We’ve decided that shining a brighter light on certain industries would best serve our readers as we move Suggestionsforward.arewelcome, but as a jumping-off point we’ve chosen to start with a closer look at the state’s wine production and a roadmap to tasting heaven. We’re not abandoning our broad coverage of other craft artisans. We’ve included a plethora of fun outings in Durango, an incredible musician, and hundreds of suggestions for upcoming events to attend as summer wanes and fall approaches. But we also invite you to drink up our stories that explore Colorado wines and winemakers. To round out the year, we’ll dive into the state’s spirits scene, highlighting everything from great whiskeys to aperitifs aimed at a range of palates. The November-December issue will also remind people of the incredibly wide range of holiday merriment that takes place statewide. Beginning the new year, beer is on tap. The strength of the craft industry continues to push forward, bringing along an economic boost that number crunchers love to talk about. Again, the January-February issue will include more than hops and barley. We’ll highlight additional entertainment options for new arrivals and longtime residents. As for the current issue, the pandemic gave folks a chance to stay closer to home and experience some of the excellent entertainment within driving distance. Local vintners wisely stepped up with great products and many have built beautiful settings to relax and enjoy a So,glass.ifyou want to learn more about the yields of the Colorado landscape, plan on visiting a few wineries. JAY MCKINNEY McKinney is a Colorado native who grew up south of Denver in Sedalia. In 2020, he graduated from the Metropolitan State University of Denver with a bachelor’s degree in communications and shortly after, he began contributing to Thirst Colorado. Compiled By Kristen Kuchar As we are sipping our favorite wines, we may not always be thinking about the people behind the bottles who made it all possible. Fortunately, we got the chance to chat with four impressive women to learn what it’s like being a part of the Colorado wine scene, their favorite wine they produce and their go-to food pairing.
Meet
What is the best part about being a winemaker? Creating something that can be shared and bring pleasure to so many. Describe being a part of the Colorado wine scene? Challenging at times due to growing grapes in our unique climate, but exciting potential for creating delicious wines.
Fruit and wine is the best combination. For summer barbecues I make up a big batch of sangria using Whitewater Hill Vineyards Sweetheart Red, lime simple syrup, seltzer, and as many frozen palisade peach slices and cherries as I can fit in the glass.
Describe being a part of the Colorado wine scene? Being a part of the Colorado wine scene is a wonderful lesson in community. We thrive together and bring out the best in each other. Whether it's running a new idea by a friend, coldhardy varietal exploration, or getting together at VINCO (our local trade conference), the wine scene in Colorado is full of incredible knowledge and comradery.
Tell us your go-to wine and food pairing.
Describe your winemaking style in three words. Dry, European style. Favorite wine you produce? It depends on my mood, the season and what I’m eating. We have 14 different wines, and I am proud of them all. Love my sparkling any day. My Italian heritage adores the Sangiovese and the Cabernet Sauvignon/Sangiovese blend. I’m a big fan of Dry Rosé of Cabernet Franc in summertime and the Sauvignon Blanc is delicious. Plus, we have so many unique red wines.

What’s your go-to wine and food pairing? Champagne (or Sparkling) and french fries!
What has been your best moment as a winemaker? I've had a lot of moments as a winemaker that remind me why I do this. Whether it's a quiet morning topping barrels, sampling grapes out in the field, or long days on the crush pad, each season has something new to offer. I love the transformation from grape to bottle and am always humbled by the tenacity of the grape vine. For me there hasn't been one defining best moment, but those small moments that occur throughout each day are where I find the magic in winemaking.
Describe your winemaking style in three words. Fruit-forward, adventurous, true to the grape Favorite wine you produce? Our Cabernet Franc is always bursting with a complexity of flavor. Rustic notes that come together to create a red that fascinates me with every sip.

Describe your winemaking style in three words.
What’s your go-to food and wine pairing? In summer, it’s Grüner Veltliner and grilled summer vegetables or caprese salad. In the fall, I’m all for a robust, dry rosé with smoked pork tenderloin.
Describe being a part of the Colorado wine scene? A dream come true! We are so grateful and fortunate to be part of such a great industry. The Colorado wine scene is still growing and adapting and to be a part of that motivates us to represent Colorado with great wine. There is also so much cooperation and support within our group. Tell us your go-to wine and food pairing. There are so many but you can never go wrong with the Cowboy Cab (Cabernet Sauvignon) and a rare, grilled ribeye steak.
Crisp, aromatic and clean. Favorite wine you produce? My husband and I produce a variety of wines, each unique and reflective of the vintage’s characteristics, but year after year, my favorite has to be our dry riesling. It’s vibrant, with mouthwatering acidity, and filled with classic notes of orchid flower, lime zest and ripe peach. While we weren’t able to produce and estate Riesling in 2021, I am super excited that we were able to work with some incredible vineyard sites, like Colorado-grown Riesling from the Box Bar Vineyard in Cortez. One thing people might not realize about being a winemaker in Colorado:. Growing grapes in Colorado is truly extreme farming. Our high elevation and arid climate create unique wine expressions, but at the same time, we are constantly threatened by late-spring and early-fall frosts, in the face of constant drought. Without a body of water to moderate our harsh continental climate, the vintage variations are dramatic. That said, for me, making Colorado wine is an expression of the vintage, not a recipe to repeat year after year.

Describe your winemaking style in three words. Classic, traditional, unpretentious. What is your favorite wine you produce? Iron Horse Special - My port style What is the best part about being a winemaker? Being a winemaker, especially a woman winemaker, is very special. We are part of a tradition that goes back hundreds of years and still follows the same basic steps. Plenty of room for creativity and innovation but the end result is to make a great glass of wine. We produce a product that comes from our passion and love of wine. A perfect blend of art and science.

Expect to find a dozen different wines available when visiting. The Primitivo, better known as a Zinfandel, is always popular. The Cabernet Franc is medium-bodied and balanced, with an earthy start. The Merlot is a dry, medium-bodied red featuring flavors of berries and plums. It pairs perfectly with pork, duck and mushrooms. The Meritage White is perfect for pairing with cheese and seafood. Or just pour a glass and sip away. Wine Country Inn also boasts an upscale dining experience at Caroline’s, featuring locally sourced lamb, beef and produce prepared in the classic French tradition. Enjoy a bottle of Meritage Red with the beef. The Tapestry Lounge, adjacent to the lobby, is a great place to grab a glass of wine or other drinks, along with a bite to eat. Hotel guests also can partake in a complimentary hot breakfast at The Tapestry. And if a pro tip might be offered, keep an eye out for an oak chardonnay from Grande River in the next year or two. It’s one that Jean says she can’t wait to try. If Wine Country Inn is the welcome sign to the Western Slope, wine tourists will enjoy digging even deeper into the soft beautiful landscapes that provide the backdrop for fantastic wineries. CARLSON VINEYARDS crafts award-winning wines that are widely available around Colorado. The Palisade winery is perhaps best known for a cherry wine and the varied Laughing Cat line. A few cats might vie for your attention when visiting. The winery has been growing fruit and making wine since 1988, and has long been a champion of

The Palisade landmark stands as a greeting to Interstate 70 travelers, and the venerable hotel has spread its footprint in the past year.Richard and Jean Tally opened Wine Country Inn in 2008 after acquiring the land from Stephen Smith. Although Smith kept the adjacent Grande River Vineyards until June of 2021, the Tallys purchased the vineyards and winery last year. With the complete package, the Tallys believe they have the perfect destination for weekend travelers, wine tourists, and those seeking a location for a wedding or other types of gatherings. “There is a whole different emphasis with the hotel and winery,”
The tasting room is open every day, doesn’t require reservations, and offers various flights of wine and cider (which are discounted if bottles are purchased). Red Fox’s spacious patios have outdoor games and host live music and food trucks.

Jean Withsays.the help of longtime winemaker Rainer Thoma, Jean predicts their wines will improve and impress visitors. “Rainer’s style is very European, Jean says, adding that he worked in Europe before taking over the reins at Grande River. In addition to COVID-19, the Western Slope wineries experienced two years of harsh weather that destroyed most of the harvest. It forced vintners to purchase grapes from out of state and other vineyards in the area. “We were all scrambling and horse trading,” Jean says. She said the winery will continue to look for the right combination of grapes to grow, which could include more cold-hardy varieties that might withstand shorter growing seasons.“This terroir and this climate are so unique,” she says. “I don’t see how we can go wrong if we take care of it.”

RED FOX CELLARS in Palisade is more interested in experimentation and relaxation than impressing wine snobs and following any strict rules of traditional winemaking“We’re simply out to make quality, delicious-tasting wine that is truly unique,” the website says. “We may never make the world’s most classically perfect Merlot, but that’s just fine with us.”
PLUM CREEK CELLARS claim deep roots as the oldest continuously operating winery in Colorado. Winemaker Corey Norsworthy appreciates both the challenges and the camaraderie of growing wine in Western Colorado. “Wine is never a recipe — it’s not beer-making or cheese-making; you have to be on your toes. With every year comes a different structure of grape to work with,” he says. “I’ve stayed in the Grand Valley because of this community, and being part of it is something special.” His wines are available statewide, but the Palisade winery is worth a visit for the sculpture garden and landscaping, as well as the airy tasting room.
BOOKCLIFF VINEYARDS is an experiment in winemaking for a pair of engineers. The project has been successful enough to support a Boulder winery and tasting room, as well as a tasting room and vineyard on the Western Slope. The Palisade tasting room hosts a weekly “Sunset Saturday” event through October, with live music and food trucks, starting at 5 p.m. The Boulder winery offers tours every Friday and Saturday.

RESTORATION VINEYARDS will host “Band in the Barrel” concerts through October at its beautiful vineyards surrounded by peach and cherry orchards. Co-owner Gary Brauns shifted from restoring cars to restoring vineyards when he bought the property in 2012 with his wife Linda. SLAYMAKER CELLARS in Idaho Springs is a meadery that operates as a workers’ cooperative and non-profit B-Corp. They use local honey to craft mead using traditional winemaking techniques. The tasting room on Miner Street has a cozy backyard with picnic tables and great views. VINES 79 WINE BARN is perhaps Palisade’s only wine saloon, leaning into an Old West theme to serve up classic dry wines crafted from a family-operated two-acre vineyard. The patio is also rustic and welcoming. The tasting room is only open Friday through Sunday, but the wines are also available daily at Nana’s Fruit and Jam Shack in downtown Palisade.

THE STORM CELLAR is a boutique winery in Hotchkiss specializing in crisp white and rosé wines. The husband-and-wife winemakers make the best of the region’s challenging conditions. “Our intense UV exposure at over a mile above sea level forces our grapes to form extra-thick skins to protect themselves, producing wines of extreme concentration and aromatic intensity,” the website boasts. “We moderate the tannins and bitterness that could arise by whole-cluster pressing all of our fruit, and we strive to preserve freshness through long, cold fermentations.” Relax on the rustic picnic tables among their vineyards.

16 ThirstColorado.com September-October 2022 In a state that prides itself as hallowed ground for music and musicians — and is a dream destination for many guitar-casecarrying transplants — you would be hard-pressed to find an artist more authentically Coloradan than Antonio Lopez. Lopez, an Alamosa native and now Longmont resident, is a Front Range favorite whose singer-songwriter aesthetic is often bluer than cloudless Colorado skies and dusty with red rock sandstone.

A lifelong musician and student of music, Lopez jumped in at an early age, like most of us, through school programs in choir and band. By middle school, he had traded in his clarinet for the guitar and began composing his own songs shortly thereafter.

“I actually started out listening and playing more metal-type music,” Lopez admits, smiling, but he now feels comfortable and in his own element as a member of the rich guild of singersongwriters. And, like his fellows in that rich tradition, Lopez pulls a lot from his own life and experiences. With “Roots and Wings,” his latest album, “the songs do have a lot of personal narratives and stories from life.” Indeed, the record plays like a photo album of snapshots from Lopez’s experience and stories, while some are just inspired from it and lean on his vivid imagination for amplification, like a novel that is fiction but comes from real-life experience. “It’s like a creative writing exercise sometimes, where just the seed of an idea takes root and kind of grows on its own. Sometimes the song just kind of figures out where it wants to go and I go along with it,” says Lopez of his process and craft. “Creativity is like water. It just flows,” Lopez says of his songwriting process, which doesn’t necessarily follow any established pattern of music first, lyrics second or vice versa, though his lyrics do lean on his own personal stories. “A lot of it is my own personal narrative, or stories from or about my family. Some of it is representative of struggle andWhentriumph.”asked what makes Colorado such a great place for music, Lopez cites the supportive music community and several venues that are personal favorite performance spaces, including Denver landmark Swallow Hill Music Center. “Swallow Hill is an outstanding place in terms of venue and producing really great Colorado acoustic music. It’s legendary for a reason,” he says. Live, Lopez puts context around some of his more personal pieces with descriptive intros, giving them narrative depth and allowing them to more fully resonate with the audience on the first listen. It makes the audience eager to explore those word-pictures again. And again. Personnel on Lopez’s records varies, but a typical Antonio Lopez Band lineup might include: Chad E. Mathis (bass), Christopher Scott Wright (drums), and Jonathan Sadler on the somewhat out-of-theordinary marimba. The instrumentation makes for a musical combo that is at once familiar and exotic. “I really love playing with and off of the other members of the band,” Lopez says, “and I’m really fortunate that we’ve been able to stick together through all of the pandemic things the past few years.”
“I’ve lived here my whole life and I find it a very welcoming and inspiring place to make music,” Lopez says of his native state. “I have met people all over Colorado and everyone — musicians, yes, but everyone really — says that the music scene is really built on a sense of community. It’s about communal effort and collaboration rather than competition. I think we all shine together and recognize the mutual benefit of that.”
Kyle Kirves drinks beer, plays guitar, runs trails, and manages projects – all with varying degrees of success. While not a craftsman himself, he is quite content writing about the Colorado artisans who create such wonderful things and memorable experiences.

Sometimes, Lopez chooses to leave words at home and just perform with an instrument – maybe allowing the listener to come up with their own story. Not content to just perform for that community, Lopez dedicates himself to serving it in ways that go beyond just performance. Actively involved in organizations that promote better learning and living through music, Lopez served as executive director of now defunct Sound Bridge music in 2020 to see if there were ways to support musicians during the pandemic. Now, he serves on the board of Longmont Creates, a non-profit supported by the city that serves as a platform and voice for craftspeople of all kinds – musicians, brewers, artists and artisans – anyone with a creative bent.
“With Longmont Creates I feel I’m in a place where I can really contribute from an experiential and expertise perspective and bring that musician’s voice to this team and serve musicians and the broader community,” Lopez says of his involvement.
While many musicians live and play here, Antonio Lopez is both “from” and “of” Colorado – something that manifests itself in his music and his mindset, his creativity and his commitment. In the form of his music, he makes Colorado somehow portable and a little easier to take with you every day.
Lopez changes things up though (if the performance I took in is any indication) with a solo set midway through live concerts. It brings an intimacy to the shows that makes it feel like the songwriter is speaking directly to you, telling you his story in lyric, guitar and keyboards.

At each location, you can likely find carefully crafted wine, either made from native grapes or sourced from another region. If you live in Colorado, or have spent any time here during the fall, you’ve probably witnessed the majesty of our state’s fall colors, when the aspen leaves shimmer in the sun, and put on a fiery display of reds, oranges, yellows and golds that light up the mountains. Coloradans may not always agree what time of year is the best, but few people will disagree that leaf-peeping season is pretty darned amazing. So, where’s the best place to see fall colors? No doubt, high country ski towns probably first come to mind, but let’s face it… they’ve been discovered and you might spend more time in bumperto-bumper traffic than actually enjoy the scenery. What about a regional or state park? Sure, those work, but parking may be hard to come by, or the trails may be crowded. As our beautiful state has grown in popularity, it’s getting harder to find authentic, outdoor, off-the-beaten-path Colorado experiences where you can have fun with family and friends. Fortunately, there is a Front Range destination that’s still mostly undiscovered, and definitely not overrun… Canon City. Add to bowl with lamb. Mix until combined and form into 1 1/2-ounce balls. To make veggies: Cut onion and bell peppers into 1-inch stacks. Add ground lamb meatballs to skewers, alternating with peppers and onions. Cover and refrigerate at least 1 hour. To make herb sauce: In immersion blender, blend all ingredients until smooth. Refrigerate until ready to Preheatserve.grill to medium-high heat. Grill skewers about 3 minutes on each side, or until meatballs reach internal temperature of 150 F. Rest 5 minutes. The Palmer family has been working with horses for their entire lives and know the area inside out. Along with rides on the Colorado Trail, they also offer multi-day pack trips and short rides around their ranch. “Being able to spend several days in nature shows a greater range of the scenery in the area. And doing it on horseback means we get to see more than if we were simply hiking,” Palmer said.

Several stables near Durango offer rides on the trail, which spans eight mountain ranges, passes through six wilderness areas, and goes along five rivers. Each year, the trail changes and becomes more accessible, as signage, bridges and switchbacks are added. Horses traverse each of the twists, turns, ups and downs of the trail with ease, making for an enjoyable ride down one of Colorado’s premier trails. They are also known for being reliable and friendly travel companions, making them perfect for families, friends and solo travelers.

A relatively new wilderness activity has entered the scene in the form of bike packing. This challenging activity is a combination of mountain biking and hiking with a pack. “We’ve tried to be a community hub throughout the pandemic,” Indrehus says. “Now that things are opening back up, it’s the perfect time to freshen our look and lineup. We couldn’t be more excited about these changes, and we believe our fans are going to be blown away as well.”

For those who don’t know, Tommyknockers are gnome-like creatures in Cornish folklore that found a home in Idaho Springs during the Colorado Gold Rush. In mining, Tommyknockers are regarded as tricksters that would hide supplies and extinguish candles. However, the mischievous Tommyknockers were also credited with leading miners to lucrative veins of gold and warning miners of danger. “Our goal was to update the Tommyknocker iconography while respecting the character and the institution that are so familiar to many craft beer drinkers,” says AOTC’s Creative Chief and Cofounder Dan Kiefer. “We wanted to celebrate the brewery’s mining town roots while giving their beers a fresh look that better reflects the dynamic nature of craft beer today.”

“I believe it’s changed the way people think about this community,” Indrehus says. “The energy here is different, it’s more positive.”Thebrewery renovation, expected to take place later in the year, is yet another way Tommyknocker aims to remain relevant in bustling downtown Idaho Springs. The renovation will open up the 30,000 square-foot location and make for a welcoming place to share a beer with friends and enjoy the mountain lifestyle.
Along with the new flavors, Tommyknocker will continue to brew popular classics like the Maple Nut Brown and its flagship Blood Orange IPA. However, these beers will be rebranded. Maple Nut Brown is going to be renamed “That 90’s Brown” and the cans will feature eye-catching graphics that will have the brewery’s fans doing a double take as they walk the beer aisle of the liquor store. The brewery teamed with Denver-based agency Ahead of The Curve (AOTC) Strategy and Ember Design to re-envision the brand while preserving the mining history associated with the brewery.
That’s why the brewery decided to go all in with some exciting changes. Tommyknocker expanded its lineup of beers, rebranded and now plans to spend more than $100,000 to renovate the brewery and restaurant later this year. Consumers can indulge in new flavors like the Off Leash Juicy IPA, Mother Lode Juicy Double IPA, Peach Dream Fruited Sour, Mountain West Modern West Coast IPA and Crispy Colorado Lager. “To have come this far in the craft beer industry you need a rock-solid foundation and the willingness to innovate,” says Tommyknocker President Steve Indrehus. “While our portfolio still has many of the beloved classics, we’re incredibly excited about these new beers and the fresh look and feel for the brand and the brewery. We’ve never had this many new year-round beers come out at once. We think it’s going to be game changing.”
No matter how long a brewery has been in business, it’s no easy task navigating the ever-changing craft beer market. While Tommyknocker Brewery & Pub has been an established craft brewery stop in the historic mining town of Idaho Springs since 1994, it’s important to adapt with the times and stay relevant.
Indrehus has been in the industry over 30 years and seen craft beer go from the niche career path he chose to a booming and competitive industry. He joined the brewery a year after it opened in 1994 and since becoming president, he’s been proactive in giving Tommyknocker a facelift. He’s also tried to capitalize on the town’s growth and booming tourism. The brewery is confident that the rebrand will appeal to a younger demographic and bring customers more quality beer in the process. “The artwork refresh gave us the opportunity to change up some of our beer branding and beer styles,” Indrehus says. “We’re brewing more IPAs and sours, and diving into that, we realized there are a ton of new techniques and new products, and different kinds of processes to make beer really good these days. We’ve embraced all of them and our beer is improving. It’s just new, and it’s different. It’s better.”The exciting changes come after two years of COVID-19 lockdowns and uncertainty that hurt many businesses but oddly created opportunity for Tommyknocker. While a shift in Idaho Springs’ reputation as a humble mining town to a popular getaway for Denverites was already underway, the pandemic forced businesses to get creative in how they served guests. As a result, the town’s main thoroughfare, Miner Street, was closed to auto traffic to create outdoor accommodations for local businesses. It was so successful that the changes remained in place by popular demand.

Probably the best-known wine region in Colorado, the Grand Valley Region, consists of Palisade, Grand Junction and Fruita, where there are more than 25 different wineries in the area. The fruit and wine byway provides an opportunity to incorporate another
The second federally designated American Viticultural Area in Colorado outside the Grand Valley Region, is The West Elks. This area is around the towns of Paonia, Hotchkiss and Cedaredge. West Elks AVA is home to some of the highest vineyards in North America. You’ll find almost a dozen wineries here, including Stoney Mesa Winery, Black Bridge Winery and Qutori Wines. Guests of the Stone Cottage Cellars winery can even stay right on the estate in the twobedroom cottage to get a taste of vineyard living.
The Mile High City may be synonymous with craft beer, but there are plenty of opportunities to experience great wine here, too. Start with one of the urban offerings: Deep Roots Winery, Balistreri

olorado truly has become a wine lover’s state. For starters, there are roughly 150 wineries producing an eclectic mix of wines for every taste. Numerous award-winning restaurants feature excellent wine programs and countless wine bars to explore and discover the latest from local vintners. According to a Colorado Wine Industry Economic Impact Study from last year, nearly half (29) of the state’s counties are home to wineries. And production has more than doubled over the past eight years throughout Colorado. Wine visitors spent nearly $30 million in 2019 on products, hotels, restaurants and other related entertainment. The following is a rundown of each area throughout the state where those visitors enjoyed the fruits of the vintners’ labor.

throughout northern Colorado is a multitude of unique wine experiences. In Fort Collins, after 30 years of churning out award-winning beer, Odell Brewing Co. launched The OBC Wine Project. Ten Bears Winery in Laporte utilizes only Colorado-grown grapes in their wines, like the Poudre River Red. Sip wine aside the peaceful riverside at Sweet Heart Winery in Loveland or while strolling through beautiful gardens at Blue Mountain Vineyards in Berthoud. Boulder is home to Silver Vines Winery, Settembre Cellars, Vinnie Fera Wine and BookCliff Winery, as well as one of the best wine restaurants in the country: Flagstaff House. In southern Colorado, the Winery at Holy Cross Abbey in Cañon City has been drawing people since 2002. Wine bars are plentiful throughout SoCo and include Wine Down By The River Wine Bar in Pueblo, Deerprint Wine in La Veta, and UVA Wine Bar in Colorado Springs. Wines of Colorado Creekside Dining in Cascade features local wines from Mountain Spirit Winery and Evergood Elixirs.The higher mountain areas shouldn’t be forgotten when planning that staycation. A few of the excellent winemakers throughout the mountain region are Snowy Peaks Winery in Estes Park, Continental Divide Winery in Breckenridge, Vino Salida Wine Cellars in Poncha Springs, Vines at Vail Valley and Mountain Spirit Winery in Salida. In Aspen, The Little Nell has an award-winning wine program with more than 20,000 wines in the cellar.

It’s difficult to pick only one Colorado wine as my favorite, but this one is certainly one of them. It is called the Malbec American Heavy Toast (2019) from Sauvage Spectrum. Winemaker Patric Matysiewski has done something special here. This red wine is big, bold and oaky, yet incredibly clean throughout, particularly on the finish. I could try to describe it further, but it is best experienced firsthand, by tasting. Alas, it is only available (as far as I know) in their tasting room in Palisade. Well worth the trip, check it out!

There is a peppery spice in the mid-palate, with integrated tannins and a lingering finish.
