Town Manager Mark Sciota to retire in June By Jesse Buchanan Record-Journal staff

SOUTHINGTON — Town Manager Mark Sciota has announced he will retire in June of next year, closing a 29-year career in town government.
Although a Democratic appointment at the start of his career, town officials said Sciota kept politics out of his professional work.
Sciota, 60, began his career as a local attorney before starting legal work for the town which started his public service career. He’s worked as town attorney, deputy town manager and finally town manager, a position he was given in 2017.
“Mark’s always taken a middle-of-the-road approach when it comes to politics. He communicates evenly to both the Town Council chair and the minority leader,” said Chaplinsky, a Republican. “He always keeps politics out of his perspectives.”
“I’m very proud of what we accomplished as a team here in Southington,” Sciota said last week. “I was honored to work for the town.” Town leaders praised Sciota’s contribution to Southington. “Throughout his 36-year career, Mark Sciota’s love and passion for Southington has been demonstrated through exceptional leadership, integrity, and a passion for public service that has endeared him to colleagues and residents alike,” said Paul Chaplinsky, Town

Adopting a pet for a loved one may seem like a great gift idea, but before doing so, it’s important to consider why the holiday season may not be the right time. Chrystal Rashba, the Assistant Animal Control Officer for the Town of North Haven, shared the most im-
portant things to think about when it comes to pet adoption around the holidays. Her first significant piece of advice is that you shouldn’t actually adopt the pet as a gift. “You might have an idea of what said person wants, but really they’re the one who should pick out,” she explained. Instead, Crystal
suggested writing a handwritten note offering to pay the adoption fee when the individual finds the right pet for them. By doing this, you eliminate the possibility of adopting a pet that isn’t a good fit for the person you’re giving the pet to.
“A lab is very different from a cocker spaniel,” Rashba explained. Different breeds have different needs. Some breeds require unique mental stimulation or physical activity. Before adopting, ask yourself if you can realistically meet this specific animal’s needs.

Anyone who has lived or worked in the United States can check these financial repositories to see if any dollars are owed to them or a family member. Here’s an overview:

SOUTHINGTON — After a weekend crash that took down the Barnes Museum sign and part of its front fence, town officials worked quickly to fix things up as best as they could ahead of a host of holiday events that were scheduled.

Some families may read Charles Dickens' early Victorian novella A Christmas Carol together before watching one of the many film adaptations of the beloved story. Many popular Christmas carols also date back to the nineteenth century if not earlier, adding another degree of nostalgia to the season. Even food can add a touch of the sentimental to Christmas celebrations. This year, holiday hosts can create some nostalgia around the Christmas dinner table by serving this recipe for "Roasted Christmas Goose" courtesy of the Food Network and Mark Slawson of the The Wort Hotel in Jackson, Wyoming. Roasted Christmas Goose Yields 6 to 8 servings n 1 14- to 16-pound goose n 1/4 cup sea salt n 1 lemon, halved n 1 apple, cut into chunks n 1 potato, cut into chunks n 1 orange, sliced n 1 cup chopped celery n Basting Syrup (recipe fol-

n Stuffing (recipe follows) n Cumberland Sauce (recipe

n 1/4 cup light brown sugar
n 3/4 cup red wine vinegar
n 2 tablespoons brandy
n 3 shallots, peeled and
Stuffing n 3 cups whole chestnuts,
roasted and peeled
n 1 14-ounce bag stuffing
mix
n 1 cup raisins n 1/2 cup chopped celery n 1/4 cup diced apple n 1/4 cup diced onion n 3/4 teaspoon salt n 1/8 teaspoon pepper n 3 cups chicken stock n 3/4 cup melted butter
n 1/3 cup corn syrup
n 1/4 cup heavy cream
n 1/3 cup cane syrup
Cumberland Sauce n 11/2 cups beef stock n 3/4 cup port wine
Basting Syrup:
n 1 tablespoon crushed
black peppercorns
6. Mix all ingredients together in a small bowl.
n 3 oranges, juiced
Stuffing:
1. Place goose in a large pot. Add water to cover and stir in the sea salt. Refrigerate overnight. 2. Preheat oven to 450 degrees F. 3. Remove goose from water and drain well. Remove all innards and trim excess fat from the tail. Rub inside cavity with lemon juice. Place apple, potato, orange and celery inside the body cavity. Truss the bird like a turkey. 4. Place the goose in the preheated 450 degree F oven. Reduce oven temperature to 350 degrees F. Cook 20 to 25 minutes per pound. Baste the goose every half hour with the Basting Syrup.
7. Preheat oven to 350 degrees F. 8. Coarsely chop the chestnuts and put in a large bowl. Add the stuffing mix, raisins, celery, apple, onion and salt and pepper. Toss to combine. Pour in the chicken

stock, butter and cream and mix until evenly moistened. 9. Transfer to a baking dish and bake until the top is browned and crisp, about 1 hour. Cumberland Sauce: 10. In a saucepan, combine the stock, port, vinegar, shallots, peppercorns and orange juice. Bring to a boil, cook until reduced by 2/3, about 25 minutes. Strain and refrigerate. Serve cold over roast goose.
