Staying or getting in shape means different things to different people.
For many Coloradans, a simple and healthy jumping-off point involves walking with our pets. What better way to burn a few calories and enjoy the outdoors before or after work?
We’ve listed some fantastic ideas for people who want to combine exercise with a beverage to follow. Ok, make sure you walk an extended route to the dog-friendly brewery to get your steps before imbibing a bit.
Our writers have a few different get-your-body-moving ideas in this issue – both indoors and outside. Climbing the gym walls has never been so popular. And who wouldn’t enjoy a fine craft beer after a good workout? Stepping outside, I’d encourage people to grab the discs and go golfing. There are courses across the state, but we’ve featured one in Coal Creek Canyon that will allow you to storm a mountainside while chasing the discs.

Born and raised in northern Indiana, DePue spent the last four years working as a contributing writer for various publications throughout Colorado. In addition to writing, he enjoys acting, watching films, and listening to both music and stand-up comedy. He loves summer and fall, and Halloween is his favorite holiday. When not storytelling, he can often be found in a speakeasy, distillery or craft cocktail lounge. And he never gets tired of the unique view when the sunlight shines on Pikes Peak and the Front Range every day. He recently moved back to Indiana but has written a few local pieces that Thirst will publish.
Doskocil is a Colorado-based photographer who started his business 16 years ago while obtaining a degree in advertising and fashion photography in Austin, Texas. After graduating, he moved to Dallas, where he spent seven years building his portfolio while assisting some of the best photographers from around the world. From there he moved to Colorado in order to delve deeper into the mountains and adventure scene. This has led to more editorial and commercial assignments with large and small businesses, capturing and sharing moments of people doing what they love to do. Focusing on people’s passions encourages curiosity and spreads more passion throughout the community and beyond.
Kuchar has written about travel and the beverage industry for 15 years in a variety of national and local publications. For Thirst, she primarily covers food, wine, cider, beer and other beverages. Lovato graduated from the Metropolitan State University of Denver with a degree in journalism and spends her days freelance writing about all things Colorado. As a native of the Centennial State, she thrives on outdoor experiences like kayaking, stand-up paddle boarding, hiking, biking, and enjoying a Holidaily brew or two along the way. She takes any chance she gets to enjoy the outdoors with her partner, Daniel, and their rescue dog, Mazy. Fortunately for dog enthusiasts and owners, you don’t have to look too far to find a pet-friendly brewery or taproom throughout Colorado. Bruz Beers co-founder Ryan Evans says that dogs bring a sense of community into the tasting room, providing entertainment, love and smiles.
“Dogs are an integral part of the beer culture in Colorado,” Evans says. “It’s fantastic when you get to sit down and enjoy a beer with your dog. Many of life’s problems have been solved this way.”
Bruz takes the dog-friendly taproom to the next level by making dog biscuits from their spent grain for pup visitors. In addition to past dog-related events, such as puppy yoga and visits from Bone Apetreat, Denver-based dog treat food truck, the brewery hosts an annual Wagapalooza. The event is a dog party and adoption event with proceeds supporting dog rescue and adoption. Some rescues have included PawsCo, Mile High Meowies & Mutts, Demi’s Animal Rescue and Big Bones Canine Rescue.

In fact, the Arvada brewery recently hosted a spent grain bake-off in which participants could utilize spent grain to make treats for dogs (or humans). For National Twin with Your Dog Day, customers who came in with their dog – and wearing matching outfits – got a free pour.
A little further north in Old Town Lafayette, Romero’s K9 Club & Taphouse is a go-to spot for beer and dog lovers. There’s a variety of both local and national beers on tap and in cans, as well as a few ciders and mead. While their humans are enjoying the eclectic beers, well-behaved dogs can hang out in the private offleash dog park and outdoor biergarten. In order to play, dogs must be current on their rabies vaccination, spayed or neutered and at least four months old. A registration form and small fee is also required for this area.
Also, there is a temperature-controlled enclosed pavilion for onleash dogs that is open year-round. Since opening, there have been a variety of dog-centric events, such as a Doggie Halloween Party, complete with costumes and a parade down Public Road, and adoption events. Some previous organizations that have benefitted from fundraisers include Moms and Mutts Colorado Rescue and Scroungy Dogs and Pretty Pups Rescue.
In the south metro area, partakers will find beers such as Funplex Cream Ale, Coal Miner’s Dogger Stout and Peabody NEIPA
at Coal Mine Avenue Brewing Co. in Littleton. The location has also brewed up something special for dogs – a 2,500-square-foot on-site park. If you want to attend with your furry best friend, you’ll need to register in advance and be prepared to show staff a proof of rabies vaccine. The Coal Mine team recommends taking your dog to another dog park if they’ve never been to one before to see how they do before the visit, as well as making sure your dog is getting along with the other dogs and not playing aggressively. Leashed dogs are also welcome on the covered and heated south patio. Available dog goodies include dog treats, pet soap, and collars, leashes and bowls made from recycled bicycle tires.

Up in Winter Park, Hideaway Brewing proved its love of doggie guests by creating dog toys modeled from one one of its beers.
The brewery has also helped raise money for Mountain Pet Rescue and the Winter Park Avalanche Rescue Dog program.
Lost Friend Brewing Company has raised money for the Colorado Parks and Wildlife K9 program with the release of “Dogs with Jobs” Colorado Spruce Kolsch. The Colorado Springs brewery donated $1 from every sale of the beer that was poured in a commemorative glass.
And Boulder-based Brewing Co. also brewed the Patrol Dog Pale Ale in partnership with the National Ski Patrol in order to raise funds for avalanche rescue dogs.

There’s a long list of favorite things to do among Coloradans, and two beloved activities in this great state are climbing and drinking well-made craft beer. While at first glance, these two might seem unrelated, there are several important things that bring them together – both have a strong community, and are often met with passion and a love for exploring and bringing people together. That’s why it makes sense that there’s a handful of Colorado climbing gyms that offer beer on tap.
“Anyone who has spent the afternoon or evening crushing boulders or routes knows the immense joy of chilling those aching hands on a cold can of craft brew,” says Heather Robinson, general manager at CityROCK / The Ute & Yeti.
Not only does the Colorado Springs gym offer indoor climbing and a full cardio and fitness facility, but The Ute & Yeti has 14 beers on tap and two local kombucha selections as well as more than 35 canned beer options from across the country.
“Our beer is chosen specifically to provide as many styles as we can while still focusing on what our customers are ordering,’’ Robinson says. Some recent Colorado breweries available include Soulcraft Brewing, Outer Range Brewing Company, High Hops Brewery and Grimm Brothers Brewhouse.
“While the beer is an important part of the concept, and the beer menu is outstanding, the community space is really what the restaurant is all about,” Robinson says. “It’s a gathering place for families, friends, co-workers and co-climbers to break bread and enjoy each other’s company.”
The Spot Boulder and The Spot Denver also serve beer on tap with a focus on supporting local breweries in the same community.
“Craft beer and climbing are all about community - creating a supportive space for people to come together and get out of their comfort zone, whether that means challenging yourself physically in the gym or trying a new style of beer from the brewers down the street,” says Patrick Bodnar, The Spot’s marketing manager.
The Boulder outpost offers two beers on tap; Denver has six rotating brews on tap and both have canned beer options as well.
“Joining forces with Avery for our first beer partnership years ago was a no-brainer to bring people together and make our events more unique and enjoyable,” Bodnar says. Dan Howley, founder of The Spot, and Adam Avery, founder of Avery Brewing Co. have been friends for years.
Avery, who is an avid climber, is happy to have the Boulder brewery’s beer available on tap here.
“As a climbing lifer and longtime supporter of our climbing community, it brings me great joy and satisfaction to know that whether you’re celebrating a send or licking your wounds from uncountable failed attempts on your proj, you can always enjoy one of our beers at the end of your session at The Spot. Though sometimes I need that beer mid-session,” Avery says.
Other breweries at The Spot have included Elevation Beer Co., Comrade Brewing Company, Tivoli Brewing Company and Telluride Brewing Company.
Having beer on tap gives climbers another reason to stick around after exercising, Bodnar explains. Many of the meetup nights finish with a “social hour” at the bar, for a chance to try new beers and meet new people. He says that members love having craft beer available and
some even swing by the gym on “rest days” to grab a pint and see what’s new.
One of the primary goals of Whetstone Climbing in Fort Collins was to create a welcoming and comfortable community space. Since the hockey rink that previously occupied the building already had a bar in place, it was a natural fit to keep it going.
“While climbing might seem like an individual sport from afar, it’s really about teamwork, building trust, and community,” says Jeremiah Wall, marketing manager and event coordinator at Whetstone. “There’s also something inherently community-driven about craft breweries,” she says. “There’s something special about being able to meet the people that made it and connect with others that love it.”
After utilizing more than 23,000 square feet of climbing and fitness, climbers can head over to The Bivy, where they will find four rotating beers on tap and a variety of canned options. The selection is based on what’s new, seasonal and sounds interesting. The beers highlight northern Colorado’s robust beer culture with Snowbank Brewing, Odell Brewing Co., Horse & Dragon Brewing Co. and New Belgium Brewing.
“When there’s an opportunity to have a cold beer after a climbing session, it feels less like a performance-focused gym and more like a community space where people can do more than just climb or work out. They can hang out, relax, connect with old friends and meet new ones,” Wall says.
That community focus is a common thread through these climbing gyms. At Longmont Climbing Collective, in addition to being a destination for the community to enjoy climbing, yoga and fitness, the team also works with local businesses to create partnerships to benefit the members. “Partnering with a local brewery seemed like a great way to do just that,” says marketing manager Nick Coutu.
The gym partners with nearby Grossen Bart Brewery to supply a handful of rotating beers on tap. Coutu says that people enjoy beers at monthly meetups held at the gym, and often hang around to drink a beer when they’re done. Competitions are also popular here and often people who aren’t competing still come and enjoy a beer or two while watching the climbers compete.
Coutu draws a comparison between the beloved sport of climbing and the art of craft brewing. “Climbing is all about creativity,” he says. “Every week the setters are in here creating new problems for people to try to solve and enjoy. In our minds craft beer is very similar in that the brewers are always coming up with creative new beer for people to enjoy.”
When Amanda Engelhorn started fielding whiskey-related questions behind the bar at Spirit Hound Distillers, it sparked an idea to try to make a change. The taproom manager and talented mixologist noticed that some of her female customers seemed to feel a bit out of their depth when it came to whisky. Queries were often accompanied by “is this a stupid question?” in the Lyons tasting room.
She wanted to find a way to help educate women interested in learning more about spirits and create a welcoming space for them to celebrate whisky. Enter Whisky Wenches Spirits Society, a group that welcomes everyone from beginners to whisky connoisseurs.
The goal is to offer an educational, inclusive space for events featuring experts from Spirit Hound Distillers and beyond. Some
initial meetings covered the basics, such as what whisky is, how it’s distilled and the differences between whisky, bourbon and rye whisky (the owners at Spirit Hound choose to spell whisky without the “e,” common for whisky in Scotland and Canada).
And what better place to learn? Spirit Hound Distillers was named Whisky of the Year and Best in Show in 2022 at the London Spirits Competition. Other accolades include awards from the Rocky Mountain Craft Spirits Competition, Breckenridge Craft Spirits Festival and the San Francisco World Spirit Competition, among others.
Whisky Wenches has also done pairing events and learned the basics of cocktail making. For Engelhorn, curating creative and tasty cocktails within the tasting room comes naturally from a love of cooking and an appreciation of flavors. She wanted to share her passion ,and when she launched the group, she asked attendees what they wanted to learn. “You guys are driving the bus,” she told the crowd.
The group is a fun, intelligent and interesting group of women who are curious and love to learn about booze, Engelhorn says.
The women had the unique opportunity to make their own gin and to be involved with every step of the process. They sampled different gins to learn more about it and discuss and discover what was liked. They talked about common botanicals, such as angelica root, coriander, citrus peel, lime flower, cinnamon, clove, fennel and anise to see what would be a good fit for their own gin recipe.
Despite a labor-intensive process, Engelhorn said the experience was fun and so popular they’re doing it again. The all-female made gin, named Revelry, was released in 2018. “It’s a lighter, not super floral, more approachable gin,” she says.
The spirit received great feedback and was very well-received by customers. Once it ran out, people wanted to know when it would come back. The gin was expected to be ready in March.
The group meets monthly and welcomes newcomers. Another great way to discover more about whisky is to simply visit the tap room for a whisky flight or a spirits flight. Guests can also try a variety of fresh cocktails that are divided into categories – spiritforward, refreshing, savory and sweet. You can expect the drinks to change with the seasons.
Engelhorn’s advice to those looking to learn more is not to be intimidated. “Don’t feel bad about asking questions,” she says. And if whisky isn’t your thing, that’s perfectly fine, too. It’s your palate –not right or wrong.”

Cat Cafes first became popular in Japan, but the public’s love for adoptable cats in a cafe setting soon spread to Colorado’s Front Range. Each cat cafe in Colorado has multiple felines waiting to play, purr, and pounce into their forever homes.
In 2014, the first known Colorado cat cafe made its appearance on Tennyson Street in Denver’s Berkeley neighborhood. Denver Cat Co. owner Leila Qari feels in awe of how far the cat cafes have come and enjoys seeing other cafes pop up across the state, giving cats a shot at finding homes.
“I want to emphasize how privileged I feel to do the work we do, and how proud I am to have an immigrant- and female-run business,” Qari said. “I love to have that representation in the mix.
After nearly 10 years, Denver Cat Co. has one of the highest adoption rates in the state because of their unique ability to introduce adoptable cats to humans, a concept that helps give felines a fighting chance at becoming the perfect companions.

Teddy Cat is a cat-centric cafe that incorporates pet adoptions and handcrafted goods.
This cafe seeks to alleviate the pressure at animal shelters to help find more homes for adoptable kitties by focusing on shy cats, older cats, cats that have been at the shelter the longest, or bonded pairs looking for homes together.
This cafe’s mercantile features clothing, cat toys, curated gifts, art work and more.

The Purrfect Pause is a cat-themed cafe, boutique, and cat sanctuary located at 5290 Arapahoe Ave., Suite E, in Boulder.
The Purrfect Pause partners with Front Range Freedom Rescue to help provide medical care and foster families to help the cats socialize ahead of their debuts at the cafe.
This cafe offers hourly passes, beverage selections, and a store with cat toys and cat-themed gifts.
The NoCo Cat Cafe offers small bites and beverages for guests to enjoy while visiting with the feline residents. All of the cats are healthy, spayed or neutered, vaccinated, and ready for adoption.
Guests are welcome to enjoy the ambiance of the cafe at 121 E. 5th St, in Loveland, while playing games, reading, and awaiting the attention of the ever-elusive kitties.
Walk-ins are welcome during regular hours Wednesday through Sunday. It’s closed Monday and Tuesday.

From car camping to backcountry excursions on foot, the right gear can make a night-and-day difference as to how a camping trip is carried out. A packraft allows one to explore beautiful regions of the state that hikers simply can’t access on foot. A Colorado-born company, Kokopelli prides itself on providing water enthusiasts with some of the lightest and most durable packrafts available on the market. Sure, the stars shine bright in the night sky of Rocky Mountain National Park, but when the sunlight dwindles, a headlamp quickly becomes the most important campsite accessory. There’s nothing quite like sipping a well-made cocktail at a welcoming tasting room or trendy cocktail lounge. But if you’re new to mixing a drink at home, it’s easy to feel a bit intimidated. Fortunately, we’ve reached out to four local distilleries to get their cocktail creation insight, a favorite recipe and a pro tip.
2 oz. Leopold Bros. Michigan Cherry
Whiskey
1 oz. fresh lemon juice
.5 oz. simple syrup or agave nectar
1-2 small cubes of peeled ginger root
lemon peel or lemon wheel garnish
How to make it: In a cocktail shaker, muddle 1-2 small cubes of peeled ginger root with simple syrup or agave nectar. Add Leopold Bros. Michigan Cherry Whiskey, fresh lemon juice and ice. Shake until cold. Strain into double old-fashioned glass over fresh ice. Garnish with lemon peel or lemon wheel. Optional garnish of ginger root.
Expert Cocktail Tip: Place the least expensive ingredients in first in case you make a mistake and have to start over.
1.5 oz Hacedor Reposado
.5 oz orange liqueur
Sour mix
Dash of lemon & orange bitters
Lime wedge and/or jalapeño
Chili lime salt on the glass rim
How to make it: Add Blanco, orange liqueur, sour mix and bitters to a shaker with ice. Shake and strain into a salt-rimmed glass with crushed ice. Garnish with a lime wedge and a jalapeño slice.
Expert Cocktail Tip: Adding a floating garnish isn’t just for looks. It enhances the experience through sight, taste, and smell while sipping.
3 blackberries
1.5 oz gin
2 teaspoons apple butter
0.5 oz lemon shrub
Fill ice
About 4 ounces of Izze blackberry soda
Garnish with a buzz button and dried persimmon clothespinned to the side of glass
How to make it: Muddle 3 blackberries in a highball glass. Mix the ingredients in the glass and stir.
Expert Cocktail Tip: Balance in a cocktail is important and often individual. For your own tastes, try to balance acidity and sweetness, bitterness and salinity. When you find your balance, you’ll start making cocktails you’ll love. With the Rural Juror, we knew we wanted to make a cocktail with apple butter, which has a lot of sweetness and a little bit of salt. The rest of our ingredients lean on bitter and sour flavors to round it out, and we toss a buzz button on the rim to elevate the whole experience.
2.5 oz Montanya Platino Rum
1 fresh lime, juiced
.5 - 1 oz simple syrup
How to make it: Shake with ice and strain into a coupe glass.
Expert Cocktail Tip: One of the best pieces of advice we can give is to use fresh, organic ingredients. This will significantly improve the overall flavor of the drink and keep any cocktail from being too sweet. Fresh garnishes always make the best presentation as well.

Located in the beautiful foothills between Golden and Boulder is a hidden gem of a disc golf course. Wondervu
Disc Golf Course offers an amazing 22-hole course that has sweeping views of the Continental Divide, from the backside of the Boulder flatirons to the foothills of southwest Denver.
Consistently ranked among the top courses statewide, it sits at 8,800 feet, and is quite literally not for the faint of heart. Holes range from 126 feet to 402 feet, and beginners are advised to get more experience before giving it a try.
The amazing and difficult par-3 is home to multiple tournaments each year, featuring top-tier athletes. Yet, enthusiasts just looking for a quick escape from the daily grind can get on the mountain after a 45-minute drive from Denver or a 30-minute trip from Boulder. The course is located in Coal Creek Canyon (aka Highway 72) between the Wondervu Cafe and the Canyon Tavern. Reservations are required, so check the Facebook page prior to heading up.
The man behind the dream known as Wondervu Disc Golf Course is Dan Ward. After watching “Field of Dreams” in 2015 while on summer break from CU, Ward followed the model of “if you build it, they will come.”
He rented the land, which hosted an old, converted Griff’s Hamburgers Stand, and spent his last $5,000 on nine baskets. And with 42 days until delivery, he bought a chainsaw and started working to open up holes on the 25 acres of forest.
After nine holes were built, he brought in Eagle McMahon, a young local pro who has ranked in the top 3 worldwide, to check
out the property and offer some tips. McMahon’s father, also a competitive player, shared his thoughts on creating a challenging, unique course. Eagle suggested that he remove right-hand, back-hand shots, and keep pure lines throughout the course, Ward explained.
By doing so, the course became challenging to all but a minority of players. Throw in the tight fairway gaps, elevation changes and large pine trees and you have one of the toughest par-3 courses in the region.
While the sport can be competitive, most people at Wondervu are simply trying to improve their game while enjoying Rocky Mountain views. At roughly 8,800 feet, the pines are tall, the peaks are jagged and the “rough” is unforgiving.

Like any good golf course, if the going gets tough and the discs disappear into the mountainside, a small pro shop awaits. Discs, hats, hoodies and other goods are available. Ward created High Altitude Disc Golf apparel and offers a variety of swag. Talk of a food truck has been kicked around, as well. Recently, three picnic tables were donated for players to hang out before and after a round. According to the Facebook page, improvements have been made to the course and season passes are now available for $80. A major summer tournament, the Boulder County Classic has been scheduled for July 1-2.

You don’t get more Colorado than a delicious green chile treat paired with a local brew. These crispy chile rellenos, served alongside house-made pork green chile, are available at Left Hand Brewing’s newest location in RiNo. Chef James Bland recommends pairing it with the brewery’s Sawtooth Amber Ale.
“Roasted malts complement seared, charred and caramelized proteins, making Sawtooth Amber Ale a perennial favorite,” Bland says. “The searing of the pork shoulder and the charring of the poblano peppers truly pairs well with the roasty characteristics of the Amber Ale beer style.”
Ingredients
Wonton wrappers (7”x7”)
12 poblano peppers
2 lbs. shredded cheese
Directions
Place poblano peppers on a roasting pan. Broil at 450 degrees until the skin is charred. This typically takes 10 -15 minutes on the broil setting, or 20-25 minutes at 450 degrees.
Place egg roll wrapper in front of you, with a corner facing you.
Place a pepper in the center of the egg roll wrapper.
Place cheese in the center of the pepper.
Wet all edges with a mixture of cornstarch and water.
Fold the corner in front of you up half-way.
Fold in both sides and continue to seal the egg roll.
Place egg rolls into the deep fryer or pan fry. Cook until golden brown.
Serve with store-bought green chile or try the pork green chile recipe provided on the next page.

Ingredients
5 lb. pork butt (boneless or bone-in) cubed
1 yellow onion (small dice)
2 garlic cloves (minced)
1 quart chopped green chile
1 diced jalapeno (omit if you don’t like it spicy)
3/4 cup lard or butter
2/3 cup flour
2 quarts chicken stock
Directions
Cut pork butt or shoulder into small cubes.
Place lard into a large pot over medium high heat. In batches, brown pork on all sides.
Remove pork from the pot and add more lard. Sauté onions until translucent.
Add flour and remaining lard. Stir until flour has been cooked and mixture has thickened.
Add garlic, green chile and jalapenos.
Add chicken stock and bring to a simmer, about 20-30 minutes.
