Bob Bob Ricard, in London’s Soho, is one of my favourite restaurants. I spend a silly amount of time there when I should be working. BBR is Russian-owned and no expense has been spared with the David Collins-designed décor. Indeed, it’s rather like dining in a devilishly decadent Orient Express (albeit a stationary one), each table cocooned in its own elegant private booth. The food is excellent, a sort of modern Russian/English combo with some classic comfort food thrown in (“Who’s having the Chicken Kiev? And the Beef Wellington?”); the service is warm and efficient and the wine list extensive and uncharacteristically fairly priced. Best of all, each table has a button that says ‘Press for Champagne’. Now that’s exactly the sort of button I like to have within constant and easy reach. And clearly I’m not alone, for Bob Bob Ricard claims to pour more champagne than any other restaurant in the UK. And the brand they pour most of is the extremely toothsome Ayala, sister house to the mighty Bollinger. I don’t reckon Ayala gets the recognition it deserves. This might be because it’s largely an on-trade rather than an offtrade brand or it might be because the brand was seriously in the doldrums in the Nineties. Founded in 1860 (it’s one of the original grandes marques), the house of Ayala is a small one, employing just 15 people and, having been bought by the Bollinger group in 2005, it has happily rediscovered its mojo and is right back on cracking form. In its heyday, during the early 19th century, Ayala pioneered a style of champagne that was drier than usual and it’s no surprise that today the Ayala Brut Nature, the driest style of all, is as good as it is. A blend of 40 per cent Chardonnay, 40 per cent Pinot Noir and 20 per cent Pinot Meunier, aged for four years on the lees, it has no added sugar (dosage) at all and where some non-dosage champagnes can be lean and acidic, this is just gloriously tasty. It’s pure, clean and refreshing with plenty of citrus and white stone fruit and an ever so slightly savoury finish. You won’t find a better example. 54
I’ve only been to Luxembourg once and it rained non-stop, despite being the height of summer. I might just as well have stayed in England. It just so happened that I had arrived, completely unplanned, on the eve of Luxembourg’s National Day – Grand Duke Henri’s Official Birthday – and despite the driving rain, the city was fully en fête with stalls, stages and pop-up bars on every street and in every square. I dumped my bags in the hotel and went for a wander. I stopped under a dripping parasol and, in an effort to restore my flagging spirits, ordered a glass of crémant, the Luxembourgish sparkling wine that everyone drinks. And, blow me, it was utterly, completely, overwhelmingly delicious! Why had nobody told me that Luxembourg crémant – made in the traditional Champagne method – was so good? Creamy, toasty, fruity and zesty, it was better than many champagnes I’ve had. And, as I later discovered, Luxembourg’s Alsace-like still wines are equally toothsome. The brand I drank most during the course of the long weekend was Bernard-Massard, and so taken with it was I, that I made a special detour to visit the family-owned winery in Grevenmacher, slap-dab on the Luxembourg/ German border. I hadn’t realised what a big business it was, producing some 3.5 million bottles a year. I tasted several of the range, but the one I kept coming back to was the Cuvée de l’Écusson Brut NV. It’s an absolute delight, launched in 1971 to celebrate the 50th anniversary of the winery and now a regular on the list. As I say, it’s made in the traditional method but from a slightly different blend than you would find in Champagne, namely Chardonnay, Pinot Noir, Riesling and Pinot Blanc and it’s wonderfully elegant with buttery, creamy fruit and a fine acidity. And bizarrely, given that everything else in Luxembourg seems to be eye-wateringly expensive, it’s very well priced.

Think of the world’s most celebrated wine regions and I’ll bet you twenty quid you don’t think of Ontario. Yes, that Ontario. You know, the one in Canada. Well, they make cracking wines there these days, specifically in the south of the province in the Niagara Peninsula which lies on the same latitude as northern California to the west and Rome to the east and now boasts around 85 wineries. The summers are bakingly hot and the winters are savagely cold but, thanks to the moderating influence of Lakes Ontario and Erie and the protection of the Niagara Escarpment, the area is ideal for cultivating grapes. You will find crisp Rieslings, soft, characterful Chardonnays, smoky Pinot Noirs and fresh, vibrant, Gamays and Cabernet Francs. The finest wines of all, though, are the remarkable Icewines, Canada’s greatest gift to the world, thanks to which we might even forgive them for foisting Celine Dion and Justin Bieber upon us. God knows they’ve a bit of ground to make up there. Inniskillin, founded in 1975 by Donald Ziraldo and Karl Kaiser, is my favourite producer and if you think Icewine is rare, sparkling Icewine is rarer still. This little beauty is made from fully ripe Vidal grapes left to freeze on the vine through the winter long, after the conventional harvest is in, to be picked only once the temperature has fallen to below -10˚C. This can be as late as the January or February following the regular vintage. This is extreme winemaking, with grapes picked by hand, one by one, in the most inhospitable conditions, and in minuscule amounts – often as little as 5–10% of a normal yield. And if the grapes aren’t pressed immediately, while still frozen, all is lost. A tiny amount will then go through the Méthode Cuvée Close or Charmat Process before emerging as a sumptuously, gloriously sweet sparkler like no other. It’s ridiculously seductive and perfect with rich starters, fine puddings and blue cheeses. Best of all, enjoy it on its own, well chilled, with someone you have designs upon. 56

The question I am most often asked, especially about expensive wines, is ‘Can it be worth that?’ The answer, when it comes to wines costing thousands of pounds a bottle, is almost certainly not. At least not for us. If you are so wealthy you can afford £3,600 for a bottle of Le Pin as easily as the rest of us stump up for a newspaper, then it is worth it. You’d probably enjoy it very much, not least because you have the intense pleasure and satisfaction of knowing you can afford it. If, by contrast, you or I were bonkers enough to sell a car in order to buy the same bottle, it’s likely we’d be crushingly disappointed. ‘It’s very nice,’ you might think, ‘very nice indeed. But not that incredibly nice: not as nice as a holiday for two in Barbados. And I haven’t got a car any more…’ You can pay £7,000 for a bottle of La Romanée-Conti. Is it 140 times as good as a £50 Burgundy? Or 700 times as good as a generic red Burgundy at a tenner? Would you rather have the one bottle or the £700? It’s not a tricky question. If you have enough savvy and confidence to acquire some classic wines, you can drink great vintages for nothing. Adam Brett-Smith of
Corney & Barrow says that you can buy, say, a case of Domaine de la Romanée-Conti, the most celebrated of all red Burgundies, when it first comes on the market for several thousand pounds. It will at least double in value as it ages, so in, say, seven years you can sell half the case for what you paid for the dozen and drink the rest yourself. That would be worth it: if you have so much money to tie up and are prepared to take the risk. Of course the principle works at the other end of the scale, too. Just as a book costing £1.99 is no bargain if you don’t read it, and £18.99 is a good price for the new novel by your favourite author, so a really cheap wine can be as much of a rip-off as something much more expensive. My heart always sinks when someone tells me what a minuscule price they paid for something they bought at a supermarket in Calais. It’s probably priced so low because that’s what it’s worth – and in any event the makers have no hope of exporting it. It’s all a matter of taste and circumstance. In this book I mention a bottle of Latour’s BâtardMontrachet. It was so inexpressibly delicious, so head- and mind-fillingly gorgeous, that I rang my daughter to say I had found the wine for her wedding; at least we might run to

This type of pollination, using birds rather than insects, is key to the growth pattern of this plant; as it ages, its flowers get bigger, rather than simply producing more flowers of the same size. Its Latin name Strelitzia comes from the amateur botanist Queen Charlotte of Mecklenburg-Strelitz, wife of King George III. 81

Silver Birch leaves have been used since ancient times as a diuretic. Also known for their antiseptic properties, they were included in remedies for bladder infections and kidney stones. The tree itself is associated with the coming of spring. The Celts valued its cleansing properties and used bundles of birch twigs to drive out the spirits of the old year. This later evolved into a tradition known as ‘beating the bounds’. Birches help other plants by improving soil condition – they draw nutrients up from deep underground and release them back into the soil when leaves are shed in autumn. 22
