Stacked Quesadillas
Ole’! Want to serve a crowd, but don’t want to flip quesadillas all evening? Try this recipe for your next group meal then. Start with the following items. • Flour tortillas • Black beans • Shredded beef, chicken, or ground beef • Salsa Shredded Monterey Jack blended with Cheddar cheese Heat the tortillas in the microwave. Lay out an assembly line and start piling in a deep dish. While it can be done in any order desired, try to have a little of every item on every layer. Ideally, the stack should be about six layers high. Place in the oven at 300 degrees for about 15 minutes until the cheese is melted. Serve each stack as one helping.
Meatball Sandwich
Yummy! Comfort food at its best—meatballs and bread. Here is what you need. Small meatballs (homemade or can be purchased in bulk at any grocery store) • Marinara sauce • Bell pepper and onion slices
• Mozarella cheese grated • Your favorite hoagie rolls Heat the meatballs as directed on the package and add the marinara sauce. Simmer at least 30 minutes for the flavors to meld. In the meanwhile, slice bell peppers and onions in long strips and grate the cheese.
When the meatballs are heated, place two to three meatballs in a roll, add some of the sliced veggies on top, then sprinkle on the cheese. Place under the broiler for the cheese to melt. Watch carefully. This will take less than two minutes. Take a bite of comfort at its best.
