laine is a true Asheville native, born on Woodfin Street next door to the Thomas Wolfe house downtown and raised at 19 ½ Biltmore Avenue. During WWII, her mother rented a 30-room hotel, then rented out house keeping rooms. Growing up there, Elaine experienced both the closeness of immediate family and the diversity of myriad strangers. She remembers the days when they didn’t have a refrigerator and the ice man delivered to their ice box. When her mother finally got a refrigerator, everyone in the house used it. “During the war a whole family would rent a couple of rooms, have a hot plate and often share the hall shower if they didn’t have a private one.” “It was wonderful growing up in Asheville then. We kids used to go to the Grove Park Inn and sleighride down the golf course in winter and play on the grounds in summer. The Inn was closed from Labor Day till Memorial Day; they would lay the rocking chairs up against the wall on the patio and we’d play around there, then ride our bikes to Riverside Cemetery and sit on O.Henry’s grave! I didn’t have a yard growing up, so my playground was the street.” She has been honored with a plaque on Pack Square next to the statue, Childhood (little girl sipping from a fountain), that is part of the Asheville Urban Trail.

It commemorates her childhood playing in the square as well as her four years dancing with the Grand Old Opry starting when she was 20. It was in that Biltmore Avenue house that, in third grade, her aunt Dot gave her the first needle and taught her to embroider. It was that moment, she says, “I realized the needle was magic!” She still has that first embroidery sample. At age 14 her father passed away and she used the Social Security money her mother collected to buy her first sewing machine: a Kenmore from Sears. Before that she had learned to sew on a treadle machine at her aunt’s house. “I’d go and borrow any machine someone would let me use and started making my own clothes at a young age.” The atmosphere at 19 ½ Biltmore fostered not only her sewing skills but her later artistry with drawing and painting. “There was one man in the house who did water colors; one who went out on the fire escape at sundown to play the fiddle (I thought that was so sad); my mother was a silversmith for Stuart Nye who then went out on her own to make and sell her jewelry designs.” continued on page 5 July 2019 | 50+ Living | 3

During those years, polio was rampant, and Elaine came down with a light case of it. Yet, luckily when the Grand Ole Opry called her to dance with them, she was still able to do it. Elaine married two different sailors: the first one was killed in a car accident when she was 20; the second one moved her to the Bay area of Alameda, CA, and the fact that he was in the Navy led to the start of her tailoring business and shop; she also got to travel all over the world with him. “I made my husband a CPO shirt and he got so many compliments that I started getting orders. I ended up making uniforms for the Navy and the Coast Guard. Also, Japanese and Saudi Arabian navy came through our boot camp in San Diego and I was asked to make special orders for them since they were different sizes than Americans.” She also designed a line of ice-skating dresses and a style of leisure suit. “I had Reggie Jackson as a customer, the music group Grand Central Station, and the local roller derby participants.” After living in CA for 20 years she came home to be with her mother, ended up getting divorced and opened a tailoring shop on Hendersonville Road in 1981. She added fabric and notions to her tailoring services but then says, “Walmart came along, and they could sell it cheaper than I could buy it, so I quit selling fabric.” She moved to her current Sweeten Creek location and has been in that space for the past 30 years. The list of all that Elaine and A Stitch ‘N Time offer is extensive and encompasses virtually every item that can be sewn. A major part of what they offer is embroidery and monogramming. Her daughter-in-law, Becky, is in charge of doing designs on hats, shirts, totes, towels and more. They receive a lot of orders for graduations and other events. They alter prom and wedding dresses, even having sample shoes for men and women to slip into so that measuring for hemming is accurate. You can have them reline your favorite winter coat. They designed and sell a line of quilted garment bags (that can be monogrammed) with a cosmetic bag to match. Costumes are big in the Asheville area and they design custom ones (such as the Lay’s Potato Chip bag they made for a man who won tickets to the Super Bowl) as well as rent them. They can alter, hem and repair about anything. Their outstanding reputation in the area means that when celebrities and entertainers perform here and need help with clothing (sizing and repairs) this is the place they go. Over the years Elaine has sewn leather pants for Bon Jovi, repaired Elton John’s jacket, created the balloons in the movie “My Fellow Americans,” put a zipper in Randy Travis’ jacket, and much more. Elaine has a thick book of signed celebrity photos and more on the walls, such as the one of Willie Nelson. “I got to meet Elvis and danced with the Stoney Mountain Cloggers in a country-western show at Carnegie Hall that included Patsy Cline,

Marty Robbins and several other well-known stars. I used to do costumes for Ghost Town and created crew jackets for “The Last of the Mohicans.” The promoter of the show “Extreme Makeover” came in and we embroidered the backs of all the jackets.” They do a lot of design work for other companies: several years ago, she duplicated miniatures of the Teddy bear mascot of the Grove Park Inn; those were for sale and one was purchased and donated back to the Inn. That one is now encased in glass at the Inn. That led to Ted Turner seeing it and wanting one for his Vermejo Park hunting ranch. In 1998 she designed angel bears as part of North Carolina’s display on the national Christmas tree in DC (states bid for that honor only every 35 years). “Because of those bears I got to go to the lighting of the tree and a Christmas party in a grand ball room in the capitol. It was a really big deal for me!” After that people came into the shop to buy the angel bears. Word of mouth has been a powerful means of promoting her business; when folks in the area are in need of anything fabric/sewing related, they are told “go see that woman at A Stitch ‘N Time!” And what you’ll find in the shop doesn’t end with items that can be sewn. Elaine has many artistic talents and has created an extensive line of note cards displayed for sale in her shop. She draws and paints impressive images of plants, birds, animals, etc. all with a story about the subject on the back of the card. Even though she was told—when she started creating the cards—that people don’t send note cards anymore, she has sold thousands of them. Local realtors even come in and buy them by the box as a special, local gift for their clients. Pack Memorial Library: Helping Imagination Take Flight Celebrate the Free Library Centennial

magination … one of the many things available at the public library. Whether we’re reading a work of fiction, or accessing information and knowledge, libraries open up our minds, moving us toward creativity and, yes, even a better understanding of nature and humanity. Books open up the world.

But imagine this … Your access is limited. The library is only available through membership or subscription. I’m sorry; you have to pay to read that book. Imagine your community suddenly being closed off to the wonderful innovative services and programs provided by the library. Imagine your children no longer having access to books or being able to freely participate in library reading programs. Imagine yourself — the you as a child — entering a library for the first time. Do you remember the excitement of picking up a book? Think about that first book you were able to check out and take home. Now take those memories and throw them away, because the library’s door was closed to you.

They serve as a primary means for people to obtain the skills and knowledge they need to pursue life goals and ambitions. Ultimately, libraries ensure that we have a vibrant, engaged community, where everyone has access to the tools they need to succeed and thrive.”

Free or public libraries are essential and actually help create a community that is educated and literate. Libraries provide a source for cultural and intellectual energy, providing a place to meet, a program to attend, a book to read. Jim Blanton, the new Buncombe County Public Library Director, explains, “Libraries hold a special place in our communities as central hubs for lifelong learning and community engagement.” Through foundational resources, programs and services, libraries “offer the transformative capacity to help citizens achieve their full potential.” In Asheville, the first library was established in 1879. This was one of the subscription libraries popping up in many places around the country. While public libraries were not new to the US at that time, it took philanthropists like Andrew Carnegie to infuse funding into the system before it became more obvious that libraries should be open and available to everyone, and thus supported by tax dollars. 40 years after the founding of the Asheville (subscription) Library on Pack Square, it officially became the Pack Memorial Public Library when it opened its doors to Buncombe County residents as a free library. It was 1919, and since that day, Jim says, “Libraries support all stages of learning, from early childhood to postsecondary and beyond.

This, then, is cause for celebration. The Pack Memorial Library is celebrating its Free Library Centennial with creative activities and community involvement. It’s a celebration not to be missed with events scheduled for Friday, July 26. (See the sidebar for activities and locations on page 10.) continued on page 10 July 2019 | 50+ Living | 9

Additional programs will occur throughout the remainder of 2019. For most up to date information on all program offerings for the celebration, visit the library Facebook page @Pack Memorial Library. Throughout July, Golden Tickets will be hidden within certain books displayed throughout the library, with six winning adult tickets and six children’s tickets. Sponsored by the Friends of Pack Library, Golden Ticket holders will participate in a “Bookstore Sweep” in Bookends, the Friends’ used bookstore.

Erin Makara, Adult Program Coordinator for the Pack Memorial Library, is spearheading the Centennial Celebration and is excited about the opportunity. “Celebrating 100 years of being a free public library feels very special to me. I get to be that person who works beyond books to find programs that interest people. I get to build partnerships with people in the community.” For the Centennial Celebration, connecting with community organizations and businesses has helped create wide-ranging and interesting events. Many are designed to draw attention to the importance of libraries and their support to communities. There are also a number of events targeted toward children. According to Jesse Figuera, Pack Library’s Youth Services Librarian, “A library provides the means to change the trajectory of a child’s life. We offer digital resources and exciting, memorable programming in a welcoming space, where families can learn and have fun together. Because our library is free, it becomes a safe place where children feel comfortable asking for what they need, and parents feel good about saying “YES.” We are proud to open these doors to children, and we are grateful to be of service to our youngest book lovers.” Erin adds, “When I was little, I thought of the library as this magical place and librarians were the stewards of the space. They greeted me as soon as I walked in, gave book suggestions and introduced me to many different worlds and authors.” Looking back to those early days, the concept of the public library was so popular that within a few decades the first Pack Memorial Library had outgrown itself. The city’s proposed Civic Center project in the 1970s provided the perfect opportunity to build a new library. The effort was led by architect Anthony Lord, chairman of the library board, and opened in 1978 at its current location in downtown Asheville. Now that Erin works in a library, she says, “I noticed the role of libraries and librarians was changing. No longer was it a quiet space, but a space for people to come together to discuss ideas, teach classes and workshops, even to workout. The library has become a community space, welcoming everyone. Libraries gave me access to books, which bridged the gap between worlds when I was little, introducing me to all different people, creatures and cultures. Now, libraries get to bridge gaps in reality. Involving our community more, we get to be loud, have fun, and embrace learning beyond books, which is very exciting.” Supporting that effort is the Friends of Pack Library. This important group provides key financial support to help fund necessary items or events — such as the Centennial Celebration — that may fall outside of the library’s annual budget.

Bookends, the used bookstore managed by volunteers, is located just inside the Pack Memorial Library and is open during regular library hours. Gently used books of all genres, as well as other items such as Audio Books, CDs, DVDs, comic books and graphic novels, are sold at very reasonable prices with the funds raised benefiting the library, and consequently the community. Book sales take place periodically and on Friday, July 19 and Saturday, July 20, the annual sale of coffee table books, along with a sampling of antiques and collectibles will be held in the Lord Auditorium. The Friends’ sale of antiques and collectibles with added inventory will be held on Friday, October 18 and Saturday, October 19. During these sales, all books in Bookends will be half price. A special Friends’ book bag was created to support the Centennial Celebration. Designed by Kimberly Anderson, Creative Director of 50+ Living, you can pick one up for $5.00 at Pack Memorial Library. The Buncombe County Public Library system has grown substantially since that first day, with the Pack Memorial Library having more than 150,000 items available for review and checkout and the North Carolina Room serving as a hub of information about our area. The library’s services and programs have continued to expand, while remaining free and open to the public.

While Jim is new to Asheville, he’s not new to libraries. About the Pack Memorial Library, he says, “We have a passionate, talented staff, fantastic Friends of the Library volunteers supporting our efforts, great branch libraries throughout the community, and a growing effort to provide outreach beyond our physical locations.” Anchored as it is on Haywood Street, the Pack Memorial Library is a community center that continues to thrive while changing with the times. Jim adds, “In my view we’ve only just begun to explore opportunities, and in a creative community like ours, the sky is the limit in terms of what’s possible.” Public libraries are critically important to you and to society as a whole. As such, it’s important that they remain open, free and available to everyone. Libraries provide a solid foundation, one on which our society is built and therefore, it’s important for us all to continue to support them. Over the past couple of decades, many people have said that books will eventually go away and we will become a digital society, but libraries have surprised many of those naysayers. Let’s face it, books cannot be replaced by a blue screen. Holding a wonderfully graphic children’s book with drawings of dragons, bunnies, or hedgehogs cannot possibly be felt or viewed appropriately on a digital device. Holding a book, feeling its pages, the weight of it, is not nearly the same thing. There’s something timeless and relevant in books, whether they be new releases, or the antiquarian books of a by-gone era. Programs provided by public libraries can’t be replaced by interactive video. If you haven’t been to your public library recently, I encourage you to go; The Centennial Celebration is the perfect opportunity to stop in and find out what’s happening. It’s a community gathering place that focuses on cultural activities, literacy and intellectual pursuits that cannot be found anywhere else. According to Erin, “This Centennial Celebration is about our library existing as a free space for everyone in the community. I look forward to seeing how libraries and librarians continue to transform, progress, and connect with everyone while maintaining the air of magic it’s had for years. hat says “summer” more eloquently than picnics, parades, pools, and porches? Call me old-fashioned (you won’t be the first) but I love simple picnics, slow parades, pool parties, and quiet evenings on my front porch. It’s during these special moments we can appreciate the summer joys of watching children chase fireflies, smell blooming gardenias, pick bouquets of wild daisies, and . . . wear our favorite summer fashions. The objective of summer fashion is to keep us cool, comfortable, and fashionable while we enjoy our fun-filled outdoor activities. Fortunately, with sundresses, wide-brimmed hats, sandals, and big sunglasses, the question of what to wear while having all this fun is quite simple. Let’s begin with the

Gingham fabric was created in Europe during the 17th century. It was originally a striped fabric and not woven into checks until the 18th century. The checked fabric of white and one other color, became more common and is now considered to be the standard for gingham. Gingham can be found in many summer colors like peach, lime green, and strawberry pink. The lightweight cotton or cotton-blend fabric is perfect for warm-weather fashion. Gingham’s versatility makes it ideal for shirts, dresses, skirts, shorts, and pants. A touch of gingham on a collar or cuff can add a fresh accent point. Gingham accessories can be found in shoes, handbags, belts, hats, and even jewelry. Famous gingham-fashionistas include Brigitte Bardot who wore a pink gingham wedding dress when she married Jacques Charrier, Dorothy who wore a blue gingham pinafore in the Wizard of Oz, and Mary Ann who wore a red gingham dress on Gilligan’s Island. Seersucker is a thin, puckered, striped fabric. The “pucker” comes from one stripe being smooth while the other stripe is rough. The different textures create the crinkle. This cool, cotton fabric never needs ironing because it is designed to be wrinkly. Its easy-care, durability, and comfort level make it great for traveling. Seersucker is often used for men’s summer shirts, shorts, and suits. For women, seersucker is perfect for everything from sundresses to shorts to pants. Traditional seersucker is light blue and white however, like eyelet, it’s now available in a rainbow of colors. Chambray looks and acts a lot like denim and they are both made with the same type of indigo cotton threads. The difference comes from how the two fabrics are woven. Denim is woven with a twill weave, chambray is woven with a plain weave. The difference in weaving techniques gives chambray a lighter weight making it the perfect denim-look summer fabric. Chambray is commonly used for both men and women’s shirts. It also works well for dresses and skirts. The tight weave of chambray can protect from the sun during the afternoon and the chill of a summer evening.


Linen is a summer must-have for many men and women. It is a natural fiber coming from the flax plant. The loosely woven fabric is often made into flowing tops and loose-fitting pants. Linen becomes softer with each wash and will need ironing before wearing. If ironing is not an option, lightly mist your garment with water and smooth over the wrinkles with your hand. Hang to completely dry. These timeless fabrics can be updated by mixing the sweetness with a bit of boldness. A yellow eyelet top worn with white pants and accessorized with a daisy-motif necklace can look both modern and classy. Simple gingham shifts are cool and casual. Add a pair of nude wedges, bright bangles, and cat-eye sunglasses for a modernretro vibe. A seersucker shift with bell sleeves gives it an up-dated look. Summer footwear means comfortable sandals, sneakers, and slides. The summer styles of these everyday shoes are often available in bright colors of aqua or coral. They may also be adorned with summer motifs like seashells and seahorses. Wearing these fun shoes will add a touch of whimsy to your overall look. Classic, white sneakers can be worn with everything from sundresses to shorts. For an easy breezy go-to shoe, a pair of nude ballet flats will flatter almost any outfit. For a fashionable footprint, try a pair of glittery or crystal-embellished shoes. You’ll leave a sparkle whenever you go. Topping it off, we have hats and sunglasses. The fun and functional hat can elevate your style statement quicker than any other accessory. Wearing a hat signifies confidence and an understanding of your individuality. While hats come in and out of fashion, they are currently “in” as we become more and more aware of the consequences of too much sun exposure. Bucket and floppy hats with wide brims provide the most protection for

your face and neck; baseball caps don’t protect you at all. While hats can be found in many colors, light-colored hats will reflect heat from the sun. Straw-colored hats are a practical choice as they go with practically everything—just take care that the weave doesn’t allow sun rays to penetrate through if you are wearing it for sun protection. Hats can be plain or embellished with flowers, bows, or brooches. The summer bonnet is the perfect accessory to a summer outfit.

Sunglasses serve a very important role in protecting our eyes from the harmful rays of the sun. With the abundance of styles available you’re sure to find one that fits both your face and your personality: cat-eye shapes in colors like cherry and grape, round boho lenses, and sporty aviator sunglasses are all in fashion. In addition, wearing a chain is now trendy. Added bonus; it keeps you from losing those expensive shades.

Sandy’s Food for Thought Healthy Chips ‘n Dip! Can It Be True? By Sandy McCall

You are going to love this adventurous hors d’oeuvre dish and it’s healthy too! Sweet, spicy, creamy and cheesy. Wow, it has it all! This recipe starts off with one of my favorites—roasted sweet potatoes, garlic and beets— called sweets ‘n beets. It’s a great combination of flavors and it creates a colorful presentation. The sweet potatoes add just a bit of sweetness. The beets add beautiful color and nutrition. A small hit of spice will bring it all together. By the way, these roasted vegetables make a wonderful vegetable side dish for any meal. I added a simple Creamy Goat Cheese Dip as well. This dip is a little tart and adds creaminess. Parmesan Cheese Crisps are very simple to make and seem to please everyone of all ages! They are crispy and sturdy enough for dipping.

Spicy Sweets ‘n Beets Dip

Parmesan Cheese Crisps

1 1/2 medium raw beets

1/2 cup grated Parmesan cheese (more or less, depending on how many chips you want to make)

1 medium sweet potato 1 clove garlic, minced Olive or avocado oil

Preheat the oven to 350°

Salt & Pepper 1/8-1/4 teaspoon Chipotle or Cayenne pepper, or to taste Preheat oven to 450° Trim and scrub beets and sweet potatoes and chop into small cubes. Lay them out in a single layer on a parchment-lined cooking sheet. Add minced garlic, salt and pepper and then drizzle with a small amount of olive or avocado oil. Roast for about 25-30 min until veggies are tender. Cool. Place roasted vegetables and chipotle or cayenne pepper in a food processor and process until thick and smooth. Check salt and spice. This dip is best if served right away, but if refrigerated, bring dip to room temperature before serving and assembling.

Creamy Goat Cheese Dip 4 oz soft goat cheese 1/4 c coconut cream (take from the top of a can of good coconut milk)

1 garlic clove, minced 1/2-1 teaspoon of minced fresh basil or thyme Pinch of sea salt Pinch of white pepper Mash the cheese into the coconut cream and stir in the minced garlic. Heat over medium heat, stirring regularly, until cheese melts and the liquid simmers. Cook the cheese dip for about 5-10 minutes. The longer you cook the dip, the thicker it will become. Season with minced herbs, salt and pepper. Cool to room temperature. It is best to serve this dip right away. If you refrigerate before serving, you will need to let this dip come to room temperature before serving.

Place grated cheese a tablespoon at a time 1-2” apart onto a parchment-lined cookie sheet. Bake 8-10 minutes or until slightly browned on the bottom and edges. Remove carefully to a cooling rack. You can bake them in the oven as shown above or “bake” them in a cast iron skillet for a crispier, browned chip. For skillet method, heat a large dry cast iron skillet to medium heat. Spoon the cheese by tablespoons into separate piles in the hot skillet. Cook until crackers are lightly browned. Remove to a cooling rack. Putting It All Together Place the Spicy Sweets ‘n Beets dip in a serving bowl. Add the Goat Cheese Dip on one edge of the bowl next to the Spicy Sweets ‘n Beets dip. To serve, place the bowl containing the dips on top of a serving platter and place the crackers around the edge of the bowl.

Smell Good

I

t’s no mystery that bad ventilation and people or pets cause bad smells. These odors can linger, even when you clean frequently and use air fresheners. Since products that contain chemicals come with their own problems, use the following tips to make your home smell fresh and clean.

Ventilation Bad ventilation makes smells worse. That’s why you should use a properly functioning exhaust hood while cooking. Since fresh air makes a natural combatant for bad aromas, open windows whenever you can.

Cleaning Wipe up spills as they happen, and dispose of the garbage every day, regardless if it’s full or not. If you keep trash cans behind closed doors, the smell will escape once you open them. That’s why it’s important to take the trash out daily.

Air Fresheners Air fresheners only work in clean areas because they mix with existing smells. This combination can create unpleasant aromas. Since these products often come with chemical fragrances, they can bother people who have health conditions. When you buy air fresheners, opt for products with activated bamboo charcoal or essential oils.

Food Odors Since stored foods can smell up a confined space, cover them well during storage. That way, the refrigerator won’t release smells every time you open its doors. If you place slices of bread and a box of baking soda into the fridge, they will help combat odors. When you prepare meals, boil a 50/50 mixture of vinegar and water in a separate pan to neutralize unpleasant cooking scents. Baking bread makes a house smell nice but isn’t always feasible. Instead, boil a piece of orange, lemon, apple or tangerine to release a fresh aroma. This practice is ideal for using up outdated produce.

Pets

Baking Soda

Pets love their humans unconditionally, but they smell. Scoop litter boxes daily, and wash dogs twice a month. If you have caged animals, clean their habitats regularly. When you have to deal with pet stains on carpets, make a solution of 1 cup water, 1 cup vinegar and 2 tablespoons of baking soda. Pour into a spray bottle, apply to the stain, and let it absorb for 10 minutes before blotting it dry.

Baking soda is a wonderful natural remedy for absorbing odors. Place one tablespoon in the bottom of a fresh garbage bag to control funky smells. You can even add it to the clothes washer in lieu of harsh laundry detergent to combat smells on

When you were a child, what did you want to be when you grew up? I wanted to be a car dealer like my dad. I always wanted to run my own company. What do you love most about your job? My grandparents opened and operated Pop’s Grocery Store on Broadway in Asheville until the 1950’s. They lived upstairs above the store. I worked with my dad Rudy Pelle for many years at his new car dealerships before we started our furniture business. He opened Rudy’s Furniture Warehouse in 2000. I opened Frugal Decor in 2010. I’ve served on the Eblen Charities Board since its beginning which was 30 years ago and I cofounded the On Track Leadership program with Sheriff Van Duncan.

Ten-Minute Couscous Salad Recipe to the Rescue

U

h-oh. You were asked to bring a dish to the cookout. That wouldn’t normally be such a bad thing, but you have a cram-packed busy day with no room for cooking. To make matters worse, maybe you aren’t much of a cook in the first place.

1 cucumber, cut into cubes

There’s absolutely no need to bring a store-bought side dish from the grocery store that will look oh-so-obviously not homemade. There’s also no need to heat up your house and waste your time cooking pasta or potatoes for what will likely be the twelfth version of macaroni or potato salad at the BBQ.

Salt and pepper to taste

Couscous to the rescue! If you’re already familiar with couscous, you don’t have to be sold on its quick cooking time or its scrumptious texture that goes with pretty near everything. If you’ve never cooked it, this is a good time to start. You can find it at the store with the rice and pasta, or in the ethnic foods section. Buy a bunch; you’ll be wanting it again. The beauty of couscous is its fast cooking time, and you can have a whole pot of it ready in less than five minutes. Once the water boils, you can put the couscous in and turn it off if you want. It’s still ready in just a couple of shakes of a dog’s leg.

Quick and Easy Couscous Salad Recipe 6 cups cooked couscous (3 cups before cooking, then prepare per package instructions) 1 large ripe red tomato, chopped 28 | 50+ Living | July 2019

1/2 green bell pepper, chopped 1/2 cup red onion, diced Juice of 2 lemons 1/4 cup olive oil

Combine all ingredients in a big bowl and mix well. That’s it. Keep cool before serving.

Serving Suggestions and Variations on Couscous Salad • If you run into closed-minded people who balk at the idea of couscous, tell them it’s like Southern cornbread salad. They’ll eat it up. • Couscous salad is even better with about 1/4 cup of Kalamata (Greek) olives added. Put them in if you’re BBQ-ing with sophisticated palates, and while you’re at it, throw in a handful of chopped mint leaves. • Vary the veggies and their proportions according to your own taste. Feel free to skip the onions, swap the green peppers for red, or add chickpeas, black beans, or corn. Make it yours. • Flavored olive oils taste delicious with couscous, as the flavor really comes out in this subtle dish. Try it with sundried tomato-flavored oil or garlic-infused oil. Ee

The Asheville Downtown Association will host the Ingles Independence Day Celebration on Thursday, July 4 at Pack Square Park. Two giant slides, an obstacle course, a toddler bouncy house and a slack-line area will be part of a $3 wristband allowing kids to jump, bounce, balance and race as many times as they’d like. The Splashville Fountain will be on until 6pm as well for kids to cool off and splash about.
