McLAREN VALE, SOUTH AUSTRALIA Chapel Hill is named for the ironstone chapel built by McLaren Vale’s Methodist settlers in 1865. The chapel stood as the heart of the community for 100 years, before it was closed, and began to fall into disrepair. In 1972, the chapel was given a new lease on life when it became the centrepiece and namesake of the Chapel Hill Winery. Nearly 50 years later the iconic chapel is going strong, overlooking the vineyards that thrive on the Mediterranean climate and ancient soils of South Australia’s Gulf St Vincent coastline. The product of a gentle, traditional winemaking culture and respect for the landscape, Chapel Hill’s vineyards are sustainably farmed using low-impact techniques, including reclaimed water irrigation and on-site composting to remove the need for synthetic fertilisers. It’s this winemaking philosophy that has allowed the unique site characteristics and seasonal variations to weave their magic, creating globally celebrated wines and making Chapel Hill one of the most respected and regarded wine producers in McLaren Vale.

The Carmenere variety was a victim of the Phylloxera outbreak in Bordeaux in the 19th century when it disappeared from its place of origin, the Médoc in the north. Carmenere then reemerged in Chile in the twentieth century, where the Casillero del Diablo winery makes a smooth and delicate expression of this varietal, with intense colour and soft rounded tannins with aromas of black currant and chocolate. Great with aged cheese.
If it is something with a touch of European sensibility that you seek, the Hogs in the Woods Tempranillo is a flirty Australian red of medium body and elegant finesse. This Spanish inspired but Australian made Hog shows off with bright berry fruit notes and a savoury palate of herbs and spices. It is the perfect match with tapas.
