osalie Skiff is a little girl who touches the hearts of everyone she meets with her smile and laugh. In November, the 5-yearold needed surgery to correct severe scoliosis. Something went wrong and she was struck with temporary paralysis. That’s where Hastings High School construction trades instructor Jason Hoefler and his students jumped in to quickly design and build a wheelchair ramp so the little girl, who was born with Prader-Willi Syndrome, could get into her home a little easier. Read more about how her mother, Erin Skiff, takes care of a daughter with a severe disability and how people like Hoefler and his students make this a little easier, in today’s Reminder.

A spicy new take on cheesy pasta FAMILY FEATURES

f cooler days have you wishing for savory dishes, give your menu a boost this fall with a bold, spicy

twist on your favorite comfort

Servings: 3 1 package Velveeta Shells & Cheese Bold, Chipotle 3/4 pound chopped, cooked chicken Boil 6 cups water in saucepan. Stir in shell pasta; cook 8-10 minutes or until tender, stirring occasionally. Drain pasta. Do not rinse. Return to pan. Add cheese sauce and seasoning; mix well. Add chicken to prepared pasta.

foods. Rich, creamy dishes featuring pasta and a kick of spicy heat will warm you up from the inside out. A traditional pasta and cheese is the perfect foundation for a delicious skillet dish, one-pot pleaser or casserole that blends familiar flavors with new ones to make an easy and complete weeknight dinner. Packaged options such as Velveeta Shells & Cheese can help shave preparation time, and with new bold Jalapeño and Chipotle flavors, you can bring the heat to a whole new level. These recipes show how easy it is to combine simple proteins, such as chicken or beef, in addition to your favorite cheesy pasta and spices for a cozy dish in minutes. Find more recipes at Velveeta.com.

Perfect Your Pasta

Jalapeño-Bacon Shells and Cheese Servings: 3 1 package Velveeta Shells & Cheese Bold, Jalapeño 4 slices cooked and chopped bacon Boil 6 cups water in saucepan. Stir in shell pasta and jalapeños; cook 8-10 minutes or until tender, stirring occasionally. Drain pasta and jalapeños. Do not rinse. Return to pan. Add cheese sauce; mix well. Add bacon to prepared pasta.

No cheesy pasta is complete unless it’s perfectly prepared. Follow these dos and don’ts to get your pasta just right: Do use lots of water. The ideal amount is 4 to 6 quarts per pound of pasta. This allows the pasta enough room to cook without sticking together. Don’t add oil. If you have enough water, you won’t need to add oil to prevent sticking. Do stir pasta when you first add it to the water to prevent it from sticking together and to the bottom of the pot. Don’t throw pasta against the wall. Instead, use the cooking time on the package as a guide, then try a piece to see if it’s the right texture. Italians like their pasta “al dente” (a little chewy), but you might like it softer. Don’t rinse cooked pasta; you’ll rinse away the starch, which actually helps the sauce stick. Only rinse pasta if it will be used cold, such as in a salad.

Beefy Nacho Shells and Cheese Servings: 3 1 package Velveeta Shells & Cheese Bold, Jalapeño 1/2 pound lean ground beef 2 teaspoons taco seasoning mix 1/2 cup water 1/2 cup crushed tortilla chips Boil 6 cups water in saucepan. Stir in shell pasta and jalapeños; cook 8-10 minutes or until tender, stirring occasionally. Drain pasta and jalapeños. Do not rinse. Return to pan. Add cheese sauce; mix well. Meanwhile, brown ground beef in skillet; drain. Add taco seasoning mix and water; simmer until most of the water is cooked off. Add meat mixture to cooked pasta with cheese sauce; mix well. Top with tortilla chips.

matically share a person’s location with others. Other apps may require location information for maps or to provide directions or recommendations for businesses in the area. In addition, some photos taken with geolocation services activated may be geotagged, meaning the digital image is imprinted with a code that can tell others where it was taken. Location services can identify where a child is and put this information in the hands of people trolling for personal information online.

The popularity of mobile devices and smartphones has produced more tech-savvy kids. Based on a 2013 survey by Scratch Wireless, nearly one in ÀYH NLGV XVHV D PRELOH GHYLFH HYery day. Other children regularly go online through tablets, laptops and home PCs. Connectivity is ever more in reach — and often outside of the watchful eyes of parents and other caregivers. Although statistics vary, Symantec, maker of Norton Internet Security software, estimates that at least 20 percent of kids will receive harassing, hateful or insulting messages via the Internet. That’s not the only hazard of browsing the Internet. According to the Journal of Adolescent Health, 65 percent of online sex RͿHQGHUV XVH VRFLDO QHWZRUNLQJ sites to gain home and school

information about their victims and 82 percent of online sex crimes against minors originate from online social information. The Internet also can put children in touch with age-inappropriate media content and pornographic or racy imagery. Mobile devices can provide a distraction for teenagers, which can be dangerous when used while they are driving. While parents worry about their kids going online, smartphones enable families to stay readily in touch, and many students turn to the Internet for school assignments. Parents who want to protect their youngsters from less reputable online elements can take certain measures to reduce the risk that their kids will come across questionable people and/or content when

VXUÀQJ WKH ,QWHUQHW • Set up parental controls Parental and security controls are built into most devices that connect to the Internet. While it can be fun to share images over the Internet, availability of photos can lead to trouble. Photos could give others clues to where kids go to school, work or live. Images posted while on vacation may alert oth-

RIGHTS ISSUES Another thing to consider when sharing photos of your family on Facebook: You give up a certain amount of control when you publish those pictures into the world, especially when you’re agreeing to host them on social media or photo-sharing services. More than that, you’re posting something deeply personal (especially if your privacy settings aren’t strict) that could be grabbed and shared by anyone else, anywhere. KEEP PRIVATE INFORMATION PRIVATE Another thing to consider is that posting photos of your children can reveal sensitive data about WKHLU OLYHV $ FXWH SKRWR RI WKHP RQ WKHLU ÀUVW GD\ RI school could reveal to strangers where they attend, while a shot of your son’s science fair exhibit could include his full legal name on the placard. Posting birthday photos reveals birth dates. Putting this information out into the online ether might seem innocuous, but it can be the perfect breadcrumbs for an identity theft, or worse, some- one seeking to cause harm to your family.

• Be on alert for malware A program or app may contain malware that steals information behind the scenes. Children should never send information or interact on a personal level with someone they do not know. Parents should stress the importance of avoiding strangers online just like they do when teaching kids to avoid strangers in public. The Internet has changed the way parents must safeguard their children from dangers in the world. Practicing common sense and employing safety measures and software can limit kids’ vulnerability to the dangers that lurk online.

Careful What You Share

to be online. • Talk to your children about sharing pictures online, and make clear guidelines about what is and isn’t appropriate. Also, be careful of revealing potential locations in photos (such as a home address displayed in the background).

Parents’ Posts Matter When talking about Internet safety, most parents likely focus on teaching their kids and teens about proper protocols but may not give much mind to the content they share themselves about their children. Considering we’re still in the relatively early days of social media, that content could have a lasting impact on a child for decades to come. FUNNY NOW BUT NOT LATER Social media networks such as Facebook represent a fantastic tool to share family photos and keep distant friends and relatives up to date on your life. But, it’s important to remember who you share that information with and how. A funny picture of your toddler might seem innocuous now, but think ahead 5-10 years. Will your daughter still think that silly picture needs to be public once she’s old enough to establish her own social media presence? By posting the photo, you’re making that decision for her. That’s not to say you shouldn’t share photos of your children, but it’s important to think about the ORQJ WHUP HͿHFWV

formation they provide. Try not to set up usernames that include IXOO ÀUVW DQG ODVW QDPHV $YRLG any mention of birthdays, addresses, phone numbers, and QDPHV RI VFKRROV 9DJXH SURÀOHV protect user information and PDNH LW PRUH GL΀FXOW IRU RQOLQH predators to target people.

• Use hotspots cautiously Wi-Fi hotspots provide free Internet connectivity when customers are at restaurants, parks or other areas with Wi-Fi service available. Hotspots can be particularly attractive to kids with limited data plans. However, hotspots are less secure than home Internet connections, and Wi-Fi hotspot users are vulnerable to cyber criminals. Kids should never share personal information, account numbers or other intimate details when using a hotspot.

ers that someone is not home. Compromising or suggestive photos can harm a child’s reputation or even lead to exploitation. Stress to children that they should only take photos they would be willing to share with their parents and that they should keep posted photos to a minimum. Exercise caution whenever posting images, and rely on security measures to limit who can view those images.

All it takes is a few moments on Google, and a few more skimming over social media sites, to realize a wealth of private information about you or your teen can be just a few clicks away. The reason? We share it. From locations, to shopping and food habits, to our weekly schedule, we have become a culture that shares a ton of information online. But having grown up in a world with prevalent technology and social media, many kids and teens may not understand what is and isn’t safe to share. Talk to your kids about the potential threats. 7KH 1DWLRQDO &KLOGUHQ¡V $GYRFDF\ &HQWHU RÍżHUV D few tips to keep kids safe: THE BASICS • Never post personal information, such as a cell phone number, home number, home address or your location on any social networking site or through mobile apps such as Snapchat or Instagram. ‡ 1HYHU PHHW LQ SHUVRQ ZLWK DQ\RQH Ă€UVW PHW RQ the Internet. Tell your kids that if someone asks to meet, they should tell you right away. Stress that people may not always be who they claim

NOTHING IS TRULY PRIVATE • Remind kids that everything can be saved and captured via screen grab, so they should be extremely careful what they post or say — even in seemingly private chat conversations with friends. • Teach your children to be vigilant about who they are friends with and follow online. If they’re a nuisance, or often post or share inappropriate content, remove them. • Never, under any circumstance, should your child share their password with anyone other than a parent or guardian. • Research how the privacy settings of the various social networking sites used by your children work. Make sure they’re set at a level your family feels safe and comfortable with. MANNERS MATTER • Stress manners to your children, even when communicating online. If it’s not something they would say to another person’s face, they shouldn’t text it or post it online. The seeming anonymity of the Internet is no excuse. • Let your kids know that if anything makes them feel uncomfortable online, be it while gaming, chatting or texting, they should talk with a parent or guardian immediately.
