The name of these delicious waffles is no joke. They’re gluten free and packed with protein powder, chia seeds, and healthy fats to help you conquer your day. Whip up a batch (or two) for a memorable Mother's Day breakfast or brunch! I N GRED I ENT S

Preheat the oven to 250°F. Heat a waffle iron to high heat.

cup sweet white rice flour

3/4 cup almond flour 1/3 cup cornstarch 1/3 cup ground chia seeds or flaxmeal 1/3 cup protein powder (pea or wheybased options that are unflavored or vanilla flavored work well) 2

large eggs, separated

1 1/2 cups buttermilk, plus more to loosen the batter 2

tsp pure vanilla extract

tbsp granulated sugar

tbsp (1/2 stick) unsalted butter, melted, plus more for the waffle iron

Experiment with toppings to add a personal & delicious touch. Top with warm maple syrup, powdered sugar, fresh fruit, sprinkles, jams & spreads, or whipped cream. Or try combining toppings for a truly one-of-a-kind waffle!

In a medium bowl, whisk together the rice flour, almond flour, cornstarch, ground chia seeds or flaxmeal, protein powder, baking powder, and salt. In a separate medium bowl, beat all 4 egg yolks, the buttermilk, and the vanilla. Stir the buttermilk mixture into the dry ingredients, mixing just until combined. Batter should look like traditional pancake batter, so add a little bit more buttermilk or water if it is too thick of a paste. In a stand mixer fitted with the whisk attachment (or a large bowl if using a hand mixer), beat 2 egg whites on medium speed until they are frothy, 30 seconds to 1 minute. Reserve the remaining egg whites covered in the refrigerator for up to 2 days. Slowly start to sprinkle in the sugar and increase the speed to medium-high until the whites hold stiff peaks. Whisk one-fourth of the beaten whites into the batter, then fold in the remaining beaten whites. Continuing to slowly fold the batter, drizzle in the melted butter. Using a dishtowel or brush dipped in melted butter, lightly coat the waffle iron and, following the manufacturer’s instructions, fill the mold without overflowing. Cook until browned, then transfer to a baking sheet to keep warm in the oven while you make the remaining waffles.

MATERIAL S For each coaster you will need: 4 x 4-inch glass tiles Dried pressed flowers 16.5 inches of 1/4-inch copper tape E6000 glue


D I REC TI O N S Make sure your glass tiles are as clean as possible by wiping them down with window cleaning solution. Arrange the pressed flowers on the glass tiles. Notice how the touch of green adds a bit of contrast to the bright florals. Rack up some easy bonus points if you are gifting these to someone by using their favorite variety of flowers. When you’re happy with your arrangement, secure the flowers in place with a small dab of E6000 glue. Once you’ve finished gluing everything down, align the second glass coaster on top of the first to sandwich the flowers. Cut a piece of copper tape to 16.5 inches. Carefully align the center of the tape along the edges of the two pieces of glass; this will help the copper border detail look as clean and consistent as possible. Applying the copper tape can be tricky, but luckily it is fairly forgiving. If you’re not happy with the positioning of the tap, just gently lift it off and try again. Then fold the excess tape over to create the copper rim detail and to secure both tiles together. Run a smooth object along the copper tape to flatten any ridges that might have formed. Repeat these steps to make as many coasters as you’d like. That’s all it takes to make the perfect gift for hostesses, girlfriends, and moms alike! These coasters are so beautiful, there’s no excuse not to use one!
