CHEESECAKE CUPCAKES WITH OAT AND WALNUT CRUST

CRUST:
1/2 cup old-fashioned or quick oats yogurt, strawberries, raspberries, blueberries,
1/2 cup walnut halves or pieces 1 tablespoon extra-virgin olive oil 1 tablespoon butter, melted 1 tablespoon granulated sugar 1/2 teaspoon ground cinnamon 1 pinch salt
FILLING: 1 package (8 ounces) light cream cheese, at room temperature 1/4 cup granulated sugar 1 large egg 1/2 tablespoon cornstarch 1/2 lemon, zest only 1/2 teaspoon vanilla extract
TOPPINGS (OPTIONAL):
plain or vanilla Greek yogurt sliced strawberries sliced raspberries sliced blueberries fresh mint toasted coconut flakes agave sliced almonds lemon zest
Preheat oven to 350 F.
Line cupcake pan with eight paper baking cups and set aside.
To make crust: In bowl of food processor, pulse oats and walnuts until coarsely ground. Add olive oil, butter, sugar, cinnamon and salt; pulse until evenly moistened and combined.
Press 1 tablespoon of mixture firmly onto bottoms of cups. Bake 7 minutes until cooked.
To make filling: In medium bowl, beat cream cheese and sugar until smooth and creamy. continue beating until well combined.
Spoon mixture evenly into muffin cups. Bake 20-22 minutes until cream cheese mixture is set. Remove from oven and cool in tins about 10 minutes. Transfer to wire rack and cool completely. Place in refrigerator and chill completely before serving or decorating with Add egg, cornstarch, lemon zest and vanilla;
mint, coconut flakes, agave, almonds and lemon zest, if desired.

QMS: Many people don’t know that I have named you Supermodel, but they are going to soon find out why. But before we break ground and begin digging all up in your business (lol) tell us about Onzetta and all that you do. Onzetta: First, I’m completely flattered that you refer to me as a Supermodel (giggling and blushing). I’m a wife of 25 yrs. and 29 yrs. together, mother of four, and grandmother (Mimi) of one awesome grandson. I work full time at a fortune 500 aerospace company as a Technical Designer. I have to say God created me with several talents/gifts and I’ve made it my mission to tap into all of them. I once heard someone say, “There’s one place that’s full of unwritten songs, unwritten books, and unspoken words and that’s the cemetery”. I want to leave this earth empty, knowing that I’ve done all that God has charged me to do. I’m a singer, actress, makeup artist, fashion stylist, and a self-proclaimed wigologist (lol). QSM: WAIT! You sing too? I don’t know that I knew that part. And you out here singing with some “heavy hitters” too. Have you ever thought to take it all the way? Go professional and drop some albums? Onzetta: (lol) Yes, I’m a singer that’s my FIRST love and I’ve sung my entire life. My grandparents had 14 children and my grandfather was a Bishop and founder of his own church. My mother and most of my aunts and uncles were singers and musicians. I’ll say singing is pretty much in my DNA. My church had afforded me the opportunity to sing background for some legendary gospel artists Tramaine Hawkins and Kirby Brown to name a few. I love singing background more than I love being a soloist. So, I’ve never thought about doing my own album, but I have recorded as a background singer for other artists. My church recorded an album several years ago and I did lead on a song as well as background. QSM: You mentioned that you are a Technical Designer by trade. What exactly is a Technical Designer? Onzetta: I create 2D engineering drawings and 3D models of the interior and exterior of business jets. I work closely with engineering while supporting the sales team on the design and build of an aircraft. I create drawings as a visual, so the customer knows what he/she is receiving. QSM: Tell us what piqued our interest for modeling. Onzetta: What piqued my interest in modeling was people. I’ve always had a love for fashion and makeup, so I would get all snazzy from time to time. People would always actually ask me was I a model and I’d say no. One day I saw on Facebook a classmate from high school that lives in Atlanta, Ga. modeling. I contacted her to see how she got started and just so happen the agency she was modeling for was having a casting call. I went and that was the start of my modeling journey. QSM: Congratulations on your successful health and wellness journey. Being that you have ranged in sizes I feel like you can answer this question best. What three stores and or designers do you feel cater to the needs of the plus size woman best? Onzetta: I’ve been on my weight loss journey for a year now. I’ve loss 30 lbs. so far and my goal is 40 lbs. I’ve changed my eating habits by eating little to no fast food. I try to cook more rather than eat fast food. I exercise 3-4 days per week, but I’ve hit the wall of not losing weight. I’ve now increased my workout to 5-6 days per week. I work out with a great trainer Tanieshala Hall at Get That Body Dance and Fitness in Savannah, Ga. I love to shop at Ashley Stewart and Torrid. As a model, I have the advantage I believe for modeling for some amazing designers and boutique owners. I can contact either of them when I’m looking for a specific piece. I’ve modeled for man amazing designer for many years by the name of Norahs Khan her line of clothing is called Dare To Be Distinctive she’s my go to designer for original pieces.
QSM: You have a very unique style that I love about you. You modeling range as far as looks and posing is impeccable. Where did you learn to be so versatile? Onzetta: First, thank you so much for loving my style and modeling. I believe my versatility and range comes from several different attributes. When I get in front of camera, I have no fear. What I mean is even at my heaviest weight I didn’t care what it took to get the shot. I never allowed my weight and/or size to limit me on how I USE my body in a shot. I believe some photographers feel like thin models can be more creative posing than plus/curvy models can. I’ve ALWAYS had a goal to disarm photographers of that thought. I’ve never been the type of model to rely on a pretty face, big hips, or big butt to capture the viewers’ attention. I mean no disrespect in that statement…BUT!!! I want my photos to look like art. I achieve that by utilizing the space I’m modeling in, modeling from head to toe, being conscious of what my body is doing, and being conscious of the camera. QSM: You are also a makeup artist. How long have you been doing makeup? Onzzetta: I’ve been doing makeup for many years on myself. Once I got into modeling and doing fashion shows other models would ask me to do their makeup for shows. And it just evolved from there. Yes, I’ve opened my own business as a makeup artist just a few months ago. I’m grateful I stay booked every weekend since my launch of Makeup by O Cre8ative Glam & Pro Stylings. I’ve turned one of my bedrooms into my studio where I transform women from OH to BeYOUtiful. I offer different makeup looks, styling, and photoshoots. I wanted to create a space where I can give women the opportunity for me to glam them up and make them feel like a Supermodel for the day. I also use the time to help build confidence in my clients that they are beautiful with or without makeup. It is so rewarding when a client leaves feeling like you, “CAN’T TELL HER NOTHING”. (lol) QSM: Let’s talk family. I enjoy watching your family pray together and really care for one another. That is extremely important. Is this what you experienced in your own family growing up? Onzetta: Yes, I grew up in a Pentecostal family a family full of preachers. As a matter of fact, I think my mother gave birth to me in church. (Lol) God and faith is a huge part of who I am and how I was brought up. My grandfather was a Bishop he founded the church I was raised in. My mother was saved my entire life. I grew up in a home where Shirley Caesar was playing throughout the house. My grandfather made us where skirts. Well, I didn’t have to, because I was the youngest, but my sisters and cousins had to. (Lol) My husband and I have raised our children with the same Christian beliefs and values. I have three sons 31 yrs. old, 25 yrs. old, 16 yrs. old, and one daughter 19 yrs. old.

QSM: We can’t talk about family without talking about Jason. Oh how the world loves Jason. For those that don’t know Jason, tell us about him. Onzetta: Jason is my youngest child. He was born with Sickle Cell disease from birth up until he was about 5 yrs. old, we were in and of the hospital due to the Sickle Cell. When he turned 6 yrs. old, because of the Sickle Cell the main arteries to his brain were swollen which made him high risk for strokes. The hematologists decided that he would need monthly blood transfusions to lessen his chance of having a stroke. April of 2016 the unthinkable happened at age 11 yrs. old he had two strokes one on both sides of his brain. This was devastating doctors told us that he wouldn’t live through the night. His brain was swelling at an alarming rate and he also had hemorrhaging on his brain. He spent three months in ICU on a ventilator and had several other health problems while in ICU. Doctors told us he wouldn’t have any quality of life that he would be a vegetable……BUT GOD!!!!! My husband quit his job and to this day has NEVER left Jason’s side. He’s Jason’s caretaker while I work and financially support the family. Jason is a miracle boy he’s one the strongest human beings that I know. He’s in a wheelchair he can move his right side and has paralysis on his left side, legally blind, with mental limitations. He requires 24 hr. care, so he has nurses and CNAs that also help us with his care. BUT he is the happiest kid you’ll ever meet, in his condition, the smartest kid also. When he began doing what doctors said he wouldn’t be able to do they stopped giving us prognosis. No one can ever tell me that God isn’t real I’ve watched him work in my son. I always tell people God didn’t stop horrible things from happening to Jason, but he did STOP DEATH.
QSM: How has caring for Jason impacted your careers? How is he doing now? And what does your comeback look like? Onzetta: My husband gave up everything to stay home and care for Jason. He had a few years prior to Jason getting sick obtained his BA degree. He was working at the same company that I work to and the potential for promotions were high for him. Sometimes he feels like life is passing him by, because Jason’s care is complex. Not only do you have to care for him there’s also managing Jason’s care. He has at least eight doctors on his team, so they must be managed to make sure they’re keeping up with his care. He’s on a lot of medication so that needs managing, nurses, CNA’s etc. It’s a lot of work!!!! We can’t go anywhere together not unless we have a nurse to be at home with Jason. We haven’t had a date night in over 4 yrs. and no trips out of town. We heavily rely on God to get us all through this time and you know what God shows up on our behalf every day. We are a loving, happy, and goofy family!!!!(Lol) We couldn’t do any of what we do without God!!! My husband is currently studying to get his real-estate license and I’m currently building a brand.
QSM: I am super proud of you. Keep up the good work. You have a fan for life over here! Please tell people where they can follow you and possibly book you. Onzetta: The final thing I want the world to know is that obstacles may slow you down, but don’t ever let them stop you. It took a lot of refocusing and re-planning on how to move forward with now a disabled child. I have four children, so I’m used to having a plan that’s what you have to do with a large family. When Jason took sick, I didn’t know which way was up or down our world was turned upside down. But my husband and I, decided we had to move forward we can’t let this stop us from living. Jason’s life depends on us LIVING!! We as people always look for God to work things OUT instead of allowing him to work WITHIN!!! Here’s how you can contact me.
