ren’t they funny, our memories? How can I remember moments from elementary school, song lyrics I haven’t sung in 40 years, and names of my childhood friends; yet, I can’t remember what I had for lunch yesterday? One of those memories is of me and my best friend sitting on a bench outside our high school in South Florida, talking about what we aspired to do when we were older. I specifically said that I wanted to own a small general store in North Carolina. I left Florida twenty-two years ago and headed north. My husband and I brought our kids to South Asheville and found our new home in Fletcher. I worked for several companies in those first twenty years, yet something was always missing. I became tired of working for others and knew I wanted to build my own business and create something that my family would be proud of.

One day in 2016, my daughter and I were driving around in Arden looking for a place to get a slice of pie and cup of coffee. It wasn’t exactly a lightbulb that flashed above my head, but more like a fire in the pit of my stomach. Could I possibly open a pie shop? Would other people want pie and coffee too? I’m almost 50, what are you thinking? I have never worked in a restaurant, but I remembered sitting with my friend in high school and thought, “You know what? This is it! This is going to be that general store.” A year and a half later, I opened Baked Pie Company. Our pies and our shops will bring back memories to you, as well. All homemade, all freshly baked and all delicious, our pies will remind you of times when the world was a little quieter, a little nicer and a whole lot sweeter. Come see for yourself. Sandy’s Food for Thought Ganache Strawberries By Sandy McCall

These beautiful Ganache Strawberries are not for the faint of heart! Why you say? Sometimes folks are surprised that they are not the flavor and/or sweetness of milk chocolate. If you love the flavor and possible health benefits of dark chocolate, you will love these. I use organic cacao because of the flavor and possible health benefits, but pure unsweetened cocoa powder works just fine. “The cacao bean is full of antioxidants, fat, carbohydrates, protein, polyphenols like flavanoids that are antioxidants, minerals like calcium, magnesium, sulfur, copper, iron, zinc and potassium, oleic acid which is a heart-healthy essential monounsaturated fat, fiber and vitamins E, B2, B1, B5, B3, and B9.There are also small amounts of vitamin A and C in raw cacao. The maximum nutrients are found in raw cacao beans before any kind of processing.” (https://healthyy.net/superfoods/cacao-nutritional-facts) As soon as the spring strawberries are available, I am ready to make these each year. Ganache Strawberries This recipe is dairy and sugar free. Always use organic ingredients when possible. It also has a strong dark cacao/cocoa flavor, not to be confused with milk chocolate.

Strawberries 15-20 nicely formed large ripe strawberries You can use smaller strawberries so they are bite-size or use larger strawberries for a more lasting experience. Prepare strawberries by removing tops by cutting evenly across top so that berries sit straight on a plate.

Coco-Nuts 1/4 cup slightly salted or unsalted cashews Enough maple syrup to lightly cover nuts 1/8 cup coconut flakes (unsweetened) Preheat oven to 300° Put chopped nuts in a bowl and drizzle with enough maple syrup to just cover nuts. Stir to coat. Put coconut in high-powered blender or food processor and process until coconut is powder. Sprinkle coconut powder on top of nuts and mix thoroughly. Spread nuts in one layer on parchment lined baking sheet. Toast in oven until lightly browned, stirring if necessary. Takes about 10-15 minutes. Watch them carefully. Cool on baking sheet for an hour or more. As nuts cool completely, they will become crisp.

Assembly:

Ganache 1/8 cup coconut oil, melted 1/8 cup cacao or cocoa powder 2-3 teaspoons honey 2 tablespoons coconut milk Melt coconut oil in a small pan, whisk in honey until melted. Whisk in cacao or cocoa completely. Add coconut milk and whisk until combined. Ganache will become thicker as it cools. Set aside. This recipe will make more ganache than needed for 15-20 strawberries but you will need more ganache in order to be able to dip the strawberries into a deep enough vessel of ganache. Ganache keeps well in the refrigerator for your next batch of ganache strawberries or eat the extra by the spoonful as a wonderful ganache snack.

Chop nuts into small pieces and spread onto a plate. Put ganache into a small but deep container for dipping. Dip each strawberry into ganache and then roll into nuts. Set berries on a serving plate until ganache is cooled thoroughly and/or refrigerate. I hope you enjoy these ganache strawberries and make them often. More than a decade has passed since the wine snob, Miles, played by Paul Giamatti in the movie “Sideways,” responded to an offer of a glass of Merlot saying: “If anyone orders Merlot, I’m leaving. I am not drinking any (expletive) Merlot!” Many Merlot fans laughed but many, who were unfamiliar with this splendid varietal, followed Miles.

So, life was good for me, very good, until that day in 2004. I just didn’t see it coming. Who would have thought that a movie, an indie movie at that, could derail an extraordinary, centuries old, honorable career? How could a simple movie with an unknown lead actor turn me into a dreaded has-been overnight?

Years later, we find Merlot still fighting to regain its status as a noble grape, has written this letter to us and we share it with you here.

Damn you “Sideways!” You sent me swirling through space like Sandra Bullock in “Gravity.” I lost my status, my name on the A-list, my name at the top of the A-list! I lost my grounding. I lost my own gravity. I maintained a loyal audience but I lost prestige, the respect I had earned through the centuries, the respect I deserve.

What happened to me? I am from Bordeaux. I am Merlot. Hear me roar! Because of my flexibility, my softness, my fleshiness, and amiable personality, I have always been a bit of a blender, perhaps more often than I might have liked. But I was also a powerful varietal performing solo all over the world. I am a runway model, a beautiful inky purple color living glamorously, gorgeously and stunningly amidst a chaise lounge of leaves. Even my name is spectacular. According to many, “Merlot” is a derivative of “merle,” French for blackbird. I know what you are thinking. You think of me as the first runner up and not the winner. Cabernet Sauvignon always had more star power, more clout than me. I accept that. I know who I am. I was happy to stand back and let Cabernet go through the door first, take credit. I could do that because I always knew who was really in charge. I am the most widely grown grape in France! And in Bordeaux, Cabernet is nobody, nowhere without me. I am Merlot. Hear me roar!

But no more. This madness stops now. I am the Joan d’ Arc, the Harriet Tubman, the Susan B. Anthony, the Audrey Hepburn, the Sacajawea, the Serena Williams, the Princess Diana of the wine world. I am Merlot. And I am back. Hear me roar! We stand with Merlot @MetroWines. We recommend Jason Stephens Merlot from California as a reminder to Merlot fans of the depth and character of this noble grape and as an excellent representation of this varietal to newcomers. Celebrate the 4th of July with These Low-Calorie Cocktails

I

ndependence Day is just around the corner, and dieters everywhere are gathering up the willpower to turn down calorie-laden alcoholic beverages. While it’s true that most sugary margaritas and other fruity summer drinks are high in calories, sticking to your diet does not have to mean sipping diet soda while your friends enjoy their favorite mixed drinks. Mix up a batch of these crowd-friendly, low-calorie cocktails, and join in the 4th of July fun.

Red and Refreshing Punch This festive recipe makes eight, 120-calorie servings and is easy to mix in a large pitcher. Start with one liter of diet grapefruit soda, add one cup of light cranberry juice cocktail, one cup of raspberry vodka, and ¼ cup of triple sec. Stir in plenty of ice, and serve in your favorite cocktail glasses with paper flags as garnish.

Maraschino Margaritas Classic margarita recipes call for a lot of high-calorie, sugary ingredients, but this contains just 170 calories per serving. A touch of maraschino cherry juice adds just enough sweetness and a festive red color. To make two margaritas, combine

2 tablespoons of maraschino cherry juice, 2 shots of light tequila, 3 ounces of lime juice and a splash of Grand Marnier over ice in a shaker. Shake until moisture beads up on the outside, and strain into salt-rimmed martini glasses.

True Blue American Similar to a Blue Hawaiian, this cocktail will remind you of the tropics. You’ll need a blender for this recipe, but it makes enough to share amongst six friends. Each serving contains approximately 160 calories. In your blender, combine ½ cup of light rum, 1 ounce of cream of coconut, ½ cup of pineapple juice, ½ cup of sugar-free lemonade, and ¼ cup of Blue Curacao. Add 10-12 ice cubes, and blend until smooth. Garnish your glasses with maraschino cherries for the full red, white, and blue experience. The key to keeping your calorie intake in check on Independence Day is moderation. Though the recipes above are lower in calories than most cocktails, the calories can still add up quickly if you aren’t careful. Keep your intake under control by drinking a glass of water between cocktails. This will also keep your alcohol intake in check, so you can have a safe and enjoyable holiday. Thunder and Fireworks How to Keep Your Dog Safe and Calm How to calm your dog further

I

s your dog terrified of the loud crashes and bangs made by fireworks and thunder? Storms and sparkling rockets are the bane of many dogs. The racket petrifies them. However, you can keep your pet safe and calm when whistles and explosions fill the sky.

Safety first Scared dogs are likely to flee given half a chance during noisy episodes. Keep your pal safe. Go for your walk together during daylight hours when you know you won’t encounter fireworks. Also, is your dog microchipped? Get your vet to install a tiny chip to make finding your dog easier if he or she disappears. Even if a microchip is in place, you still need to ensure your pet’s tags are up-to-date. Check that your address and telephone number are easy to read. People who find strays always look at the animal’s tags. You’ll reclaim your dog sooner than if you rely on microchips alone as a means of identification. When indoors, ensure windows and other means of escape are secure. Ask anyone who shares your home to keep doors shut and not let your pal in the garden. Muffle the noise of thunder and fireworks with the sound of the TV or radio too, and close the curtains - dogs associate flashes of light with the hullabaloo they hate, and window coverings reduce the brightness in rooms. 14 | 50+ Living | June 2019

Talk to a vet about potential solutions to aid calm when loud noises abound. You are likely to be offered pheromone sprays, thunder-shirts, and other means of inducing relaxation in canines. Calming supplements in tablet or liquid form may also be available. Help your pet before loud thunder or fireworks cause problems as well. Introduce sounds like those they will hear during festivities at a low level via a CD and increase them over time to teach your pal to accept loud noises. Train your dog with sound therapy over months, though, rather than expect miracles in a short period. When fireworks whizz and crackle or thunder booms, provide a secure, cozy area where your dog can hide. Frightened canines feel safest if they can snuggle in small, dark places. Areas beneath beds or open cupboards are ideal, especially if blankets to nestle into are provided. How you conduct yourself also affects your dog because you are the pack leader. If you are excited, you send the message that danger is approaching. The less fuss made, the better. Let your composure signal all’s well. Hold back excessive sympathy, but remain thoughtful. It’s tough to witness your dog shake and drool with fear, but you can improve the situation. Keep your pal safe. Follow necessary precautions and offer a secure place to shelter until thunder and fireworks abate. Ee

icks are out and about. Unfortunately, if you spend much time outdoors this summer, chances are you will pick up at least one of the nasty little creatures. Ticks are a type of arachnid, related to spiders. Unlike spiders however, ticks prey on your blood to complete their life cycles. Although most tick bites are mildly annoying and perhaps itchy, some ticks can transmit serious diseases to humans and animals. If you have been bitten by a tick, look out for the following symptoms: Nausea • Fever • Vomiting • Heart palpitations Rash • Joint Pain • Swelling • Numbness Confusion • Weakness If in the days or weeks following a tick bite, you experience unusual fatigue, joint pain, fever, weakness, or general malaise for no obvious reason, you should go to the doctor. Also, pay attention to the area surrounding the tick bite. A large bulls-eye shape around the bite could indicate Lyme disease, although there are numerous other tick-borne illnesses, including Rocky Mountain spotted fever and ehrlichiosis.

There are precautions you can take to minimize your chances of being bitten by a tick. First, try to avoid areas of tall grass, since this is a likely tick habitat. If you must venture into the weeds, wear light-colored clothing so that ticks will be noticeable. You should wear long sleeves and pants when possible, and tuck your pants legs into your socks so that ticks can’t crawl up your legs. Be sure to wear insect repellent when outdoors. Repellents with DEET work well on both ticks and mosquitoes, so this is a two-for-one deal. Always follow directions on whatever repellent you choose. Pay special attention to age appropriateness of the repellent. Those with a high concentration of DEET or other pesticides should not be used on children. o you sometimes dream you’re flying over roofs and chimney tops or soaring above mountains in the sky? Most people experience flying dreams at some point in their lives and enjoy them. If you fly when dreaming, your emotional state is positive, and you have a sense of liberation, so you probably want to repeat the experience. Research shows during lucid dreaming the frontal lobes of the brain are active. This brain region is linked with thinking and logic, which is why decisionmaking is possible when you’re in a lucid dream. Flying dreams are usually fun. It’s likely they represent actual liberation from stress or the desire for fewer responsibilities that limit the need for freedom. I

hope you are not disappointed to learn this present-day fact of the clothing industry: not all apparel designers and manufacturers genuinely care about your exquisite sense of style. In fact, many care solely about your wallet—and they want what is in it. The mindset of today’s fashion industry has reshaped the way we perceive fashion, the way we shop, our options for clothing purchases, and in fact, our whole clothing culture. The term “fast fashion” is used to describe the quickly manufactured, cheap clothing created by mass-market retailers. Once upon a time, with each new season, fashionistas flocked to fashion shows in New York, Paris, and Milan to be the first to see avant-garde fabrics, colors, and silhouettes. The majority of us waited for our favorite fashion magazine to arrive in snail mail before getting a glimpse of the newest trends. Now, thanks to the Internet, we have immediate access to new runway fashions, and many of us want to be the first lady on the block seen wearing those hot new designs.

To accommodate our desires (and their bank accounts) imitations of catwalk designs are hurriedly mass produced. In an effort to produce these garments as swiftly as possible, shortcuts are taken. In an effort to produce them as cheaply as possible, poor quality materials are used. The low-quality, poorly constructed garments are then quickly shipped to stores to sell to the mass market while images of skinny, sexy models are fresh on consumer’s minds. Fast-fashion chain stores receive new shipments each week, some several times each week, and they need to sell their inventory as quickly as possible. To meet their goals, they conspire to convince consumers that the blouse purchased last week is already out-of-fashion and needs to be replaced. If that strategy doesn’t work, their next tactic will. The cheaply made clothing is literally designed to fall apart, often within one or two washings. This makes it necessary to buy more clothing . . . which will fall apart, or pill, or tear . . . making it


necessary to buy more clothing . . . and so the circle of cheap fashion continues. While fast fashion may seem frivolous, it doesn’t appear to be detrimental—until you learn a few facts. To begin, these low-quality garments are typically worn less than five times and only kept for one month before they are discarded. The average American contributes over 60 pounds of clothing to landfills each year. Many of the fabrics used to make these clothes are petroleum-based polyester, acrylic, spandex, and nylon which take hundreds of years to decompose. Cotton can be a wise fabric choice but you must be a savvy shopper to discern high quality from low quality. Every cotton boll contains approximately 250,000 cotton fibers or staples. Short cotton staples are 1 1/8 inches long, long staples are 1 1/4 inches long, and extra-long staples are 2 inches long. This small difference in length makes a big difference in the softness, durability, and strength of cotton products; the longer the staple, the higher the quality. Cheap clothing uses the less expensive short cotton staple making it susceptible to quickly pill, tear, and lose its shape. Cotton plants also require large amounts of water and pesticides in order to produce the abundance of cotton necessary to make enormous amounts of clothing. The negative environmental impact of fast fashion affects our water, air, and land. This fast-paced industry employees workers, mostly women, who are often paid extremely low wages and work in degrading environments. Their poor working conditions may not equal the NYC Triangle Shirtwaist Factory fire in 1911 where 146 workers died, but it’s sad to think that after 108 years, garment workers are still not valued. Jerseys and other elasticized materials are the fabrics of choice for fast fashion because the garments easily stretch to fit more shapes and sizes. These “one-size-fits-most” styles often require fewer design pieces frequently consisting of only a front, back, and maybe a sleeve. Sewing two or three simple pieces together can be done quickly and cheaply. These stretchy, knitted fabrics don’t always require hemming to keep the edges from

unraveling—saving the designer time in construction, and money in thread. This ultracasual style influences our society in ways not immediately obvious. The term “enclothed cognition,” addresses the influence our clothing has on how we think, act, and are treated. It’s been observed that we actually take on the characteristics of our clothing, which affects our demeanor, mindset, and success. All too often, the lackadaisical, don’t-care attitude about clothing transfers into a don’t-care attitude about work ethics, dignity, and life. “Slow fashion” is a new movement in which garments are designed and created for quality and longevity. The emphasis is quality over quantity. Slow fashion advocates a smaller carbon footprint, a clean environment, and fairness to both workers and consumers. Most slow fashion fabrics are natural fibers of cotton, linen, wool, cashmere, silk, and rayon.* To recognize quality clothing, look for finished seams and small, strong stitches that aren’t loose and don’t unravel, pucker, or pull apart. Clothing constructed with darts, tucks, and pleats indicate a design that doesn’t aim for the one-size-fits-all mass market. Metal zippers will last longer than plastic zippers. When extra thread and buttons are included with a garment, you know the designer expects the piece to last longer than two wearings. Buttonholes should be neat with no loose threads. Buttons should be sewn on securely, slide into the buttonhole easily, and remain there without unintentionally slipping out. Pattens such as checks or stripes should line up at the seam. Attention to detail can be found in quality garments.

Woven fabric is created with threads interlaced in lengthwise and crosswise directions. When garments are cut out correctly, they are cut “on-grain” meaning the straight line of the threads are lined up with the straight lines of the garment pieces. When a garment pattern is placed on the fabric crooked, it will be cut “off-grain.” If you have ever owned a pair of pants where a pant leg kept twisting around your leg despite your repeatedly straightening it out, you bought a garment that was cut offgrain. In the push to mass produce, attentiveness is not always taken to cut out the clothing pieces correctly. Another short cut is that pant legs and sleeves are often cut just a bit too short. When shopping for quality, look for clothing that hangs straight on your body with adequate lengths. I’m a passionate supporter of home sewing. I believe we made a big mistake when home economics was removed from high school curriculums. Many adults now don’t know how to hem a pair of pants or sew on a button! Fortunately, these skills are making a comeback. Hobby stores and quilt shops are influencing a new generation by offering classes that teach basic sewing skills. With this skill set, you can choose quality fabrics and create your own slow fashion designs. Learning to

appreciate the process of cutting fabric, measuring carefully, pressing seams, and sewing straight stitches will not only give you quality clothing, you will have garments you can be proud of, all while expressing your unique style. You may have noticed that your clothes don’t seem to last as long as they did just a few years ago. Now you know why. I like fast fashion as much as I like fast food, which is not at all. It’s easy to fall into the trap of buying clothes you don’t need because they are often so cheaply priced. Whether you buy your clothing, or you buy fabric to make your clothing, it just makes sense to buy high quality, keep your items longer, and in the long run buy less. Choosing well-made clothing is an investment in your appearance, bank account, and our planet. Why wear clothing designed to fall apart? Slow fashion is smart fashion. How will you celebrate Father’s Day? For the past 36 years, my dad’s family has had a tradition of going to Sunset Beach, NC. There will be about 30 family members there. What do you put on your pizza? Pepperoni, sausage, banana peppers, and jalapeños. But the truth is, I never turn down any kind of pizza. Where is the farthest place you have traveled? In 2010 we went to London to see the Olympics. While there we visited Paris.

I am Dr. Zachary Holcombe. I grew up in Greenville NC. I attended North Carolina State University for my undergraduate studies and then went to East Carolina where I earned my DMD. I met my wife at NC State. We have one little boy who will be two in July, and another little boy on the way. My favorite thing about being a dentist is that I get to use my hands and my head. I also love working with people. My practice is a close-knit group. We treat our patients as family.

What was your first car? A white, 95 Ford Explorer that had been passed down through the family. When you were a young boy, what did you want to be when you grew up? A paleontologist. How do you spend lazy, summer days? On the water whenever possible. Do you say “fireflies” or “lightning bugs?” Fireflies. Who is your favorite band? Need to Breathe. Do you have pets? We have a Chiweenie named Tuffy. Chiweenies are a dachshund and Chihuahua mix.

ne of the easiest ways to get started with feng shui is to play with color. Color is very important in feng shui, but don’t worry, there is no need to use colors you do not enjoy. That is the beauty of feng shui. In order to be good feng shui, it has to feel good to you.

Red increases the energy in any room. Add red anywhere you want to liven things up or draw attention. Red in the bedroom can spice up your love life. Too much red, however, can create too much energy interfering with relaxation and sleep.

Orange encourages communication and cooperation. It helps with focus and motivation. Orange is a fire element color and livens up the space creating warm, playful energy. Red is the color of the fame and reputation corner. Red is a powerful and useful color in feng shui. Use it to activate good luck charms and other items. Tie a red ribbon around your phone cord to attract more business or social opportunities. Use a red wallet or purse to attract money.

Yellow is a tricky color. It can be very beneficial when used in small doses, but too much yellow can cause anxiety and crankiness.

Adding green to your fame and reputation area feeds the fire element and can bring you recognition. Green is also useful for renewal and new growth. If you are having trouble moving forward or making changes, green can get you moving in the right direction.

White can be used in the travel and helpful people area if you want to travel, or if you need the help and support of others.

Putting It To Use When using colors in feng shui, choose the colors and shades you love. Try to achieve balance, using a little bit of each color. Remember that intention is a powerful feng shui tool. Choose and place your colors with a clear intention. When it is all said and done, it should feel good. Ee

Of course, green represents money and can help your money grow when used in the wealth and prosperity sector. If you are low on energy, adding green, especially healthy plants, can help boost your energy levels. Green is calming, relaxing, and refreshing so you don’t have to worry about over-energizing when using this color.

Blue – Generate Wealth Blue represents water, and in feng shui, water generates wealth. Blue enhances healing and meditation, and is the color of knowledge and wisdom, making it a good color to use in rooms where you or your children study. Blue is also a calming and relaxing color that can help reduce anxiety and aggression. Overuse of blue may lead to depression. Blue can help lower your pulse and body temperature, and decrease your appetite.

Black – Money and Protection Black is another water element color. Black attracts money and income. It is the color of protection, power, and mystery. Black is very grounding. Black is a good color to use in your career sector to draw wealth-generating career opportunities. If your front door is in the career or wealth sector of your home, try painting it black to start generating money.

White – Creativity and Children White represents metal in feng shui. It is the color of the creativity and children sector. White can help restore youthful energy. When used in the creativity and children corner, it can help you overcome writer’s block and infertility. June 2019 | 50+ Living | 23


Disease Prevention for Alzheimer’s and Dementia

A

lzheimer’s and dementia prevention is a continuous learning process for medical researchers. While some prevention methods for these diseases show positive results, there still are many factors to consider. Below are some possible ways to help prevent these diseases as early as possible, before they occur. While they are two different conditions, dementia can sometimes be a symptom of Alzheimer’s. Improving memory and brain function can aid in prevention of both.

Exercise the Body Studies have shown that physical movement can strengthen memory and cognition. Activities such as playing basketball, swimming, hiking, yoga, and bike riding all are forms of vigorous exercise. Other options include taking fitness classes, going for walks or playing at the playground with children or grandchildren. Doctors or caregivers may recommend another form of exercise, depending on a person’s current well-being.

Exercise the Mind Not all exercise is physical; the brain needs stimulation as well. Reading, writing, doing math problems, playing board games, card games, and word puzzles are several ways to keep the brain working. Stay Social Any time spent interacting with others in a positive way can aid in the prevention of Alzheimer’s and dementia. In addition to continuing education classes, social events, group camping, and get-togethers with family and friends are all good ways to stay social.

“An Apple a Day” More Than a Silly Rhyme

T

he statement, “an apple a day keeps the doctor away” is more than just an old wives’ tale. Apples contain several things that contribute to good health and may actually help to stem obesity, heart disease, Alzheimer’s disease, and colorectal cancer.

Eating an apple 30 minutes before a meal is one of the best appetite suppressants available. Apples contain a soluble fiber known as pectin. Pectin becomes gelatinous when heated, and it is the substance instrumental in firming jelly and jam. When pectin is ingested, it creates a gooey coating within the digestive tract that fools the body into feeling full and decreases the production of the hunger hormone, ghrelin. This pectin coating also prevents the sudden release of sugars into the bloodstream. Blood sugar spikes contribute to a cycle of fatigue and overeating that are related to obesity and the onset of type 2 diabetes. Acetic acid is another chemical compound found in apples. Research done in Japan suggests that ingesting acetic acid regularly triggers genes in the body to oxidize fatty acids more quickly. This suggests that people who ingest acetic acid while on a calorie-restricted diet will burn body fat more quickly. As the oxidation of fatty acids takes place in the liver, ingestion of acetic acid also affects blood lipid (cholesterol) levels in a beneficial way. The physical reaction to acetic acid is the basis of the “apple cider vinegar” diet. Acetic acid also tends to slow gastric emptying, thus blunting blood sugar spikes after a high carbohydrate meal.

The antioxidant quercetin is found in abundance in fresh apples, and according to researchers at Cornell University, this chemical appears to help protect brain cells from neurodegenerative disorders such as Alzheimer’s disease. Quercetin is found primarily in the skin of the apple, so eating unpeeled fresh fruit is the best source of this chemical. Finally, apples are a terrific source of the fiber, cellulose. Cellulose is an indigestible fiber and its presence in the diet has been linked to reduced rates of colorectal cancer. Cellulose keeps a person regular, and regularity without drug usage not only increases a person’s feeling of well-being in general, it also minimizes gastrointestinal disorders such as diverticulosis and irritable bowel disease. There is also an inverse relationship between fiber intake in general and the growth of polyps in the digestive tract. According to the 2011 International Food Information Council, only 3% of adults follow a diet that meets their daily fiber needs.
