A FASCINATION for decades with Japanese culture and the intriguing city of Tokyo led celebrated Beechworth chef Michael Ryan, owner of the Provenance Restaurant, to write his first book ‘Only in Tokyo - Two chefs, 24 hours, the ultimate food city’ with good friend and chef Luke Burgess. The intrepid chefs have shared their knowledge and love of the country’s capital city by giving readers a taste of favourite places and restaurants from their own cultural adventures, and there is a sequel in the works. “It was originally going to be a recipe book but the world doesn’t need another one, so I hooked up and collaborated with Luke – a talented chef and photographer – where I wrote the words and Luke snapped the photographs,” Michael said. “It’s not a travel guide, it’s more of a journal to give readers a feel of what the city is like and we could only focus on a small slice of Tokyo. “The book is like an insider’s guide to the city with lots of contributions from the hospitality industry.” Two years ago with the book idea set in motion, the chefs spent 10 days in Tokyo where they undertook the bulk of their research. They have been working on it since then and it was published this year with a local launch at Beechworth Books last month. Adelaide-born Michael who owns the award-winning Provenance Restaurant with his partner Jeanette Henderson, a qualified winemaker who also works there and helps with the cooking, has been intrigued with Japan since his high school days when he enjoyed studying the language and culture. Studying chemistry at Adelaide University with a career that followed in that profession, Michael studied Japanese in his early days at university but was unable to continue as the focus was on his science degree. But never losing his curiosity about Japan though, living in the country for six months just before switching careers at age 27 to become a chef. “I studied commercial cooking at TAFE in Adelaide, started cooking in the city and decided to move and work in Victoria,” Michael said.

Going on holiday and pets HERE are a few hints on the best way to look after your pet when you go away on holidays. Whatever option you decide is best for you and your furry family member, be sure to organise early. If you are going into a kennel in a peak holiday time, book ahead so you don’t miss out. Make sure you’ve got your cat or dog’s vaccinations up to date, and a flea and worm treatment is a good idea too. It is also important to have your microchip details current, and a pet name tag with your phone number is a great idea. There are many pet services out there from dog walking to private pet sitting, having a friend house and pet sit, taking your dog to a friend or family member’s house, or simply having the neighbour pop round to feed and check on your animal. If you’re going with one of these options, try and have some meet and greets with the person and your pet first. Have clear instructions for where to find food and water bowls, how much to feed and when. Provide contact numbers for yourself, an alternative contact and your vet, and supply

Have a run through showing your temporary pet carer where to find everything, and get them to spend time with your pet, so that everyone is comfortable! Can’t bear the thought of days without seeing your furry friend? Then take them with you! In this case, make sure wherever you are travelling to will be pet friendly. If you’re heading north to the warmer states, remember to cover your pet for paralysis ticks and possibly heartworm. If your pet hasn’t travelled before, or doesn’t travel well, spending time getting them used to the car - a process called counter conditioning - will be well worth the effort. For cats and dogs travelling in a crate, have that set up inside or in the backyard weeks before you plan to travel so your pet is used to it. Have familiar bedding in the crate or carry cage, and put little treats near the crate and then in-

side so your pet can get in, have the treat and leave. Gradually work up to have your pet spend short amounts of time in the crate, first with the door open (with treats or a favourite toy) then with the door closed. If your pet is distressed, stop and take a step back in the process to give them more time at the previous step. The same goes for the car, allow them to get used to it with a gradual introduction that avoids stress. Next close the door, and after your dog is comfortable the car can be turned on for a short while. Do these steps multiple times until your dog is happy, before moving to the next step and keep your pet entertained with treats, toys, games and maybe tasks (for example sitting, shake hands, lie down.) Work up gradually to short drives, then longer drives if your pet is calm and comfortable. When you are travelling pack food and water bowls and take regular stops for toilet breaks, a quick walk and a drink of water for your pet. Happy travelling.

Spring in the garden EARLY Spring can be an unusual time of the year, where we can get the odd warm day and mild night. The hint of a warm spring breeze renews our vigour and passion for the garden. Then all of a sudden a cold breeze, frosty night and an overcast day sends us running for jumpers packed away prematurely. The garden starts humming with bees and insects and many flowering blossoms of wattles, ornamental cherries and pears. Soil preparation is an important part of preparing your gardens for the warmer months ahead. By forking over the current beds, while being careful not to disturb the roots of pre-existing trees and shrubs, add compost, manures and mulch. Good soil should be rich with worms and organic material. As a result, the soil will achieve that earthy smell and crumbly texture, which will allow for air and water to pass through to the roots of your plants. When your soil is rock hard, plant-roots cannot penetrate the surrounding soil to place vital supporting roots, only for you to notice that your trees or plants are lacking vigour and have stunted growth, which will eventually cause them to fall over in strong, even moderate winds. The only way to improve this is to add additional gypsum (clay soils), compost, manures and mulch to the mix. It won’t happen overnight and shouldn’t be planted straight away. No-dig gardens can be ideal for severely compacted or rocky areas. This Day in History, 1891 WANGARATTA’S small but enthusiastic Salvation Army community turned out on this day to see their beloved commanding officer, “General� Booth at the Wangaratta Railway Station. At Albury, where a change of trains was required for the trip on to Sydney, the General had more time to greet another enthusiastic crowd of supporters.

Taking care down there WE are all aware of the bacterial ecosystem in the gut, but have you ever given a thought for the microbiota found inside the female reproductive tract? There is lots of awareness about the ‘bad dudes’ that hang out here, infection causing agents like candida (thrush), GBS (strep B in pregnancy), STDs like chlamydia and those causing vaginosis/vulvinitis and urinary tract infections like E. coli and staphylococcus etc, even parasites and worms can hang out in the urinary, reproductive tract causing a great deal of symptoms and distress. Whilst antibiotics are often needed to clear up serious overgrowth of these infections, recurrence is common. He found his way to the Falls Creek ski fields where he worked for three seasons as a chef and met his wife Jeanette there. “Before we moved to the North East we lived in St Kilda and Jeannette, originally from Dederang, was studying wine-making and wanted to return to the region. “We eventually undertook a tree change to Myrtleford 15 years ago where we opened our first restaurant ‘Range’ in 2005.” The business flourished

and in its first year of operation Michael was awarded a prized chef’s hat by The Age Good Food Guide where ingredients, taste, presentation, technique, value and consistency are among key areas of hat evaluation. The restaurant received two hats every year after, as well as ‘Country Restaurant of the Year’ in 2008. “We were fortunate to have some talented and exceptional waiters and front of house staff,” he said. Moving to Beechworth a decade ago to open Provenance Restaurant, which has received many accolades and a succession of two hats, Michael set himself apart from many Italian and Mediterra-

nean restaurants that existed around the region as well as his former restaurant. “I put a Japanese lens on to specialise and differentiate ourselves as there’s a world of choice out there. “We’re not a Japanese restaurant but use Japanese techniques and flavours in our cooking,” he said. When it comes to menu selection and sustainability, Michael shops locally for produce where possible, minimises waste and stays creative. Menus depend on seasonality which he says is the driving force for any change to new dishes. Among milestones in his career, Michael says his

change of profession has given him a great sense of achievement through creating a successful small business and being his own boss, with the Provenance winning ‘Best Regional Restaurant’ and Michael himself being named ‘Chef of the Year’ in 2013. “A move to the North East is another one and I love living in the country,” he said. Michael attributes his interest in cooking from watching his mother prepare meals when he was young. “My mum was a pretty good traditional Anglo cook and with me being one of seven kids, she was running a little restaurant every day,” he said.

“She used the Women’s Weekly cookbooks including a Chinese one for making chop suey which were great and accurate recipe books.” Sharing his love of Japan, five years ago Michael started taking annual tours with a group of 10 travellers to the country. “We visit Tokyo, Kyoto and Kanzawa, Izu Peninsula and Karuizawa, ” he said. In exploring markets, galleries and restaurants, Michael said there was a lot of eating and walking. “Favourite restaurants that I take the tours to are both Den and Florilege in Tokyo and Les Alchimistes in Shirokane with a favourite market, the Omicho in Kanazawa,

that is smaller than some but has everything with great seafood, meats, and vegetables.” When it comes to working in the restaurant industry, Michael said it is a tough field to work in with low margins and working 60-hour weeks. “You’re in it for love,” he said. “But it’s good as it keeps you young working with younger people, and I meet people of all nationalities.” In his rewarding career, Michael says chefs are needy people. “We love compliments.” Provenance Restaurant is also placed at number 30 in the Gourmet Traveller Top 100 Australian restaurants.

â—† SURPRISE CATCH: An elusive Lake Moodemere yellowbelly. This ďŹ sh was small and quickly released. I was stoked to ďŹ nally catch a yellowbelly in what is possibly my favourite carp ďŹ shing lake.

Trout still hit and miss THE trout ďŹ shing remains quite hit and miss around the region at the moment with some streams ďŹ shing better than others. On Sunday I spent most of the day ďŹ shing in the King Valley with my mate Andy. We only managed one trout, but it was a magniďŹ cent specimen of around 50cm. We did a lot of walking and made a lot of casts for that one trout. I was sent a report of eight trout being caught in the Buckland River last weekend with the biggest being around 30cm. The trout were caught on a combination of a Green Celta and a gold Super Vibrax spinner. The Kiewa River has been ticking over OK with a few trout being caught. Similar to last week’s report they have not been caught in great numbers however I have had a report of brown trout being caught as far downstream as Dederang. Other species are starting to bite around the region as things start to warm up. I ďŹ shed Lake Moodemere during the week where I landed one yellowbelly and one carp. I caught them both using worms as bait and a Paternoster rig.

with Rob Alexander WANGARATTA Yellowbelly have been stocked into Lake Moodemere in recent years. I have heard of the odd one being caught here and there but have not received any reports of them being caught in great numbers. Over the last week I have seen photos of yellowbelly being caught in Lake Hume and Lake Nillahcootie, but not in great numbers. This yellowbelly ďŹ shing will only improve as the weather warms up over the coming six weeks. A word of caution...watch where you put your feet. There’s been a few snake sightings around the place over the last week or two, and I have seen a few myself. If you see a snake, give it a chance to get away from you and you will have no problems.

ONE of the great things about science ďŹ ction is pondering whether the the fantastic inventions will ever be invented in the future in one form or another. It’s for this reason that I’m a big fan of the classic science ďŹ ction novels penned by Aldous Huxley, George Orwell and Isaac Asimov. Reading about what shape they believed the future could take is sometimes eerie and disconcerting - but always interesting. This week, I thought we’d take a look at some of the science ďŹ ction inventions that became a reality. 3D Printers Fans of Star Trek will remember the replicator. Replicators were devices capable of instantly materialising almost any object with a simple command. While 3D printers can’t quite pull objects out of thin air, they do act similarly to replicators, reproducing jewelry, food, and even body parts. Many tech experts believe that as the technology improves, they will resemble replicators even more closely. The Internet In his 1984 novel Neuromancer, novelist William Gibson predicted

In a re-release of the novel for its 20th anniversary, Jack Womack suggested that Gibson’s creation of cyberspace may even have spurred the development of the web. Universal Credit In his 1888 novel Looking Backward, Edward Bellamy introduced the concept of universal credit: The citizens of his future utopia carried a card with them that allowed them to spend credit from a central bank, without a need for paper money. Underwater Exploration Jules Verne’s works spawned a number of inventions, the most famous of which is the electric submarine. In his novel Twenty Thousand Leagues Under the Sea, he imagined a great underwater ship powered by electricity. The novel inspired American inventor Simon Lake; he invented his own submarine called the Argonaut in 1898. Mobile Phones Another famous Star Trek gadget was the communicator, which looked

similar to the cell-phones from a few years ago. Interestingly, our touch screen phones today have surpassed the technology imagined in Star Trek. Martin Cooper, who oversaw the invention of the ďŹ rst mobile phone in the 70s, directly credited Star Trek for inspiring his vision. Thomas A. Swift’s Electric Rie Children growing up in the early 1900s would have been familiar with the Tom Swift series of books. In the books, the main character Tom Swift made use of a stun gun. When NASA physicist Jack Clover invented the taser, he gave it that name as a nod to the series. TASER actually stands for “Thomas A. Swift’s Electric Rie.â€? Big Brother In January 2017, George Orwell’s 1949 novel 1984 made a fresh appearance atop the bestseller list; the book predicted several aspects of the modern world. Orwell wrote of a post-nuclear dystopian state monitored by an interconnected web of security cameras. In the 21st century, video surveillance is a part of everyday life, and individuals can be tracked through GPS.
