F
ive years ago, I was trying to envision the magazine you hold in your hands—a local publication devoted to sustainability. (Grid trivia: Some discarded names included Philly Green, RePhil and Scale.) Was there an audience for such a magazine, and was there even enough editorial fodder in Philadelphia to fill it on a monthly basis? The existence of the Sustainable Business Network was one of the main reasons I thought the answer was yes to both these questions. Founded by Judy Wicks in 2001, here was an organization comprised of hundreds of local businesses pledging to support the local economy by buying from each other, while simultaneously trying to improve their business’ social and environmental impacts. It was proof that a vibrant community existed, and perhaps a publication serving such a community could survive. I joined the SBN in 2007 and attended their annual party, which is usually held near the holidays. One of their party traditions is to have members write down a New Year’s resolution for improving their business’ sustainable practices. Planning to use green cleaning supplies, purchase clean energy or reduce your carbon footprint in the coming year? Write it down. After that, members were encouraged to take to the podium and read their resolutions to fellow members. With heart in throat, I did just that. I announced I was going to launch a sustainability magazine and that I was going to print all of our publiacations on recycled paper. People clapped politely—just as they did for all the others—but I was amazed at how my public declaration affected me. Now I felt there was no turning back. Soon after that, seeing our company, Red Flag Media, listed in their annual publication, the Sustainable Business Directory, was a thrill. It’s an invaluable resource for those trying to support the local economy, and one I’ve used countless times. So you can imagine what a privilege it is for me personally to have Grid partner with SBN to produce their 2013 directory.

Eastwick Update Development plans on hold

he Grid october 2012 cover story reported on a development controversy in southwestern Philadelphia’s Eastwick community. Korman Residential has proposed building 722 apartments on 35 acres adjacent to single family homes and the John Heinz National Wildlife Refuge. For the City, the land holds great economic value, offering an expanded tax base and jobs. But residents aren't in favor of paving over the green space, especially since it’s located so close to the Refuge. In the months since Korman announced their development plans for Eastwick, community members have mobilized. They formed the Eastwick Friends & Neighbors Coalition, testified at City Council meetings, and repeatedly asked their councilman, Kenyatta Johnson, to pull his support from the project. Finally, on November 20, at a public community meeting, the residents were heard: Councilman Johnson announced he would no longer support Korman’s project. “You [the residents] should’ve been at the table foremost,” said the Councilman, whose announcement was met with a standing ovation. “Those who live in the community have the most powerful authority at the end of the day.”
At the meeting, the Councilman said he will be withdrawing the bill to rezone the 35 acres from single family homes to multi-family. This action puts Korman’s plans on hold; without rezoning, the project can’t move forward. But, says Korman, this doesn’t mean the project is dead. “We will continue our community outreach in an effort to create a situation where the community is supportive and then, we can move forward,” says Peter Kelsen, the attorney representing Korman. “If we’re not successful in that effort, and I’m hoping we will be, and or the Councilman is disinclined to pursue this project, we’ll decide what our action steps are at that point. For now, residents see Councilman Johnson’s announcement as a major victory, and moving forward will work directly with his office to plan the future of the Eastwick community. Sustainability legislation passing through City Council
Vacant Land Bank State law passed Oct. 24 Allows cities to create individual land banks—a single authority that holds and maintains vacant and abandoned properties to restore them to reuse. Philadelphia is expected to be one of the first municipalities to take advantage of the new law. The city currently has 40,000 vacant properties.
Stream Buffer Amendment approved Nov. 14 Maintains the new zoning code’s 50-foot buffer requirement and prevents development along water banks. The Rules Committee approved this amendment following the original proposal, which would’ve potentially eliminated buffers on nearly one-third of all waterfront properties. City Council is expected to pass the amendment this year.
Complete Streets Bill approved Nov. 15 Makes technical changes to traffic and zoning codes to create safer streets and sidewalks. Changes would include better enforcement to keep cyclists off sidewalks and drivers out of bike lanes. The bill was approved by Philadelphia’s Streets and Services Committee. City Council is expected to pass the bill in December.

hen your child’s dentist asks to talk with you privately, it’s never good news. As my little darling finished her check up, the dentist informed me that she admitted to not brushing enough. Although I wasn’t happy about her confession, I wasn’t surprised to hear she was dodging the brush. She’s not a fan of toothpaste—mostly because of the flavor. The conversation with the dentist got me thinking about making my own toothpaste. But I didn’t start trying recipes until I found out what’s in the store-bought stuff. A few of the ingredients that caught my attention included: Triclosan: Often found in anti-bacterial
products, triclosan is a suspected carcinogen and classified as a pesticide by the U.S. Environmental Protection Agency. Propylene Glycol: The chemical—which is also an active component in antifreeze—can be absorbed through the skin and, with prolonged contact, can lead to organ damage.
Artificial sweetener: I would never know-
ingly dump a chemical sweetener into my children’s food, and yet they were getting a daily dose while brushing their teeth. Diethanolamine (DEA): This chemical disrupts hormones, forms cancer-causing nitrates, and with repeated use may cause kidney and liver damage. This was more than enough evidence for me. Super Ponics A thriving ecosystem for fish, plants and high school students by liz pacheco

t’s 1 p.m. on a friday at W. L. Sayre High School in West Philadelphia. Elizabeth Curry’s science classes have finished for the day, but some students remain in her classroom talking about their new aquaponics systems. ¶ “I thought the class was gonna stink. I wasn’t too excited,” says Aaliya, a junior, describing her initial reaction to the project. “I was happy, I like fish,” chimes in Sakinah, also a junior. “She likes worms,” interjects Curry. “When we first started, we had worms [and] she was saying, ‘I want to see the worms!’”

The aquaponics project was started this fall as part of a “Science and Society” class introduced by Charles Ireland, Sayre’s new principal. The goal is to use aquaponics systems to help students connect their classroom experience with future educational and career opportunities. In an aquaponics system, fish are raised in tandem with plants; their waste contributes nutrients necessary for the plants to thrive. So far, the students have built two aquaponics systems for their classroom. Using two 55-gallon fish tanks, they’re raising 19 tilapia. The tanks are connected to grow beds that hold bell pepper plants, chives, jalapenos and lettuce. When asked why the lettuce is yellow, the students explain that the soil is missing nutrients, mainly phosphorous. The systems have been helpful teaching tools for Curry. Classes, like those on the nitrogen cycle, are now a hands-on lesson. On Fridays, Curry takes her students to the Urban Food Lab at the Partnership Community Development Corporation (CDC) on 60th and Walnut, only a couple blocks away. There the students compare their classroom system with the CDC’s much larger one, tending seeds, measuring plant growth and taking water samples.
Curry is also planning a visit to Cheyney University, which has one of the largest aquaponics systems for basil. Eventually, she’d like to build a bigger system outside in a greenhouse to be used for year-round education. Despite some earlier apprehensions, the students agree, Fridays are “100 percent better” since they started the project. And Curry confirms this. “[Student] attendance is actually better than it is on other days of the week,” she says. For now, there isn’t much produce, but any that's grown will be sold at farmers markets and donated to food cupboards along with the harvest from Sayre's garden. The garden is part of University of Pennsylvania’s Urban Nutrition Initiative. However, as part of the class, students are creating business plans for their products. Some want to sell to restaurants, others want to donate to the community or start their own CSA. The intention for the program is to give students the experience and encouragement to
pursue education and careers in sustainability. “Just seeing them become actual students… engaged and actually interested in what they’re learning and apply it to something has been

Swords Into Ploughshares An organic farming program for returning veterans Josh Brown, a 28-year-old Marine, recently found himself unemployed—a situation that’s all-toocommon for America’s veterans. Before being laid off from his job as an equipment delivery driver, Brown had thought about going back to school. However, he didn’t seriously consider the option until he talked with Dennis Rilling, a Marine Corps veteran who’s now program coordinator for Delaware Valley College’s new Veteran Organic Farming Program. “You have one in three veterans unemployed right now,” says Riling, who graduated from DelVal with a horticulture degree last spring. But thanks to the Post-

9/11 GI Bill, school is now a more viable option for many veterans. DelVal is a Yellow Ribbon Program school, which means veterans are eligible to have 100 percent of their tuition covered by the bill—plus a stipend for housing. Even with tuition covered, convincing veterans to enroll in traditional degree programs can be difficult. “Veterans are having a hard time transitioning into a college with a four-year degree,” says Riling. “A lot of guys can’t dedicate four years going back to school— some have families, it’s a lot to take on.” With this in mind, DelVal designed the organic farming program
to be only a year long. The 36-course specialization is offered in partnership with the Rodale Institute, an organic farming research nonprofit. Students take courses in topics like animal science, organic crop science, integrated pest management and business plan development. During the summer semester, students will get hands-on experience at Rodale’s 333-acre farm in Kutztown, Pa. “As far as the program,” says Brown, “it’s just a great way for veterans to get involved in organic farming… to learn how to do it and what goes into it and then, reach out in the world and get a job.” After completing the program, students will be qualified for jobs in the food industry, with organizations such as the U.S. Department of Agriculture, or even start an organic farm. —Liz Pacheco To learn more about the program, visit delval.edu

During these boot and scarf months, snow can actually act as natural insulation for kale. Hardy varieties, like Winterbor kale, are known to grow well into fall and often beyond. However, if the plants are leveled by a heavy frost, it’s only a few months until the next season’s seeds should be sowed. Char Vandermeer, a container gardener in South Philadelphia (and Grid columnist), says the best time to get started is March, and from there, the key to success is keeping the bugs at bay. “Kale’s not particularly fussy with soil types, and it’s not particularly fussy with water streams,” says Vandermeer, who’s been harvesting her own vegetables for more than 10 years. “But it is very susceptible to mites and cabbage loopers. You should check for them daily because once there’s one, there are generally 40 others, too.” Favorite variety: Curly types, like Winterbor kale “One of my favorite ways to prepare kale is to make kale chips, and the ruffly leaves crisp up nicely.”

Farmer Addison Vawters says that the easiest time to yield a healthy kale crop is in the spring when there are fewer pests. “It can be difficult to grow in the fall when harlequin beetles are apt to eat the small vulnerable seedlings before they become mature kale plants,” he explains. Vawters manages a farm for Teens4Good—a local nonprofit that teaches at-risk youth how to grow food, often in vacant lots. His farm, located at the Schuylkill Center for Environmental Education, is growing two 100-foot rows of kale under low tunnels (a simpler version of a greenhouse). In addition to ShopRite, Vawters sells their crops to Manayunk eateries and local farmers markets. “Kale is pretty poplar,” he says. “It’s become expected by customers that we regularly grow and sell it among our crops.” Favorite variety: Lacinato kale “It has this amazing property where it appears to be made of jewels when submerged in water. And in my opinion, it also has a better texture and stronger more savory taste than, say, curly kale for example.”

After spending two years as sous chef at Zahav, Yehuda Sichel has switched kitchens to oversee the day-to-day at Citron and Rose—the latest venture of power duo Michael Somonov and Mike Cook. This Main Line restaurant opened in November and features strictly glatt kosher cuisine. Whether cooking at Zahav or Citron and Rose, Sichel considers kale an important addition to the menu. “I love kale. It’s not too bitter. It’s not too sweet or too acidic,” he says. “It can hold up raw. You could dehydrate it or fry it or bake it. You could wrap fish in it, you could simply sauté it in garlic. You could fold it into pasta, raw or cooked. You can literally use it for everything.” This kale salad (right) is one of Sichel’s favorites, and draws on the classic Jewish pairing of salami and eggs. (Vegetarians can swap the salami for grilled Portobello mushrooms.) For this all-in-one meal, Sichel suggests a festive champagne or sparkling white wine to complement the smoky notes from the secret ingredient: paprika. Kal e Sal ad wit h Egg s and Sal am i (Serves 4) 2–3 Tbsp. olive oil 1 cup salami, diced 1 turnip, small dice 4 eggs 4 cups raw kale, chopped 2 shallots, finely diced cup red wine vinegar 1 tsp smoked paprika Kosher salt Ground black pepper Chives or parsley, optional
In a large mixing bowl, combine kale, shallots, red wine vinegar, paprika and salt, to taste. Set aside. Heat olive oil over medium high in a medium-large sauté pan. Add salami and turnips, and sauté until crispy. While cooking, bring a large pot of salted water to a slow simmer. Swirl the water with a spoon and drop eggs into the pan, one at a time. Cook for about three minutes, until eggs are set. Once the salami and turnips are crisped, immediately add entire contents of pan to the kale mixture. Toss salad, and distribute evenly between four plates. Finish with one poached egg on each plate. Garnish with salt, pepper, and chopped chives or parsley, if desired. * For a vegetarian version, swap the salami with one cup of 1/3-inch-sliced Portobello mushrooms. Marinate the sliced mushrooms with 4 chopped garlic cloves, 3 tablespoons of olive oil, 1 tablespoon of balsamic vinegar, salt and pepper (a few generous grinds around the bowl), for 15 minutes. Place on hot grill/grill pan, and cook 5 to 8 minutes on each side, or until tender. Chop and add to bowl with kale and turnips.

Kale has long been a staple in my kitchen. Fresh, it keeps for a week in the fridge. But to further preserve your kale, here are some options: To freeze, blanch briefly (45 to 60 seconds in boiling water), wring out the water and portion it into freezer bags. Press to remove the air and freeze. For truly convenient storage, powdered kale is best. Wash, dry and bake at 400 degrees until crisp. When cool, pulverize in a blender. Use in soups, smoothies and sprinkled over popcorn. For pasta lovers there’s kale pesto. Replace half the basil in your favorite pesto recipe with kale leaves (no stems). It keeps seven to 10 days in the fridge and up to a year frozen. The mix below—all cheeses are made locally—reflect the bold colors and tastes of the winter holidays, from a new washed-rind cheese infused with orange zest to an award-winning blue that breathes hints of licorice. This new moon from Calkins Creamery in Honesdale debuted this year, first appearing exclusively at the Farmers’ Cabinet, an eclectic bar for city beer lovers. Cheesemaker Emily Bryant Montgomery infuses her raw Jersey milk with orange zest and coriander. She then washes the wheels with local beer, making for a dense round that is sweetly aromatic with a hint of holiday spice. A bitter flourish on the front end and a salty overlay means this beauty needs a complex sidekick. Try a hoppy, fruity, spice-laced beer, like Voodoo Brewing Company’s White Magick of the Sun, which has coriander and orange peel—a perfect mirror to this wheel.

Hello, I’m a Localist! I learned the term “Localist” earlier this year at the annual conference of our national partner, the Business Alliance for Local Economies (BALLE). I was so glad to finally find a word that describes what we do. During my eight years as Executive Director of the Sustainable Business Network of Greater Philadelphia (SBN), I’ve tried to explain our goal of building strong local living economies. But when I used the term “local living economy,” people’s eyes would glaze over. I would talk about how locally owned businesses recycle more of their income back into their own communities (the economic multiplier effect), and how our business members were pursuing a triplebottom-line of people, planet and profit. Inevitably, I would get caught up in my own jargon. The language I was using just didn’t work. But the localism concept has resonated with every Philadelphian with whom I’ve shared
it. In the words of BALLE: Localism means we are building communities that are healthier and more sustainable—backed by local economies that are stronger and more resilient. It means we use regional resources to meet our needs—reconnecting eaters with farmers, investors with entrepreneurs, and business owners with the communities on which they depend. Localism is about building a new economy, right here in Philadelphia.

On a brisk Friday afternoon, Gabriel Mandujano parks his bicycle and enters a large, clean laundromat at 48th and Pine. Three women in neon green Wash Cycle Laundry t-shirts greet him enthusiastically, though their hands never stop sorting socks and folding sheets. He checks in with each employee, taking a moment to help fold while he talks, then walks into a back room, where a computer system is tracking bags of clothing and linens from pickup to delivery. He stops briefly to answer a phone call then hops back on his bike to continue his rounds to two other facilities. After that, it’s back to the office at 17th and Arch to handle paperwork, bookkeeping and the other facets of a blossoming small business. This is a typical day for 29-year-old Mandujano, who launched Wash Cycle Laundry just over two years ago in Philadelphia. The business, which uses bicycle trailers, sophisticated route planning software and a self-designed automated washing system, is revolutionizing the way Philadelphians receive clean laundry. With roughly 100 corporate clients and several hundred residential customers, Wash Cycle is proving that the laundry industry can be greener, cheaper and more efficient than the current model.
Birth of an entrepreneur Mandujano grew up in Maryland, and moved to Philadelphia to attend the University of Pennsylvania where he majored in urban studies and real estate. From there, he went on to earn a master of science in comparative politics from the London School of Economics and a master of philosophy in land economy from the University of Cambridge. Mandujano first worked in the nonprofit sector, directing the Enterprise Center Community Development Corporation in West Philadelphia then, moved to Mexico City to work for the Center for SustainThese bikes able Transport. But, says can pull Mandujano, he wasn’t satisfied with the results of his work. “If you want to find pounds ways to inject jobs with meaning, and turn a lowwage service job into a launching pad for an upwardly mobile career path… you need to be the employer,” he says. “You actually need to control what somebody does at work every day.” So, Mandujano began thinking about a business that would follow a triple-bottom-line perspective of people, profit and planet. Under this criterion, the company would measure performance not just by financial standards, but by

social and environmental ones as well. A friend suggested Mandujano start a diaper service. That lead to laundry, and everything fell into place after that. “There’s a real parallel between what [Mandujano] does and what we do—trying to get people to change their behavior,” says Ann Karlen, executive director of Fair Food (a Wash Cycle customer), which works to build a sustainable, humane food economy by helping local restaurants and businesses source locally. “It obviously makes sense from a social and political standpoint, but if it costs more money and takes more work, people won’t do it.” However, continues Karlen, Wash Cycle is dedicated to avoiding this obstacle. “One of the things I admired about what [Mandujano] was doing is that right out of the gate he was saying he could provide a substitute that doesn’t change the way you do business.”
putting people first For Mandujano, people are the most important part of the triple-bottom-line equation. And his employees know it—those working at the three Wash Cycle facilities are quick to praise Mandujano. Geraldine, a shy middle-aged woman who’s been with the company since May 2011, says immediately, “I love it. He keeps us busy.” Barbara, her 65-year-old coworker, adds, “He’s good to work for. It’s a blessing to hire a senior citizen.” Wash Cycle Laundry works with several organizations to provide jobs for difficult-to-employ populations. The newest is Gearing Up, which helps women in transition from abuse, drug dependence and/or incarceration learn to ride bicycles. “What I really like about [Gearing Up],” says Mandujano, “is that they really get to know their clients.” Wash Cycle also partners with the EARN Center, a more traditional government welfare-to-work program, and the Asociación Puertorriqueños en Marcha (APM), a traditionally Latino-focused organization providing financial and home ownership counseling, budgeting, Jan uary 20 13

Wash Cycle works directly with APM’s Financial Opportunities Center to support their job readiness, life skills and career services initiatives. Most of Wash Cycle’s employees have been with the company for more than a year. “I think our turnover is really low for the industry that we’re in,” says Mandujano, who is hiring his sixteenth employee this winter. “I can’t remember the last time we had a nocall, no-show.” If labor is 50 percent of cost, he reasons, making your employees 10 percent more productive—whether by making them happier, helping them do their jobs better, or minimizing defects—will result in soaring profits. “I think you do that,” says Mandujano, “by trusting people and letting them solve problems and take initiative.” He cites positive feedback as the key factor to keeping his employees happy and proud of their work: “In general, people coming through the public benefit system aren’t receiving a lot of it. erful because it’s been scarce.” Wash Cycle has recently implemented a scorecard system for supervisors and supervisees to give each other performance feedback. Positive performance leads to bonuses and increases in base salaries. Wash Cycle also employs an “Own Path” policy to help employees follow their ambitions and utilize their strengths. “Everybody in the organization, including myself, has started out folding laundry, riding a bicycle, or both,” says Mandujano. “We’re pretty committed to internal growth paths. And that’s not just for people who come through a welfare program; that’s everybody. We try to find out what their interests are, what interests the company has and then we merge the two.” To earn a supervisory position, Tracy walked all over West Philadelphia to find a new partner facility. Joel, the one-man sales department, started out folding laundry. Kevin, the South Street facility supervisor, was hired just three months ago as a cyclist.
For companies like Wash Cycle Laundry, implementing a profitable, yet socially conscious business can be a challenge. GoodCompany Group is hoping to change that. GoodCompany Group was founded in March 2012 as a merger of Green Village Philadelphia, a sustainable business incubator, and GoodCompany Ventures, a program for social enterprises. Today, GoodCompany helps socially conscious entrepreneurs develop their for-profit businesses by providing analysis, strategic insight and connections to investors. Those social missions can range from reforming the educational system to developing green technology to creating jobs for difficult-toemploy populations. Last summer, Wash Cycle’s Gabriel Mandujano participated in the Ventures program. The threemonth class, designed for early-stage companies, addresses critical challenges faced by entrepreneurs. “There were real strategic questions we needed to think about and answer,” says Mandujano, “like how much to grow in Philly before we go to other metropolitan areas.” In November, Wash Cycle graduated from GoodCompany’s Residency program—a business incubator for green and socially conscious companies. The Residency provides office space (at GoodCompany’s Center City office) and professional support for Philadelphia-area entrepreneurs. Mandujano’s hero, the late Ray Anderson, was the founder and chairman of Interface, Inc., a manufacturer of modular carpet. Anderson decided in the mid-1990s to turn Interface into a zero-waste company, and he received much acclaim and several awards for his environmental work. “[Anderson] took this really boring industry, he did something amazing in terms of environmental impact, and as a result was financially rewarded for that,” says Mandujano. Wash Cycle Laundry uses several different strategies to make the business more efficient. First, they use Energy Star-rated, high-efficiency, front-loading washing machines built with “soft mount” technology. Soft mounting puts the wash drum on a suspension system that absorbs the shock, so the spin cycle can run two to three times as quickly as the older floor-bolted machines. These washers also extract more water, which reduces drying time and heat use by 30 to 40 percent. For residential customers, Wash Cycle uses a natural, environmentally friendly detergent from King of Prussia-based Sun and Earth. For 22 gridphilly.com Ja nua ry 20 13
restaurants and gyms with more challenging laundry, an EPA-certified line of products from Gurtler Industries is used. And although no client has chosen it yet, the company also offers rentals of patented recycled cotton towels from New Jersey’s Star Linen & Supply. The Laundry ELF computer program links bar codes on bins and bags to scales and machines in each laun-

dromat. The machines are pre-loaded with different types of detergent suitable for everything from underwear to floormats, and are operated from the central computers. Each cyclist has the program on his or her mobile phone to ensure constant access, and washers can be started and deliveries ordered or amended via text message. It’s a complicated and intriguing system, which Mandujano says is “a bit of a work in progress.”

There’s even more cool stuff that we haven’t even tried to do, like water recycling.” Even as Mandujano makes these advanced improvements to his services, he remains pragmatic. “You think of green business as being this sort of luxury,” he says, “and that’s not what I was going for.” Basic service for an individual, which includes 12 pounds of laundry picked up, washed, folded and delivered in a 24-hour turnaround, costs $18. And prices for businesses are just as competitive. “Basically what he’s done is created an alternative to wash our towels that doesn’t cost me any more money and has the same level of service,” says Karlen. “I can do business with someone that first of all I like, and second delivers our towels to and from us on bicycles and uses good cleaning products.” Socially conscious businesses, such as eateries Pizza Brain and Hip City Veg, do use Wash Cycle. But, says Mandujano, “I think we can compete on our own merits even if people don’t share the same values we do.” After all, he continues, “everybody needs to do laundry.”

Green City, Yellow Salamanders W
Landmark water bill (un)paves the way for aquatic diversity by bernard brown
est philadelphia will never be the Everglades. It will never be the Pine Barrens, or even the John Heinz National Wildlife Refuge. As much as the naturalist in me would like to see more greenery and less asphalt, more snakes and fewer cars, I accept that I live in a densely populated city neighborhood. Nonetheless, I support making wherever we live as hospitable to wildlife as possible. I won’t ever see mountain lions stalk elk on Spruce Street, but maybe I can spot songbirds that have avoided fatal window collisions, and find more than just pollution-tolerant worms and exotic carp in our streams and rivers. So, I perked up this past spring when the Philadelphia Water Department (PWD) signed Green City, Clean Waters—a landmark deal with the EPA to better manage stormwater. Most of my enviro-geek friends were enthralled by the plan’s innovative projects: green roofs, rain gardens, porous pavement that soaks up water... I was excited by what it means for salamanders. I thought of the yellow two-lined salamander I caught on a snowy, January morning in a tiny Fairmount Park stream. I had ridden my bike 24

there in the 25-degree weather out of stir-crazy desperation—the only critters found in the dead of winter are the ones living in running water. The persistence of life, wriggling through the darkest, coldest time of the year continues to inspire me. Much of Green City, Clean Waters is aimed at reducing the amount of rainwater that runs off Philadelphia’s impermeable surfaces (concrete, asphalt, tar rooftops, etc.). This water pours into our sewer system (as well as several streams routed underground), often overwhelming it and forcing raw sewage into our rivers. Rain coursing off the hard urban landscape also damages our smaller waterways. Storms produce little flash floods that tear up streambeds. That water carries pollution from the pavement and wreaks havoc on water temperatures and oxygen levels—water holds less oxygen as it warms, so rain washing off hot asphalt can choke aquatic critters. In warmer weather, I’ve found two-lined salamanders in the Wissahickon Valley, cohabiting with their more elegant cousins, long-tailed salamanders. These orange and black-polka-dotted creatures disappear for the winter to breed. They
follow the water to lay their eggs in the underground springs that give birth to streams. A healthy streambed in the Mid-Atlantic piedmont could host four salamander species under its rocks and dead leaves. But that diversity declines as a watershed becomes less permeable: more pavement means fewer salamander species. In our region the first to die are the longtailed; the last ones to go are the two-lined. Other stream critters follow similar patterns, and researchers use the diversity of aquatic macroinvertebrates (bugs) to gauge the health of streams. If all you find are hardy leeches and black fly larvae in a stream, you know there’s a lot of pollution. And, if you catch sensitive species, such as planarians, stonefly larvae and riffle beetles, you know the water is clean. It’s on behalf of critters like these that I cheer for Green City, Clean Waters. I know the Philadelphia Water Department didn’t have the salamanders in mind when they created the plan—nor the stoneflies and planarians. Vegging In What I learned from my roommate’s quest to eat sustainably by colleen davis
A
fter decades of being a pretty responsible citizen, I felt I’d traveled about as far as I could on the path to eating and living sustainably. Others around me were more zealous, but they were yoga teachers and gardeners whose extreme eating habits grew from their career choices. I never felt compelled to join them in becoming a vegan or buying a Community Supported Agriculture (CSA) share. It looked like too much work. Then I met Nick, a young California lawyer, who rented a room in my house when he moved to Philly. Along with a small number of boxes, he brought a surfboard, a bicycle and a staunch commitment to eating in a way that helped the environment. A few months after arriving, Nick bought a guitar and an organic CSA share. I liked the guitar music and thought the CSA was a noble gesture. But it seemed awfully impractical since he was a busy, single guy with few cooking skills. Every Thursday, when he hauled in his box of food, I pictured all the rotting greens that would end up in our trash. I wondered how many heads of broccoli would go bad before he’d give up and order pizza. Against all odds, Nick managed to teach me a few lessons over the five-month stretch of his share. Though he often got home after 8 p.m., Nick stayed committed to making vegan meals from his CSA stash. In the beginning, he wasn’t sure what to do with some
vegetables, so I taught him techniques I’d learned through years of cooking. I showed him how mere roasting could turn beets into a feast of caramelized sugar in less than 50 minutes. And I demonstrated how fresh, grated nutmeg and other spices could enhance the taste of many foods, even bitter broccoli rabe. We both enjoyed the results. Nick quickly learned that roasting worked well with other produce, like yams and squash, but he was still stumped by the piles of bok choy that kept arriving. That’s when I introduced Nick to the magic of culinary websites. For years I’d read cooking magazines that helped me learn how to feed the people I love. My shelves are stuffed with well-buttered books and pages torn from the now-extinct Gourmet magazine. But the demise of those volumes has been ably supplanted by vast online cooking libraries like Epicurious.com with its huge trove of recipes from Gourmet and Bon Appétit. Using these sites solved the bok choy dilemma, but it didn’t address Nick’s quantity problem. Sometimes that box of food held too much for even a hungry surfer. One week he got a huge slab of the sweetest watermelon I’ve ever tasted. And, doubtful readers, we discovered countless ways to use the good fruit. Nick shared some with his law colleagues and gave plenty to me. I shared mine with neighbors and my yoga class. When we all hit our limit, I took some to a nursing home where the melon evoked delicious summer memories for a group of 80-year-olds. Ultimately, Nick put almost everything in his share to good use, especially with his new kitchen mantra: “When in doubt, roast it.” As for me, I learned plenty from watching him. Using a CSA share does require a bit more thought and planning, but not as much as I feared. I learned that there are plenty of hungry people excited to share in your extra food. And, in the Internet-era, a few minutes of research can dig up 50 ways to cook an overabundance of bok choy. Penn’S MaSter of environMental StudieS PrograM combines classroom work with field experience in a broadly based interdisciplinary approach to the study of the environment. As a culminating exercise in the program, students complete an individual project that puts what they’ve learned in the classroom to work in the field. Phragmites australis—a highly invasive variety of tall grass—is crowding out native vegetation at Assateague Island National Seashore. For his MES Capstone Project, Stephen Bailey investigated the feasibility of two methods of removing Phragmites and created an efficient management plan that will allow native plants to regain a foothold at Assateague.
