how to grow tomatoes Are you yearning to grow your own tasty juicy tomatoes? It is easy to grow with some guidelines, and amazing to harvest and eat. Luckily you can grow your own tomato plants anywhere. With sufficient sunlight, water and patience tomato plants go a long way and you’ll get your expectations. That is all you have to do to get your tomato plant growing. PLANTING The ideal position for tomato plants is in full sun, protected from strong winds. Prepare the soil before planting by digging in some organic matter then water in thoroughly using a liquid fertiliser. Ease the seedlings out of the container and plant them at the same soil level as they were in the punnet. Water in the seedlings immediately after planting. Plants requiring staking should be planted at least 1 metre apart. Bush type tomatoes should be planted 50cm apart. STAKING Most tomato plants benefit from staking to encourage fruiting. It is best to stake early while the plant is young and to

ensure a nice straight stem. The best plant ties are made from a soft material as they won’t cut into the stems as the plants grow. Any type of support structure may be used. FEEDING Tomatoes require regular feeding. Apply granule fertiliser, supplemented with a soluble or liquid fertiliser regularly at recommended rates. WATERING Regular watering is more effective than frequent light sprinkles. To prevent disease occurring avoid watering the foliage. Early morning around the base of the plant is the most beneficial method.

GROWING IN POTS Nearly all tomatoes may be grown successfully in pots although the larger varieties need large deep tubs (5060cm) with good staking or support. Compact varieties such as San Marzano and Mama’s Delight are ideal for smaller pots and great for small areas. Don’t forget to water and fertilise your potted tomatoes as pots dry out more quickly. Also look for compact varieties such as Tumbler Red, Tumbler Yellow, Patio Roma and Pot Tomato in the Floriana Patio Harvest range. For best results always use a quality Australian Standards potting mix.

how to re-pot plants Your soil is degrading, roots tightly packed within the pot or protruding from drainage holes and you have water sitting on the soil surface too long after watering. It is time for re-potting. SAFETY Always keep tools and materials away from children. Be cautious when using the knife or pruning shears/secateurs.

should be white or light-coloured. Black, dark-coloured, or foul-smelling roots are usually signs of a serious problem, such as fungal disease.

REMOVE THE PLANT Take the plant out of the pot. Before removing from the pot, water the plant thoroughly for a few hours before the process. If the pot is extremely dry, soak in a bucket of water for a few hours to ensure the root ball is wet through.

CHOOSE YOUR TOOLS Hand secateurs are good for small to medium thick branches. Long-handled loppers or a pruning saw may be needed for thick older branches. Make sure you wear rose gloves with long sleeves to protect your hands and arms.

SMALL POTS Small pots that are easy to manage, simply tap the rim of the pot few times upside down covering the soil with your hand. Larger plants can be laid on their side and tapped with a rubber mallet around the pot until the root ball loosens from the container, then slide the plant out for inspection. A plant ready for repotting should slide out with the soil in one piece. If much of the soil falls free of the roots, the plant may not need repotting. If it does, there may be a solid soil-and-root mass in the shape of the just removed pot. Roots

TRIM THE ROOTS Tightly packed roots don’t absorb nutrients efficiently, therefore to promote good nutrient absorption, trim the roots and loosen up the root ball before replanting. Cut through any roots growing in a circular pattern to help prevent the plant from strangling itself with its own roots as it grows. If the roots are thick along the sides of the root ball, shave or peel away the outer layer or gently untangle the root ball with your fingers. Do this along the top edge of the root ball too. Use a sharp knife or pruning shears for this job,

removing as much as the bottom third of the root ball if necessary. RE-POTTING Choose a larger pot that the plant will easily fit in and have room to grow. Add a few inches of potting mix and place the plant into the pot so that the top of the root ball sits about an inch below the pot rim. If the plant sits above the rim, remove and repeat with less potting mix in the pot. Add potting mix around the plant, compacting so that it sits upright and the pot is tightly packed. MAINTENANCE Finally, trim the plant’s foliage relative to how much the roots were pruned. A rule to follow is if you removed a third of the roots, prune off a third of the top growth as well. Water the plant thoroughly and keep it moist, shaded and cool until it is re-established. HINTS AND TIPS Potting mix is used in preference to garden soil as it ensures adequate drainage and aeration.

appiness seems so simple on the surface and yet more often than not it’s the most elusive thing in the universe. A survey done by the Australian Bureau of Statistics, shows that on a level of Life Satisfaction only 12% of people surveyed said they were “Delighted” with life and a further 35% said that they would consider themselves “Mostly Satisfied”. This seems very disappointing considering we live in the “Lucky Country”. Many of us are striving to get happier, within our own skin and within our own lives. Now I know that happiness is made up of a few components such as Environment, Government, and Finances just to name a few. But at the core when we strip all of those things away and we are left just as a singular human being full of light and energy on a cellular level what makes us truly satisfied and happy? A team of Scientists were commissioned to find out if general happiness had a formula – What they found was indeed

it did have a formula, and surprisingly what we think on a day to day level that would make us happy such as a new house, car, jet ski, in fact these items make up a very small component of our happiness. In a basic percentage structure the “Happiness Formula” = 50% is your bodies own set point for happiness, where you are content & comfortable with everything as it is in your life. 10% is conditions of living, shopping, consumer goods, and lifestyle. 40% is voluntary actions and choices you make in life. For example if you choose to be happier then in turn you will seek out ways in your life that will increase your happiness. So what if we are down in the dumps and want to boost our happiness? Really at the core of it, happiness stems directly from gratitude. Most people forget to be grateful for what they have got or for what they have been through to make them who they are today. If

we allow ourselves to really focus on one thing that we are grateful for and we sit in that moment of thinking how grateful we are and feel the feeling that gratitude gives us, that is our personal Happiness. The 5/2 diet: is it good for your body?

A

guy called Jesus once fasted for 40 days and 40 nights, and for centuries before and since, people have used fasting to enhance their spiritual and physical health. Most animals instinctively go off their food when they feel out of sorts, but for most humans the idea of giving up tucker is a hard one to swallow. Everyone’s talking about intermittent fasting, but what effect does it have on your body? WHAT IS A FAST? A true fast involves abstaining from all food and drink other than water, and it lasts up to several weeks. However, the latest “next big thing” is the intermittent 5:2 fasting diet, in which you restrict your calorie intake to 25 per cent of your RDI (recommended dietary intake) for two days a week, and eat a normal diet for the remaining days. The fasting days can be consecutive, or not, and you choose when and what you eat, as long as you remain within the calorie allowance. The

average Australian adult consumes 2000 calories or 8700kJ a day, so 25 per cent of that would be 500 calories or 2175kJ. THE FAT EQUATION Many people find the 5:2 diet works a treat because other than feeling peckish and possibly irritable on the fasting days, they don’t need to concern themselves with dieting for the rest of the week. For weight loss the benefit of the 5:2 diet is simply a mathematical equation: Eat less calories than the body requires for its daily metabolic needs, and fat will be burnt to provide the deficit. Happy days. WHEN IT DOESN’T WORK For people with blood sugar levels that oscillate between too high and too low, not eating for several hours will cause blood sugar levels to plummet, creating hypoglycaemic symptoms, which means that fasting days will be fraught with moodiness, headaches, dizziness, poor concentration and nausea. disciplined people may be tempted to gorge on the non-fasting days and eat foods such as cakes, chips and pies that are best avoided in any healthy diet. IS IT RIGHT FOR YOU? There’s no single fix-all diet that will suit everyone. Personal preference, lifestyle, home and work routine, and genetic predisposition all play their part in what works best for your body. The 5:2 diet might tick all the right boxes for some people who may find losing and maintaining a healthy weight a breeze (they may also experience other benefits, such as reducing their risk of heart disease, diabetes and some cancers). However, this diet isn’t recommended for pregnant or breastfeeding women, children or teenagers and people with diagnosed diabetes. alcohol and its impact on your fitness Why is the fitness industry as a whole so anti-alcohol? Isn’t there any room for a drink or two at major events? What kind impact does that really have?

The fitness industry’s anti-alcohol stance is due, in large part, to the (lack of) nutritional content contained in booze. Ethanol, the type of alcohol found in drinks, has toxic metabolic byproducts called acetaldehyde and acetate. Both by-products help create that queasy nauseous feeling you get when you’ve put a few too many back. Chronic ingestion of alcohol can also mess with your digestion, making it difficult for your body to absorb nutrients like amino acids and B vitamins, and impairs protein synthesis. One study also suggests that 2-3 beers per day can lower one’s testosterone levels. Alcohol consumption can also mess with a carefully planned-out diet. Many alcoholic drinks are calorically very dense and packed with sugar. If you’re mixing your alcohol with things like energy drinks or juices from concentrate, or even having a few glasses of wine, you are giving yourself a sugary rush with each sip. Let’s also not forget that alcohol totally impairs your judgment.

Those late night post-bar pizza runs can’t be too good for your summer beach body. However, if users are able to practice some moderation with alcohol, a drink or two on occasion will not effectively poison your body and make you overweight. There are some studies that suggest moderate alcohol consumption can provide health benefits. Much has been made of the hearthealthy components of a glass of red wine, but did you know that moderate beer consumption can improve your immune response and can reduce harmful C-reactive proteins (linked to heart disease)? All in all, alcohol is harmful when overdone. It can mess with your digestive system, liver, and diet. thai chicken meatballs with chilli lime sauce Spear these meatballs with a toothpick then enjoy them dipped in tangy lime and chilli sauce! INGREDIENTS 2 x 375g packets chicken sausages with lime and spices 1/2 cup sesame seeds 1 tablespoon finely chopped fresh coriander leaves 1/4 cup lime juice 1/2 cup sweet chilli sauce 2 tablespoons peanut oil Chopped fresh coriander leaves, to serve

Place on a plate. Cover with plastic wrap. Refrigerate for 20 minutes, if time permits. Combine coriander, lime juice and sweet chilli sauce in a bowl. Heat oil in a frying pan over mediumhigh heat. Cook meatballs, in batches, turning, for 8 to 10 minutes or until golden and cooked through. Serve with sweet chilli sauce mixture, coriander and toothpicks.

METHOD Squeeze meat from sausage casings into a bowl. Roll level tablespoons meat into 32 balls. Place sesame seeds in a shallow bowl. Roll balls in sesame seeds to coat.

smoky sausages and beans Sausages and beans is a quick and easy family-filling meal featuring a mere six ingredients. INGREDIENTS 1 tablespoon olive oil 4 thick beef sausages 1 large brown onion, finely chopped 400g can diced tomatoes 3 x 400g cans red kidney beans, drained, rinsed 1 teaspoon smoked paprika 1/4 cup finely chopped fresh flat-leaf parsley leaves

METHOD Heat oil in a large saucepan over medium-high heat. Add sausages. Cook, turning, for 5 minutes or until browned. Transfer to a plate. Thickly slice. Add onion to pan. Cook, stirring, for 3 minutes or until softened. Return sausage to pan with tomatoes, beans, paprika, half the parsley and 1/3 cup cold water. Stir to combine. Bring to the boil. Simmer, covered, for 10 minutes or until heated through. Sprinkle with parsley. Serve. Source: www.taste.com.au

eggs benedict No need to head out for brekkie when you can make eggs Benedict like this at home! INGREDIENTS 4 x 50g eggs, at room temperature 4 English muffins, split 20g baby spinach leaves 125g shaved ham 1 avocado, thinly sliced Hollandaise sauce 1 tablespoon white wine vinegar 2 egg yolks 150g butter, melted, cooled 1 tablespoon lemon juice METHOD Make hollandaise: Process vinegar and egg yolks in a food processor. With motor running, slowly add butter in a thin

stream. This should take 3 minutes. Stir in lemon juice. Transfer to a bowl. Season with salt and pepper. Cover surface with wrap. Pour water into a saucepan to twothirds fill it. Add a pinch of salt. Bring to the boil over medium-high heat. Reduce heat to medium-low. Break 1 egg into a saucer. Stir water until a whirlpool forms. Slide egg into water. Cook, without stirring, for 3 minutes for a soft yolk or 4 minutes for a semi-soft. Remove to a plate with a slotted spoon. Repeat with remaining eggs. Meanwhile, toast muffins. Top muffin bases with spinach, ham, avocado and eggs. Drizzle with hollandaise sauce. Top with muffin tops. Serve. Source: www.taste.com.au

METHOD Stir the sweet chilli sauce, soy sauce and water in a large bowl. Add the chicken and toss to coat. Cover and place in the fridge for 2 hours or overnight to marinate. Preheat oven to 200째C. Line a large baking dish with baking paper. Place the chicken in a single layer in the dish. Pour over the marinade. Bake, turning every 15 minutes, for 45 minutes or until golden. chicken and cheese chimichangas For a traditional Mexican-inspired dinner, try these tasty Chicken and Cheese Chimichangas. INGREDIENTS 1/2 Hot Roast Chicken, meat removed and shredded 200 g jar Old El Paso Medium Taco Sauce 8 Soft Tortillas 400 g can Old El Paso Refried Beans 1 Bunch English Spinach, trimmed 1 Red Capsicum, cut into strips 1 cup Tasty Grated Cheese 1/4 cup Olive Oil 1 Small Iceberg Lettuce, cut into wedges 1/2 cup Light Sour Cream Lime Wedges, to serve

METHOD Place chicken meat and taco sauce into a small bowl. Mix to combine. Lay tortillas on a clean work surface. Spread 2 tbsp refried beans over each tortilla. Top with spinach leaves, chicken, capsicum and 1 tbsp cheese. Roll up tortilla, tucking in ends, to enclose filling. Heat 1 tbsp of oil in a large frying pan on medium. Cook chimichangas, in batches, adding extra oil when needed, for 2-3 mins, turning, until golden all over. Drizzle remaining oil over lettuce wedges. spicy chorizo nachos An easy crowd-pleaser, nachos is tasty and quick to make, too. Try this version with spicy chorizo. INGREDIENTS 200g pkt Macro organic original Corn Chips 1 tablespoon Masterfoods Mexican Chilli Powder 1 chorizo sausage, halved lengthways, thinly sliced 160g (2 cups) coarsely grated cheddar 125ml (1/2 cup) medium chunky salsa 90g (1/3 cup) light sour cream Fresh coriander leaves, to serve

METHOD Preheat grill on high. arrange the corn chips over the base of a shallow 22 x 32cm ovenproof dish. Sprinkle with the chilli powder. Top with the chorizo and cheddar. Cook the nachos under grill for 3-5 minutes or until the cheddar melts and the chips are golden. Top the nachos with the salsa and sour cream. Sprinkle with coriander and serve.

sweet and sour fish Go sweet and sour with this delectable fish recipe that’s fast and easy. INGREDIENTS 1 tbsp vegetable oil 400g firm fish, cubed 500g bag frozen Thai-style stir-fry vegetables 575g jar sweet and sour sauce sliced green onion and steamed rice, to serve

METHOD Heat oil in a wok or large frying pan on high. Stir-fry fish for 2-3 mins until golden. Add frozen vegetables. Stir-fry for 1-2 mins. Pour in sauce and bring to the boil, stirring. Simmer for 1 min. Sprinkle with green onion and serve with steamed rice. Source: www.recipes.coles.com.au

INGREDIENTS 2 1/2 cups self-raising flour 1 tablespoon caster sugar 3/4 cup milk 1 egg, lightly beaten 1/2 cup vegetable oil 3/4 cup brown sugar 2 tablespoons maple syrup 1/3 cup white choc chips 380g can caramel Top ‘N’ Fill Icing sugar mixture, for dusting METHOD Preheat oven to 190°C/170°C fan-forced. Line 2 x 24 hole, 1 1/2 tablespoon-capacity mini muffin pans with paper cases. Combine the flour, caster sugar and

brown sugar in a bowl. Make a well in centre. Add milk, egg, oil and maple syrup. Mix until just combined. Fold in choc chips. Spoon 2 level teaspoons batter into paper cases. Top with 1 level teaspoon caramel. Top caramel with 1 level teaspoon batter. Bake for 10 to 12 minutes or until golden and just firm to touch. Stand in pans for 3 minutes. Winter Magic is the Blue Mountains highest profile and most anticipated annual event. The Blue Mountains is NSW inaugural City of the Arts and Katoomba is the heart of that city. It is the weekend when artists, musicians, dancers, drummers, choirs, stalls and community take over one of Australia’s most famous towns.

During the event, the main street of Katoomba is closed to motor traffic and open to pedestrian traffic. This allows the whole town to become a performance space. The streets are lined with market stalls and everybody who attends is encouraged to dress in costume. Unlike many Festivals run by Chambers of Commerce and Councils, this event is run by community. It has a strong local focus and very wide general appeal. The setting is a town sitting on a narrow ridge and bound north and south by a World Heritage listed National Park. The festival itself is free, however some activities charge a fee. The main act closing out this year’s festival with be the very fabulous ‘The Crooked Fiddle Band. Dance-inciting mayhem. Hardcore gypsy passion! The Crooked Fiddle Band are based in Sydney, Australia, and formed in 2006 through their mutual love of the energy and intensity of various traditional world music. Whilst writing and arranging, they discovered that this energy was shared by the other music they love. There seems to be a common thread between the frenetic accompaniment of gypsy, klezmer and punk rock; between the twisting rhythms of mathmetal and balkan folk; between the clear tonalities of Scandinavian folk, Celtic folk, and cinematic post rock. All these influences went into the mix, but what came out was The Crooked Fiddle Band. SKA’D 4 LIFE Ska’d 4 Life are a seven piece skarock/punk band based in the Blue Mountains. They play both covers and originals. Their covers include Reel Big Fish, Streetlight Manifesto, The Cat Empire and more. Consisting of a four piece rock band and a three piece brass section. Their music is very upbeat and always gets people dancing. MUSIC OF JOY Music of Joy is a unique, multicultural band based in Sydney, Australia. The magic of the group comes from the dynamic energy produced when over twenty musicians, with a wide variety of cultural backgrounds, join together with one common goal - to share the most joyful and uplifting music. The band’s repertoire is as vast and diverse as its members, transcending cultural boundaries and ranging from traditional Indian bhajans through to

melodic Chinese and Russian folk songs as well as rhythmical African harmonies and of course the music of Australia itself. The music of the band will will bring smiles onto faces and will make people dance. SIDESHOW ANNIE This Circus of musicians magically weave slide, electric guitar & harp with a good solid groove. Classified as roots rock with threads of blues and country. Fronted by the flamboyant Gillian Reynolds who’s voice is as smooth as silk and at times as rough as an uncut diamond, this five piece original roots/rock band should be seen, always heard and never missed. Gillian has sung in various bands for years and has done voice over work for numerous ads and film. She is a wonderful mimic as well as having her own style and voice. The songs she writes are about things she sees, everyday people and life in general. She is one powerful and dynamic front woman who is extremely theatrical and knows how to get an audience going. To see is to believe. TEMPORARY RESIDENT Temporary Resident are a family band from the Blue Mountains Australia who love funky grooves and sweet harmonies!! Temporary Resident consists of the siblings from 2 families. Members are Rachel (bass/vocals), David (guitar/vocals), Jason (guitar/lead vocals), Tim (DRUMSSS!!!!) and Josie (percussion/acoustic/lead vocals). They started early this year (2014) with their first actually gig at Glenbrook Australia Day Festival, playing on the main-stage doing their own versions of happy festival vibe songs. Since then they have started writing like crazy and now do sets consisting mostly of original material with a strong harmony based funky/pop/rock feel. There will be many more great performers at the festival.
