Charlotte Ranson, Production Manager and Director at Ranson explains: “Due to stricter hygiene and safety standards, the tradition of blanching and peeling brown almonds themselves was abandoned a few years ago. Now the almonds are moistened in a controlled way to match that authentic texture just after blanching in the past. That way, you avoid contamination by mould from the organic waste and raw product. The supply requirements are high!
Fixed specifications that almonds must meet and on-site supplier visits guarantee that the best quality is brought to Belgium, free from pests, mould, moths, pesticides, etc.”
Those white almonds are then combined with the other ingredients together in the blender or cutter where the temperature due to the speed of the blades, rises to 90°C. That method ensures optimal grinding and binding of the ingredients.

For industrial use, Ranson also offers marzipan in pallet boxes. The marzipan blocks are wrapped in foil and placed in the box in the agreed quantities. In this way, we reduce waste together. Founded in… our grandpa’s hands
Because we care so much about roots, let us first reveal our own. 75 years ago, this story began in the hands of our grandfather, Lucien Ranson, an inquisitive baker who created and launched his own marzipan. Two generations and more than three hundred employees later, we are still an independent family company with a hunger for the very best raw materials, ingredients, products and decorations.
