Summer’s Lease How to Cook Without Heat Thom Eagle 11 June 2020 9781787135338 £16.99 | Hardback 224pp | 234 x 153mm Text only

A lyrical book from the most celebrated new food writer to emerge in 2018

‘First, Catch is almost revolutionary ... His words are delicious, musical heaven.’ – William Sitwell ‘Thom Eagle’s writing is pure joy – effortless and unaffected. He is easily one of my favourite writers, and this book deserves to become a classic.’ – Olia Hercules

From the author of the Fortnum & Mason Debut Food Book of 2019, Summer’s Lease looks at the cooking techniques we use instead of heat which, in letting us step away from the stove, lend themselves perfectly to summer eating: breaking, salting, souring and ageing. We understand that when we say something is cooked, we mean it has been heated; but we also understand that a cook does much more than just cooking. The chopping, the beating, the marinating, the dressing... What cooks do is best defined not by the word ‘cooking’, but by the idea of metamorphosis. Cooks transform ingredients. Through recipes and meanderings, award-winning food writer Thom Eagle explores what it means to create dishes without a reliance on fire and flame, and offers a unique and tantalising glimpse inside the mind of a chef. Thom Eagle is a writer, chef and fermenter. He was head chef of Little Duck the Picklery in East London, and has spent time living in Sicily, exploring the food of the region. He blogs at In Search Of Lost Thyme, has presented at the Oxford Symposium of Food and Cookery and contributes to Locavore magazine.

Also available First, Catch 9781787131477

• First, Catch was also nominated for the 2018 Andre Simon Food & Drink Book of the Year, and included in BBC Radio 4’s Food Programme, Financial Times and The Times’s ‘Best Food Books of 2018’

BREAKING BARRIERS As you went through the exercises in the previous chapter, it’s likely you won’t have always had the confidence you’d have liked to in your singing and you probably made mistakes. It’s important to be kind to yourself and to find ways to overcome your self-doubts. Being armed with a few insights into why people lack confidence in singing can really help to break through those doubts and be kind to yourself.

‘A song can be more than words and music… when sung with soul a song carries you to another world, to a place where no matter how much pain you feel, you are never alone.’ CL AY A I K E N

VOWEL SOUNDS Now let’s ease into some vowel sounds by adding an ‘ah’ to the end of our ‘mmm’. We are aiming for a long note: play a C on a piano and try to copy it, starting with ‘mmm’ and then moving, without stopping, to ‘ah’ – ‘mmm-aah’. See if you can keep the quality of the tone consistent and smooth, not forgetting to keep your diaphragm and breath connected. There’s a lot to think about, but you can do it! From the C, repeat the ‘mmm-ahh’ on the D note above it, moving up note by note until you can go no higher. Then move back down to the C and continue past it to go as low as you can.

OPEN YOUR MOUTH

Repeat the exercise on all the vowel sounds as follows:

Now we are properly singing. As a result, the shape of our mouth suddenly becomes important.

mmm-ay

As the notes resonate around our mouth and facial cavities, they need space in order to sound clear, powerful and in tune. That means opening your mouth.

mmm-eee mmm-aye (this sounds very much like mmm-aah but with an extra ‘ee’ on the end)

When we speak we often minimise our mouth movements, but in singing we should aim to overarticulate, especially on vowels, which are more important to the quality of our singing tone than consonants.

mmm-oh mmm-ooh Now, repeat all these but instead of the ‘mmm’ try a ‘ha, ha!’, so ‘ha-ha!-aah’, and so on. This acts as a check for your diaphragm – is it connected right through to your vowel sounds?

You’ll be amazed how much better doing this makes your singing – instantly!

Crucially, anyone can do it – you just need to find your voice! Rosie Dow is an experienced singer, choir leader and community musician. Her teaching focuses on fun and empowerment through singing, by using accessible breathing, vocal and confidence-building exercises to help people find their voice. Rosie has also worked with various prestigious universities to publish research on the social, biological and mental health benefits of singing. • Researchers from Oxford University and Stockholm University found that group singing increases the level of ‘happiness hormones’ endorphin, oxytocin and serotonin. These hormones also increase paintolerance thresholds, which helps people suffering chronic pain or illnesses • Sing covers all the fundamentals of singing from the science, to taking control of your voice and discovering your creativity

draft cover

Profiles of great women, too long overshadowed by their writer or artist husbands, boyfriends and lovers How many times have you seen a female artist solely referred to as the wife, girlfriend, or worse, ‘mistress’ of a man in the public eye? Throughout history, the talent of creative women – from artists to writers – has been consumed by the cult of the ‘male genius’. Author Katie McCabe unpacks a male-orientated history and unravels the complex romantic relationships that have often ensured women remain overshadowed, anonymous and ripped off. By exploring a broad scope of art movements and artists, she reclaims a well-worn narrative in order to give wronged female creatives the credit they deserve. More than a Muse is a re-evaluation of our cultural history and a take two on what could (and should) have been. Katie McCabe is an Irish journalist working in London. She is the Events Editor at Time Out London and the former editor of Artists & Illustrators. Katie has written for Broadly, The Debrief and Little White Lies. She wants to take the muffled stories of underappreciated women and blast them on high-fidelity speakers until the world listens. • Creative women are being reevaluated and celebrated across the arts, as demonstrated by the runaway success of Frida Kahlo and Lee Krasner exhibitions • A groundbreaking take on our cultural and creative history from the early 1800s to today • Published in time for International Women’s Day on 8 March 2020 60
