In 1924, - Pasquale(Pat) and Giovanni (John) DeIorio, together wih their wives, went into the baking business. They built a coal fired brick oven, purchased a mixer and worked as a team in the bakery which spanned the backyards of three two family homes. Hearth baked Italian bread was sold in the bakery and delivered house to house.

During the hard times of the “Great Depression,” in the afternoon when the ovens were cooling down, the local housewives would bring in their own dough to be baked. The charge for the baking was a penny per pound. During the holidays the neighbors brought their turkeys and hams, and DeIorio’s would bake them for free.

Large, small, round, square or oblong, thin or thick crust, deep dish, pan, brick-oven baked, or grilled, each variation brings a definitive texture and flavor to the final dish. New York City Style, Neopolitan, or “regular” pizza to “NewYalkers”
The crust is tossed and stretched thin into a large round “pie” with a thicker end crust topped with a moderate balance of tomato sauce and mozzarella cheese. A thin crust with a slight crunch and chew. In New York, it is often sold by the “slice” and traditionally folded to support the bend. “farget-about-it.”
New York Sicilian - Sicilian pies are more doughy, with a thick crust. Baked on a rectangular sheet pan, and sliced into rectangular slabs. Cheese may be on the top or bottom. Chicago deep-dish pizza- Dough is pressed up the sides of a
deep-dish heavily oiled pan and par-baked, then followed with copious amounts of cheese and filling then topped with sauce. Some versions have an additional top crust. Knife and fork usually advised.
St. Louis Pizza - Traditionally a super-thin crust with little to no yeast in the dough. The crust is known to be crispier and can’t be folded very easily. Typically the finished pizza is cut into squares or rectangles to serve. The cheese is made up of Provolone, Swiss, and White Cheddar to create a trademark called Provel.

Greek Pizza - Fairly common in New England, Upstate New York,
and Pennsylvania is it characterized by the method it is cooked, and the texture it produces in the dough and cheese. Dough is spread in an oiled sheet pan, producing a thick, chewy crust, almost fried. It is baked until the cheese is well-done and begins to brown and caramelize leaving the delicious cheese oils on top. Found in pizzerias typically owned by greek immigrants. “opa!”
Grilled Pizza - A thin crust or par baked dough is placed directly
on the grill grates, flipped over, then toppings are placed on the first grilled side as the other side continues to grill.
New Haven Connecticut “Apizza” - Oblong shaped, rustic crust,
with a chewy crisp texture. Baked in a coal oven till the crust is darkened in places imparting a coal fired rustic flavor. A “white” or “red” pie is determined by the sauce you choose to top it with. White is most common.
California Pizza - Refers to pizza with non-traditional toppings. Thai, Mexican, Hawaiian, Greek, Jamaican, Japanese, and Southern Barbecue are just a few flavor combinations you will find. Flavors correspond to ingredients you generally find in these other cuisines.

Everything Superb tomato products begin with superb tomatoes handled with care for peak performance. Every juicy, vine-ripened load of just harvested tomatoes is inspected by a USDA representative, weighed and graded. They are carefully rinsed, sorted by color, visually inspected, crushed, and skins and stems are removed. They are quickly heated to 192 degrees to stop the fibers from breaking down, allowing for maximum yield at the peak of flavor. The perfect blend of spices, salt and oil are measured and added according to each recipe. Every batch is sampled at the cook station, where we monitor the exact time and temperature to add the ingredients. By using a batch process we are able to ensure product consistency can after can. Random selections of cans are chosen from each batch to be opened so we may confirm the integrity of the seam of each can. We go beyond the average kitchen procedure to ensure a perfect recipe. We test the temperature of the product, the final color, the salt content and the solids. All of this information is entered into our system so we can trace each batch and compare plant efficiencies at any given time. We use the highest standards of operation and the best ingredients.
