HE may be part of the sixth generation of a family that has been an integral part of Rutherglen’s winemaking industry since the 1850s, but Stephen Chambers believes it is never too late to learn more about winemaking and reexamine traditional ways of doing things. He has been making wine at Chambers Rosewood since the turn of the century, but says even that amount of time is not long at all in a typical winemaker’s career. But 2018 has been a banner year for Stephen and the winery. The company’s Old Vine Muscat was awarded a gold medal at the Sommeliers Wine Awards in London, while the winery and its product were once again acknowledged in the James Halliday Wine Companion. Chambers Rosewood product also performed well in the top 100 of the well known Langton’s Classifications, and in the recent Rutherglen Wine Show, the winery made an impressive showing, scoring three gold medals, two silver and two bronze.

Don’t make extra income a headache WITH tax season drawing to a close, the Australian Taxation Office (ATO) is increasing its efforts to identify taxpayers who fail to report all their income this tax time, as it strives to recover an annual tax shortfall of nearly $1.4 billion caused by individuals who leave income out of their return. “Tax lost from under-reported income is a significant cost to the community,” said assistant commissioner Kath Anderson. “While the amounts might be small individually, together they are adding up to a lot.” Ms Anderson said the ATO prefills as much information as possible to help taxpayers to get their income right, but warned that those who deliberately leave out income could face consequences. “We understand that people make mistakes and can forget to include some of their income,” she said. “But those who leave out income to avoid paying their fair share of tax should be aware that there can be penalties and interest. “Penalties can range from 25 per cent up to 75 per cent of the shortfall, in addition to paying the money owed.” According to Ms Anderson, some Australians don’t realise they need to report all their cash income. “The most common mistake we see is taxpayers leaving out cash wages,” she said. “But we are also seeing tax-
payers either deliberately or accidentally failing to include income from second jobs, capital gains on cryptocurrency, the sharing economy, the gig economy, and foreign-sourced income.” The ATO is developing advanced analytical tools to analyse the vast amount of data it receives to identify instances where income has gone unreported. According to Ms Anderson, new information relating to foreign income will enable the ATO to shine a light on Australians who are earning income overseas but not paying tax on it. The ATO now has other information sources that allow it to identify omitted foreign income, including data obtained from AUSTRAC (Australian Transaction Reports and Analysis Centre), FATCA (Foreign Account Tax Compliance Act) and other international exchange of information agreements. In addition, the ATO will exchange information with over 100 foreign tax authorities under the Common Reporting Standard (CRS) to identify Australian residents with sources of foreign income. This will supplement data from the tax treaties with more than 40 countries, including all major trade and investment partners and provide increased information on Australian residents’ foreign income.

FROM the early 1400s, the Chinese, Portuguese, Spanish, Dutch, British and French sailed near the Southwest coast of Western Australia. It was a coastline fraught with danger. Some vessels sought shelter from storms whipped up by the ‘roaring forties’. Some were expeditions, mapping the coast and investigating the landscape and its vegetation. The south-west of Western Australian is a botanist’s paradise and worldrenowned “biodiversity hot spot”. The French biologist Jacques Labillardière sailed with the expedition of D’Entrecasteaux, in 1792. In December the ships encountered severe storms and, exhausted and short of water and food, sought shelter near Esperance Bay. The biologists put their time on land to good use. Labillardière’s vast plant collection included Chorizema illicifolum which
“was found with many other plants in a marly soil”. The name for this brilliant flowering plant is aptly named. The Greek word Choris means a dance and Zema means food or a drinking vessel. Labillardière’s botanical collections were published between 1804-1806 and were the first important publications on the botany of plants of Western Australia. There are about 25 species of Chorizema. They are members of the pea family. C. illicifolium is one of the most widely grown. This dense semi-climber reaches around 2 metres x 2 metres, Leaves are variable, but they are often heart-shaped with toothed margins. Flowers are spectacular, borne profusely in loose racemes from Septem-
ber to December. The standard is orange, red and yellow, the keel is purple/pink. There are various other forms, including one with a clear yellow standard. All Chorizema species are suitable as garden or container plants. Chorizema species will grow in most relatively well-drained, moist soils. They enjoy dappled shade or partial sun. Some will tolerate full sun. They should be pruned after flowering to retain a denser form. C. illicifolum may be cultivated successfully from scarified seed. The seeds are tiny and need to be collected as soon as the pods mature. It is advisable to store in the freezer for a few days to kill seed-eating insects. C. illicifolum can also be grown from cuttings.

Grass seeds THE time of grass seeds causing problems is almost upon us again. Grass seeds cause all kinds of problems in dogs and other animals because of their tendency to stick in places they are not meant to go. Grass seeds are often retrieved from under the skin, between the toes and out of the external ear canal. They cause local irritation and then infection by carrying bacteria into places that should be sterile. Dogs will shake their heads as a cause of this irritation when they have a seed in their ear or walk with their head tilted to one side. Grass seeds under the skin cause abscesses that are seen as a lump that may or may not be draining pus or bloody fluid. Dogs will often lick at these areas alerting you to a problem. Grass seeds have also been retrieved from the oral cavity (stuck next to teeth), the nasal cavity, the urogeni-
with Tim Craig BVSc, VETERINARIAN tal tract (prepuce, urethra, vulva) and from within the abdomen and chest cavities. Dogs can inhale grass seeds into the airways of their lungs as well. It is best to retrieve grass seeds promptly before they have a chance to set up an abscess or ear infection. They tend to burrow like a fish hook where they can only travel inwards and not backwards. Once they have moved away from the original site of entry they can be very frustrating to track and find. Prevention of grass seed problems should be aimed at keeping dogs on leads where grass seeds exist (eg long grass on farms or at the edge of parks), keeping grass short (not allowing it to seed) and monitoring and checking for any sign of seeds (commonly ears, nose, mouth, armpits and groin).

Stephen said he appreciated learning from previous generations when it came to kick starting his career, saying that knowing how certain problems were addressed before, or what the winery did with certain varieties, was valuable information. Looking back to see how the winery addressed different seasonal conditions in the past was also useful, Stephen explained. “It gives you a greater appreciation of what has been done,â€? he said, adding that while he learned some of his trade by studying at a tertiary level, there is no substitute for simply working in the industry. He said the winery does not simply make wine, though – a farm on the property also sees the family raising fat lambs and occasionally breeding ock rams. “It diversiďŹ es the business,â€? he said, adding that one of the beneďŹ ts of run-
ning the two enterprises side by side is the ability to supplement feed with grape marc produced by the winery. Stephen said that the recent award and wine guide recognition of the wines produced by the winery has been very satisfying. He said that the two kinds of recognition can be very different, with wine critics often tending to be invididuals with their own preferences and opinions, while wine shows combine the judgements of a panel of people. “It’s a good way to see how you sit amongst your peers,â€? he said of wine shows. “Wine is about diversity – people are all different.â€? What really keeps him attracted to winemaking is how the impact of a range of factors, especially seasonal ones, can have on the ďŹ nal product. “Part of it is the challenge,â€? Stephen said of his work. “No two years are the same.
“I’m always creating something, and doing something new. “It’s like one big science project. “You continually learn new things.� Stephen said he liked to experiment with different grape varieties whenever possible, with rare variety gouais blanc being among his favourites, and he also enjoys muscadelle because of its late ripening nature. Looking to the future, Stephen said wine producers will need to be more adaptable than ever, with warmer climates, water availability and other factors, such as growing worries about food availability, all set to impact viticulture and agriculture alike and force people to be more adaptable and resourceful. But he said he had no fear that Chambers Rosewood, and the industry as a whole, would adapt. “The Australian wine industry has evolved, and the wine we consume has evolved,� Stephen said.

◆ PERFECT BAIT: Freshwater shrimp are possibly the best bait there is for redfin and yellowbelly. To keep them alive you must have an aerator of some description to oxygenate the water well.
I LOVE this time of the year. There are so many fishing and fishing related adventures to be had. Last week I ventured over to Greens Lake and Waranga Basin in Northern Victoria. This is out of my readership area I know, but I caught quite a few small redfin in both lakes and had lots of fun. Small soft plastics and bladed spinners were the go. My dad, Terry Alexander, has been having the time of his life at Lake Nillahcootie recently. Dad has been catching quite a few yellowbelly on small yabbies.
He prefers to use live shrimp as bait, but they have been hard to come by recently with the water being a bit cool still. That could be all about to change though. I went yabbying in Lake Moodemere on the weekend with my kids and I wanted to know whether it was a good yabbying lake. I managed to catch a dozen or so yabbies, mostly small. The real eye opener was the number of freshwater shrimps that I caught. Every time I pulled my yabby nets up, there were two or three large shrimp in there, not to mention the ones that
were falling through the mesh. I suspect that the shrimp will start biting in the local rivers very soon and once again we will be able to get our hands on the best freshwater bait there is. I had a report from Kaiden Long, who camped on the upper Ovens River last week with three of his mates. The four young men fished for three days and they caught 45 trout with the biggest being a magnificent 46cm brown trout. The fish were caught on a variety of lures, and Kaiden was stoked to have caught his first trout on a Strike Tiger nymph soft plastic.

Staying positive on body image SOMETIMES the words of others stick in your head. The words that i observed another naturopath say to a young impressionable teenager still ring in my ears when i consult with young girls who have body image issues. Here are her words. Regardless of how beautiful you truly are or how gorgeous you look in the eyes of others, women are still choosing “unhappy” (according to our health appraisal questionnaire at our clinic). The reason? “I don’t like my belly”, “my arms wobble”, “My thighs have hail damage or stretch marks” Young girls and older women are not happy. Is it time for a revolution or our thinking. What is real? What is not? The media calls us apples and pears, labels our body parts with degrading names such as spare tyre, jelly rolls, tuck shop arms, promotes non-sus-
tainable fad dieting such as ridiculous powdery shakes that replace food, slim teas, dietary magic pills. It showcases size 6 models that by genetics or starvation show us their tiny bodies without curves marketing the most desirable women’s products. Women are photo-shopped by a media driven world where “perfection” and “flawlessness” is fake…but the worst thing of all is this…the marketing experts tell us that this is what women choose! It’s what we want! I am here to tell you that your body shape is not much different from other women who are “keeping it real” in life! If this is unhappy YOU, try this way of thinking instead. 1. Confidence looks good on everyone. 2. If you look back to your younger years now to a time when you felt “fat” or “ugly”, how do you feel about it
now? (I am guessing you looked quite good). How will you feel in 10 years’ time looking back on yourself to now? 3. People see you differently to how you see yourself. 4. Focus on a healthy body and being the best you can be. Your body is a vehicle to transport you thorough life. If it is limiting you from doing all you want to do in life – change this limitation by implementing a positive, healthy wellbeing plan. 5. Talk to yourself positively and encouragingly as you would to a friend. Tell yourself what you love about you every day. In time, extend this further to your whole body, your personality and your intent for others. It feels good! 6. Life is short – Live, love and laugh often and be the best version of yourself. This Day in History, 1927 OCTOBER 31, 1927 saw the branch railway to Peechelba East opened. The line was built to link the main north eastern railway to a port on the Ovens River near the soldiersâ&#x20AC;&#x2122; settlement. To make the dressing, combine the tahini, rice vinegar, tamari, sesame oil, maple and garlic and whisk to combine. If it is too thick, add a splash of water, just enough to loosen it up so itâ&#x20AC;&#x2122;s a thick pouring consistency. Season with sea salt and black pepper. 2. For the oil, place the ginger, gar-
lic, chilli and salt in a small bowl. Heat the oil in a small pan for 3-4 minutes (the temperature should reach 165Ë&#x161;C â&#x20AC;&#x201C; 180Ë&#x161;C â&#x20AC;&#x201C; be careful not to overheat the oil or it will burn the spices) until the oil looks thin, like the consistency of water. Turn off the heat and very carefully pour the oil over the spices. Allow to cool, and then stir before serving. 3. Lay the QukesÂŽ on a chopping board, and using the side of a wide knife or a rolling pin, gently smack the cucumbers until they break apart. Tear or cut into bite size pieces. Sprinkle generously with salt and allow to sit for 10 minutes to draw out excess water. Drain off any moisture. 4. Add the sesame dressing to the QukesÂŽ and toss to coat. Drizzle over the spicy oil, scatter with sesame seeds and ďŹ nish with coriander. Season with sea salt and black pepper.

The curse of hayfever - nature’s very unfunny joke our bodies when we suffer from hayfever. What is hayfever? The first thing to note about hayfever is that it isn’t necessarily triggered by exposure to hay, and it usually doesn’t result in a fever. The confusion surrounding the name arose in the 1800’s when the symptoms were misattributed to the scent of fresh cut hay. This likely arose due to the fact that farmers often cut hay around the same time of year that the majority of pollen is floating around in the air. The proper term for the condition is actually ‘allergic rhinitis’, which basically means inflammation and irritation of the mucous membrane in the nose. The allergic response to pollen is similar to that of dust and cat hair, or, as I like to call
them, ‘the Devil’s Trifecta’. When pollen first enters your body, it’s immediately met with the ‘security guard’ of your body - the ‘antigen presenting cell’. This cell engulfs the pollen, pushing small pieces of it out onto its own surface. This is a vital step as other immune cells can’t detect foreign invaders and rely on the antigen presenting cell to signal the warning and make the foreign invader visible to them. One cell in particular, the T-cell, will alert even more immune cells once the antigen presenting cell has engulfed the foreign body. The most important cell to be alerted is the B-cell, which, once hearing of a foreign invader, will begin producing large amounts of antibodies called immunoglobulin E. The antibodies will then
disperse into the blood and attach themselves to two more types of immune cells - mast cells and basophils. When the allergen next enters your body, antibodies on the mast cells and basophils will catch the allergens, making them stick to the immune cells. When this happens, the mast cells and basophils will undergo a process called degranulation, where they release large amounts of chemical compounds known as histamines. These chemicals trigger the dilation of vessels in your nose and heavy mucous secretion resulting in a runny nose, sneezing and congestion. Why does hayfever occur? In a normal immune response, where the foreign invader is actually dangerous, this process is vitally
important in protecting our body from bad illnesses and diseases. It is the groundwork that allows the rest of the immune system to get to the infection quickly while they are caught by the mast cells and basophils, and repair any damage to the body. In a hayfever sufferer, the immune system is simply overreacting to a innocuous invader, such as dust particles or pollen, resulting in frustrating symptoms that, in essence, make you feel unwell even when you really aren’t. While scientist still haven’t really gotten to the bottom of why some people suffer from hayfever while others do not, some researchers have hypothesised that it is due to over sanitised environments, pollution, or potentially vitamin D
deficiencies in childhood. As someone who has contended with this condition their whole life, I’m inclined to believe it’s a combination of all three of those hypotheses. What are antihistamines? One way to contend with the symptoms of hayfever is to take an antihistamine. An antihistamine, as they pertain specifically to allergic reactions, neutralise the effect of the histamines released by the mast cells and basophils. No histamines, no dilation of vessels in the nose - no mucus, sneezing and itching. Okay dear allergy sufferer, now that we’ve dived deep into the cause and effect of hayfever, do you feel any better? No, I can’t say I do either. Bring on winter. Originating as a segment on Ellen’s show, Game of Games is a light-hearted game show hosted by TV Week Gold Logie award winner Grant Denyer and radio personality Ash London,
Each week, contestants answer questions under crippling pressure, face free-falls into the unknown and manoeuvre their way through a series of messy and manic obstacles. Moving through several rounds, plucky competitors go to hilarious lengths to ensure they’re the last ones standing to win a large crash prize. Just on the episode I saw

alone, competitors attempted to climb a greased-up, slippery pyramid while being pelted with an oversized ball, were doused with messy substanc-
es for getting questions wrong, and suspended in mid air while being quizzed, just to name a few. It’s fun, there’s a little dose
of schadenfreude in watching people fall over and fail, and Denyer is a reliably entertaining and cheeky host. However, I found myself
watching the clock during this show as the number of rounds to eliminate people seemed never-ending, so I felt it ran a little too long for a game show.
