CHILLI QUEEN Fred created this as a special to celebrate the Queen’s Golden Jubilee in 2012. It has plenty of kick, real staying power and is for strong constitutions only. Its popularity earned it a permanent place on the Byron menu when we celebrated our fifth birthday.

1 TSP OLIVE OIL

1. Preheat the grill to high.

2. Put the olive oil in a small saucepan over a medium heat. Once hot, add the sliced chillies and cook for 2 minutes – they should be only very lightly cooked and still crunchy. 3. Cook the hamburgers to your liking following the guidelines on page XXX.

4. Meanwhile, toast or grill the cut sides of the burger buns.

5. Divide the shredded iceberg lettuce among the 4 toasted bottom halves of the buns. 6. Add a spoonful of the Chipotle Mayonnaise to the toasted top halves of the buns and another spoonful on top of the shredded lettuce on the bottom halves. 7. Once the hamburgers are cooked, transfer them to a small roasting tray. Top each hamburger with the fried chillies, followed by 2 slices of cheese, making sure they cover the chillies. Place under the hot grill on the highest shelf. Keep a good eye on them and pull the tray out from under the grill as soon as the cheese has melted. Alternatively, follow the BBQ cheese melting guidelines on page XXX. 9. Carefully place the hamburgers onto the bottom halves of the buns and close the hamburgers. 10 Serve with a gherkin spear on the side and eat immediately.

Byron Cheesecake with Blueberries SERVES 10 – 12

An easy pudding, with a base that is set in the fridge rather than baked. It’s very popular with our teams in the restaurants. You can make it in a 20cm or 24cm springform tin.

250G DIGESTIVE BISCUITS

1. Put the digestives into the bowl of a food processor and blitz until broken down to powder-like crumbs.

125G UNSALTED BUTTER, MELTED 400G WHITE CHOCOLATE, CHOPPED 100ML DOUBLE CREAM 850G FULL FAT CREAM CHEESE 150G CASTER SUGAR JUICE OF 2 LIMES 1TSP VANILLA EXTRACT for th e b l u eberri es

120G HONEY JUICE OF 1 LEMON 500G FROZEN BLUEBERRIES

2. Pour the melted butter into the bowl of the food processor on top of the digestive and mix really well to completely combine. Spoon the mixture into a lined 20cm or 24cm spring form cake tin. Press the biscuit mixture down into the base, making sure you have an even thickness of biscuit base throughout the tin. The flat base of a glass is often a pretty good tool for pressing down evenly. Place into the fridge to firm up whilst you make the filling. 3. Put the white chocolate and cream into a medium heat proof bowl. Bring a small saucepan a quarter full of water to a gentle simmer. Place the bowl on top of the saucepan, resting on the edge, so that no part of the bowl touches the water. Turn down the heat until the water is simmering gently and leave until the chocolate is just melted, stirring now and again to mix everything together. With white chocolate, you may find the mixture looks like its separating slightly. Simply give the mixture a really good stir and it will all come back together again.

6 To make the blueberries, put the honey and lemon juice into a medium saucepan and bring to a simmer over a medium heat. As soon as they simmer tip in the blueberries, stirring around to coat in the lemon and honey mix. Bring back to a simmer and as soon as the blueberries begin to bubble remove from the heat. Leave to cool then store covered in the fridge until ready to use. 7. Once ready to serve, carefully remove the cheesecake from the cake tin. Fill a jug with hot water and dip a sharp knife into the jug. Dry the knife and slice the cheesecakes into portions. 8. Serve the cheesecake with the blueberries and some of the blueberry syrup.

4. Clean the bowl of the food processor and dry well. Put all the remaining cheesecake ingredients into the bowl of the food processor and blitz to mix. Once mixed, spoon in the chocolate and cream mixture and blitz until completely combined. 5. Spoon this into the cake tin over the now chilled base. Cover and put back in the fridge for at least 10 hours to fully set. The cheesecake can be made up to 24hrs in advance of serving. 150

Pensa Cola Hot Wings So-called as this was the first thing we ate at our first tailgate party in Denver, CO. Of course as the game was about to get under way there were many other meaty delights around too: beer brats, grilled steaks, tacos, hot dogs and burgers galore. But these wings really stood out with their rich, sweet cola flavour and hit of heat and smoke. This recipe came from an off-duty chef and die-hard Bronco fan, and I’m sure he wouldn’t mind us sharing his recipe if we declared ‘Go Broncos!’*

12–15 jumbo chicken wings For the cola brine 2 cans of your favourite cola (not a low-calorie version) 3 tbsp Louisiana Hot Sauce (page XX), or your favourite hot pepper sauce 1 tsp onion powder 4 garlic cloves, sliced 1 tbsp fine sea salt 1 tsp cracked black pepper For the rub 100g Yardbird Rub (page XX) 2 tsp cayenne pepper groundnut oil For the cola barbecue sauce 1 can of your favourite cola (not a low-calorie version) 300ml ketchup 1 tbsp tomato purée 6 tbsp Worcestershire sauce 1 tbsp Louisiana Hot Sauce (page XX), or your favourite hot pepper sauce 1 tbsp smoked paprika 11/2 tsp onion powder 11/2 tsp garlic powder 1 tsp fine sea salt 1 tsp coarsely ground black pepper

Place the chicken wings in a large dish. In a large bowl, whisk the brine ingredients until totally combined and pour over the chicken wings, making sure they’re well covered. Cover the bowl with cling film and put in the fridge to marinate for 3–5 hours. After the marinade time, discard the liquid and pat the wings dry with kitchen paper. In a small bowl, thoroughly mix the yardbird rub and cayenne pepper and put in a shaker. Rub the wings with a little groundnut oil and sprinkle liberally, all over, with the rub mixture. Put the wings in the fridge until you’re ready to grill them. Set your grill up for indirect heat maintaining a consistent temperature of about 150°C/300°F, with the coals banked. Add your wood and as soon as it starts to smoke, put the wings on the grate and smoke for 30 minutes. While you’re waiting for the wings to smoke, whisk the cola barbecue sauce ingredients in a saucepan over a high heat for a few minutes, until it comes to the boil and is well combined. Reduce the heat to low and simmer, stirring occasionally, for 20 minutes until thickened. Pour about a third of the sauce in a small bowl and transfer the remaining sauce to a jar and allow to cool completely before storing in the fridge for another time. It will keep for up to 1 month. After 45 minutes, the wings should be almost done. Brush the wings in the cola barbecue sauce and close the lid to allow the glaze to set for 10–15 minutes. Check the internal temperature of the wings, making sure you don’t hit the bone – it should be above 75°C/165°F. When the wings are fully cooked, transfer to a plate, and serve with a little of the remaining cola barbecue sauce for dipping.

Pastrami Recently, we’ve made a lot of pastrami as we’ve been serving it in our wonderfully chewy, artisan pretzel buns (page XX) at our streetfood events. There are not many pleasures in life that compare to a perfect Reuben sandwich, or making your own pastrami. Do bear in mind that good things take time. This recipe takes about six days to make but it will be well worth the wait, trust us. Cooking methods Curing, Indirect grilling/smoking

1 x 2 kg boneless beef brisket, trimmed of any hard fat 2 tbsp groundnut oil For the Cure 225g fine sea salt 75g soft light brown sugar 2 tsp Prague powder #1 2 bay leaves, ground 2 tbsp garlic powder 2 tbsp ground allspice 1 tbsp ground black pepper For the Rub 2 tbsp paprika 1 tbsp soft light brown sugar 2 tbsp garlic granules 4 tbsp coarsely ground black pepper 3 tbsp coriander seeds, roughly ground 1 tbsp all spice

Combine all the cure ingredients in a large pan, pour in 1.5 litres water and warm through over low heat, stirring, until all the salt and sugar has dissolved. Remove from the heat and allow to cool to room temperature. Put your brisket in a zip-lock bag and pour over the curing liquid. Expel any air from the bag, seal, and place in a dish. Chill in your fridge for 5 days, turning the brisket over daily to ensure the cure penetrates the meat fully. After 5 days, remove the brisket from the brine, and rinse well in cold water. Soak the brisket in clean water for 11/2 hours, changing the water every 30 minutes. Drain. Use kitchen towels to pat the brisket dry. In a bowl, combine the ingredients for the rub. Using your hands, rub a little groundnut oil on the brisket and sprinkle the rub mixture evenly and liberally on both sides, patting it into the brisket. Put the brisket back in the fridge for at least 24 hours or 48 hours if you can; this will help the rub adhere to the brisket to give a better bark. Set your smoker up for indirect heat and regulate at 121°C/250°F. Pop in your brisket, along with some chunks/chips of oak or hickory wood. Add more wood every hour or as and when it has burnt out. Smoke the brisket for 6–8 hours, until it reaches an internal temperature of 74°C/165°C on your instant-read thermometer. The final stage is the steaming, it’s recommend you do this the next day when your meat has fully rested after smoking. This is the way to go if you want to replicate authentic NY deli-style pastrami. You’ll need a roasting tray with a wire rack inside. Increase the temperature to 122°C/250°F in your smoker – no wood is required here (or preheat your oven to this temperature). Pour some hot water into the bottom of the tray, it only needs to be a 3–4cm high, and place your brisket on the rack. Now you need to make a big foil tent over the roasting tray. Use some wide foil and wrap a length around the outside of the

Aster If only things had turned out differently… This is the bittersweet message of the aster, associated with love since Victorian times and beyond. The tragic love that symbolises these flowers is entwined in the Greek myths. When Theseus volunteered to slay the Minotaur, he promised his father, Aegeus, that he would return with white sails on his boat if he succeeded in his quest. In a cruel twist of the kind epitomised in Greek mythology, Theseus was made to forget his promise and when he returned with black sails raised, his father assumed the worst. Shattered by grief, he killed himself. Where his blood flowed, the purple aster grew. The aster is indeed a delicate flower, fragile in appearance and love. Its dainty heads were laid on the graves of French soldiers as a gesture of loss and longing. It’s a message echoed in Robert Frost’s 1915 poem “A Late Walk” too, which ends with the melancholy verse: “I end not far from my going forth / picking the fading blue / Of the last remaining aster flower / To carry again to you.”

Hydrangea Hydrangeas display an aura of impetuous decadence, with their dense billowing heads of pink, blue and white petals which change colour as if on a whim. They curried such favour with the Victorians perhaps because their frilly fullness was the perfect expression of the excess in design that was then de rigueur in everything from fashion to furniture. Pattern designer Lindsay Butterfield’s 1896 “Hydrangea” wallpaper was an ostentatious repeat of pink hydrangea and foliage. But this revered beauty can be deadly. Hydrangeas are charged with hydrogen cyanide (or prussic acid), which can cause a slow and painful death when consumed in large quantities. More moderate consumption, however, has proved irresistible to a certain group of French fans. In 2014 the so-called “gang des hortensias” (‘hydrangea gang’) were at the centre of a police hunt after ripping off the delicate heads in dozens of ornamental gardens to smoke as a cheap legal alternative to cannabis.
