Not only can you whip up these flourless almond meringue cookies quickly, but they’re also a good option for those looking to satisfy their cravings without compromising on dietary goals.
These cookies are under 40 calories per serving and are also kidneyfriendly, approved and developed by June Martin, RD, and volunteer at The Kidney Foundation of Canada. “These flourless almond meringue cookies are so pretty and versatile! You can use vanilla extract, lemon zest or cocoa in place of the almond extract to add variety to your cookie platter,” June suggests.
Flourless Almond Meringue Cookies
Prep time: 10 minutes Cooking time: 25 minutes Servings per recipe: 24 cookies
Serving size: 2 cookies Ingredients
2 egg whites at room temperature
1 tsp (5 ml) cream of tartar
½ tsp (2 ml) almond extract
½ tsp (2 ml) vanilla extract
½ cup (125 ml) white sugar
Directions
Preheat the oven to 300°F or 150°C. While the oven is preheating, add the egg whites and cream of tartar to a bowl and beat the mixture until it doubles in size.
Then add the white sugar, almond and vanilla extracts, and whip the mixture until it becomes stiff. Look for the “firm peaks” that start forming on the surface, indicating a well-whipped meringue.
Using two teaspoons, scoop the meringue into one teaspoon and slide it onto a parchment lined cookie sheet with the second teaspoon. Keep a small distance between the meringue cookies so they don’t stick together when baking.
Bake the cookies for 25 minutes or until they become crisp.
Once the flourless almond meringue cookies are out of the oven and at room temperature, store them in airtight containers to retain their freshness until you serve them.

The Health Employers Association of BC has reached a tentative agreement with members of the Ambulance Paramedics & Ambulance Dispatchers Bargaining Association (APADBA) under the Province’s Shared Recovery Mandate.
APADBA represents approximately 5,000 paramedics and ambulance
dispatchers in B.C. The Canadian Union of Public Employees (CUPE) Local 873 represent the employees in the ambulance service. Paramedics and ambulance dispatchers are employees of BC Emergency Health Services, which is part of Provincial Health Services Authority.
Negotiations under the Shared Recovery Mandate support government’s key priorities to improve public services and the health-care system, while supporting the province’s continued economic recovery for all.
Details about the agreement will be available after the ratification process for the union members and the health employers is complete.
More than 500,000 people work throughout the provincial public sector in the core public service, at Crown corporations, in health, community social services, kindergarten-
to-Grade 12 public education and at post-secondary institutions and research universities.
Of those people, approximately 393,000 are unionized employees paid under collective agreements or professionals paid through negotiated compensation agreements.

Chief Guest for the occasion was Mr. Manish (Consul General of India, Vancouver) and the guest of honour was Mr. Amarjeet Kaypee, former cricket player who earned his name for scoring 7623 runs for the Ranj Trophy. These regulations are separate from the federal ban on the manufacturing and importing of single-use plastics, which came into effect on Dec. 20, 2022. B.C.’s recycling regulatory changes cover a broader category of single-use products and further ensures that exemptions to the ban are recycled.
“Our government is working to ensure that people in B.C. can help to keep their communities and the environment healthy. By expanding our nation-leading recycling system to include more products, we are keeping more plastic out of our waterways and landfills,” said Aman Singh, Parliamentary Secretary for Environment. “People across the province can now recycle a wider array of single-use plastics and other materials in their blue bins and at recycling depots. This builds on the significant progress we’ve made through the CleanBC Plastics Action Plan.”
Newly accepted blue-box items include:
plastic plates, bowls and cups; plastic cutlery and straws; plastic food storage containers; plastic hangers (that come with clothing);
paper plates, bowls and cups (with thin plastic lining); aluminum foil; aluminum-foil baking dishes and pie plates; and
plastic sandwich and freezer bags; plastic shrink wrap; flexible plastic drop sheets and covering;
flexible plastic bubble wrap (no bubble wrap-lined paper);
flexible plastic recycling bags (blue, clear bags, or yellow or blue bags used for curb-side collection); and flexible plastic carry-out shopping bags (reusable).
“This expanded materials list will allow more material to be recycled, keep it out of landfills and stop it from littering the environment,” said Tamara Burns, executive director, Recycle BC. “Residents play a key role in recycling this material by enabling it to be collected – by putting it into their bins or taking materials to a depot.”
B.C. regulates the largest number of residential packaging and products in Canada through its extended producer responsibility programs, where companies and producers are responsible for the collection and recycling of the products they create. This program also promotes and encourages companies and producers to create and design less harmful plastic packaging.
These changes are effective immediately and are part of the CleanBC Plastics Action Plan, which aims to change how plastic is designed and used – from temporary and disposable to durable and reusable. The action plan addresses problem plastics and single-use items through regulation, reduces new plastic by investing in reusable solutions, supports the processing and manufacturing of post-consumer plastics, as well as enabling the largest shore cleanup in B.C.’s history.

Thousands of people in British Columbia will benefit from BC PharmaCare’s expanded coverage of medications used to treat Type 2 diabetes, heart failure and blood clots.
Effective Thursday, Jan. 5, 2023, drug coverage for two medications will be expanded from limited coverage to regular benefit. The two drugs that are becoming regular benefits are dapagliflozin (Forxiga) and apixaban (generics). At the same time, two other medications namely, empagliflozin (Jardiance) and semaglutide (Ozempic), that are covered by PharmaCare
in British Columbia benefit from dapagliflozin under limited coverage. The expansion to a regular benefit is expected to benefit 5,000 more patients in the first year.
Apixaban (generics) is a blood thinner medication used to prevent or treat blood clots. Currently, 45,000 patients in British Columbia benefit from apixaban under limited coverage. The expansion to a regular benefit is projected to benefit approximately 24,000 more patients.
The expansion of limited coverage criteria for empagliflozin (Jardiance)
under specific medical circumstances will have their limited coverage criteria expanded. This means that more patients will be eligible for coverage of these drugs.
The changes will ensure that coverage is aligned with clinical evidence and will improve patient access to appropriate medications.
Dapagliflozin (Forxiga) is approved by Health Canada to treat several conditions such as heart failure, Type 2 diabetes and chronic kidney disease. It was first listed as a limited coverage benefit on the BC PharmaCare formulary for patients with heart failure with “reduced ejection fraction” on Jan. 11, 2022, a condition where the muscle of the left ventricle is not pumping as well as normal. Currently, approximately 2,000 patients
and semaglutide (Ozempic) will make it easier for patients to apply for coverage of these two medications that work to lower blood sugar levels in adults with Type 2 diabetes.
In 2019, PharmaCare provided limited coverage for empagliflozin (Jardiance) and in 2020 limited coverage for semaglutide (Ozempic) to patients with Type 2 diabetes after they had tried and been unable to control their blood sugar levels by taking two other drugs, metformin and a sulfonylurea drug (e.g., glyburide), or metformin and an insulin.
PharmaCare is changing the coverage from third-line to second-line. Patients now only have to try one drug, metformin, before their physician can request coverage of empagliflozin or semaglutide.

The Province is making it easier for internationally educated nurses to work in B.C.’s health-care system with new financial supports and a faster, more efficient assessment pathway.
Internationally educated nurses (IENs) will no longer be required to pay application and assessment fees upfront, which cost more than $3,700. These fees will be covered directly by the Province in order to remove financial barriers for internationally educated workers who want to work in B.C.
“Supporting nurses is key to our work to making health care accessible to all British Columbians. Still, the demand for nurses is outpacing the supply,” said Premier David Eby. “There are talented and skilled nurses with the right experience who want to practise in B.C. and support high-quality care, but they are kept on the sidelines by an expensive and complicated registration process. Whether a nurse was trained in or out of the province, we are ready to welcome those who are ready to care for British Columbians.”
The Province is also providing new financial support to nurses returning to practice after a period of absence. Nurses looking to return to practice will no longer be required to pay a $300 application fee, and more than $4,000 in financial support will be available to cover assessment and eligible travel costs for nurses taking assessments in order to re-enter the workforce.
Nurses returning to practice will also be eligible to access as much as $10,000 in bursaries for any additional education required for returning to practice.
“By removing the barriers for more nurses to join our healthcare workforce, we are ensuring that people throughout the province have greater access to the health services they need, when they need them,” said Adrian Dix, Minister of Health. “Our government will continue to take action to recruit and train more healthcare workers to meet the health-care needs of British Columbians. In creating more accessible careers for nurses in B.C., we are delivering on our commitment to build a sustainable health system for many years to come.”
In April 2022, government announced $12 million to provide bursaries for IENs, launch a new marketing campaign, provide navigational supports to new and incoming IENs through HealthMatch BC, and launch a consolidated assessment approach. This has enabled some IENs to join the health-care system more quickly in the role that most closely matches their education and experience. Since then, 5,500 people have expressed interest in working in B.C., with 2,000 people actively working through the various stages of the registration and assessment process. More than 90% of nursing applications received in 2022 by the BC College of Nurses and Midwives (BCCNM) came following these changes.
“The Province is committed to making it easier and less costly for internationally educated nurses and return-to-practice nurses to become licensed to practise in British Columbia and join the health workforce,” said Harwinder Sandhu, Parliamentary Secretary for Senior’s Services and Long-Term Care. “As a nurse educated outside of Canada, I have first-hand knowledge that it could take years for an IEN to be granted registration. I am glad to see the progress made by the BC College of Nurses and Midwives, and the Nursing Community Assessment Service to streamline the process for credential and competency assessments for IENs. The contribution of IENs to our health care is far reaching. They bring a wealth of experience, knowledge and dedication to their work. I am proud of our government’s commitment to welcoming more people to join the nursing profession so that our public health system can be wellsupported in the long run.”
In September 2022, the Province also committed up to $1.3 million to set up a new pathway to make it more efficient for IENs to obtain licensure in B.C. The funding will support BCCNM and the Nursing Community Assessment Service in creating a new streamlined approach to assessment and registration, so that more IEN applications can be assessed by BCCNM each year. This is expected to reduce the waiting period for nurses looking to work in B.C., from three years to approximately four months to nine months.
This announcement is part of B.C.’s broader Health Human Resources Strategy, which was announced on Sept. 29, 2022. The strategy supports patients by ensuring they get the health services they need and are cared for by a healthy workforce. It focuses on 70 key actions to retain, recruit and train health-care workers, while redesigning the health-care system to foster workplace satisfaction and innovation.
Many people will have more money in their bank accounts as a result of the BC Affordability Credit.
“The winter season often brings extra expenses for people and, with the rising costs we’re seeing around the world, it can add stress to already stretched household budgets,” said Katrine Conroy, Minister of Finance.
“We know it won’t cover all the bills, but hopefully this little extra from the BC Affordability Credit will help take
a bit of the pressure off as we head into a new year.”
Eighty-five per cent of British Columbians will automatically receive a full or partial BC Affordability Credit through the Canada Revenue Agency. The credit will provide as much as an additional $164 per adult and $41 per child, which will be as much as $410 for a family with two children.
Conroy said.
More help is on the way for B.C. families this month through the first of three enhanced BC Family Benefit payments on Jan. 20, 2023. The January, February and March payments
will include as much as an additional $58.33 per child, for each month. A family with two children will receive as much as $350 from this top-up.
These credits are two of the cost-ofliving measures announced in the fall. This package will put close to $2 billion back in British Columbians’ pockets to help them get by during this difficult time as costs rise due to global inflation.
