Welsh asparagus, jamón ibérico,
crispy
duck egg & romesco sauce
T
his dish is a classic Spanish combination of flavours, using stunning produce and a Spanish sauce, but also fantastic local seasonal asparagus. We have had this dish on during the British asparagus season and it has been a big hit! It may look like a lot to do, but most can be done in advance, and each step is very easy. ingredients for the dish
B 2 bunches of Welsh (or British) asparagus – or 4/5 spears per person
B 60-80g sliced Ibérico ham, or good quality serrano ham from Teruel (room temperature)

B 2 piquillo peppers (available at Bar 44) B ½ teaspoon smoked paprika B Seasoning Method for the dish 1 Boil a pot of salted water then add your asparagus and cook until al dente (a couple of minutes maximum), then chill in iced water. 2 Poach your eggs (everyone has their favourite method), keeping a nice runny yolk, then chill in iced water. 3 Once chilled, pat the eggs dry then roll in flour, then beaten egg, then into the breadcrumbs. 4 To crisp the eggs, fry in light olive oil at 180°C (a domestic deep fat fryer or a deep sauce pan filled with only a few inches of oil on the hob will do the trick) for a 1-2 minutes. 5 Whilst this is happening, heat a nonstick frying pan with some olive oil then add the asparagus and season. Cook for 2 minutes, turning. 6 Now assemble the asparagus, ham, romesco and eggs as you see fit, and enjoy! for the romesco sauce 1 Warm the oil in a non-stick pan and gently fry the garlic and the bread until golden (like fried bread). 2 Leave to cool then place all the ingredients into a food processor and blend until smooth, then season to taste.

Cowbridge for over a decade and following an extensive refurb and menu revamp I paid a visit to see what I’ve been missing out on.

draws your attention to it. The interior doesn’t disappoint either. The refurb is nothing short of excellent. Having only seen photos of what it used to look like my only question is what took them so long! The teals, oranges, geometric patterns, tiling, lighting and copper cladding all just work so well. I would easily want my own front room decked out in a similar fashion. Also a fantastic example that chic and stylish does not mean lots of grey and industrial lighting. So refreshing to see such bold use of colour in a restaurant. We were greeted like long lost friends as we entered the restaurant by the front of house with the warmth and sincerity that made us feel instantly comfortable. Shown to our table we were promptly given the lunch menu. The varied and extensive day menu covers the 11am to 6pm slot before the evening menu comes into play. Therefore brunch options, to light lunches, three course meals to cakes and coffees are all catered for. With so many tempting menu options and the fact that

juicy with the added crunch of the pastry for texture. It was accompanied by a sweet chilli sauce and a pickled cucumber salad which complemented the prawns well. The chicken was spot on too. Beautifully presented flavoursome strips of highly seasoned and spiced chicken that was gnarled at the edges and delicious. However I didn’t think the feta worked well with the chicken. Aside from that both hit the mark and would easily work well as a light lunch on their own. But we were in no mood for a light lunch! Bring on the mains! There are some great main options on the varied menu that has kept its core Oscar classics but introduced some new additions too. Everything from wraps and flat breads to salads to more substantial burgers and ‘chef’s choice’ such as minute steak to Gower coast mussels. The Duck Hash (£11.50) from the ‘chef’s choice’ took Mrs Cloncs’ fancy while I was all about the Oscars Ruben Burger (£12.95). The hash comprised of shredded duck, pea and potato hash, onion chutney and topped with a fried egg. The duck was unctuous and rich, sweetened by the peas and onion chutney. The potatoes provided the bulk while the egg enhanced the richness of the dish. Delicious and very filling.

brownie. It was pure, unadulterated and over indulgent joy in a glass. The Oscars mess on the other hand was that dish which catches people’s attention and gaze as it is brought from the kitchen to the table leaving everyone with order envy. A mound of rose scented cream, broken meringue and strawberries topped with a toupee of bright pink candy floss. This dessert was as delicious as it looked, cream and strawberries what’s not to like and the candy floss was a lovely bit of fun and nostalgia. Full doesn’t even begin to describe how we were burger inspired by the New York classic and comprising of a 100% steak mince burger, topped with smoked cheddar cheese, pastrami, onion ring, mustard mayo and sat on top of lettuce, tomato and pickled cucumber all in a Pretzel bun! Top tip here is remove the tomato and salad from underneath the burger to stop the whole thing sliding out from in between the bun when you pick it up! Well it tasted brilliant, each component bringing something to it. Well seasoned thick pattie, crunchy onion ring and tang of pastrami. A meat lover’s dream and definitely one to go for if you are super hungry! However the pattie was too dry for my liking and cooked well done. Again I understand why chefs and restaurants choose to do this but the proof is really in the eating and if the pattie was cooked medium it would have been spot on. That being said the Pretzel bun was a welcomed change from brioche and the skin on chips were excellent, crispy on the outside and fluffy
feeling at this point! I must say all the plates of food were thoughtfully presented with a sense of style and seriously photogenic! The portion sizes were very generous too. The service was top draw. Professional and efficient with attention to detail. For example being asked if we would like our coffees/teas before, with or after our desserts and little touches like how well we were greeted and if one of the front of house was free and could see people getting ready to leave they would make their way to the door and open it for the exiting guests while wishing them a good day. Lovely and the kind of thing that people remember. We had a brilliant lunch at Oscars of Cowbridge. Love the refurb, love the service, love the atmosphere, good food in a great environment. Start/Finish: This walk starts and ends at Barry Station, South Wales. Public Transport: Nearest Mainline Railway Station is Cardiff Central. Parking: There is parking at Porthkerry Country Park (see map). O/S Map: Explorer Map 151 Distances: 6 miles or 4.5 miles. Time: Allow all day for main walk or half day for shorter route. If you park at Country Park, start and finish walk at point 3. Refreshments: There are cafes, shops, restaurants and pubs in Barry but not en route. There are plenty of picnic spots along the way. There is a café in the country park. Check website for times. Terrain: There are some climbs and steep steps, a few stiles and footbridges. The walk can be very muddy in winter. Sturdy shoes are recommended on the woodland paths and a picnic is a good idea as no shops en route. Pushchairs and wheelchairs can be used in the Country Park as the main paths are surfaced but there are slopes involved so strong pushers are needed. There is a ‘wheel-friendly’ coastal ‘there and back’ walk between points 8 and 10. History: There was once a Mediaeval village at Cwm Ciddy. The ‘Romilly’ family owned much of the land in this area from 1412 until the estate was purchased by Barry Urban District Council in 1929 as a large public park. The woods was once worked for timber, hence the sawmill remains at Cwm Ciddy. The railway viaduct was opened in 1900 and has 13 arches and a height of 110 feet. Beneath it a valley stretches down to the sea and this is used as a pitch and putt course in the summer. In the 1970’s the site was recognised as a nature reserve and the name ‘Porthkerry Country Park’ comes from the nearby hamlets of Porthkerry and Lower Porthkerry that you will visit on this walk. This walk encompasses a ’Valeway Walk’. Further walks can be obtained from www.valeways.org.uk
1: Walk starts at Barry (Town) Railway Station (see sketch-map). With back to main entrance cross carefully, turning right, take second turning on left. Walk up Windsor Road to Church and left up Porthkerry Road to mini-roundabout. 2: Cross to Park Road and uphill, passing stone ruin on right (old gatehouse from Barry Castle), then over brow of hill into ‘Porthkerry Country Park’. (Those who park here need to join route at point 3). 3: Walk down road to steps on right into valley. Cross small footbridge in Cwm Barri onto main path. Turn right up through valley. (If you don’t want to do steps or are starting in car park, continue downhill to road-bridge and walk up valley from there – see sketch map). When you reach tarmac road, walk left up side
of valley to kissing-gate. Turn left and walk along top of meadow to another kissing-gate. Walk behind houses at top of next field to partly surfaced path in corner. Walk down through woodland, via steps, to valley floor – Cwm Cidi. Go down widely spaced steps and over footbridge across stream. 4: Turn left and walk down wide track beside fast-flowing stream. You are in Mill Wood and shortly you will see remains of old water-powered sawmill on left. 5: At end of track, go through small wooden gate, turn left along major forest track and left again towards car park. When you join road on outside of corner, turn right for 100 yards then take narrow footpath on right before railway-bridge. Walk uphill until level with railway. Take kissing-gate then walk diagonally to top left hand corner and through two kissing-gates into field. Turn left and diagonally across field to large farm gate. Turn right to pedestrian gate and left (hedge on left), towards another valley. At corner, enter woodland, go past ruined cottage and over ‘stiled’ footbridge. Turn left to walk parallel to stream, through gate to meadow and across footbridge on left. 6: At bottom of field, go through kissing-gate onto woodland path that will take you down over wooden bridge to Lower Porthkerry. Turn left along lane for 20 yards and through wooden gate on right. You will see viaduct. Walk straight ahead up steep woodland path to ‘Porthkerry’. Walk past cottages and pretty St. Curig’s Church, taking left fork in road. 7: Turn left before gate and down steep woodland path. Cross gap (old golf-course) via footbridge. 8: Climb steep flight of steps to top of Bull Cliff. (Short-cut back to car park.) Main walk continues along Wales Coast Path to path on right, down to sea. 9: You can see headland and coast of Somerset and North Devon with high land of Exmoor. Walk past remains of Roman Building and boating lake. Walk along causeway and up steps to headland or left past Coastguard Station to Watch House Bay. Take path along Cold Knapp Way, turning right to ‘The Parade’. Walk through Gardens to road junction. 10: Cross end of ‘Causeway’ and turn left to Barry Railway Station where walk ends.
