how to create a vertical garden Follow this step-by-step guide to create a beautiful thriving garden in even the smallest backyard.

PREPARE PALLET how-to-create-a-vertical-gardenA Use an old pallet that is in good condition and sand down any rough areas on the pallet and secure any loose nails. Attach the three extra timber slats to the back of the pallet. (fig.1) CUT AND STAPLE Cut the weed mat to cover the back, sides and bottom of the pallet. Staple the weed mat to the pallet, starting at the top. Smooth the weed mat across the pallet and ensure it is kept taut at all times. Staples should be approximately 1-2 inches apart. (Keep the top and front uncovered as this is where the plants will go). TURN AND POSITION Once the weed mat is firmly attached to the top, sides and bottom, flip the pallet over so the open side of the pallet is exposed. Move the pallet close to where it will eventually be secured to the wall.

START PLANTING how-to-create-a-vertical-garden-B Place the first row of plants in the top of the pallet, placing them very tightly together. Fill the pallet with the potting mix, pushing it through the slats and compacting it in with your hands. Plant the remainder of the pallet by making a trench in the potting mix in each pallet row. Ensure plants are tightly fitted into each space, working your way up or down the pallet. (Please note edible plants are not appropriate for this project). (fig.1)

CHECK AND REST Once you have finished, the plants should cover all openings in the pallet, allowing no room for soil to escape. Leave the pallet lying down for a week to allow roots to establish and hold soil in place. SECURE AND FINISH Move the pallet vertically into place and secure to the wall. Enjoy your new vertical garden and ensure you water regularly.

MUD MAPS Lewers Learning Centre Until 25 May 2014 Mud Maps evokes the sense of discovery and exploration that inspired early explorers and cartographers to map out their world. Through the work of contemporary artists Vanessa Berry, Keg de Souza, Narelle Jubelin and Guan Wei, this exhibition encourages audiences to stop and think about the points marked on the map, and to consider how we navigate and make sense of the world through map making. Why do we map? What do the marks and plots on a map tell us about our world? What can we learn from mapping? How do we make a path through this world? Mud Maps features the Penrith Arcades Project, a photographic and narrative mapping of the social, cultural and geographic landscape of the Penrith CBD by Vanessa Berry; Living Under the Stars, a large scale installation work of the constellations as seen from the Southern Hemisphere by Keg de Souza; and an interactive map room that will invite audiences to mark, plot and share their stories to contribute to a Community Mud Map.

Abstract Expressionist painter, known also for her work in a variety of other media including ceramic mosaics. In 1960, she received one of the largest commissions offered to an Australian contemporary painter of that period involving the design and fabrication of a mosaic mural over 12 metres in length. Entitled Expansion, it marks the entrance to the Canberra Rex Hotel. This exhibition traces the evolution of Margo Lewers’ mosaics, from small domestic installations at her home in Emu Plains (now the Penrith Regional Gallery & Lewers Bequest) to larger public commissions. Many will be familiar with Scott’s unique technique of drawing using pyrography and painting with natural pigments, predominantly from the bush. In this exciting new collection, Scott introduces new pigments to his palette, collected from a trip to the Flinders Ranges earlier this year. Familiar earthy tones and new exotic contrasts that celebrate nature’s bold colours, are combined with pyrographic burning. A large part of Scott’s artistic practice is comprised of the identification, collection and preparation of an astounding range of natural pigments. His bush pigments are unpredictable by nature, ensuring that each work of art is imbued with a genuine uniqueness. Scott says, “Over the past few years, I’ve been experimenting with the extraction and application of natural pigments. I now feel my experimentation has become my applied practise. This confidence together with the discovery of new colours has opened up new dimensions for my art”. This new collection features works on paper, works on board and a new collection of objects adorned with natural pigments and pyrography.

spaghetti marinara INGREDIENTS 1/4 cup (60ml) olive oil, plus extra to toss 4 garlic cloves, finely chopped 6 anchovy fillets 2 x 400g can chopped tomatoes 200ml dry white wine 500g spaghetti 300g mussels, scrubbed, debearded 800g good-quality marinara mix 200g peeled green prawns Torn flat-leaf parsley leaves, to serve

METHOD Heat 2 tablespoons of oil in a large frypan over medium-low heat and add garlic and anchovies. Cook, stirring, for 1-2 minutes until anchovies have melted. Add tomatoes and wine and bring to a simmer, then reduce the heat to low and cook for 20 minutes until slightly reduced. Meanwhile, cook the pasta in a large pan of boiling salted water according to packet instructions. Drain, then return to the pan and toss in a little olive oil.

Add the mussels to the pan of sauce, cover and cook for 1 minute, shaking the pan occasionally. Add the remaining seafood and cook for a further 2-3 minutes until the marinara mix and prawns are cooked through and the mussels have opened (discard any that haven’t opened after this time). Season to taste with sea salt and freshly ground black pepper. Add the drained pasta, toss to combine, then divide among bowls and serve garnished with parsley leaves. white chocolate and almond macarons

Master the art of these delicate delights and whip up heavenly, airy desserts like a pro - it’s surprisingly simple.

INGREDIENTS 2 cups (300g) pure icing sugar 3 cups (300g) almond meal 5 eggwhites (from 59g eggs) A pinch of cream of tartar 1/3 cup (70g) caster sugar 1-2 drops each green and pink liquid food colouring White chocolate ganache 180g good-quality white chocolate, finely chopped 1/3 cup (80ml) thickened cream 20g butter, chopped METHOD Sift the icing sugar and almond meal through a fine sieve into a large bowl. Use an electric mixer to whisk eggwhites and cream of tartar in a clean, dry bowl until firm peaks form. Gradually add caster sugar,1 tablespoon at a time,

whisking constantly until mixture is thick and glossy. Add the eggwhite mixture to the almond-meal mixture and stir to combine. Divide mixture into 2 even portions. Add the green colouring to one portion and stir to combine. Repeat with the pink colouring and remaining portion. Line 4 oven trays with baking paper. Spoon the green mixture into a large piping bag fitted with a 5mm round nozzle. Pipe 4cm discs onto the lined trays, allowing room for spreading. Repeat with the pink mixture. Use a slightly wet finger to smooth the top of each macaron. Set aside on trays for 30 minutes (this helps form a crust). Preheat oven to 150°C. Bake half the macarons in preheated oven, swapping

trays’ positions halfway through cooking, for 20 minutes or until macarons are dry to touch. Set aside on trays to cool completely. Repeat with remaining macarons. Meanwhile, to make ganache, place chocolate in a large heatproof bowl. Combine cream and butter in a small saucepan over high heat. Bring to the boil. Remove from heat and immediately pour over the chocolate. Use a metal spoon to stir until chocolate melts and mixture is smooth. Place in fridge for 20 minutes or until almost firm. Gently spread ganache onto the base of a macaron and sandwich with another. Repeat with remaining macarons and white chocolate ganache. Serve or store in an airtight container for up to 3 days.

banana fritters with caramel sauce INGREDIENTS 3/4 cup (185ml) buttermilk Large pinch ground cinnamon 1/3 cup (30g) multigrain breadcrumbs 1/3 cup (30g) desiccated coconut 4 ripe lady finger bananas, peeled 2/3 cup (160g) caster sugar 1/3 cup (80ml) cream 1 cup (250ml) vegetable oil Vanilla ice cream squares, to serve

METHOD Whisk the buttermilk and cinnamon together until combined. Combine the breadcrumbs and coconut in a separate shallow bowl. Dip a banana into the buttermilk to coat well, then roll in the breadcrumb mixture to coat well. Transfer to a plate or tray. Repeat with remaining bananas. Refrigerate until required. Stir the sugar and 1/3 cup (80ml) water in a saucepan over a low heat until the sugar dissolves.

Simmer for 8 minutes or until golden. Reduce the heat to low and carefully whisk in the cream until combined. Heat the vegetable oil in a 22cm frying pan over a medium heat. Cook the bananas, turning, for 2-3 minutes until golden. Transfer to a plate lined with a paper towel. Reheat the caramel sauce if necessary. Serve the fritters with the ice cream squares and caramel sauce.

These melt-in-the-mouth banana fritters are covered in a crispy golden batter.
