CONQUERING SUMMER COLORADO STYLE It’s tough to imagine a Colorado summer and fall with more options to illuminate the senses. The pandemic boomerang has everyone scrambling to schedule events with an eye toward making up for lost experiences. The music scene has never been so robust. From Gunnison to Fort Collins and most cities between, music will fill the cool evening air. Whether your jam is 250-year-old sounds composed by Wolfgang Amadeus Mozart or Lizzo’s latest, the superstar performances coming at you in 2022 are uncorked. Speaking of popping the top, wine, spirit and beer fests are rolling again. Is the Great American Beer Festival too much to handle? How about a smaller brew fest in Arapahoe County, Keystone or Vail? Car shows, fine arts fests, motorcycle rallies, hot-air balloon launches, foodie gatherings and comedy shows are available to entertain Colorado crowds throughout the year. You can find all of these ideas in our events calendar in the center of the magazine. We also have stories on cooking with cannabis, hiking peaks that are over 13,000 feet, a fishing guide, breweries, and a spirit house that will impress someone on date night. Ross has spent his entire life running around Colorado. Along the way, he picked up a degree at Metro State and learned a lot from family and friends. He married a woman with two daughters 29 years ago and learned even more about life. His spouse still energizes him more than a Colorado Avalanche appearance in the Stanley Cup finals (and that’s a helluva lot). The first half of his career was a thrill ride with various community newspapers. Magazines and advocacy publications have kept things exciting for the past 18 years. Yep, he was in the game of words when computers were still the new, big deal (“go to file” and “save often”).

olorado may be known for mountain peaks that exceed 14,000 feet in elevation, but there’s an abundance of 13,000-foot mountains that don’t get the recognition they deserve. Often side-by-side with well-known fourteeners, hikers and climbers should consider these 13 alternatives if they’re interested in the same mountain beauty with considerably less foot traffic. Mountains are ranked in a class system. Class 1 is the easiest and class 5 is the most difficult.

Bennett Peak 13,203’

CLASS 1

A perfect hike for the family, Bennett Peak is a class 1 hike in the San Juan Range. It has an easily accessible trailhead, and mileage-wise, it’s a short hike to the summit. The easy trail crosses tundra with a sea of wildflowers (depending on the time of year) that can make for great photo opportunities.

West Elk Peak 13,035’

CLASS 2

By mileage, this is a strenuous hike that will take most of the day. Given the fact that the peak is centrally located in the West Elk Wilderness northwest of Gunnison, hikers will get their money’s worth in exercise. But for those who value solitude and non-technical tundra terrain hiking, West Elk Peak is worth it.

North Apostle 13,860’

CLASS 2

Hikers who have a vehicle with good ground clearance can shave off a few miles of walking for this hike. If not, it is still manageable in a single day if starting from the ghost town of Winfield in Chaffee County. North Apostle is frequently summited with neighboring Ice Mountain. These two peaks, along with West Apostle, comprise the Three Apostles.

Wildhorse Peak 13,266’

CLASS 2

With easy access from Loveland Pass, Mount Sniktau is a perfect day hike for Denver residents looking to escape to the mountains, or tourists eager to get a taste of the Rocky Mountain life. Climbing enthusiasts looking to scratch peaks off their list can easily summit Mount Sniktau with Grizzly Peak and Cupid Peak in a single day.

From a distance, Wildhorse Peak’s steep and rocky face protruding from the tundra landscape looks a lot more intimidating than it is. Thanks to an easy route through the rocks near the summit, it remains a class 2 hike. However, the summit is highly exposed, with cliffs dropping off in nearly all directions. Climbers are advised to approach the peak from Engineer Pass, which can be accessed from Silverton or Lake City.

The Spanish Peaks, west of Walsenburg, are a prominent feature in the area, as they are isolated from other peaks in the Sangre de Cristo Range. The west peak is a very accessible hike with a trail rated between class 1 and 2. As hikers near the top, there is a false summit at nearly 13,500 feet. From there, a more prominent trail will become visible, leading to a summit with a breathtaking 360-degree view.

Starting from the Piney River Ranch trailhead, Mount Powell is the highest summit in the Gore Range. Despite being the tallest, it’s one of the easiest in the range compared to some of its neighboring peaks that are more technical. While the exposure is minimal, an ice axe is recommended, depending on the chosen route.

Pacific Peak 13,950’

Located within Rocky Mountain National Park, Chief’s Head Peak can be climbed in a single day by the most ambitious hikers, but many choose to climb it in a one- or two-night backpacking trip. If done in a backpacking excursion, a backcountry camping permit will be required and should be obtained in advance. Several miles on a well-worn trail will lead hikers out of the shadow of Longs Peak and the more crowded areas of the national park.

CLASS 2

A class 2 hike located in the Tenmile Range near Breckenridge, Pacific Peak is neighbored by Crystal Peak and Atlantic Peak. They can all be submitted in a proposed loop hike that will allow hikers to see high alpine lakes and an abundance of summer wildflowers. The recommended trailhead is in McCullough Gulch, which is accessible by a county road that is also used for Quandary Peak, so weekends can be more crowded as a result.

Wasatch Mountain 13,555’

CLASS 2

An old mining road will lead hikers on a casual climb up Bridal Veil Basin above Telluride to Wasatch Mountain. The remainder of the hike is a steeper ascent through tundra, rock and scree. This summit is frequently done along with La Junta Peak and Jackass Point, which are also thirteeners, in a single day. Those interested in mining history will love this hike and the incredible mountain scenery. Afterwards, head into Telluride for a celebratory dinner. Note that high-clearance vehicles are recommended for reaching the main trailhead.

Parry Peak 13,391’

CLASS 2

Heading west on Interstate 70, Parry Peak is one of the visible peaks along the skyline when entering the Rocky Mountains near Floyd Hill. It’s often combined with Mount Eva and Mount Flora, which are also easy thirteeners. Those who want to challenge themselves can add in James Peak to the north for an opportunity to hike a long stretch of the Continental Divide. The best way to accomplish the four-peak summit would be to park one vehicle at each end of the trail.

2 MORE FOR EXPERIENCED CLIMBERS Sleeping Sexton 13,460’

CLASS 4

Chances are you’ve seen Sleeping Sexton and didn’t know it. That’s because this rugged class 4 thirteener is located near one of the most photographed views in the state, the Maroon Bells. As beautiful as these mountains may be, they can be extremely dangerous, and climbers need to be prepared. Hikers can summit the mountain in one day and be back in Aspen for happy hour, or they can extend the journey and make it an overnight backpacking endeavor.

Jagged Mountain 13,824’

CLASS 4

Jagged Mountain in the Weminuche Wilderness of the San Juan Mountains is an extremely technical climb. It is considered a Centennial Peak, meaning it is one of the 100 highest mountains in Colorado. Among the Centennial Peaks, Jagged is considered one of the most difficult, and its steep, rocky terrain makes its name very fitting. Its remote location also requires a multi-day backpack trip regardless of skill level.

Kaitlin Boyer Finds Solace in a State of Flow Manitou Springs guide thrives in fly-fishing community By Kristian DePue

J

oan Wulff is known among enthusiasts as the First Lady of Fly Fishing. Early in her life, she bested the boys in distance casting. And she has written numerous books on casting techniques. In her mid-90s, she is reportedly still angling. Introducing fly-fishing guide Kaitlin Boyer – Wulff’s potential successor. The daughter of Montanans, Boyer and her poles reside in Manitou Springs — the eclectic, historic community just west of Colorado Springs. Boyer started fly fishing 12 years ago with her father, after moving back to the Centennial State following several years in the Pacific Northwest. “I’m a tomboy and wanted to do everything that my dad and brother did,” says Boyer. “While I was gone in Oregon, my dad got really into fly fishing. He started teaching me on camping trips and by 2015, I was totally obsessed. It’s special to me, the connection that my dad and I have.” In the spring of 2017, Kaitlin loaded her parent’s camper and spent the summer in Leadville, where she completed a college accredited certification in fly-fish guiding at Colorado Mountain College. “I initially went to school for nursing but struggled, and started fishing as a way to relax,” Boyer says. “Eventually, I was skipping school to fish. People began requesting me to take them out — but with that, you need training.” After an immersive six weeks, earning 13 college credits, Boyer became a certified guide and learned all things fly fishing, including aquatic entomology.

“This is Sarvis Creek Wilderness with a friend from Idaho. Her fly choice seemed questionable: a Chubby Chernobyl. I thought it wouldn't catch because of how obnoxious it was. Sure enough, she hooked this stunning rainbow trout. I was able to net it, we shared a good laugh, and now the Chubby Chernobyl is one of my favorite flies.” — Kaitlin Boyer

“Different rivers have varying species of aquatic insects, and those are what we’re imitating with our flies,” Boyer says. “In a tailwater, the bugs are going to be different than the ones in a freestone course. The bugs in freestone water are going to be bigger, like stoneflies and caddisflies; while in a tailwater live midges and mayflies.” A tailwater is classified as a damcontrolled body of water. The flows of a freestone river fluctuate at the mercy of Mother Nature. After graduating, Boyer obtained a job at Angler’s Covey, a fly-fishing shop in Colorado Springs. “I started working right away that summer in 2017,” Boyer says. “With Angler’s Covey, the places I guide are the South Platte River and the Arkansas tailwater below the Pueblo Reservoir.” In 2020, she returned to her alma mater to teach at Colorado Mountain College. “Every May I go to Leadville to teach for six weeks,” Boyer says. She also took a job in the San Juan Mountains in Dunton, 25 miles southwest of Telluride. With both, Boyer is away from home from May into October. Her clients enjoy the time spent on the water learning different techniques. “I love the puzzle of fly fishing, and I find trout to be so ornately beautiful,” says Lindsay Jinkins, an anesthesiologist in Salt Lake City and a client of Boyers. “I was guided by

I felt really comfortable with a female guide and we easily built camaraderie.” When asked why she loves fly fishing, Boyer talks about how relaxing it is. “Fly fishing is very meditative, connects you with nature and brings about so much peace. You don’t think about your phone or about stuff going on — you just become one with the environment. The connection to the land is very soothing and healing.” Most of the water that she guides is Gold Medal, so it’s mostly catch-and-release. “The thing about fly fishers is that we’re conservationists — we care about the environment and the fish populations,” Boyer says. “Sometimes the water temperature is too high and we can’t fish because their mortality rate goes up with the temperature and it’s unethical.” Boyer is patient and appreciates the opportunity to shape novices into skilled anglers. “I like seeing people go from not knowing anything about fly fishing to catching a fish at the end of the day,” says Boyer. “Taking the information I am giving, implementing it and being successful — self-sufficient and really enjoying it.” Another client is Chris McReynolds, founder of Southern Colorado Veterinary Internal Medicine.

“Every spring, my dad comes to Leadville for a few days to fish with me while I teach at Colorado Mountain College. My dad is an astounding outdoorsman. He taught me everything. I feel so privileged to have that knowledge translate into guiding, teaching and being an angler.” — Kaitlin Boyer

“I initially met Kaitlin when her dog was sick, and I found out that she was a flyfishing guide,” he says. “I’ve been fly fishing for over 30 years but always can learn more. I’ve been on four trips with Kaitlin over the last few years. What I like most about Kaitlin is her patience and infectious enthusiasm. She is so excited for the individual who catches their first trout on a fly or when one of us hooks into a trout of a lifetime. I will often see Kaitlin at a local fly shop and enjoy reliving stories of past trips or catching up on of our families, including our four-legged children.” He agrees with Boyer on the meditative nature of the activity. “Fly fishing, aside from the beauty, is my escape from the day-to-day grind,” McReynolds adds. “When fishing, I am focused on the water and my mind does not wander to all the things a routine day requires.” Beyond fishing and guiding, Kaitlin Boyer is also a talented photographer, and you can follow her and her fly fishing adventures through her Instagram: @pixiek8 Born and raised in rural Indiana, Kristian DePue works as a contributing writer in Colorado Springs. Daniel Rodriguez revives old folk chords to create fresh work By Kyle Kirves

“H

otel room, I left a poem on the stationary,” Daniel Rodriguez sings on what is certainly a fan favorite track, “Colorado.” “I’m packing my bags and my guitar to carry and I’m headed out the door. I’m headed home, Colorado. I’m headed home.” And while I don’t know whether that statement is factual, I do know that it is an honest one – one that embodies Rodriguez’s ethos of commitment to and conviction about the stories that he tells in song, whether they come from his life or the landscape of the imagination. “Nothing I write is entirely fictional,” Rodriguez says, “It is rooted in my experience even if I change some things up. It may be about me, but I’ll say in the context

of the song that it’s ‘her.’” And, he adds with something of a verbal shrug, “sometimes you do have to have to forfeit some reality for a really good rhyme.” Rodriguez relies, too, on the cadence of everyday conversation to inform his lyrics. “I listen to language and the use of it,” he says, suggesting that he often leans into certain turns of phrase that have a particular lilt or rhythm to them. “Anything that can evoke a goosebump reaction,” he says, “then I know I’ve got something good. From there the imagination can take over – I can trance out and come up with something I’m inspired to share.” Boulder-based and a longtime resident of Colorado, Rodriguez is very familiar to fans of Colorado music as both a formative player in Elephant Revival and now a highly regarded solo performer. In talking about the appeal of playing in Colorado, he cites the synthesis of environment, culture, venue and enthusiastic and energetic audiences – a symbiotic relationship of altitude and attitude. “People are drawn outside in this state to observe things larger than themselves – the mountains, the skies. I mean, Red Rocks? Come on. Anybody who’s played Red Rocks knows there’s no place quite like it.” It’s more than just the Most Hallowed of venues that Rodriguez enjoys playing. He cites the Fox in Boulder and Planet Bluegrass in Lyons as inspiring favorites among many others. “The music scene here, from the kind of fraternal support of the musicians themselves to the people that go to shows, it’s just great,” he says. “You can play almost anywhere after a while and sell out shows because people really come out for a good time with great music.” When asked about how he got started, Rodriguez explains that, like many teenagers of his generation, he was really into Nirvana. “I asked for an electric guitar and an amp for my 13th birthday and I got it,” he says, smiling. “From there, I proceeded to torture my family playing loud, highly-distorted power chords from the basement.” Ten years later, Rodriguez turned pro and has been playing professionally ever since, though without relying so heavily on effects and instead his ear for melody and his knack for lyrical picture-painting.

“Musically, it’s pretty archaic,” he says of his more familiar work. “I lean on a lot of folk chords and constructions. It really is more about the vocal melodies and storytelling and letting the song kind of go where it wants. All of that is layered on familiar and sometimes oldfashioned chord structures.” Not one to be pigeonholed, over the past several months Rodriguez has found satisfaction in stretching out musically into other genres and styles, where he sees more possibilities. “I did a hip-hop record recently. I wrote the hooks and my collaborator wrote the rhymes,” he says. “And I’m working with John Forte from the Fugees on an upcoming collaboration that’s really exciting.” Fans can look forward to a lot of new work coming in 2022 as Rodriguez works to finish a new album having just put the finishing touches on a new single. Plans are to release it in late summer or early fall. In the meantime, tour dates will keep him busy. Playing live has renewed significance in the semi-post-pandemic days for both performers and audiences. “Man, I’m just grateful for the opportunity to get out there and play,” he says. “It really is exhilarating.” Rodriguez counts himself lucky to be on tour again, both solo and in support of other acts. “To do that in front of 20,000 people a night in support of the Lumineers, or Todd Snider who is an utterly amazing performer and songwriter, that’s special.” But, he points out, “it’s equally great to be out there, just me and my guitar playing in front of a bunch of people.” So the road calls, and Daniel Rodriguez must go, but it’s nice to know that, as his lyrics suggest, he’ll always be coming home to Colorado. ALL IN THE FAMILY Distillery makes commitment to local farmers and great products By Jay McKinney

T

he phrases “farm-to-table” or “grain-toglass” seem to have taken over in recent years as marketing ploys to help people feel better about their consumption habits. But in the case of Family Jones Distillery, it has embodied these values from the beginning and will continue to do so. Family Jones Distillery was started by Paul Tamburello and Rob Masters. Tamburello is a Denver native who has his hands in multiple entrepreneurial endeavors. He notably started and owns Little Man Ice Cream Company, which continues to outgrow its humble beginnings as a local ice cream hub in the Highlands. Masters is the head distiller and an industry veteran. He co-founded the Colorado

Distillers Guild and has been distilling and consulting since 2007. Masters’ favorite spirit is gin, but his fine-tuned palate and incredible attention to detail is the secret to the entire lineup at Family Jones. He’s the creative mastermind leading the way and the Family Jones is really “his baby” to explore what is possible as a distiller. While Tamburello and Masters may be at the head of the business, it really is a family effort. That includes the Colorado farmers with whom the distillery has built strong relationships. “We put on our bottle that we shake the hands of every farmer, which is true, but I think we take it to another level,” says Derek Guilin, general manager at Family Jones


Spirit House in Denver’s Lower Highlands neighborhood. “We party with them, we hang out with them,” he says. “They come to all our events, we go to all their events. It is a really cool thing to say that we know them on that level.” The distillery started producing spirits in Loveland at its primary production facility in December 2016, and quickly rose to prominence in the Colorado craft distilling scene. Shortly after, Family Jones opened its elegant spirit house in the Lower Highlands neighborhood in October 2017. The LoHi location also produces smaller batches of whiskey with the centrally located and visually prominent copper still that steals the spotlight when patrons walk in the door. Overall, the location is a sleek showroom and magnet for couples seeking an attractive date-night spot. While the spirit house may be the fancy face of the business, the Family Jones commitment to partner with local farmers is a primary reason the distillery stands out. It currently has partnerships with the Whiskey Sisters, Root Shoot Malting, Colorado Stock and Grain and Jones Farms Organics (which coincidentally shares the Jones name). The four farms all focus on organic and sustainable farming, and all contribute to the success of the Family Jones Distillery in their own way. The distillery realizes that without the proper support, family farms like the ones they’ve partnered with could fall by the wayside. “We can talk about it all day, but unless we help these people sell stuff, then it’s going to collapse,” Guilin says. “We’re focused on buying the whole crop, so they know that if they grow a crop it’s going to be bought. It gives them comfort knowing that these guys actually care about us.” Jones Farms Organics located in the San Luis Valley began growing a Ryman Rye as a cover crop to protect the soil through the winter. Despite having no intention of selling the crop, Masters discovered it and was amazed by the quality. The distillery utilized the cover crop, and it will be a key ingredient in some of the distillery’s upcoming rye whiskeys. Among Family Jones’ most popular spirits are Ella Jones (bourbon), Atticus Jones (rye), Juniper Jones (gin), Annika Jones (vodka) and Mo Jones (rum). The distillery also has three house spirits and recently ventured into the premium, ready-to-drink market with its Automatic Jones lineup. While it’s certainly not the first distillery to put a premade cocktail in a bottle, anyone can be the best bartender at the party with one of these bottles handy.

“I call them COVID babies,” Guilin says. “During COVID, we asked ourselves, what do people need? They can’t go to their local bar and watch their fancy bartender shake up a sour or make them an Old Fashioned. So we thought, why don’t we put some really high quality cocktails in a bottle that people can drink at home or look really cool at their next party where they disappear into the kitchen and ‘make’ 10 Rock & Ryes.” Another reason each one of these bottles stands out on the shelf at the bar is the captivating photography of Jack Ludlam. Each spirit’s label features a different photograph showing hands holding different objects. Every photograph tells a different story and is unique to the spirit it represents, with the hands as a metaphor for the distillery’s commitment to keep everything handcrafted without cutting corners or sacrificing quality. Aging spirits in white charred American oak and never adding any artificial flavoring is key to keeping the spirits consistent and being transparent with the consumers. Outside of the distillery’s staples, Masters is always open to exploring possibilities with creative one-offs and collaborations. For instance, the distillery produced a Pechugastyle rum a couple of years ago. Instead of hanging a raw chicken over a tequila while distilling to add flavor, Masters used a hog’s head instead to create a flavorfully unique rum. While the one-offs and experimental distillations will continue, last year the Family Jones Distillery attended numerous farmers’ markets and events to promote the consistent products that truly are grain-to-glass. With Masters as captain of the ship, and the Colorado farms providing quality ingredients, it’s safe to say that the Family Jones will continue to be a leader in the Colorado craft distilling industry. “We asked ourselves if the world needed another spirit brand,” says co-founder Tamburello. “Ultimately that answer was yes, and we’re proud of the spirits we produce. But maybe more importantly, we believe we can use the business of craft distilling to engage in conversations about the necessity of local agriculture in our communities, and to support our neighboring farms and farmers.”

alking into Stronghouse Brew Pub in downtown Telluride, customers are transported back in time. The building, built of stone and metal in 1892, is the last surviving intact building in the city’s historic Four Corners corridor. It originally functioned as a warehouse, supplying the town with hay and produce. Since then, the building has housed the local newspaper, restaurants, and an art co-op. It was important to owner Victoria Chapus to preserve that part of Telluride history, and to be true to the legacy. The addition of a warm and welcoming brewpub seemed like a perfect fit. “You can kind of feel the soul of the building,” says Managing Partner Pam Cunningham. The building underwent an extensive two-year restoration process to bring it back to its original state, wherever possible. The team even brought in a 20-foot mahogany Brunswick bar from the 1880s, which was also preserved as much as possible. “We didn’t want it slick and pretty,” Cunningham says.

The beer, however, is produced with the latest technology. General Manager Mike Hayes describes the beer list as balanced and approachable, with a variety of lagers and ales, mainstays and rotating seasonal brews. The four staples are a German-style pilsner, a simple American-style pale ale, a rotating IPA, and a honey ginger blonde. “It was meant to be a one off, but it was one of our best-selling beers,” says Hayes of the blonde brewed with honey and fresh ginger. The beer is all brewed in-house by Brewmaster Sam Enders, and is available on tap, in 16 ounce cans and 32 ounce crowlers to go, and on a few local taps around town. The brews inspired the simple but intentional food menu, and everything is made in-house, according to Cunningham.

“The beer came first and food came after,” she says. “We wanted the sense of an alpine pub.” The most popular items are the steak sandwich, Colorado-made brats, roasted beet hummus, and the Bavarian pretzel. Beer is incorporated into food throughout the menu – beer-brined chicken, hop salt, a coconut porter brownie, and beer cheese made with pale ale, to accompany the pretzel. The pub has already received some impressive accolades – landing 4th on USA Today’s list of the 10 Best Brew Pubs in America, and earning shout-outs from Conde Nast Traveler and the Telluride Daily Planet. Guests can dine in or sit outside on the dog-friendly patio. “The idea is to be envisioned as a local

hangout and to be there as much for the locals as the tourists,” Cunningham says. She wants everyone to be able to get a good meal and a beer for less than $20. The goal is for customers to just walk in, see someone they know, and grab a beer and hang out. But if you don’t know anyone, the place feels welcoming, she says, so folks might just make a new friend. Stronghouse Brew Pub is located at 283 S. Fir Street in Telluride. Prime Pairings Roasted Mushroom Bowl from Wynkoop Brewing Co. By Kristen Kuchar

This roasted mushroom bowl is a nutrient-packed dish that’s loaded with flavor. It’s a sure crowd pleaser at summer get-togethers, and it can be made with or without dairy or meat. Wynkoop strives to utilize locally sourced ingredients.

Ingredients 3 cups cooked quinoa (rinse 1 cup quinoa, add to 2 cups of boiling water, simmer for 20 minutes) Herbed cream cheese (optional) Fried Brussels sprout leaves (save leaves and fry at 350 degrees for about 3 minutes, then drain thoroughly)

Directions Cilantro Tahini Sauce Combine tahini paste, lemon juice, garlic, Sriracha, cumin and salt, and blend on medium speed until combined. Then, on your lowest speed setting, slowly add oil in a steady stream. Continue to blend until all the oil is incorporated. Finally, carefully add cilantro leaves and blend until the leaves just start to break apart (blending too much at the end will cause your sauce to turn into a green paste) Vegetable Medley Halve grape tomatoes, thinly slice red onions and garlic, and break apart mushrooms by hand. Using a knife to chop mushrooms can bruise or damage the mushrooms before cooking; being as gentle as possible is beneficial. Next, sauté these veggies together using butter or olive oil on medium to

high heat. Wait until pan is hot and add tomatoes first. Once the tomatoes start to caramelize, add mushrooms. Cook for another 3 to 5 minutes, then add onion and garlic, and sauté until slightly golden, about 5 more minutes. At the end, add a pinch of salt and pepper for seasoning. Assembly To build this dish, start with a pan on medium-high heat and add your cooked quinoa. Let the quinoa start to warm up, then add cilantro tahini sauce. Mix just until blended. Over-mixing the quinoa at this stage will break up the quinoa and create a mush. While that is warming, sauté your veggies as described above. Plate the quinoa first, and cover with veggies. Then top with the herbed cheese (or you can leave this off for a vegan option). Then top with fried Brussels sprouts, and enjoy!


Prime Pairings Braised Short Ribs from Acreage By Kristen Kuchar Often when making a hearty, “stick to your ribs” dish, such as this braised short rib recipe from Acreage, we turn to a bold red wine or a big stout to stand up to the dish. But the Stem Cider team suggests this classic dish be paired with a tart and crisp raspberry cider – a dry, tannin-forward drink – to complement it.

Ingredients 2 to 6 beef short ribs, 10-14 oz each, with bone (without bone, 7-10 oz each)

1 large onion, chopped (brown, yellow or white)

2 cups dry red wine

1½ tsp each salt and pepper

2 celery ribs, chopped

2 sprigs thyme (optional)

2 Tbsp olive oil

2 carrots, chopped

2 rosemary sprigs

3 garlic cloves, crushed

2 Tbsp tomato paste

2 bay leaves

Directions

Return beef into liquid, arranging the ribs so they are submerged. Cover with lid and transfer to oven for 3.5 hours, or until meat can easily be pried apart with forks.

Preheat the oven to 325°F. Sprinkle beef with salt and pepper. Heat oil in a large ovenproof pot over high heat. Add half the ribs and brown aggressively all over (5-7 minutes in total). Remove and repeat with remaining ribs, then remove. Reduce heat to medium. Add onion and garlic into the same pot and cook for 2 minutes. Add carrot and celery, cook for 5 minutes until carrot is softened and sweet. Add tomato paste and cook for 1 minute. Add wine, broth, thyme, and bay leaves. Stir until tomato paste is dissolved.

Remove beef carefully, keeping the meat on the bone. Cover to keep warm. Strain all liquid in the pot, pressing juices out of the onion, carrot, etc. Return sauce into the pot, bring to simmer and stir. Adjust as necessary - simmer to reduce/ thicken, add water to thin, and season with salt and pepper if needed. Place beef into the sauce to keep warm. Great with accompaniments of roasted potatoes (or mash) and roasted root vegetables.

Beyond Brownies – Cooking & Cannabis By John Garvey

I

n 2012, I made a terrifying descent from South Arapaho Peak (elevation 13,400 feet) while tripping hard on a pot brownie, and I came to understand our shared, precious existence in ways that can be explained but scarcely grasped. This is not how you’re supposed to do weed edibles. But it does illustrate the potential for both transcendence and miscalculation that comes with indulging in cannabis-infused foods. Our culinary options have expanded far beyond gummies and brownies since recreational cannabis was legalized here a decade ago. Not only are cannabis edibles more varied and consistent, but you can now enjoy catered fine-dining experiences with cannabis-infused foods.

HIGH-BROW FINE DINING

Jarod “Roilty” Farina, a.k.a., the Michelin Stoner, is a preeminent, awardwinning Denver cannabis chef who describes himself as “a French-style chef with an Italian and Asian flair.” Farina is driven by his longrunning, parallel loves of cuisine and cannabis. Among other accolades, he’s won the 2011 Secret Cup in Los Angeles (an underground competition that was a career breakthrough for Farina) and The High Times Top Cannabis Chef. He’s been featured on several high-profile cooking shows including Bravo’s “Southern Charm,” “Chopped 420 and Thrillist “Send Foods.” His company, Dine with Roilty, offers multicourse in-home catered meals. “You know, I’m a worldly person,” Farina says. “I eat at all the Michelin star restaurants I can ... and I bring different elements from those dinners back to my dinners.” No wonder you can tell right away he loves his job. Chefs specializing in cannabis-infused meals can calculate and tailor each guest’s dose to their wishes, so abstainers and stoners can enjoy the same five-course meal side-by-side and get exactly what they want. That’s because the cannabis isn’t cooked in; it’s used as a finishing agent. “We can accommodate each and every person and give them their own personal experience,” Farina says. “And the way that we do that is I make a highly infused olive oil on-site with cannabis that they provide.” That infused olive oil is added to the degree desired by each guest before serving. So here’s a question: Is my pasta carbonara going to taste like weed? Sadly (for me), happily (for most), Farina’s answer is no: “When you’re cooking with cannabis, terpenes [the organic compounds that give cannabis its flavor] are cooked off very easily. So unless you’re doing a small-batch infusion, it’s not going to be something you notice.”

DIY BASICS

There are two reasons you can’t just put cannabis on a salad. First, it won’t make you high unless it’s been heated to 220-245 Fahrenheit. This causes a chemical reaction called decarboxylation that turns THCA into THC. Without getting into the chemistry, the “A” prevents you from getting high. But it doesn’t like those scorching

temperatures, so once the thermometer surpasses 220 degrees or so, it goes off to Alaska to visit relatives. Cannabis is also inedible. Sorry. So in addition to heating it up, you have to extract the cannabinoids by binding them to a fat like butter, coconut oil or olive oil. You can add decarboxylated cannabis to any edible fat at a low simmer, strain it, and if you’ve done everything right, you’ll end up with most of the cannabinoids you started out with. Articles and tutorials on how to do this abound, including Roilty’s own tutorial, which you can purchase for $10 — about the cost of a gram. Chef Roilty says what you use is up to you. “It really depends on what your final usage is. If you’re a baker, you might want to go with butter or coconut oil. ... Butter is the go-to, right? It’s what everybody thinks of first. Butter holds many forms, though. When it’s cold, it’s hard and you’ve gotta soften it. “So for me, on the fly, oils are my favorite because they’re always in a liquid form. They’re easy to use, and easy to apply.” A number of Chef Roilty’s favorite recipes, including Ooey Gooey Cereal Bars and Glazed Honey Garlic Salmon, are available on his website.

COMMON MISTAKES

One of the two most common mistakes Farina sees people make is cooking off the cannabinoids, which are comparatively delicate and don’t stand up to higher temperatures. “You want to use it as a final touch,” he advises. “If you do want to infuse your whole recipe, you’d want to put it in the sauce. “So say you’re making a batch of mac and cheese for instance. … You wouldn’t put the infusion into it while you’re hot. You’d wait till you take it off the heat, mix it in properly, and then serve it. “… If it’s ever boiling, it’s too hot.” The second mistake people make is dosing incorrectly, which comes down to either bad math, no math or impatience. Cannabis edibles can take around two hours to achieve their full effect, so if you eat too much too soon because you think they’re weak, you’re actually going to get as blazed as a Cajun chicken sandwich.

PASS THE SAUCE!

It’s been a long journey from the world’s first batch of pot brownies to five-course catered meals with cannabis-infused oils. With legalization, we’ve traded naughtiness for culinary quality and diversity. While I have some nostalgia for the former, I am glad that we can relax into an experience that is lighthearted, yet worldly. I think for my 40th birthday this presents a pleasant alternative to contemplating my mortality 1,500 feet above timberline. Smoking River Brewery is a great place to share an ale and a fishing tale Hop farm evolves into popular Meeker brewery By Kristen Kuchar

B

rothers Kevin and Kristopher Borchard couldn’t have predicted that a day of fishing would spark the inspiration for launching Smoking River Hops, but it did just that. The two noticed hops growing wild along the White River near Meeker and began to wonder if they could start growing hops here on a larger scale. Flash forward from that day in 2013 and they are now commercially growing 13 different varieties of hops on nine acres. The organic hops are grown at an elevation of about 6,200 feet in the town of Meeker in the northwest part of the state. The hop varieties are alternated and include a wide variety – Comet, Galena, Nugget, and Yakima Gold, to name a few. Magnum and Mt. Hood seem to be the most popular variety for local breweries, Kevin says, and Glacier is the most popular hop that is shipped out of state. Wet hops are offered to breweries located in Northwest Colorado and the Front Range.

Flash forward again and the hops have another meaningful purpose – flavoring craft beer at the Smoking River Brewery in the same town. When Kevin was stationed in Italy while in the Air Force, he spent time around wine producers, where it was common for many of these artisans to make wine with grapes from their own vineyard. So, he thought, let’s give it a go with hops and beer. “You have control from start to finish,” Kevin explains – from growing to harvesting to picking to brewing. Smoking River Brewery opened in August 2021 and is a welcome addition to the town of Meeker. Growing and using their own hops, the Borchards offer the farm-to-mug concept that consumers have grown to love. Head brewer Tyler Frye enjoys having immediate access to a diverse selection of hops when he’s ready to brew. The ability to use fresh hops provides unique aromas, he explains, that could potentially get destroyed during drying. Each hop can lend totally different aromas and flavor profiles to a beer, such as Mackinac for example. “It’s been a really interesting hop to work with,” Frye says, pointing out notes of spiciness, pineapple, and tropical flavors. Frye was raised in the craft beer mecca of Seattle, and after receiving a homebrew kit during graduate school, he ended up running with it. The talented brewer loves blending art and science, and the creative aspect of it all. And having a wide variety of hops grown so close to his fingertips makes it even more gratifying.

Patrons love the brewery’s fresh hazy IPAs and the robust porter. The biggest sellers are the hazy and tropical Two Headed Caddis Mountain IPA, Trout Sweater, which is brewed with fresh cashmere hops, the Vishaak Belgian Blonde, and the complex and toasty Reel Ripper Amber. The team aims to offer beers that everyone can enjoy. Despite only being open a short time, there has already been quite a few seasonal beers brewed, too, including the Headless Trout Pumpkin Ale, an Oktoberfest beer, and Krampus Catch, brewed with three pounds of ginger snaps and molasses. “We wanted to create a place where the community can come and hang out,” Borchard says. The brewery has an indoor and outdoor space and is family-friendly with non-alcoholic beverages available and rotating food trucks on the weekends. The brewery interior has a true fishing lodge feel, down to local artist Ben Quinn completing a rendering of Trappers Lake on one wall, and a community fishing board with photos of friends and families fishing together. “It has a really quaint, warm feeling,” Frye says, adding that the whole community sometimes stops in to celebrate after high school games. I have been enjoying anything that highlights the awesome availability of flavor from our own backyard and the people from Chrysalis Barrel Aged Beers are killing it, literally from their backyard. With Colorado-grown ingredients like rosehips, apricots, cherries, and of course barley, I like them all. However, the Desert Dreams Sour with Chambourcin grapes, which takes over two years to make between time in oak and stainless, is simply awesome.

I have become a big fan of the Flemish Pub Ale named Probably Certainly from OCC Brewing in Old Colorado City. This beer drinks like a fine pilsner, though it is not brewed with lager yeast. Instead Dan (Ramos) relied on lower fermentation temperatures and aging to allow the Saaz hops and crisp malt character to shine. If you are in the area, do yourself a favor and stop in to try Probably Certainly or any of the OCC brews.

My favorite Colorado craft beer is Zwei Pils. With the sensory overload we constantly find in the craft beer scene, I almost always gravitate to a simple traditional lager when I’m out. Colorado has no shortage of exceptional Pilsner options, but I find Zwei’s to be my favorite traditional one out there. Crisp, herbal/floral, and a touch of sweetness make it the perfect afternoon beer or palate cleanse between more aggressive styles.

I’m super fortunate to have one of my “deserted island” beers brewed right here in Denver. Bierstadt’s Helles is the beer I reach for when I don’t want to think about beer, and I mean that as a high compliment. It is what it isn’t: not too sweet and not too bitter. Bierstadt Helles is clean, balanced, highly drinkable and allows me to get my nose out of my beer, pick my head up, look around and focus on good times with friends.

The best Colorado beer I’ve had recently came from the small town of Frederick. Mirror Image does an incredible job with all their brews but the one that really stood out to me was their Vagabond Czech Pilsner. It was smooth, had a perfect straw-colored Czech appearance, and boasted all the soft pilsner notes expected from something straight out of Pilsen.
