 65, or he may ask that one be paid, or he may request a transition to retirement pension. Following this you need to obtain from the member some sort of “application form” and, as trustee you will need to document this pension. The member completes the application form after reviewing the Product Disclosure Statement (PDS) that the trustee will give the member. Issuing a PDS is important even for a SMSF trustee. There are some things that the member needs to inform the trustee about, as before a pension can be paid all the money has to be in the fund. The member should also be specifying the level of income and any other relevant characteristics of the pension they wish to have. From last July, the super fund member needs to initiate any transfer from other super funds and in some cases - especially from government super schemes – the member may have to pay upfront taxes on the amount transferred.

kclarke@alphalink.com.au Other issues that may need addressing include if the member wishes the pension to be paid to a specific person upon their death (called a reversionary pensioner) they must clearly specify who this person is, their date of birth and the relationship to the member. If they want lump sums paid after they die, will the member use a binding nomination, and if so what type and what does the trust deed permit? As trustee, you have an obligation to detail the characteristics of the pension, such as commencement date, date of first pension payment, the frequency and method of payment. You need this documentation before the pension commences, otherwise you may be deemed not to be paying a pension and also forbidden to take lump sum payments from the super fund. The final issue in relation to paying a pension is quite easy, but a lot of trustees get it wrong by not paying the pension payments on time. In particular, make sure the fund pays the statutory minimum. An example is for those aged 65 but under 75, they must take five per cent of their pension’s account balance each year. Not following this rule would deem you not paying a pension to the member and the fund’s earnings would be taxed at 15 per cent for the whole of the financial year. SMS Funds should not be taken for granted, as they need to comply with taxation rules like industry and retail funds, so record keeping is of vital consequence. The trustee will have certain responsibilities, but the member should seek independent advice from his accountant to make certain that is what he wants. And yes, I am still following the Warrnambool Cheese and Butter “public auction” and have a feeling that Murray Goulburn will miss out.
