At the age of three my dad gave me a butter knife to cut mushrooms, and I used to watch Delia Smith instead of cartoons! I joined Knife and Fork around four years ago as a Chef de Partie and I haven’t stopped learning since. I’ve grown with some wonderful people and fantastic teachers who have all pushed me to be my very best. My passion for cooking is constantly growing. I’m always looking forward to where my next inspiration will come from and sharing it with the people that I cook for.

Method 1. The night before you wish to serve the dish, chop half of the thyme and garlic, mix with a pinch of salt and rub it all around the pork belly. Make sure you rub the mix deep into the cuts in the rind as this will help the flavour permeate the meat. Leave this to marinade overnight. 2. Preheat the oven to 170°C and place the pork belly onto a deep roasting tin, rind side up. Add a small amount of water at the bottom of the tin to prevent it drying out. Place into the oven and roast for 45 minutes. 3. After 45 minutes has passed, take a spoon or ladle and baste the meat using the cooking juices every 20 minutes, cooking for another hour in total. If the juices run dry, add a small amount of water to continue basting. 4. Turn the oven up to 200°C and continue cooking until the crackling is crispy and the meat is totally tender. You can tell by piercing the meat with a knife - if it falls apart, it’s ready. Take the meat out and let it rest in the juices. 5. For the ragu, soak the dried shitake mushrooms in 100ml boiling water for 10 minutes. When soft, remove from the liquid and finely chop. Lay the

flat cap mushrooms and the chestnut mushrooms on a flat tray, sprinkle some vegetable oil and salt and pepper on them and roast in the 200°C oven for 20 minutes, until soft and starting to colour. 6. Sweat down the onions and the rest of the thyme and garlic in a pan, using half the butter until soft. Add the small glass of white wine, and reduce down by half. Add the liquid from the shitake mushrooms, half the juices from the pork and any juices from the roasted mushrooms and reduce by half again. Add the roasted mushrooms, the double cream and salt and pepper to taste and cook until it is a thick, rich sauce. 7. Boil the new potatoes until soft and cooked, then drain and leave to steam. In a pan, melt the rest of the butter, and add chopped parsley and chervil. Add the potatoes and crush using a fork or potato masher. Mix until fully incorporated, finally adding salt and pepper to taste. 8. Remove the crackling from the pork belly and slice the meat. Reheat in the oven with some of the juices on top to stop it drying out, and serve on a bed of the crushed potato, the mushroom ragu on the side, your favourite vegetables and crunchy crackling on top.

The nitrogen (-196c) quickly boils off after contact with the ice cream base, meaning that there's no trace of it left by the time you tuck in. This means it's also completely safe. It's also- clearly- delicious and will spoil you for just about any other ice cream. Sorry.

KEEPING ACTIVE Start/Finish: This circular walk starts in the village centre of Dinas Powys, just south-west of Cardiff. It is wise to wear supporting boots. Public Transport: Nearest Railway Station is at Dinas Powys with a regular direct service from Cardiff Central Station. There are also buses serving the village centre. Please check ‘Traveline’ and timetables before you embark on your journey. Parking: There is a car park in Dinas Powys and some street parking. O/S Map: Explorer 151 Distance: 5.5 miles. Also 3.5 mile option. Time: Allow all day and spend time enjoying this rural area not far from Cardiff. The main walk is achievable using public transport. Refreshments: It is wise to take a picnic to enjoy along the route as there are no shops or WC round the route. Stock up on snacks and water in Dinas Powys or have a coffee before you set off. Terrain: Gently undulating with a few gradual climbs. There are lots of kiss-gates, a number of stiles and a few flights of steps so unfortunately, apart from exploring the tiny village of Dinas Powys, the route is unsuitable for wheelchairs. Those with ‘rugged’ large-wheeled pushchairs, who can cope with meadow paths and kiss-gates can enjoy a short ‘there and back’ walk between points 1 and 3. History: In the Autumn months, ‘Salmon’ climb or leap over the ‘7 steps’ upstream on the Wrinstone Brook as they migrate to the pools in the upper reaches of this stream. Salmon return to their birthplace to lay their eggs. This walk has been adapted from ‘The Valeway’s ‘Salmon Leaps Walk’ and has been walked and re-written by Glynis Dray in the opposite direction. Pros: Your payments remain the same throughout the term; you own the vehicle at the end of the term, no penalties or restrictions on mileage. Cons: You pay more for the car as you are paying interest in addition to the cost of the car. If you have bad credit you can expect to pay a higher rate of interest because lenders see you as high risk. The finance company are the legal owners of the vehicle: You do not own the vehicle until you pay the agreement off in full. Personal Contract Purchase (PCP) PCP is becoming the more popular choice for those wanting to change their vehicle more regularly. A PCP is basically a loan, but you don’t borrow the full price of the car. Instead, the loan you take out equals the estimated amount of depreciation in the car’s value over the term of the agreement Typically on a 3 year cycle, PCP financing offers you the chance to in effect lease a car for a set period of time between 18 & 60 months. You pay a deposit, usually capped at 30% of the vehicle price, and then pay a fixed monthly amount. When taking out an agreement, you will be given a Guaranteed Future Value (GFV) figure which is based on the vehicles projected value at the end of the term. More than 85% of Ford's showroom sales are on PCP’s! At the end of a PCP term you have 3 options – 1. Pay an additional amount (The GFV) – known as the Balloon Payment- to secure ownership of the car 2. Return the vehicle and walk away (or get a lift home!) 3. Terminate the arrangement & take out another PCP for a new car. Pros: The big advantage of the PCP is the monthly cost. You don’t borrow the full value of the car, so the monthly payments are often lower than a loan or hire purchase agreement. Many manufacturers offer service plans included in the payments,

Pros: PCH your monthly payment includes a maintenance package to cover non-fuel running costs, such as annual car tax and routine servicing. As with PCP, you don’t have to worry about depreciating value, warranty expiry, or selling it on – that’s the leasing company’s concern. Cons: If you cancel your contract and return the car you’ll probably have to pay a fee, or may even be liable to pay all the outstanding rental payments. You won’t be able to modify the car in any way – for example, adding a tow-bar – without permission. If you exceed the agreed mileage, you’ll have to pay a penalty for this extra mileage at the end of the agreement. If you plan on taking your car abroad, you may need to get written permission from the finance company each time you do so and there may also be a charge Luckily, your Sales Executive will be well informed on all the financing options available and will be able to run through and advise on the best options for you personally.
