The

restaurant business is fiercely competitive. The process of maintaining reasonable prices, impeccable service, and high quality keeps profit margins low. So how is it that in Asheville, restaurant owners collaborate as the Asheville Independent Restaurants (AIR)? Restaurant owners outside of the Asheville area ask Peter Pollay, Executive Chef and owner of Posana, this question routinely. His response:“It’s Asheville; that’s what we do here.” In Asheville, the restaurant business is big business for small business owners. Independence, however, is a challenge when it comes to keeping costs low and quality high; and yet, Asheville’s reputation for the greatest number of high quality restaurants with exceptional and friendly service has spread far and wide. Jane Anderson, Executive Director of AIR, explains, “We collaborate on those things that help all of us succeed. Of course every one of our 115 members want their restaurant to be the restaurant of choice, and we also know that as a foodie heaven it’s in everyone’s interest for all of us to be exceptional. AIR was initiated 11 years ago by five restaurateurs looking to increase their purchasing power and collectively seek group health insurance for their employees. They succeeded in one of those (it is still illegal for associations to offer group health, but that’s another article with a different focus). AIR has steadily grown over the years and in so doing has helped the community prosper economically, socially and environmentally. AIR is committed to helping independent restaurateur run a sustainable business. This means collective purchasing power as well as training and support in the areas of human resources, public relations, government regulations and education. AIR also stays abreast of what’s trending in the food industry, informing member so they can offer dishes that are at the cutting edge of what their customers want, such as the current gluten free needs that many people require for health and wellness. I asked Peter and Jane how they came to the area and

got involved with AIR. Peter moved from Malibu, California to Asheville in 2003 when he and his wife decided they wanted a different location in which to raise their children. As a master chef, he’d worked in the restaurant business for ten years, but shifted to real estate when he arrived in Asheville because it gave him the flexibility he wanted to spend time with his wife and daughter. After a number of years, however, the restaurant siren’s called; one day he woke up, turned to his wife and said, “Let’s open a restaurant!” The timing was perfect as the location, which is now known as Posana, had just

become available. Their commitment when they opened was quality, sustainability and as local as possible. Randy Talley, of Green Sage, recruited Peter to join Green Team, a small but growing group of restaurant owners in AIR. From there, Peter’s commitment and dedication to his fellow restaurateurs has earned him the position as President of the Board. Jane left the cold weather of Erie, PA in search of a warmer climate and a more diverse community. She brought her expertise in marketing, customer service, public relations, and healthcare administration to

Asheville’s Chamber of Commerce. She first got involved with area restaurateurs during her tenure at the Chamber where she served as Vice President of Membership and Communications and organized a number of events with the restaurants. She was invited to serve as an ‘At Large’ board member with them for several years and joined AIR in the spring of 2013 as AIR’s first full time Director. AIR and its members are avid supporters of Asheville citizens, other small businesses and non-profit organizations. Individual AIR members give generously with food for


nonprofit fundraisers. Their buy local efforts have helped make farming and the food industry a viable local business. Local artists display and sell their work from the walls of many of the restaurants and the restaurant business provides significant tax income to support community services. And, of course, restaurants are a primary source of employment for the community. In fact, there are often job vacancies in this business. AIR’s commitment to the environment extends beyond the Green Team that has been encouraging members to move towards more sustainable practices. Several years ago they partnered with the Blue Ridge Sustainability Institute, receiving a $285,000 grant to green the 20 restaurants that signed on.

Their commitment, which was to lower their carbon footprint and save BTUs, started with baby steps. They changed light bulbs, eliminated Styrofoam, and moved rapidly towards recycling and composting anything that was once alive. A partnership developed with Danny’s Dumpsters, which now brings tons of restaurant waste and trash to recycle and compost daily. Danny will deliver his first round of compost back to the farm this year. This effort earned Asheville the America’s Greenest Dining Destination from the Green Restaurant Association. When asked what the future holds for AIR, Jane and Peter share that they will keep driving the training programs, expand their support of healthy foods in schools and contin-

ue to meet the needs of their members for education, marketing, legal support and human resource developm ent. They applaud our community and all those who help to serve safe, healthy, nourishing, and delicious food to residents and tourists alike. “This is a special community,” smiles Peter,“where it’s easy to sit face to face with the people who are in charge of your destiny (regulatory officials). They want us to succeed, they want us to understand and they work with us to achieve what supports a thriving industry in our area.” But of course, it’s Asheville, that’s what we do here. Jeff

Goodman, whose roots go back to a college internship, says,“People who physically build real bridges together also build bridges and relationships that make them a community.” He knows because that’s what happens in Celo, but what happens in Celo doesn’t need to stay in Celo. It has a rich history, which offers those of us who long for real community some ideas about how we can create that wherever we live. Jeff first came to Celo in 1984 as an intern at the Arthur Morgan School for students in grades 7-9. The school, founded in 1962, is a progressive boarding and day school where students work, play, study and make decisions together. Students learn to question, evaluate, think creatively and work cooperatively while participating fully in the Celo community, which lives by the simple values of simplicity, peace, integrity, community, equality, stewardship and nonviolent conflict resolution. Jeff was taken with the educational program that fosters holistic development, small academic classes and electives that support hands-on learning, individual needs and creative self-expression. So taken, in fact, that after he graduated from college he returned to teach at AMS, living in the community nearby for several years. He and his wife officially joined the Celo community in 1994. community is made up of the 60 families that actually reside on the Celo property, which is a land trust founded in 1937 by Arthur Ernest Morgan. [Morgan believed the Great Depression represented a failure of the current industrial economic model. He wanted to promote an agrarian community that took the speculative value out of land ownership (can we say, Great Recession?).] As a land trust, the 1200 acres of Celo proper are governed by its own set of rules of taxation and land tenure and runs its internal government by consensus. It has no religious or ideological association but is based upon the ideals of cooperation and care for the natural environment. One of the first significant groups of people to settle in the Celo area were conscientious objectors seeking a community after WWII. Gib Barrus, who runs Camp Celo, has roots in the community that go back to that group. His parents were among those who settled here in the 1950’s. With the support and encouragement of Ernest and Elizabeth Morgan, son and daughter-in-law of the original founder, Gib’s parents took over Camp Celo from a family that moved. Gib and his family still run the camp, which serves lucky children ages 7 – 12 every summer. In keeping with the ideals of Celo, summer programs stress cooperation and teach appreciation of the natural world.


Gib shared his story with me as the butter churn whirred in the background. When he was growing up there were very few families with children and none who lived close by. So, from an early age he was surrounded with other children during the summer and quite solitary outside of school during the rest of the year. The early 60’s marked a low point in the community’s history. In fact, George Hicks wrote in his dissertation that Celo was a utopian experiment that seemed to be failing. Nothing could be further from the truth. In the late 60‘s and 70’s, with its focus on back-to-nature and peace, people were attracted to the community. Vacant houses were resurrected and the community came back to life. Except for a slight dip in the late 70’s - early 80’s, there has been gradual growth and they are at sustained capacity. Now the community hosts many young families with lots of children and new babies being born every year. There are 60 households and approximately 80-100 people who live on Celo community land. This level “feels about right to folks, says Gib,“as they want to ensure a real sense of community and meetings that are manageable.” “Living on Celo is not for everyone,” says Gib. “It’s a bad financial investment.” As a land trust, people cannot own the land, though they can own the homes or buildings on the property. For those who live on Celo proper, they enter into an agreement with the community for a lifetime lease, with any structure that they own passing on at value. The land trust maintains a financial cushion, developed early on, that enables it to provide small loans to members for development and buy-back should people leave. Members commit to share in the maintenance of walking trails and watershed and to attend a general corporate meeting each month to make decisions about building, maintenance and membership. These meetings are informal and efficient; with most discussions taking place in one of three committees (property, membership and finances). Decisions are made by consensus.

If you ask Gib why this community has been successful and sustained over the years, he says,“because we are a land-holding cooperative and we don’t try to be anything else. We are not religious, there is no charismatic leader.” Jeff adds,“as a land trust people cannot sell off land in the open market if they decide they no longer want to be here. This is often what divides communities where property is private.” Gib continues,“In addition, people have to live here for at least a year before they officially become members. As a community, we all want to be sure it’s going to be a good fit. After living in the community for a year, we typically either know we have a good fit or people selfeliminate, making their own decision not to join Celo proper. More often than not, however, they then purchase homes in the area.” Jeff says,“because they desire the social community that Celo offers.” So what is so compelling about the social community? What’s not compelling? Celo seems to speak to people who not only desire community, but who also want to create community by working and playing together as well as serving and giving back to one another and their community. A significant number of members work as artists, teachers, physicians, health care workers, builders and social workers. People are interested in issues of social justice and they work in the world at large to make it a more humane place. The camp, the school and a health clinic, though privately owned, sit upon the Celo property. Getting together is a strong raison d’etre for Celo. Thirty years ago Cabin Fever University began and each year the college catalog boasts events from the seriously academic to the fun and festive: community dinners, wildflower walks, creative sculpture events, and music festivals. Last year there was a potato dinner where everything had to be made from potatoes, including the vodka. Finally, there is also the simple community pleasures of neighbor helping neighbor. Jeff shared the story of he and his wife, Margot Atuk, building their home from timbers they had cut and milled on site. When it came time to raise the timbers he says,“I felt shy about asking my neighbors for help. I was prepared to hire a crane when one of my friends said,‘that would be one of the most selfish things you could do. This is the kind of thing we live for!’ So I invited everyone to help with a good oldfashioned barn-raising event. I tell you, there is nothing like lifting thousands of pounds with ease. This is the physical manifestation of community – community you can feel in your body.” And I could feel it in his telling of the story! The impact of the Family Business Forum extends beyond business owners and their families into the rest of the local business community By Calen Rayne As Cindy Clarke, executive director of UNC Asheville’s Family Business Forum put it,“The nuances of working with your brother who you’ve always had competition with, or working with your mother-in-law— those things are hard,” Clarke said. “You might get along in the office, but you still have to sit down and have Thanksgiving dinner together.” Established in 2001, the Family Business Forum provides education and advice to family-owned enterprises so they may continue to thrive from one generation to the next. The forum addresses issues and chal-

lenges specific to family-owned businesses in the greater Asheville region. Each year the Forum offers a number of programs by respected authorities on issues affecting business management, growth, and transition. Members can access workshops and seminars on dozens of topics ranging from compensation and performance management to developing leadership talent in the family business. “They offer amazing programs,” said Dini Pickering, great-grandaughter of George W. Vanaderbilt and vice-

chairman of the board of directors of the Biltmore Company.“It’s relevant, compelling information that I can use immediately for what we’re working on with our family.” Forum members include both large and small family-owned-businesses that are searching for resources and an opportunity to discuss their shared challenges. The Forum has strategic partners, in the fields of law, insurance, banking, and accounting. The partners provide an invaluable resource as a sounding board, a second opinion, an empathic and experienced listener, and honest and


direct feedback for the family business member. You can thank George Groome, of Colton Groome and Company, for forming the family business center and partnering with UNC Asheville. Typically, such centers are part of a business school. Since UNCA does not have a business school, the University Advancement Department houses the Forum. Having the center at UNCA benefits business owners by eliminating conference fees, hotel and airfare expenses, and time away from busi-

ness and family. It couldn’t be more convenient, according to James Stickney IV, president of Insurance Service of Asheville and a UNCA alumnus. The Asheville native heads the business started by his father and works with his sister, nephew, and son. The Family Business Forum impact extends beyond business owners and their families.“It is an excellent way to bring the business community to UNC Asheville,” says Clarke. “Once here, they experience our campus, continue their business edu-

By Calen Rayne Many people visit the Blue Ridge Mountains and Asheville area longing, yearning, or hoping for a sense of roots, a feeling of belonging, sharing and caring. Some find their way to these mountains to develop or experience a relationship with the land, and some to interact with people who have journeyed here before them. Some of the curious who have heard about Asheville arrive for a weekend getaway only to discover a community of like-minded individuals, and they begin searching for a way to move to Asheville and find that perfect place to call home. Those of us who are fortunate enough to live here are often asked why the Asheville area is so special, and why spending time here seems to nourish the spirit. You could point to the unique shops and restaurants that are ever changing and interesting.

And of course the vibrant arts and music scene provide cultural and creative diversity. But what can turn a typical tourist experience into a journey of transformation is an atmosphere of the sacred awaiting you, here in these Blue Ridge Mountains we call home. It is here one seems able to connect with the great mysteries that came before us. Every place has special natural features contributing to the ongoing flow of energy. Asheville itself is surrounded by abundant mountains, forests, rivers, streams, waterfalls, gorges, rocks and hiking trails. We are invited to enter into a relationship with these natural wonders, and are reminded to slow down and resonate with a slower pace, a pace experienced and enjoyed by those who called this land home for centuries before we arrived. When we are able to attune ourselves to moods and the rhythms of nature, we somehow feel more grounded and connected.

Many cultures equate breath with spirit, with that seemingly unseen and unknown mystery that moves through each of us. And between heaven and earth there is nothing as important as the breath of nature, which moves ever so gently through these mountains, making it possible for every creature and person to live and move and contribute to a vibrant, interactive, caring, and creative community. People seem to be drawn to some places and not others, and some simply believe they feel “more in tune� with one particular aspect of Asheville area energy field, this sacred breath that permeates our surrounding mountains. It is here in these mountains that people from all walks of life can focus on the awe and wonder one experiences when confronted with the creative forces of nature, and the many mysteries of a universal design. Many ancient civilizations had natural sacred sites. They often consisted of mountains, springs, rocks or even trees.


Everything was believed to be part of an immense chorus of life. And nowhere does this chorus sing more loudly than here in the Blue Ridge Mountains. Many people either live in or visit Western North Carolina, this sacred space, to share a simple communion with nature. Channels and paths to inner awareness are present in these mountains that at times seem unavailable in our increasingly fast-paced, wireless, cellular world. And here we are communing with all others who are sharing in this region of “sacred space” moments of transcendence of the mundane and ordinary in our lives. Rina Swentzell of theSanta Clara Pueblo reminds us: What we are told as children is that people when they walk on the land leave their breath wherever they go. So wherever we walk, that particular spot on the earth never forgets us, and when we go back to these places, we know that the people who have lived there are in some way still there, and that we can actually partake of their breath and their spirit. Our ancestors had a reverence for our natural world, and we sense that on a pilgrimage to the Asheville area. Here you can expand your awareness of nature, even while staying connected to the “real world” in cities and towns nestled in surrounding mountains. Some people arrive not quite sure of what brings them here. But you should never question why your path takes you where it does, and you should always be open to exploring the myriad of possibilities in any given moment. These who remain open to possibilities understand that beauty and meaning come from the undeniable presence of a living spirit, a living spirit that speaks to us when we explore these mountains. Nature at times seems like a living scroll, revealing itself year after year through the change of seasons. We are players on this scroll, together in cycles of nature, part of that same dance of the seasons. When we immerse ourselves in the magic and mystery of the mountains surrounding Asheville we enter into a conversation with their stories, for they have always and continue to remain grounded in an absolute and eternal present moment. It is here we are invited to traverse a sacred landscape filled with physical entities that are also spiritual beings that look on us with affection. We need to develop an appreciation for these mountains and acknowledge the sacred energy that flows through them. Whether we realize it or not, all beings enter into existence by means of that which perceives them. If we are able to perceive of that which exists but is unseen, then we can enter into a solemn and sacred contract with the Blue Ridge Mountains and perceive each other from a place of respect and understanding and care for each other as we continue our truly unique journeys.
