Caramel Macchiato
350 g 49621 - Base BiancaVega & Stevia - 1,5 L - Fructital
550 g Hot water (75°C)
100 g 49711 - Pasta Chantilly (Cream) - 4 kg - Fructital
20 g 49296 - Caffé più (Coffee) - 500 g - Fructital
50 g 49201 - Topping Caramel - 1 kg - Fructital
•Add the Biancavega base to the hot water and mix well
•Add the Caffé Piu and mix
•Add the Chantilly pasta and mix again
•Let rest and cool for at least 15 minutes before turning in the ice cream machine
•Remove the ice cream in layers and add topping Caramel as a variegato
•Finish with Topping Caramel
Yoghurt Amarena
375 g 49492 - Sorbet base YoVega & Stevia - 1,5 kg - Fructital
625 g Hot water (75°C)
120 g 49868 - Variegato Gran Amarena - 4 kg - Fructital
•Add the Yovega base to the hot water and mix well
•Let rest and cool for a minimum of 20 minutes and turn in the ice cream machine
•Marble the Variegato Gran Amarena on/under the ice cream
Cheesecake Strawberry
2000 g 4623 - Whole milk - UHT - BIB - 10 L - Inex
1500 g 49811 - Speedy ready Cheesecake NEW - 1,5 kg - Cresco
QS 26625 - Variegato Fragola - 3 kg - Cresco
•Add the cheesecake to the milk and mix well with the hand blender
•Let stand for min 15’ before turning in the ice cream maker
•Marble the variegato Strawberry on/under the ice cream
•Finish with a crumble of shortbread biscuits
Kefir with Yuzu-Lemon

•Marble the amorenero variegato on/under the ice cream
•Finish your creation with some oreo biscuits
White Coffee
4500 g White base
500 g Arabica Coffee beans (espresso roast)

•Allow the coffee beans to infuse in the cold base mix for at least 6 hours
•Strain the beans from the mix before turning in the ice turbine
•Marble the caffee variegato on/under the ice cream
•Finish your creation with some chocolate coffee beans
Ice Cream mix Maximilian
This ready-made ice cream mix was developed in collaboration with Italian ice cream chef Maximiliano. The use of pure flours combined with marine algae derivatives for natural binding, gives a soft, velvety like texture. It has a unique aromatic profile, having been refined from vanilla berry extract.
Base recipe
We recommend taking 2500 / 500 ratio for the best result.

POINT-OF-SALE REQUIREMENTS FOR THE USE OF REUSABLE ITEMS :
The following must be present at the point of sale :
a) A collection point identifiable by the use of clear consumer markings in which reusable articles can be placed after use.
b) Dishwasher suitable for washing in accordance with UNI EN 12875-1:2005
c) Person responsible for filling.
d) Person responsible for product reconditioning.
In order to reuse products, it is the task of the filler to perform the necessary operations to restore the reusable product to a functional state by following the steps below :
• Assessment of the condition of the packaging in particular Integrity of the product; colour; change; deposits and layers; deformation; appearance; opacity; cracks
• Removal of damaged or non-reusable parts
• Cleaning by washing in a dishwasher, such washing must comply with the conditions specified in EN 12875-1:2005

Founded in… our grandpa’s hands
Because we care so much about roots, let us first reveal our own. 75 years ago, this story began in the hands of our grandfather, Lucien Ranson, an inquisitive baker who created and launched his own marzipan. Two generations and more than three hundred employees later, we are still an independent family company with a hunger for the very best raw materials, ingredients, products and decorations.
