Rice Paratha : Healthy Break Fast Dish
We all know rice is our staple food, but Parathas or Parotta win the hearts of Malayalis for more than two decades. In a normal Parotta maida flour is used for preparing tasty Parotta which we love to fill our stomach with any non veg dishes.
Rice Parathas or spicy rice stuffed rice paratha is a special healthy breakfast dish which we can make from our left over rice in the fridge.
According to rice manufacturers in India, in many Kerala kitchens huge amount of rice are wasted on each day. The only way to avoid such food wastage is to convert them into tasty dishes.
Rice Paratha Preparation 1. First make the dough. Add in the flour and a pinch of salt into a bowl. 2. Â Add a little water at a time and knead to make a firm yet smooth dough. 3. Drizzle a teaspoon of oil over the dough and knead for another couple of minutes. Cover and keep aside till we make the rice filling for the paratha.
4. Next, we will combine the leftover rice, chopped onions, green chillies, coriander leaves, red chilli powder, chaat masala, cumin powder, lemon juice and salt. Stir to combine the ingredients well. 5.Keep some flour aside for dusting. Divide the dough into large lemon side balls. 6.Dust the dough portions in flour, flatten it and roll it into a 3 inch diameter circle. Place the rice filling on half side of the circle and close the paratha by folding it with the other half.
7. Press the sides of the paratha down to seal the edges and gently using the rolling pin to flatten it. 8. Now to cook the Spicy Rice Stuffed Paratha, first preheat skillet on medium heat. Place the rolled paratha on top and allow it to cook on one side. At this stage, smear some oil or ghee to cook the paratha.
So we can prepare a healthy spicy parotta from our leftover rice and have a good variety dish for morning. Rice companies in South India encourage their consumers to include rice food in diet than maida flour for a healthy body.
