ART OF BREWING

BOOTSTRAP

CRANKS OUT ROCKIN’ & ROLLIN’ ART By Kyle Kirves

Yes, I had an Iron Maiden “Aces High” poster in my room when I was a teenager. Ah, that brilliant combination of comicbook campiness and undead menace was a beautiful thing lost on people like ... well, my mother. So it’s no surprise that Bootstrap Brewing’s Insane Rush IPA label artwork really appeals to me. Done up in moonlight blue, a herd of frantic, bloodshot-eyed rabbits flees a coiled rattlesnake that, from the looks of things, slithered right in when they were sleeping. Cats clearly

8 ThirstColorado.com

Spring 2016

have no trademark on sly smiles, either, Alice. That’s a smirk that might say either “Let’s play,” or “Let’s eat.” Hell, maybe there’s no difference to a snake. A lot of thought went into that can art. Three years ago, when Bootstrap first started bottling their 22-ounce bombers, the labels bore animal images that coowner and “Chief of Stuff” Officer Leslie Kaczeus painted herself. Nice artwork, to be sure. But for their can campaign, Kaczeus and husband Steve opted to go “all in” with a fully realized artistic vision.

“The branding on the cans, we recognized very early, was going to be an investment for us,” says Kaczeus. “We wanted it to be the real deal. So we sought out people who are the very finest at what they do.”
Enter Boulder-based Moxie Sozo, a design and advertising agency with an impressive portfolio. Moxie Sozo’s goal was to make a can that wasn’t just another item sitting in the liquor store’s crowded cooler, but something that people would want to pick up. “Eighty percent of the time, if a

consumer picks up the product, they’re going to put it in the cart. Our job is to get them to pick it up,” said Leif Steiner, creative director and founder of Moxie Sozo. “After that, it’s all up to the product in the can to create that second purchase and begin brand loyalty.” Leslie Kaczeus said it was all about the hops … and hopping. “We talked to Moxie Sozo first about what the beer is,” she said. “And Steve said flat out that there is a crazy amount of hops in this one. It’s not a huge leap from crazy hops to insanely rushing rabbits. It just fits.” It isn’t just snakes and rabbits in that scene. Look again and you’ll see a scorpion lurking underfoot. And a cowbell, too. Why? Because Kaczeus links Bootstrap’s beers with food and she also suggests an appropriate soundtrack. “Insane Rush goes with AC/DC, Great White, the Scorpions,” she said. And the cowbell?

“It’s an homage to the SNL skit, which is a favorite.
And also because, well, who doesn’t want more cowbell?” she
says, smiling and shrugging. “More Cowbell” is something of an unofficial slogan and rallying cry at Bootstrap – a reference found both above the bar and on the grill of the official Boostrap van. Clearly Will Ferrell and Christopher Walken’s legacies are now secure in the beer world. One of the can’s most characteristic appointments is not the art itself, but the surface. The matte finish subdues the reflection and really allows the art to pop off the can and not be obscured by shine. By touch, it is unlike most cans out there, appealing to more senses than just the eye. Taken all together, Insane Rush IPA is one of those rarities where the art on the

outside of the can mirrors the quality and attention to detail inside – demonstrating love of great beer

and a comically edgy attitude that’s 100-percent Bootstrap. So pop the top, crank the cowbell, and get a little crazy with this classic (rock) India Pale Ale. Kyle Kirves is a solid dude who believes drinking beer should be a ‘five senses’ experience.

FLYATHLETES MAKE A RUN FOR IT IN SAGUACHE Runnin’ and fishin’ and drinkin’ good beer By Joe Ross

If you’re out riding or hiking in the San Luis Valley this summer and you see a young girl aiming a BB gun at a less-thandesirable can of beer, fear not. All the people cheering her on are participants in the 3rd Annual Rocky Mountain Flyathlon – a running, fishing and craft beer contest that raises money for trails and fish habitat. Colorado craft breweries provide eventthemed beers, and craft whiskey also seems to turn up. In honor of the state’s stature as the

12 ThirstColorado.com

Spring 2016

king of craft beer, the event begins with “the traditional sacrifice of a mass-produced beer-like-thing,” said organizer Andrew Todd, who dreamed up the crazy Colorado event. Last year, that was a clamato-infused light beer. For the record, he had taught his daughter how to handle the BB gun before her Annie Oakley-like takedown of the nasty beer, which resulted in wild jubilation from the crowd. With the clammy brew out of the way, 50 athletes competed in the big event,

beginning with a 7-mile run carrying a fly rod through the Middle Creek drainage near Saguache (sounds like SuhWatch). Along the way, they had to catch a fish – preferably an “elusive Rio Grande cutthroat trout,” Todd says. Rarer and bigger fish are better because the type of catch helps your score. Rumor has it that a bottle of locally produced whiskey might have been found by some of the flyathletes at the 3.5mile turnaround marker. Todd would not confirm that detail at press time.

Photos: Rocky Mountain Flyathlon

By early afternoon, all flyathletes were accounted for (despite reports of rattlesnakes), and the overwhelming majority had photographed a trout, carefully sized up on their race bib tape measure. With the serious business done, everyone dug in to the Southern barbecue and craft beers. Along the way, participants learn about trails, fish species and habitat, and more, while also raising money for a good cause. Last year, they raised $20,000 for trail rehabilitation, which begins in June with the help of volunteers from Volunteers for Outdoor Colorado, said Todd, a federal fish biologist based in Denver. Kelly (whose last name will remain anonymous) was the top fundraiser in

2015, and the runner up in 2014. He said the booze is another highlight. “The running is hard, the fishing a challenge, but the enjoyment of fine Colorado craft brews and spirits the night before and after the Flyathlon is the icing on the cake,” he said. Elevation Beer Company provided First Cast IPA (what else?) for the event, as well as some “drinkable trophies for the winners,” Todd said. “San Luis Valley Brewing Co. brought a double red ale called Wildfire that packed a bigger punch that sent some people to their tents early.” Three Barrel Brewing contributed Thurday Special, a coconut brown lager that has been a flyathlete favorite two years running. And Upslope Brewing Co.

provided a variety of canned beers that kept everyone happy. According to Andrew Schmidt, one of Todd’s coworkers who plans to compete again in August, the “Flyathlon is such a fun combination of awesome activities, great people and all in an amazing location. Prior to the event, I was certainly into fishing, running and delicious beer, I just hadn’t put them together so seamlessly.” The 3rd Annual Rocky Mountain Flyathlon is set for Aug. 12-14 (permit pending) in Saguache. Todd says similar events will be held in Gunnison and northern Idaho this summer. Check for details at flyathlon.com. Joe Ross spends much of his time looking for great stories and great beers.

STRANGE BREWS

KIDDY CEREAL MADNESS AT BLACK BOTTLE By Steve Graham

S

ean Nook just can’t stop pouring sugary breakfast cereals into his milk stout. The founder and brewmaster at Black Bottle Brewery in Fort Collins launched his Cerealiously line two years ago, and famously caused a local shortage of Count Chocula cereal. He has since made six other beers with kids’ cereals, and debuted his French Toast Crunch milk stout in March. The brewery also hosted a Cerealiously March Madness tournament, with beers competing in brackets. Nook homebrewed for nearly a decade before opening the brewery and restaurant in central Fort Collins. The bar has 40 taps, serving at least a dozen of their own brews, and top-notch craft beers from around the country and the world. Like many of us, Nook grew up eating sweetened cereals, and the inspiration for his cereal beers came early one day. “I was eating cereal one morning at work and I said to myself I want to make a milk stout series and put real cereal in the beer,” Nook said. “I decided right then to call it Cerealiously.” So far, the milk stout has been infused with Golden Grahams, Honey Bunches of Oats, Cinnamon Toast Crunch, Lucky Charms, Reese’s Puffs, Count Chocula and Sugar Cookie Toast Crunch. The cereal is added late in the brewing process, pouring dozens of full boxes for each batch into the hop back. The beer flows through this container between the boil kettle and the chiller, which is typically used to add specific hop flavors — or perhaps the essence of chocolate crunchies and marshmallows. The resulting beers are not overly

14 ThirstColorado.com

sweet, but definitely carry the flavor of the cereal. “A finish and aftertaste of bittersweet chocolate and sweet cream win out and sell those Count Chocula flavors reasonably well,” wrote one veteran reviewer on BeerAdvocate.com. For the last two years, Black Bottle has used Count Chocula cereal, which is only available around Halloween. To make enough for the Great American Beer Festival last fall, Black Bottle bought up all the Count Chocula at several local supermarkets, making national headlines. Sean Nook said he worried about a General Mills lawsuit regarding their cereal trademarks, but the company has been giving Black Bottle cases of free cereal. “They embraced us,” Nook said. “It has been a great partnership.” Black Bottle is working on other creative brews as well. The brewery recently hosted the staff of a local waxing studio to guest brew a wheat beer made with pineapple and chocolate. They called it “A Brazilian Times Better.” Steve Graham is a Fort Collins writer who enjoys the outdoors and great beer.

In 1964 the United States Congress declared bourbon whiskey to be a distinctive product of the United States of America. It no longer had to be made in Kentucky to be considered a bourbon.

All bourbons are whiskey, but not all whiskey is bourbon. There are a number of distinctive categories of whiskey including rye, Scotch, Irish, Canadian and Japanese varieties.

COFFEE’S UNEXPECTED, YET PERFECT FIT By Tiffany Lutke

Photo: Jose Rodr

iguez

There’s something about coffee in beer that just feels right. Craft beer and craft coffee are similar products. Both rely on balance and complexity in aroma and flavor. Both are steeped in tradition, yet are constantly undergoing innovations and new processes. They both bring people around a table and invite conversation. It makes sense to combine the two. We’ve seen many coffee porters and stouts, as the roastiness of the coffee blends well with roasted and dark malts in the beer. It’s a natural fit. But adding coffee to beer doesn’t have to be about matching those flavors with similar tastes. It can be about matching flavor intensities, making sure that one flavor isn’t overpowering the next and creating a unique and balanced result. Currently, brewers are going against the grain and showcasing coffee in styles of beer one might not expect.

18 ThirstColorado.com

Spring 2016

Photo: Jose Rodriguez Dave Bergen, brewmaster and owner of Joyride

Dave Bergen, brewmaster and owner of Joyride Brewing Co. in Edgewater, recognizes both the traditional styles in brewing and also more inventive styles, like brewing beer with coffee. While Joyride brews a more conventional porter with coffee, they have also come out with the Wall White Stout as part of their innovative beer series, and as the name suggests, it’s not a dark beer. The Wall White Stout is similar to a bigger English pale ale in its balance and subdued hop character. It is aged on cocoa nibs for about two weeks, and then on whole Notorious coffee beans from Coda Coffee, conveniently located across the street. Bergen jokingly calls this process, “dry beaning” as a nod to the process of dry-hopping in beer, which is comparable to adding a large tea bag of hops to rest in the beer for a few days after it is done brewing.

Hops ©margo555 and Coffee ©ramoncin1978 / Dollar Photo Club

In order to select the right coffee, the Joyride and Coda teams got together to participate in several cuppings, a process which evaluates the coffee at different stages. “Coffee is a lot like malt as it takes on different attributes depending on how you roast it. It’s all about finding that blend,” Bergen said. The dry-beaning method helps keep the color of the beer light as well, much different from pouring coffee directly into the brew. Tom Horst, owner of Crystal Springs Brewing Co. in Louisville, has also showcased innovation in brewing beer with coffee. They have done a more traditional coffee porter but have also released a Coffee Pale Ale and a Coffee Black India Pale Ale. Crystal Springs teams up with Paul’s Coffee and Tea just a few miles down the road. “I really enjoy working with Paul. He knows beer and he knows coffee, so we have a lot of fun,” Horst said. They use a cold-brewed method, which helps extract the smooth flavors of coffee into the beer but leaves out the harsher and bitter notes coffee can have. There are many brewers and roasters in Colorado teaming up to craft new combinations of beer and coffee all the time. “There are so many complimentary flavors, it makes for a really great marriage,” says Bergen. But don’t take his word for it. Check out one of these local breweries yourself. Boulder resident Tiffany Lutke works with Upslope Brewing Co. and is usually stuck between a rock and a beer place.

Prime Pairings Hefeweizen Shrimp Alfredo When it comes to warm weather meals, some dishes taste best when homemade. Fort Collins Brewing Co.’s Hefeweizen Alfredo, which includes FCB’s Hefeweizen beer, is the perfect summer meal after a day well spent. Whether you are a cooking novice or culinary master, this recipe will appeal to all. Who knew homemade pasta could be this easy? And delicious!

Ingredients Pasta 5 large eggs 3-1/2 cups all purpose flour 1/2 cup FCB’s Hefeweizen

Hefeweizen Alfredo Sauce with Shrimp 3 cups of heavy whipping cream 2 cups of grated Parmesan 3/4 cups of Hefeweizen

Directions

Pinch of salt and pepper

Pasta Instructions

1 Tbsp of olive oil

Put flour in large mixing bowl, and make a well in the center of the flour. Add the eggs and beer into the center of the flour. Using a fork, beat the eggs and beer while gradually incorporating flour until the batter thickens and you have dough-like consistency. Knead dough for roughly three minutes on a lightly floured surface. Let dough rest in refrigerator for 20 minutes. Roll dough to desired thickness (1/4” is a good place to start). Using a pizza cutter or knife, cut dough into strips (1/4 to 1/2”). Add pasta to salted boiling water and boil for five minutes and strain.

5-10 raw shrimp (peeled)

Pair with FCB Hefeweizen This German classic is more than an ingredient – it goes great with the pasta dish, offering a smooth, creamy brew that has a subtle hop bitterness.

Sauce Instructions Add cream to large sauce pan and bring to a light boil over medium high heat. Add the salt and pepper and cheese to the pan, stirring consistently until cheese and cream blend smoothly. In another sauce pan, add one tablespoon of olive oil and bring to medium high heat. Sear the shrimp (about 3 minutes each side) rotating once until fully cooked. Add cooked pasta to sauce and toss to coat. Top off the dish with the seared shrimp.

IT’S SIMPLE FOR LEE DRISCOLL

– give the people what they want By Joe Ross

Above photos of John Hickenlooper and former Wynkoop brewer Kyle Carstens (top) provided by Breckenridge-Wynkoop

Lee Driscoll photo by Marcos Sandoval

24 ThirstColorado.com

Spring 2016

Lee Driscoll and John Hickenlooper helped pioneer the craft food and beer industry in Colorado – but it took a while to catch fire. Driscoll, the CEO of BreckenridgeWynkoop Brewing Co., has covered a lot of ground since moving to Denver more than 20 years ago, where he met future Governor Hickenlooper through a mutual friend. Hickenlooper had launched Wynkoop in 1988 and he tapped Driscoll to help expand the company. Wynkoop’s growth led to a merger with Breckenridge Brewery in 2010. The company’s success – including the sale of two of its properties to Anheuser-Busch late last year – has long been rooted in quality food and beverages. Driscoll said a wave of new breweries in the 1990s and 2000s resulted in great beer. The food component trailed behind, however, and he said as recently as five years ago, he feared “a long, uphill ©strannik fox/Dollar Photo Club

of d er y p

battle” toward the mainstream demanding excellent food and drinks. His push to hire experienced chefs and pair them with experienced brewers proved prophetic as the throngs of millennials from across the country began moving to Colorado. “Millennials are driving menu choices,” he said. In addition to food and beer, those choices include wine and spirits, which BreckenridgeWynkoop offered early on. Driscoll also noted that many of the craft beers have carried a wallop in the form of alcohol content. The current trend of brewers creating session beers in a wide variety of flavors has opened the door to more people. The alcohol-byvolume reading on most craft beer ranges from 5 percent to 10 percent. But session brews generally are a low 3 percent to 4 percent ABV, so a night of fun with friends doesn’t have to end with a headache. “Session is where it’s at,” Driscoll says.

The demand for quality fare and drinks drove the idea for the Farm House restaurant at Breckenridge Brewery in Littleton, one of the properties sold to Anheuser-Busch, along with the original Breckenridge Brewery located in the small ski town in Summit County. The Farm House, which opened last spring, appeals to a cross section of consumers, he said, by offering craft cocktails, wine on tap and of course, food and beer. “They are reaching the entire spectrum.” Driscoll predicts a bright future for craft breweries, where people love to congregate. “There’s no substitute for human interaction,” he said. “John (Hickenlooper) has always said the couch and the TV are the enemies.” Joe Ross spends much of his time looking for great stories and great beers.

PARTNERS IN BEER AND BEYOND

Lee Driscoll got involved with the brewing industry after being introduced to John Hickenlooper in 1994. Hickenlooper had co-founded Wynkoop Brewing – the state’s first brewpub – and was raising money for the Phantom Canyon Brewing Co. in Colorado Springs when Driscoll got a seat on the Wynkoop board of directors. Driscoll said he and Hickenlooper officially became partners in 1998. With a background in law and finance, Driscoll helped Hickenlooper guide Wynkoop into prosperity, and an eventual merger with Breckenridge Brewery. Hickenlooper stepped away from the brewing and restaurant world after he was elected mayor of Denver in 2003. Driscoll later served on the finance committee for Hickenlooper’s run for governor.

TALES OF RAILS AND ALES Durango Brew Train offers taste of city’s growing beer culture Story and photo by Crystal Anderson

D

urango’s legendary locomotive has long rolled through southwest Colorado, and riders sit back and watch the scenery. Several times a year, they can now also savor the state’s beverage of choice – craft beer. “We belong to a great brew town, and our brewers are known more than the train is,” said Christian Robbins, marketing manager for the Durango & Silverton Narrow Gauge Railroad. “It brings two great things together.” Durango’s Brew Train, now in its third year, combines beer and railroading on a picturesque, sevenhour trip along the Animas River. Starting midmorning, craft beer enthusiasts hop aboard an 1880s train and enjoy incredible Animas River vistas, bluegrass music and, of course, great local beer. “It’s a wonderful opportunity with

a captive audience who are really excited about beer and beer culture,” said Erik Maxson, owner and head brewer at BREW Pub and Kitchen in Durango. Riders sample and learn about beers from Durango’s six breweries. While ascending along a railroad built in the late 1800s, riders have the opportunity to meet and talk with brewers, enjoy the camaraderie of other beer enthusiasts and drink in the flavor of the brewing culture. “Being the brewer is a great advantage because I have the answers,” Maxson said of riding the train with customers. “Whether they are the beer geeks and enthusiasts or they’re people who are looking for something new to try, this is a wonderful way to build relationships.” After around two and a half hours, riders disembark and step into a

mini-beer and bluegrass festival in Cascade Canyon, an area known for its majestic waterfalls and deep valleys.
“When you get to Cascade, it’s just stupendous,” said Irene Barry, a wine enthusiast who’s ridden the railroad’s wine train, and worked on the brew train. “You’re in a beautiful setting right near the river. It puts such a nice twist on the train.” For an hour or two, riders wander around the cavern, enjoy catered grub and brews, and listen to the sounds of local bluegrass bands. “People kick back, eat some food, listen to blues and drink some brews,” Robbins said. “And then the whistle blows, and we’re back, rolling into town.” Just like the craft beer movement, the brew train concept is gaining speed among beer lovers in other states, including New Mexico and California.

Georgetown Loop Railroad Just up the I-70 corridor is the Georgetown Loop Railroad (operating since 1884), which offers Oktoberfest trains the last two weekends of October and the first weekend in November. Free craft beer tasting is available for adults, and the kids can have a root beer. A free brat or hot dog is also included. georgetownlooprr.com On many excursions, the train merely provides the transportation to local breweries along a scenic route. On the Durango Brew Train, the beer travels with you. Durango-area breweries on the rail run include BREW Pub and Kitchen, Carver Brewing Co., Ska Brewing Co., Durango Brewing Co. and Animas Brewing Co. “Colorado is a great beer state and we want people to follow their passion for beer and ride the train,” Robbins said. “They already love beer, and the train is a bonus.” The railroad offers three brew trains throughout the summer: June 12, Sept. 4 and Oct. 2. Cumbres & Toltec Scenic Railroad The rail line that runs between Antonito in southern Colorado and Chama in northern New Mexico is considering a run that would involve regional craft beers. Stay tuned at cumbrestoltec.com.

Holidaily Claims State’s First Gluten-Free Brewery

Photo: Jose Rodriguez

Owner/Chief Brewista: Karen Hertz Head brewer: Wayne Burns Holidailybrewing.com | 303-278-2337 801 Brickyard Cir., Golden

Karen Hertz was diagnosed with thyroid cancer in December 2008. After an extensive struggle, she was declared cancer free in 2010, but was required to switch to a gluten-free diet. Hertz has always been a beer enthusiast and finding a gluten-free beer she enjoyed was a huge challenge. However, with a degree in entrepreneurial studies and more than 10 years of sales and distribution experience at Coors, Hertz seized the opportunity to create Colorado’s first exclusively gluten-free brewery: Holidaily Brewing Co. The gluten-free brewing process is very non-traditional. Hertz points out that the main difference is the presence of grains and the absence of barley. During the learning process, Hertz spent time at New Belgium learning how to create a custom system that would accommodate the grains, which are smaller than barley. After she had perfected the gluten-free style, Hertz brought on Wayne Burns as the head brewer at Holidaily. Burns has more than 20 years of traditional brewing experience, and has won several awards at the Great American Beer Fest and the World Beer Cup while working for other breweries. Hertz and Burns have worked together in order to create four flagship beers: Favorite Blonde Ale, crisp and refreshing with lemon-citrus hop aroma,5% ABV; Fat Randy’s IPA, West Coast IPA style with tropical fruit and dank citrus aromas, 7% ABV; Riva Stout, export stout style with dark chocolate and coffee aromas and flavors, 6.75% ABV; and BuckWit Belgian, Belgian wheat beer style with coriander spices and orange peel citrus flavors, 4.75% ABV. Hertz recognizes that being gluten-free can be a major setback, and it is often not the most enjoyable experience. Because of this, she has created a welcoming brewery that promotes happiness and well-being. Stop by Holidaily Brewing Co., where every day is a holiday.

The New Image in Arvada has Arrived

Photo: New Image Brewing

Owners: Brandon Capps, William Capps, Sean Fisher Brew Captain: Brandon Capps nibrewing.com | 720-900-5620 5622 Yukon St., Arvada

New Image Brewing owner Brandon Capps has been in the beer business since his college days, when he interned at Anheuser-Busch. There, a co-worker turned him on to home brewing and he eventually took a brewing apprenticeship with 5 Seasons Brewing in Atlanta. From there, Capps relocated to Pittsburgh, where he went in on a brewery partnership with two other owners. However, something did not feel right, so he sold his stake in the company. While visiting Arvada in 2014 for a buddy’s wedding, he fell in love with the community, and his next dream was born. New Image Brewing features two seasonal Saisons, a Vermont-style double IPA and an Imperial Coffee Stout. The small kitchen at New Image specializes in tapas, which should pair well with the brews they craft on site. With no televisions and eight-foot long tables, Capps says his brewpub “emphasizes building a network of people through social interactions.” There is also an inviting outdoor patio that will be ideal for those scorching summer afternoons when a mouthwatering craft beer is essential. Capps, who has been personally affected by mental illness, has also seen his close family and friends affected by the same issue. He is very passionate about helping nonprofits, and has paired up with Project Helping, which focuses on promoting mental wellness. Capps says his brewpub is “geared towards building a community, and a new way of thinking and approaching things,” and that is why he landed on the name of New Image Brewing. - Spotlights by Dylan Hochstedler

6 BREWERS’ FAVORITES WHERE INSIDERS SHARE THEIR OPINIONS

1

5:00, Afternoon Ale, 5% ABV, Renegade Brewing Co.

We recently brewed a collaboration beer with Renegade Brewing Company, and that’s when I was turned on to their 5:00 Afternoon Ale. I have been craving this beer! It is a golden session ale that hits the spot after a long day of brewing and you know you have to get back after it tomorrow. It has enough bitterness to balance it out, and a wonderful bready taste. It would be great in the summer as well but still also satisfies my malt-forward early spring beer cravings. Taylor Krantz, Brewer, Fort Collins Brewery and Tavern

2

Propaganda IPA, 6.3% ABV, Iron Bird Brewing Co.

One of my favorite new breweries in Colorado Springs is Iron Bird Brewing Company. Rather than trying to do anything fancy, they are perfecting a solid lineup of traditional styles, with a focus on cask-conditioned beer. The standout is their Propaganda IPA. Propaganda has the malty backbone of a traditional English style IPA yet boasts the citrus and pine qualities found in west coast IPA’s, resulting in a well balanced and approachable beer. I can easily sit down to five or six pints without completely destroying my palate. Chris Hastings, Head Brewer, Bristol Brewing Company

3

India Red Ale, 7.25% ABV, Black Shirt Brewing Co.

My wife and I recently visited Black Shirt Brewing in RiNo for the first time and we were extremely impressed. We spoke with Chad, the CEO, for a while about their inspiration and goals, and by the end of the conversation we were kicking ourselves for waiting so long to try them out. I tried a flight of the entire lineup and everything was impressive, but the beer that really stood out for me was their India Red Ale. In my opinion, what makes a great IRA is to have a beautiful ruby hue without being too caramel-y. The focus should still be on the hops, so you want an IPA that is red, not a hoppy amber. I’ve been a fan of the style since a trip to Portland last year, and this is one of the best ones I’ve ever had. Dave Bergen, Brewmaster/Owner, Joyride Brewing Company

4

Tennyson Standard Kölsch, 5.5% ABV Call to Arms Brewing

5

Lilly Hammer IPA, 7.2% ABV, Locavore Beer Works

Call to Arms Brewing has an assortment of great beers, but the one that really stands out is their Tennyson Standard Kölsch. This is a great drinking beer because it tastes so delicate, which means there are no bold flavors to hide behind. Since this type of beer is so balanced, any small flaw will be significantly more glaring than it would in an IPA or Imperial Stout. Kölsch has no flavors and Call to Arms nailed the style that not many American breweries have gotten, so congratulations to them.”

There are so many great breweries in Colorado that produce world-class beers. When it comes down to my favorite I need to lean towards my favorite style, which is India Pale Ales. Locavore Beer Works has two that rank at the top of my list of beers to look for when I am out and about. First is their Lilly Hammer 7.2 percent, brewed with Columbus & Centennial hops. The other is Oncorhynchus T. “Onc,” an American IPA brewed with 100 percent locally grown Chinook hops.

Chai Milk Stout, 5.2% ABV, Yak & Yeti

I am going to recommend the Chai Milk Stout from Yak and Yeti. It’s a great balance of residual sweetness and traditional Chai spicing, with pleasant roasted flavors in the finish. To me it is perfect for the colder weather months, and works well with complimentary spice flavors in eastern dishes. Rocky Mountain Brew Runs tie together craft breweries and runners with a charitable twist By Dennis Pleuss

Spring 2016

Running off those beer calories has never been easier and more enjoyable. From Colorado Springs to Boulder, runners, walkers and “Olympic” athletes are gathering to drink beer at their favorite watering holes. Launched last April, the Rocky Mountain Brew Runs have succeeded in combining two favorite Colorado activities: running 5Ks and drinking beer. With more than 70 running clubs in Colorado and nearly 300 breweries, the Rocky Mountain Brew Runs easily meshed. Call it a social gathering with charitable benefits. Epic Experience is a charitable group that hosts fun outdoor events for youth and adults diagnosed with cancer. Funds raised during the Brew Runs are donated to Epic Experience to help with its programs. “Copper Kettle (Brewing Co.) got involved with the Rocky Mountain Brew Runs because we felt it would be a successful event to raise money for a great charity, while bringing in many new customers,” says Julia Wellington, special events and marketing coordinator at Copper Kettle in Denver.

“We had around 150 runners attend and everything went so well. We had many runners that had never been to the brewery before and enjoyed themselves. The organization of the event was wonderful.” The Boulder Beer Company held its brew run on July 10, one day before its 36th anniversary party. A large number of participants and attendees stayed after the run to attend the party for the first craft brewery established in Colorado in 1979. “The event ran so smoothly, there isn’t really anything I would change,” said Lindey Miller, Mistress of Marketing for Boulder Beer. On second thought, “It would be fun to add a few more Beer Olympic games at the end,” she says. “Those were a lot of fun.” Following each run, participants can partake in the Beer Olympics. The games include a keg-haul relay, cornhole drinking challenge and a triple jump, in which athletes complete three broad jumps in a row with the goal of never spilling a drop of beer from the cup they carry. All runs start and end at the host brewery. Last year’s registration was $25 and included a free beer, pint glass and other swag. Roughly 1,500 participants jumped into the fray, reports Lauren Jones, a member of the RMBR crew. “We try to keep people entertained along the course with our fun signs,” she says.

If you’re a brewer, you understand the importance of a glass. The right glass helps form a full-bodied head, enhance the bouquet, and display clarity or cloudiness. The same can be said about insurance for your brewery. The right insurance policy has enhancements for tank leakage, loss of processing water, and contract cancellation. Call us to review your current insurance. No strings attached. Chris Hardin - 303.534.2133

BREWERIES POURING FUNDS INTO CSU BEER STUDIES By Steve Graham

Jeff Callaway, director of industry outreach for the CSU fermentation science program, talks to students about making beer.

B

ernie Sanders wants Uncle Sam to pay for public college tuition. Colorado State University has another benefactor in mind: Colorado’s beer industry.
In the past year, CSU has received $1.35 million from the three biggest breweries in Fort Collins to support the Fermentation Science and Technology program. Beer pros are also providing expertise and hands-on training. In turn, CSU is turning out graduates who can keep the beer flowing. All jokes aside, undergrads at CSU have majored in beer science since 2013. “We are learning about everything from starting raw barley up to the sensory characteristics of a final beer product,” said Lauren Sandell, a senior in the program. “We’re learning more than just the simple recipe that a home-brewer follows.” Sandell is president of the CSU Food and Fermentation Science Club, and already works at Blue Skies Winery in Fort Collins. The fermentation program isn’t just about beer. Students are also making and studying breads, meats, cheeses, yogurt, wine and other fermented foods. The program includes courses in

organic chemistry, microbiology and other hard sciences to help the students grasp all the reactions involved in fermentation. The business side is also covered, including packaging, quality control and production scaling. The students will soon have new research and lab facilities, thanks to New Belgium. The Fat Tire peddlers brew all their beer in Fort Collins (for now), just a short bike ride from the CSU campus. New Belgium co-founder Kim Jordan personally gave $500,000 to the program, and pledged to match that total over five years through the firm’s philanthropy program. “When I was in school, there was no such thing as a fermentation sciences program,” Jordan told CSU’s magazine last year. “Our industry and the University have both come a long way in a relatively short time, and this investment will help support the next generation of brewers who will create and innovate well into the future.” The gift will pay for an upgraded, renovated and renamed New Belgium Fermentation Science and Technology Laboratory, scheduled to open in August. A new student-run microbrewery in the student union building is also slated for August.

Last year, Anheuser-Busch poured $250,000 into the program. Odell Brewing, Colorado’s third largest craft brewery, also donated $100,000 as part of an ongoing partnership with the fermentation program. Founder Doug Odell has long been a guest speaker in fermentation classes, and CSU students have helped at his brewery. In turn, a CSU fermentation alumnus, Linsey Cornish, is head brewer at Horse and Dragon in Fort Collins. Ben Jaacks, a third-year fermentation student, said the industry has been very welcoming and open with students. “Everyone knows everyone and is willing and excited to collaborate and teach the next generation of brewers,” he said. His goal is to help breweries become more sustainable in their materials usage. Sandell, the senior student, said Odell and other professionals are her favorite part of the program. “We have guest lecturers and speakers from the industry,” she said. “It’s truly great to be able to ask questions of the processes directly to a person who is immersed in it day to day.” Steve Graham is a Fort Collins writer who enjoys the outdoors and great beer.

hen I unzipped the tent that morning, it appeared I was going to re-enjoy yet another of those exhilarating autumn days in Colorado’s high country, comfortably soft breeze, resplendent blue sky and gold-hued quakies waving good-bye to summer. Eight of us were horse-packed to a favorite campsite in the Flattops Wilderness, and some were eager to tease the Brook Trout in shallow, acres-large Beaver ponds, one of which, many years earlier, produced Colorado’s record Brookie. Early that morning I believe I saw that big boy’s sister, but nothing in my fly box remotely interested her. (A couple of years earlier during dinner at an Eagle restaurant following a steady run of Whiskey Sours, a Department of Wildlife fish biologist, expertly and cogently explained the conditions which created the whoppers). No Brookie action became a perfect opportunity for a hike, and I loafed along the drainage stream for a couple of miles, halting to relax on a flat rock mid-way down a steep incline. Hearing voices approaching from the trail leading toward me, I suspected they belonged to two mid-30’s bow hunters from Kansas who were camped a quarter mile from ours. We had chatted with them briefly the previous evening. As they approached on horseback, the voices became more distinct. “Man, I am tellin’ ya, I really have to go.” “Hold on, can’t ya, we are only a half hour from camp.” “Can’t wait that long.” “Got to … we don’t have any TP with us.” “Man, I’m hurting. Nature is really calling. Don’t you carry that note pad in your saddle bag? (No!) What about paper towels you always use to wipe on fly spray? (All gone!) How about the trail map? (Forgot it in camp!)” “Man, I’m getting desperate!” “Ok, dude, I have a solution. Just ahead is a little meadow. Go find a log and do your business. When you come back, ol’ Yogi and I will use my lariat and pull you through the tall grass.” I was preparing to stand up to make my presence known and offer that half roll of necessary insurance I always lugged around in my day pack … but movement was already in progress, as was the curtain call. That’s when I heard the other respond: “Frontwards or backwards?”

CHARACTERS OF THE CRAFT

Nick Ellingson Alamo Drafthouse Cinema

P.T. Wood Wood’s Distillery

Dinner, great beer and a movie? If that’s your thing, then Nick Ellingson has a fun evening planned for you at Alamo Drafthouse Cinema in Littleton. Ellingson left the world of corporate sales, hitting the “terrifying career reset button” before landing at Alamo. Quite the ambassador, he gets to promote great beer, spirits, wine, chef-prepared food and a wide variety of movies on seven different screens. “That’s hard to beat,” he says, adding that Alamo Drafthouse “is a leader in preserving the cinematic experience with a full bar and menu all served right to your seat.” Born in North Dakota, Ellingson moved to Colorado in 2001. He and his girlfriend have two children and they love being outdoors.

After moving to Salida in the 1980s because of the incredible skiing, biking, kayaking, fishing and hiking, P.T. Wood has stayed put. Now, along with his brother, Lee, he distills whiskey, gin and liqueur at Wood’s High Mountain Distillery. Reflecting the Colorado spirit, P.T. points out that no one will ever lose his or her job at the distillery for missing a day of work to go on a river trip. “But you might if you turn one down,” says the president of the Colorado Distillers’ Guild. But why have the brothers chosen to stay in Salida after all of these years? “We have amazing water here, a very cooperative local government and are surrounded by some amazing agriculture,” P.T. says.

Scott Cline High Alpine Brewing Co.

Anthony Martuscello WestFax Brewing Co.

It all fell into place for brewer Scott Cline after he moved to Gunnison in July of 2014. He went to work at a bike shop and overheard a customer discussing potential brewery locations with the owner of the shop. Then, the Gunnison Brewery shut its doors, leaving the college town without craft options. Cline, who previously had brewed at a small beer company and was looking for a way to get back into the business, said he felt that it was time to jump into the industry with both feet. “It was truly serendipitous,” he said. Within a few months, he and coowners Bryan Wickenhauser and Jon Brown had teamed up and were making plans to launch High Alpine Brewing Co. They opened the doors last summer and offer hand-crafted food and beer in downtown Gunnison.

Anthony Martuscello had long planned to open a brewery along Denver’s iconic West Colfax Avenue, and he knew finding a prime location would not be easy. After a lengthy hunt, Martuscello stumbled upon a location in the Lamar Station Plaza, formerly known as the JCRS Shopping Center, and best known as the center anchored by Casa Bonita. Finding the perfect name also proved to be a challenge because of the proliferation of breweries across the United States, but he eventually settled on WestFax. Martuscello, who once worked in the corporate world, moved to Colorado about six years ago and had whetted his appetite for craft beer while living in Pennsylvania. Although he has home brewed, he brought on head brewer Alex Stansbury to carry the load. Stansbury previously brewed at Tommyknocker Brewery in Idaho Springs.
