Eat Like a Chef

arah McIntosh, chef and owner of épicerie, grew up in Shreveport, La. and has always loved blues and soul music, LSU football and particularly, the culture of food in the southern and Cajun cuisine-rich state. Her family was very much food-oriented and celebrations were often met with great food and wine. With the ability to express creativity in a culinary profession, McIntosh was inspired to take her passion to the next level. Eventually, she created her own vision of an uncomplicated café and grocery hybrid with épicerie, which roughly translates to “grocer’s shop” in French and is popular in various parts of Europe and Louisiana. With the restaurant, Sarah has brought the simplicity of delicious French-Louisiana fare while providing the perfect neighborhood

Austin Must-Do: Thinkery and hiking on the local trails. Favorite Austin Icon: Willie Nelson. Restaurant Trend To Watch: Healthier restaurants and more convenient “fast food” dining options. Most Anticipated Opening: Irene’s (unpretentious New American spot).

Dinner at Launderette, Dai Due, Contigo and Juniper: I don’t go out to eat too

1 t minced garlic

Best Guilty Pleasure Indulgence: Shake Shack’s bacon cheeseburger and cheese fries.

Brioche (enough slices for each serving) Comté (enough slices for each serving)

PREPARAT ION

Place butter in large pot. Roast garlic and butter until nice and toasty. Add in caramelized onions. Add flour. Cook for 5-10 minutes. Deglaze the pot with brandy, making sure all of the flour is mixed in. Bunch thyme, bay leaf and black peppercorn in a cheesecloth or sachet and add to pot. Pour in veal stock. Simmer on low for two hours. Once soup is done, scoop into individual bowls that withstand the heat of the oven. Top each bowl with a slice of brioche and then a slice of comté. Place bowls in broiler for a few minutes, until cheese is golden brown.

G

reg Ackerman has a front row seat at every fantastic festival, sold-out show and secret house party. Following an introduction to the stage at an early age, he’s been covering live music in Austin since 2009. In addition to being a digital media strategist, foodie and travel buff, he’s a music-fan-turned-journalist. You can find him writing for several outlets, chief among them The Examiner. Here are Greg’s insights into the local scene, festival tips, best fests and the bands you should definitely put on your list.

5 TIPS TO MAKE THE BEST OF THE FEST

1

Pacing is paramount. Be realistic about how many acts you can see over the duration. Burnout is real.

2

Prioritize quality of experience over quantity of bands. It’s tempting to join the rush to the next band but staying until the end of the set has its own rewards.

3

Immerse yourself in the experience. Document the show briefly (if that’s your thing) but focus on the performance.

4

Diversify! Discover! See at least one band per day you haven’t seen or heard of before. That’s what it’s all about.

5

After-shows are an excellent chance to see an act that rarely plays a small room. Leave some room in your schedule late-night.

3 MUST-HIT AUSTIN FESTIVALS Sound on Sound: The producers of this new fest put their love of music above all else and it shows in unique lineups, large but not overwhelming crowds and a fraternal atmosphere you wish every festival had. Levitation: Founded by Austin’s The Black Angels, this festival’s curated music reflects the tastes of the founders. Where else can I watch the Flaming Lips’ Wayne Coyne get a tattoo then blow everyone away on stage? Free Week: This localbands-only event that runs the first 10 days of January has snowballed into a cover-free, local bands, micro version of SXSW.
