From The Publisher So here we are into another year, and wow… it’s 2015! It doesn’t seem very long ago that we were all excited about the new millennium arriving in 2000 and all that would mean to our computers which we had started to depend on heavily.

The years seem to pass more quickly all of the time. But each New Year, I feel a sense of new beginning, a chance to reflect on the past year and see what I would like to do differently this year. We don’t always achieve our new goals, but hopefully we come a little closer each time. Quirk Magazine continues to grow and evolve thanks to many people in the area who provide story ideas to showcase talented individuals in our community and new exciting forward thinking business ventures. We are here to represent you, Lethbridge, and the variety of interesting and unique people who make Southern Alberta such a special place to be. I’d like to introduce a new writer to our team, her name is Christina Scott of Coaldale. Christine is an excellent writer and I’d like to officially welcome her on board! We are also beginning a new feature “The Style of Being”, a column written by Ginger Malacko. Ginger has been with us for a couple of years now and has written very insightful articles. This new feature will be a regular column on a variety of topics from Ginger. We are pleased to have her continue to be a part of our team in this new capacity. Ginger is the author of a new book (featured in the November issue of Quirk), and very talented writer. This issue we are pleased to include an article about the 55+ Winter Games coming to Lethbridge, which will be an exciting time for our city! We also feature a story on “Screamin’ Brothers”, the young Lethbridge boys who bedazzled the Dragons on the Dragon’s Den. To quote one of the Dragons “We need you more than you need us!” This local family is headed for great success nation- wide with their business. Don’t Be a Hobo Breaking a promise to yourself is a shockingly forgivable offense. Others might be wounded if you betray their trust, but when you break a promise to yourself, you can basically just shrug your shoulders and eat cake. This is the time of year when people overindulge in goals and resolutions almost as much as they indulge in leftover Christmas cookies, straight from the freezer. Because making a goal on January 1st and then forgetting it by January 15th will never result in any significant consequence. Not even remorse. I suppose it’s just human nature but I’m still sincerely ashamed of us! Because if there’s anyone you can truly rely on, it ought to be yourself.
I once made a New Year’s resolution to become a fabulous soccer player. Anyone that knows me will find this completely laughable. It was the sport I longed to play when I was a kid, but my mom made me take piano lessons instead. So as a fully grown woman, I bought a soccer ball and persuaded (coerced) a friend to kick it around with me. But there was a slight hiccup… or two or three. I have no athletic ability, little time to spare, no appropriate ball-kicking space, and while I have this idealistic vision of being sporty, I’d really rather be reading a good book. As you may have gathered from my clever foreshadowing, the project was an utter failure.

Because I had made a promise to myself knowing full well that I lacked the ability to fulfill it.
This goal setting tradition of ours is called a “New Year’s resolution” not “This year’s fantasy”. So after looking back on several foolish trials of former years, I’ve realized that the trick to a successful 2015 kick-off is to promise myself that I’ll be truer to myself. That I’ll develop the skills I have, improve upon the things I do half-heartedly, and become just a little bit more of the person I already have the potential to be. A little more truly me. And not somebody else.
There are no soccer balls in my future. But there are books and languages and recipes and music. Making promises that you can and will keep is a way of being your own champion. It’s taking your real life, at the very core, and making it better and happier. It’s a way of proclaiming to the universe that 2015 is going to be the best year ever.
Can You Help? Books for Babies By Judy Millard and Lil Radley
Reading, vocalizing, and singing with babies is not only fun but critical. As this is happening, pathways for learning are developing in baby’s brain and a love of reading, the key to future success, is being established.
In many communities across southwestern Alberta, Mothers and their babies receive a delightful surprise from Public Health nurses. In Lethbridge this is at the Public Health Unit. In Pincher Creek, the County of Lethbridge, and other communities, this could be when the public health nurses visit Mothers and babies in their homes.
The society is most appreciative of the efforts of all the individuals and partners involved in this program which began as a pilot project in 1996. Spearheaded by local literacy coordinators, Sheelagh Matthews, (County of Lethbridge) and Margot Pollard (Lethbridge Public Library), and with the tremendous support of our staunch literacy advocate, Senator Joyce Fairburn, the program has grown over the years. Today, partnerships include Chinook Arch Regional Library system and its member libraries, Alberta Regional Health Authorities Services, and participating community literacy organizations from the southwestern corner of Alberta. The program has been an outstanding success, distributing in the past 15 years, some 25,718 Books for Babies bags AT NO COST. Valued at $10.00 per bag, almost $260,000.00 of free surprises have delighted families. Making this program happen are the hundreds, no, thousands of hours have spent by board members, literacy coordinators, volunteers, and nurses, either, ordering, sourcing and purchasing materials, assembling or delivering the kits to the health units for distribution.

Books for Babies board members are continually striving to find the funds required to buy the books and bags so that Mothers can continue to be delighted by the surprise gift which reinforces the importance of early literacy.
Recently, the recipient of one of the Books for Babies bag commented “A lot of people want the right resources to help their kids but don’t know here to look, and some families can’t afford to buy books ... it’s great to own at least a couple”. To continue this important program long term funding and/ or donations are required from individuals and or companies. It would be devastating to see this important program that has helped so many in different ways disappear. CAN YOU HELP?

Takes First Steps in

When it comes to motherhood, Courtney Hunter looks like a pro.
On this brisk November morning in the Senator Buchanan archive room at the Lethbridge Public Library, she pauses mid-sentence, rises from her chair, and slowly follows 15-month-old Lincoln to a corner of the room where he can be found pulling books from the shelves. With a smile, she picks him up and returns to the table. She continues her thoughts without missing a beat and is barely out of breath, despite her son squirming in her arms, playing with her hair and tugging at her clothes. This scene plays out several more times during the course of our conversation, and it seems that her patience is as boundless as his energy. While it all seems effortless, Hunter knows how daunting a child can be. The transition from date nights to sleepless nights can be a tough one, and thanks to her new venture, moms in the community are realizing that they’re not alone.
Hunter is the community director for Modern Mama Lethbridge, a community for moms which revolves around fashion, lifestyle and parenting. The organization’s motto is to “get moms out of the house” through social and educational events. Founded by Connie Peters out of Edmonton in 2008, there are now 13 locations across Canada, all run by stay-at-home moms like Hunter.
“I was on maternity leave from my previous work in human resources, and I wanted to do something that would allow me to work from home,” says Hunter, who moved to Lethbridge from Australia with her family in 2013 following her husband’s work transfer.
Hunter was flipping through a parenting magazine when she discovered Modern Mama, and decided to pursue a licence to begin her own. The Lethbridge chapter has been operational since July 2014. Hunter says moms can often feel isolated in their daily lives caring for a child, and it helps to connect and share with other mothers going through similar issues.
“When your husband’s away at work . . . you’re pretty much on your own with a little human who needs you so much and doesn’t provide a whole lot of conversation,” she says. “We love them, but sometimes, it’s just nice to be able to get out of the house and meet with other moms and have the conversations like, ‘My son’s not sleeping’ or ‘My daughter’s not eating.’ You can really relate and connect and that’s what we’re all about.”
As community director, Hunter partners with local businesses and experts to provide informative and exciting events for moms. Based on things Hunter says she was interested in, these events are small and intimate, hosting only about 15 people at a time. Hunter notes by keeping things small, mothers who attend can get answers to their questions in a friendly and relaxed environment. Child care is also offered to mothers during these sessions. She adds that both moms and businesses have responded positively.
“Local businesses love supporting other local businesses, and moms love supporting other moms,” she says. “A particularly high point for me so far was when one of the moms from our "Sleep Solutions" event saw me about two weeks later told me her baby's sleeping troubles were over and she had slept soundly ever since.” Registration prices vary depending on the topic, but Hunter explains she likes to keep things affordable. Additionally, events will be repeated at a later date for those who were unable to attend. She says moms love the social aspects these opportunities provide. “We had to actually ask the moms to leave at the end of an event because they were enjoying catching up and chatting so much,” notes Hunter. “Other moms are the best people we can meet because we are naturally empathetic with each other and we are naturally interested in sharing our story with each other.”
In addition to the events, a large part of Modern Mama’s presence is online through its website and social media. The website is home to a blog, shopping tips and tricks and a link to subscribe to a weekly newsletter which provides information on family-friendly events happening in Lethbridge.
With more than 300 followers on Facebook and more than 700 on Twitter, she adds all of her growth has been organic through the community connections she has fostered, and she hopes the trend will continue to the point where moms are approaching her for ideas. For now, she says she is simply enjoying all that Modern Mama has been able to provide. “I’m meeting the most fabulous, exciting, interesting and kind people through doing this, whether they’re other moms, or local businesses,” she says. “There are a lot of local small businesses that are excited to work with someone like me to create something great.”

Bring a tripod to steady your camera. Use your green setting and take one. This image will be your safety shot and the exposure information will show. Then change to manual mode and try different settings to get the look you are after. Try to expose for the highlights and this will show detail in brighter areas of your image. Then try and expose for the shadows or darker areas.

I was invited to a friend’s family home a few years ago over the Christmas season. It was a fun filled day of eating, playing games and great conversation. They also had a large jigsaw puzzle on the table that people would wander over to and contribute to its completion. It brought back fond memories of going to my Grandma’s house at Christmas, where she always had a puzzle out. I decided after this visit with friends that I would start that tradition again in my own home through the Christmas season, and have ever since.
I bring a new puzzle out when the feeling hits me that “it’s time”. There is no set date, but it usually ends up being mid-November. It’s a nice relaxing, quiet and introspective way to wake up while I have my morning coffee, plotting the day ahead.
It was on one of these mornings it came to me that putting together a jigsaw puzzle is a very good metaphor for life, and parallels many of the behaviours we go through while we live it.
It doesn’t take long to learn that with a puzzle, it’s most important to have the framework in place first for the rest to begin to make sense. This is like childhood, we build the perimeter to help the rest of the pieces fall into place. Once the frame is together, you find other bits and pieces that seem to belong to a particular section and the picture begins to unfold and make sense. There are times a piece looks so much like it belongs in a spot,
that you try anything you can to make it fit, sometimes bending and forcing it in, only to realize, it really didn’t belong there in the first place. Not only that, you miss out on the piece that with no effort, fit perfectly and belonged there while you were busy trying to make something work that wasn’t meant to be . The piece you tried to make fit belonged somewhere else in the puzzle, where it fit perfectly too, but you didn’t realize until much later.
At times, making sense of the pieces comes fluidly, you are on a roll and without much thought, they all magically come together. Other times, for the life of you, you can’t find anything that fits, no direction for the gaps that need to be filled. That’s when other people come into play. Sometimes they only need one look and go “a-ha”, fitting in pieces you couldn’t see… and opening you up to seeing the next steps. We wouldn’t be anywhere without friends and other loved ones becoming involved in our puzzle and the quest to make sense of it as we continue the journey.
Our lives are built one puzzle piece at a time, each making more sense, or sometimes adding confusion to the whole picture as we go along. Unfortunately, life doesn’t have the completed picture on a box to guide us. We have to trust that it is unfolding as it should, and that at the end of the day when our picture is complete, we can look back at our puzzle and say “now I understand... and what a beautiful picture it is”.

If you had told me thirty years ago when I was in university that two careers later I'd have a winemaker’s supply store, and I'd be up to my eyeballs in exotic vinegars and olive oils, I would have thought you were crazy.
When I moved back to Lethbridge 20 years ago, I initially started making wine out of necessity. I enjoyed the fruit of the vine, but couldn't quite fit it into my budget. A house we were renting at the time had apple trees in the back yard. With no shortage of raw material, we bought two thrift store juicers for less that $15 and juiced apples for three days. Well by the second day I scarcely had any skin left on my hands from the fruit acid, and there was apple pulp all over the ceiling. The good news was we had a five gallon bucket of pure organic apple juice, and my first batch of "country wine" was officially on it’s way. Three months later we sampled, we bottled, and I was hooked. Another amateur winemaker was born.

Although we have personally been making wine and enjoying wine for over fifteen years, one of the best perks of having the store has got to be the possibility of visiting wineries and wine regions anywhere in the world as professional development. And it is on a trip to Italy last year that the other part of our business was born. Back in my youth, I thought vinegar and oil were just so much salad dressing. How wrong I was! Over time all wine turns to vinegar, that much is true. But it’s the way that this has been done over the centuries, and how the process intertwines with the culture and the daily lives of those who produce it, that differentiates an exotic vinegar from a commercially made salad dressing. Many of the estate wineries we visited in Tuscany work closely with master vinegar makers to supply them with wines and other raw materials for creating some of the world’s most precious artisanal vinegars. Vinegar comes from wine, but balsamics come directly from fruit, and yet the best of these are produced in wineries as well. The traditional method of making balsamic has a lot in common with winemaking. In the past when a boy child was born in Italy on a large estate, it would not have been
uncommon for him to receive a “balsamic set” which would have been his to tend for life. This would have consisted of a series of different wooden barrels from large to small. Fruit, mostly trebbiano grapes, is boiled into a thick syrup called a must, and left to age in the barrels for years. Each year the wood evaporates more and more moisture producing a thicker and darker syrup called balsamic. The liquid is naturally preserved from the resins in the wood and naturally acidifies. As it becomes more concentrated, the balsamic is transferred to smaller and smaller barrels of different types of wood, expanding and enriching the flavor profile. Due to the absence of yeast and fermentation, the residual sugar from the fruit gives the balsamic it’s characteristically pleasant balance between tartness and sweetness. At Estate Cellars we stock everything from the handmade to the commercially made balsamics and in every flavor you can imagine. Many of Italy’s grand estates have been held by the same families for generations. As well as producing fine vintages, vinegars and balsamics, many also have their own olive groves, and produce some very exclusive olive oils. All of the oils we sell at our store are from these types of estates. One in particular is a taste experience like no other. There is even a portrait of a maternal ancestor to the current owner of this estate that was painted by an Italian Grand Master, and it is today hanging in a museum in Florence, A likeness of this portrait is on the product label of this exquisite olive oil. These olive trees are over 375 years old, and that's young for an olive tree. Wild, they tend to live around 500 years. Cultivated and pruned with love as these are, one can expect them to endure for close to 1500 years.
The other thing that makes this olive oil so unique is that is is not only organic, but DOP, or protected denomination of origin. This is a European Parliamentary designation which guarantees authenticity and place of origin. Being also from the Tuscan region, this has earned this award winning olive oil the coveted Chianti Classico designation, as evidenced by the rare little black rooster on the bottle. Always hand-harvested and same day pressed according to traditional mechanical methods, this oil is never filtered to strip it of it’s distinctive flavor qualities. Rather, it is decanted. This preserves quality but not quantity, as each tree produces only one liter of oil! Fortunately the results are nothing less than magnificent. Wandering through the local supermarkets of Italy it became abundantly clear to us that the olive and the grape are worshipped at every meal. Wine, vinegars, balsamics and olive oils almost never come off the table in Italy. Except for wine, they are all drizzled on everything from bread, to meat dishes, to ice cream. Every meal is a celebration of each region’s unique flavours and traditions.

Healthier You! Without health and wellness, how can you begin to really enjoy life at its fullest?
Each January, roughly one in three people resolve to better themselves in some way. A much smaller percentage of people actually make good in those resolutions. Most people know many of the right things to do but they don’t do them because they believe the pain of change is more than the pain of continuing the lifestyle patterns they are currently on.
If your resolution was to lose weight, instead of dieting, why not focus on one lifestyle choice you would like to improve?
We need to be realistic when setting a resolution. A resolution to run a marathon by year’s end is unrealistic for an inexperienced exerciser. And likewise, resolving to stop all your unhealthy habits at once is also likely to fail. For example, if your resolution is to eat healthier, begin by eliminating one unhealthy food from your diet at a time, not all unhealthy foods. Becoming healthy is the most common New Year’s Resolution and for good reason. It is one of the resolutions which all other resolutions depend on. Without health and wellness, how can you begin to really enjoy life at its fullest?
Start with one project first, then move on to the next one once the first one is mastered. If it’s too hard to completely give up your vice, then make gradual reductions instead. If it’s too hard to sacrifice your morning latte for instance, then cut back to one every other day, then one a week. Gradual movement is much less painful than drastic changes. Any change you make in a positive direction is better than none and I really stress that in my clinic. You might be surprised at how big a difference minor change can make in your healthy lifestyle. Losing weight is a big one. If your resolution was to lose weight, instead of dieting, why not focus on one lifestyle choice you would like to improve? Choices could range from exercising more, to cutting back on sugar, to adding healthy fruits and vegetables or tossing out the potato chips.
It’s more important to be active than to lose weight. Losing weight may be an uphill battle for many, but you can always be more active and healthy. You’ll feel better, even if the number on the scale isn’t going down. Why not give a yoga class a shot for a resolution? Exercise affects your entire body from head to toe. It affects your muscles, lungs, heart, joints, bones and brain. Others may want to jumpstart the New Year by doing a body cleanse. For those who don’t know where to start, the first thing that comes to mind is a colon cleanse, and here’s why. Toxic build-up starts in the colon and can lead to constipation; it then affects your liver and bloodstream and eventually results in an overload of toxic waste which your body tries to desperately to get rid of through your pores and lymphatic system. A colon cleanse is therefore, the perfect way to give your body that jump start, not only to lose a little extra around the middle, but also to help clean up your complexion, boost your energy and de-puff & debloat. You needn’t wait for the New Year to give these a test drive. I’ve never been into the whole “New Year’s Resolution” thing myself. I think the way you start each day is incredibly important. Starting the day with a warm glass of lemon water is one of my favorite health tricks. Warm lemon water helps to alkalize the body, keeps your organs cleansing and supports your digestive system. Adopting just this one practice can make a big difference. And to go one step further, have a glass of water before each meal. Using water at appropriate times is a healthy, natural way to promote weight loss.

Spin classes. Spinning. Spin bikes. You’ve probably heard some of these phrases in your travels, and no doubt you probably know someone who’s a ‘spinner’. Spinning is a style of indoor cycling that has taken North America by storm over recent years. What began as a fitness trend among a select few, is slowly infiltrating the mainstream masses by means of franchise and independent fitness studios. This high-energy, group-oriented form of indoor cycling is quickly gaining in popularity due to the unconventionally positive and unified way in which participants exercise together and work towards their individual fitness goals as a team. There’s a sense of camaraderie in spinning that most other workout classes can’t offer.
Prior to this year, there were no designated Spin studios in Lethbridge. Up until locally owned and operated Kinetic Indoor Cycle & Fitness opened it’s doors in Fall 2014, there were very limited options for Spinning enthusiasts or those wanting to give it a try. Kinetic’s founder and visionary, Sandra Asuchak, has had a passion for Spinning since attending her first class here in Lethbridge years ago. The concept of participating in a team-oriented class with high-energy music and enthusiastic instruction completely took her by surprise. As if that wasn’t enough, the centenarian and great-grandmother continued to amaze when she nabbed a silver medal in her sport: 85-plus women’s javelin.
While this may seem extraordinary, Storch is just one of many seniors who have continued to embrace physical activity, whether to maintain overall health or to achieve something greater. When it comes to the latter, Lethbridge will have a front row seat Feb. 19 to 22 when the province’s top senior athletes go for gold during the 55 Plus Winter Games.
This will be Lethbridge’s second time hosting the games, following its debut in the city in 2009. Lethbridge maintains a rich history when it comes to

competition-based events, beginning with the Canada Winter Games in 1975. As of 2012, it hosted more than 60 international, national, regional and provincial sporting events. Lethbridge is also the only city that has hosted all four Alberta games.
The games theme, “Warm Your Heart” is diverse, referencing heart rate when doing physical activity and the feelings that come from reuniting with old friends.
“It’s a wonderful legacy,” says Lea Switzer, board chair for the 55 Plus Winter Games.
As for what factors contributed to Lethbridge’s second opportunity to host the 55 plus games: “I think the secret is just the willingness on behalf of our community and the citizens of Lethbridge to volunteer and become engaged,” says Switzer. The games are co-ordinated by the Alberta Sport Connection (ASC) in partnership with the Alberta 55 Plus association. A local volunteer board of directors was also established to help oversee planning.

and closing ceremonies and other live entertainment throughout the games. Entertainment includes country singer Trevor Panczak, local guitarist Dale Ketcheson, as well as a New West Theatre production written specially for the games. “We have wonderful activities,” says Switzer. “We have tapped the wealth of our community through the cultural aspect of the games.”
A multi-generational torch relay has also been organized at the university’s 1st Choice Savings Centre Feb. 18 to bring people together in the spirit of the games.
Approximately 1,200 participants will descend on Lethbridge during the three-day event, competing in 14 sports from eight zones across the province. To qualify, competitors must make it past the playoff stage in their zones and be a member of the Alberta 55 Plus Association.
Sports include badminton, carpet bowling, darts, bridge, alpine skiing and cross-country skiing. This year differs from the previous games in Lethbridge due to the addition of women’s indoor soccer. “We had men’s hockey, and . . . there seemed to be a gender imbalance,” says Switzer.
Two board members who had soccer connections in the community submitted a proposal to ASC which the organization accepted. It is now a permanent addition to the games. “We’re very proud of that,” says Switzer. “That was a wonderful accomplishment.” Switzer adds the attitudes of people over 55 are transforming.

Whether you have someone in a wheelchair, whether you have a baby in a carriage, it doesn’t matter,” says Switzer. “Anybody can join. All competitions will take place within the city with the exception of the skiing events, happening at Castle Mountain and Allison Creek. Participants will be bused to and from the games, as well as to events outside the city by National Motor Coach, transportation sponsor for the games. School buses will be used to transport participants to events within Lethbridge. Competitors attending from more than 100 kilometres outside the city will be accommodated in hotels. The Enmax Centre will be used as a central food venue for the games, serving participants breakfast and dinner each day, with lunches served at various activity venues. Four Brothers Screamin Good Story

I had the pleasure of chatting with Anne Wikkerink, mother of four boys who are the heart and inspiration behind Screamin Brothers frozen treats in Lethbridge, Alberta. Anne was open and willing to talk about the challenges their family faced in adopting their two youngest sons from Haiti. She talked about the courage and generosity of her two eldest boys and how David, JR, Joseph and Dawson they garnered support from their community to help the best way they could. This was the beginning of the story that is Screamin Brothers frozen treats.
“It all started when we were ready to bring home our first little boy, Joseph, from Haiti. I was there with him just a few weeks before the earthquake. We arrived home safe and sound,” Anne said. “The paperwork for our second little boy David, wasn’t quite finished yet. Then the earthquake hit. We couldn’t bring him home. He stayed in the orphanage in Haiti amongst many other young children. It was incredibly difficult and especially hard on our eldest boys JR and Dawson, they were just 8 and 7 years old at the time.” JR, Anne told me is her oldest son, and is known to the family as a foodie, a talented cook, Quirk - 32

fearless in the kitchen and “he’s a bit of a health nut” Anne laughed; I could hear the warmth in her voice. It was JR that came up with the idea to sell frozen desserts at the community farmer’s market in Lethbridge, and to donate his earnings to the orphanage in Haiti where his new brother David was staying. “We thought it was a wonderful idea and supported our boys in pursuing it”, said Anne. Screamin Brother’s Frozen desserts are unique and unlike your average ice cream or frozen yogurt. JR created the recipes for his icy treats with his brother Dawson in mind. Dawson grew up with a severe allergy to dairy, eggs and wheat. It was important to JR that Dawson could enjoy the frozen desserts too. JR’s ingredient research led him to choose organic coconut milk as the base, honey from Southern Alberta to make the treats deliciously sweet, and a bounty of flavours to allow customers to pick their favourite. From mint chocolate, to key lime to traditional vanilla there is a flavour to satisfy everyone’s palette. “The idea took off more than we ever thought. We found out that not only was our boy’s passion

JR’s passion to create a sweet treat that Dawson could enjoy was also helping many others who suffered from common food allergies,” said Anne. JR and the family were thrilled when his new little brother, David, was safely brought home to them in Lethbridge, and their frozen treat business continued to grow. A name was clearly needed for the delicious desserts and one came about in a natural playful way. The four brothers were chattering about names one day, and with four boys in the room the discussion escalated in volume leading one brother to shout at the others “stop screaming!!” and so it was… Screamin Brothers Frozen Treats was born. Fast forward to today and JR and Dawson are 15 and 14 years old. They are in school full-time, and dedicated to their studies; but on the weekends they are invested and excited to be working on their business. “JR loves people” says Anne. “He enjoys talking with customers and leading taste testing panels to develop new flavours and recipes. While Dawson feels at home when he’s crunching numbers, he works closely with our accountant to manage the businesses finances, and he’s also a social butterfly interacting with customers on Screamin Brothers facebook page and twitter feed.” Since it all started the Screamin Brothers expanded their reach to the Banff and Canmore farmers markets and by the end of their first year they started to explore selling to retailers. Today Screamin Brothers Frozen Treats are available from the West Coast of British Columbia to Canada’s East coast in Quebec. They have plans to continue to expand the business and sell to additional grocery
chains across the country. Their dedication to producing allergen free treats is unfaltering; all of their frozen desserts are made in a dedicated allergen free facility in Lethbridge, Alberta. They continue to donate a portion of their earnings to organizations close to their hearts including Right to Play and the Special Olympics. These delicious treats are definitely worth Screamin about! And the Dragon’s Den thought so too, the four brothers were spotlighted on the Dragons den in November 2014 and signed a deal with David Chilton, who is providing support as they continue to grow their business. Today, the company remains wholly owned by the Wikkerink family, and they have lots of exciting plans for the future. How exciting! ONE-POT PASTA With roots that speak of Puglia, this brazen pasta quite magically dresses itself in a warm, buttery, silky sauce, with herbaceously fresh, outspoken flavours.

This pasta is really good. I'm a pasta freak, so that makes me a little discerning when it comes to determining the scale of mouth-watering deliciousness. So, I reiterate, this is not that Oh-Mamalittle-moans-of-pleasure good, this is just really good pasta, boasting a sauce with bold, simple flavours that kind of jump up and down in your mouth. But there is some serious culinary magic going on here, with the preparation method. OMG!!! Who would have thought that you can just plunk all these fresh, aromatic, simple sauce ingredients into a pot with the pasta, fire it up and 12 minutes later serve up a company worthy dish?
It's best not to cook the pasta until it's dry. You want to leave a little bit of that transformed, almost creamy sauce, in the bottom, so as the pasta cools a bit, it gets all perfectly coated and stays saucy. Do remember as well, that somehow or other, this cooking method demands the most of every ingredient. I could taste every ingredient, in every bite. Another time, I am going to try this same preparation using only cherry tomatoes and lots of garlic. I bet that'll be a keeper!
Take note, too, that you want to use a pasta that has a little bit longer cooking time. I used Farfalle or bowties that take 10-12 minutes to cook, according to the package directions. My pasta was perfectly al dente after 12 minutes of cooking, and maybe beginners luck, but I had exactly the right amount of saucy goodness left in the pot with this timing. Linguine, penne or larger sea shells would work well too. And whatever you do, don't forget the crowning glory, of lots of freshly grated Asiago or Parmesan.

LESSONS I’VE LEARNED FROM MY DOGS By Jean Van Kleek One of my early “Lessons From my Dogs” included the story about Shani and how she came into my life. I mentioned how Cesar Millan (the Dog Whisperer) says “you always end up with the dog you need, not the dog you want”. He was so right. When I first got Shani, I had been through several losses in my life. Shani was going to be my new friend, and spend many years together with me. She almost died at two years old from Addison disease and it broke my heart. Since her diagnosis and recovery, I realized I could possibly lose her at any time, because that’s the way the disease is. At first I thought why? Why is something else I love so fragile? And then I remembered Cesar Millan’s comment. What I needed to learn is that we have to live in the moment, and that all life is fragile. You can’t worry about what may happen, you need to enjoy what you have right now and celebrate it, because you never know how many moments you have. Shani has been doing great and is nine years old now.
But the vet said the other day, add another four onto that for an Addison dog. I’ve noticed lately that even though Shani still loves her ball, she gets a little more confused and tired. I realized she is getting older and more vulnerable.
I will throw the ball for as long as she wants, love her as much as she needs, and will be there as the road gets harder. That’s what we do for those we love.
Never forget to appreciate the moments we have with those close to us while we have them. And as they need us more, don’t forget to give them a little extra love…because they have fears of their own.

3 eggs, beaten, I use free range 1/2 cup flaxseed, ground 1 1/2 cup (19 oz) chickpeas, pureed 500 grams (1 pound) extra lean ground beef 4 – 4 1/2 cups broccoli, raw & minced 1 stalk celery, no leaves, minced 1 cup cheese (cheddar, mozzarella, or marble), grated I use a food processor to mince broccoli, celery and puree the chickpeas! Grate the cheese! In order listed above, mix ingredients well using hands to incorporate all ingredients. I wear disposable gloves! In a 13X17 pan lined with parchment paper or greased well,
pat mixture into 1/2 inch thick layer and score to desired size. I make one square inch cookies for small dogs but size is up to you. Bake at 350 F for 1 1/2 hours. Turn cookies over on cookie rack and let cool. Refrigerate up to five days. These freeze well for up to six months. Quirk - 37
