Nailing the kitchen rules By BELINDA HARRISON

IT’S a timetable rather than a set of battlelines which rules who’s allowed in the kitchen, and when, and the proof is in the cake (or cookie mixture) for Wangaratta’s Corena Bennett and daughter, Olivia (known as Livvie). Both women’s veins are stirred with a passion and knowledge for cooking, the desire to create visually stunning - and delicous - cakes and cookies baked deep within their DNA. For 13 year old Livvie, her earliest cooking memory is baking and decorating cupcakes with her Ma (grandma) when she was just three years old. “Ma is a retired Home Economics (Food Tech) teacher,” Livvie said. “I’ve spent a lot of time cooking with her since I was young and I’ve learnt so many skills and baking tips from her. “She was the one who encouraged me to enter the Wangaratta Show when I was 11 years old.” ‘Ma’ entered her cakes frequently at the Wodonga

Show in the 1960s so one can only imagine what tips and tricks she’s had to share with her granddaughter to ensure victory over more seasoned cake-baking entrants. Livvie’s great-gran also imparted an important tidbit, along with her lamington recipe, before she passed away: “She would say that the best tasting lamingtons are the ones you ice by spreading the chocolate icing with a flat knife on each side of the lamington (not dipping them in chocolate), then sprinkling them with coconut,” said Livvie. “I always enjoyed talking to her about baking and I look back fondly on those times and on all the time I’ve spent cooking with Ma or Mum because it’s nice that we have a passion we all share.” Livvie’s goal is to one day open her own cafe-style bakery with a cute and creative interior to display her freshly baked desserts, special orders and an eat-in or takeaway option.

Watch for heat stress THE warm weather has started around the region and will only continue to get hotter as we head into summer. This means you need to be thinking about heat stress in your pets. Heat stress occurs when animals are unable to maintain their normal body temperature. Unless treated quickly, heat stress can cause permanent injury to vital organs and possible death. All animals can be affected with heat stress, but short nosed breeds, such as Bull Dogs, Pugs and Boxers are more susceptible due to their respiratory tract structure. Heat stress is also more likely in animals with a pre-existing disease, such as cardiovascular disease, fever from infection, obesity and upper airway disease. Initially you will see an increase in activity associated with panting and barking as your dog becomes agitated. As the heat stress progresses, panting becomes excessive and laboured and your dog will not be able to breathe properly. Dogs will also drool excessively and may vomit or have bloody diarrhoea. If this is allowed to continue, your dog will suffer collapse of the circulatory system, its gums will go blue and it may lose consciousness or die. Cats achieve heat loss on hot days by licking their paws and spreading the saliva over their extremities. In hot

Cats will also pant and become agitated when affected by heat stress. Never leave a dog or cat confined in a hot house or shed and never leave animals unattended in cars! Provide copious quantities of cool, clean drinking water and ensure the container cannot be knocked over easily. Don’t leave containers in the sun. Trim or clip the coat of long-haired dogs and cats, particularly if they are middle-aged or older. Only exercise dogs in the cool of the morning or evening. Use the hose regularly to keep your dog cool, gentle hosing on the neck is the most effective way of alleviating heat stress. If your pet is suffering from heat stress, place it in a cool bath or hose it down. Place ice packs over large blood vessels, over the inside of the upper hind leg and over the neck. Cover the body with a wet towel and place in the path of a fan. Contact and transport your pet to the vet covered in soaking towels and ice packs, as soon as possible.

Geraldton Wax and Tea Tree

GARDENS everywhere are bursting out in glorious colours. Two particular favourites - Geraldton Wax (Chamelacium unincatum ‘Purple Pride’) and Tea Tree (Leptospermum ‘Tickled Pink’) are so full of flowers that the leaves disappear under their robes of pink and purple. When they are in full bloom, it may be difficult to tell the difference between these two beauties as they flower at the same time in spring. A close examination of the two photos (above) helps in identification. Both have flowers with five pinkish rounded petals surrounding a central disk and pistil, encircled with a ring of stamens. Geraldton Wax has a pink central disc; ‘Tickled Pink’ has a green central disk. The Geraldton Wax flowers are quite stiff and waxy, ‘Tickled Pink’ has soft, delicate petals.

Both flower profusely and obscure fine foliage. Geraldton Wax ‘Purple Pride’ is an all-time favourite. It is a medium to tall shrub approx. 3m x 3m It’s been a mainstay of florists for generations. Dainty, rounded purple buds appear in early spring and are borne on neat upright stems. Full-flowering is gradual - waxy pink blossoms burst and eventually smother the fine dark green foliage. The long-lasting flowers mature to darker shades of purple over several weeks and can remain on the shrub for up to two months. Geraldton Wax is long-lived. If left unpruned, it can become rangy. Pruning after flowering will encourage new growth and maintain a more compact shrub. Full sun or part shade and a well-drained soil will give

spectacular results. It is also suitable for large tubs or containers. Leptospermum ‘Tickled Pink’ is a medium shrub approx. 2m x 2m. It has a more upright growth habit than ‘Purple Pride’. Flowering is spectacular, rapid, and relatively brief. It’s all over in about two weeks. The flowers are followed by woody seed capsules which are retained on the shrub. Leptospermum ‘Tickled Pink’ prefers full sun or partial shade. In our garden, plants in full sun burst into bloom almost two weeks earlier than those in shaded locations. As with all Leptospermums, ‘Ticked Pink’ can be hard-pruned and is long-lived. Both are wonderful garden features and are readily available from nurseries.

“I would also love to be a contestant on one of the baking shows on TV.,” she said. “I think it would be so much fun to share my passion with others and learn from people in the industry. “For my 11th birthday, my parents arranged a cooking lesson with Kate Ferguson, the winner of ‘Zumbo’s Just Desserts’ and she shared baking tips with me - it was the best birthday present ever.” For Livvie’s mother - Corena - a rewarding 24-year teaching career ensured her love for baking remained just

a hobby until last year her hobby rose to become something more. “I have been part of the Casual Relief Teaching (CRT) roster this year but prior to that I worked at St Bernard’s Primary School for 15 years, which is when my husband Paul and I moved to Wangaratta,” Corena said. “In July 2019, I attended a cookie class organised by Jade, the owner of ‘Cookies By Kara & Moo’, followed by cookie decorating classes she held throughout the rest of the year. “I enjoyed the first one so much that I attended every sin-

gle one after that. “I learnt so many new skills and I loved the creative side of cookie decorating that I decided to start my own business - Keen for Cookies. “I specialise in sugar cookies, which are cookies decorated with royal icing as opposed to fondant and I find I can be a little more creative when decorating with royal icing.” Corena offers gift packs for any occasion and one of her favourite holidays to create and decorate specific shapes (and make those shapes come alive with colour and texture)

◆ REWARD FOR EFFORT: A nice brown trout caught drifting worms in a small North East Victorian stream after last week’s widespread rainfall.

Local high, dirty streams are still producing trout THE recent rainfall has led to the water in the trout streams being high and dirty. Now is a great time to drift worms as bait. Trout love to feed on whatever is there, naturally in the environment. When the grass is dry and the weather warm, they love to eat grasshoppers. After Christmas when there is an abundance of crickets, trout love to feed on crickets. When it rains and the ground is saturated, worms wash into the waterways and trout love to feed on worms. I fished a couple of small streams in the Ovens River catchment last Thursday and caught a number of trout on worms. I was using a small hook, and two small split shot sinkers to help combat the strong current, and the trout just couldn’t resist my bunch of worms. As with the last few weeks Lake Nillahcootie is still fishing very well. A few days ago my dad, my daughter Holly and I went over there. We were fishing from the boat. We managed to catch 10 fish four yellowbelly, four Murray cod and two carp.

A brief history of telling the time with Rob Alexander WANGARATTA The cod were released, two yellowbelly were released and the carp met their maker. My friend Rohan from the YouTube channel RKJfishing fished Waranga Basin last week where he caught a nice redfin and a few small ones. All fish were caught on lures fishing from his kayak. Reports of both yellowbelly and redfin are increasing from Lake Hume. As the weather warms up so too does the yellowbelly fishing. I have seen a lot of photos of yellowbelly caught at Lake Hume over this last week with the biggest being 62cm. If you want a feed of yellowbelly, head to Lake Nillahcootie. If you want to catch a trophy sized monster yellowbelly, head to either Lake Hume or Lake Eildon. From now until late November is the best time.

WE live in a world where time is all important. Nanoseconds mark the difference between success or failure to make an electronic transaction and where we are continuously reminded of “the time”: of being early or late, of having missed an appointment or arriving “before time”. In today’s world, time now governs our life. In his bestseller, A brief history of time, the late, great physicist Stephen Hawking reminded us that: “The increase of disorder or entropy is what distinguishes the past from the future, giving a direction to time.” The arrow of time does carry us forward, and humans have measured this time through the ages in different ways. Sundials and water clocks As the sun moves across the sky, shadows change in direction and length, so a simple sundial can measure the length of a day. The Ancient Egyptians used simple sundials and divided days into smaller parts, and it has been suggested that as early as 1500BC, they divided the interval between sunrise and sunset into 12 parts. The sundial (of course an effective instrument only when the sun shines) was refined by the Greeks and taken further by the Romans a few centuries later. The Romans also used water clocks

which they calibrated from a sundial and so they could measure time even when the sun was not shining, at night or on foggy days. Known as a clepsydra, it uses a flow of water to measure time. Typically a container is filled with water, and the water is drained slowly and evenly out of the container, while markings are used to show the passage of time. Oil Lamps There is archaeological evidence of oil lamps about 4000 BCE, and the Chinese were using oil for heating and lighting by 2000 BCE. Oil lamps are still significant in religious practices, symbolic of the journey from darkness and ignorance to light and knowledge. The shape of the lamp gradually evolved into the typical pottery style shown. It was possible to devise a way of measuring the level in the oil reservoir to measure the passing of time. Candle Clocks Marked candles were used for telling the time in China from the sixth century CE. There is a popular story that King Alfred the Great also invented the candle clock, as historians know they were in use in England from the tenth century CE. However, the rate of burning is sub-

ject to draughts, and the variable quality of the wax. Like oil lamps, candles were used to mark the passage of time from one event to another, rather than tell the time of day. Hour Glasses or Sandglasses As the technology of glass-blowing developed, from some time in the 14th century it became possible to make sandglasses. Originally, sandglasses were used as a measure for periods of time like the lamps or candles, but as clocks became more accurate they were used to calibrate sandglasses to measure specific periods of time, and to determine the duration of sermons, university lectures, and even periods of torture. Mechanical Clocks Christiaan Huygens made the first pendulum clock, regulated by a mechanism with a “natural” period of oscillation in 1656. Galileo studied pendulum motion as early as 1582, but his design for a clock was not built before his death. Huygens’ pendulum clock had an error of less than 1 minute a day, and his later refinements reduced his clock’s errors to less than 10 seconds a day.
