Wrestling komodo dragons, ethereal egrets and thirsty squirrels are among the creatures captured on camera by this year’s finalists of the Wildlife Photographer of the Year exhibition, on show for the first time at the museum. On loan from the Natural History Museum in London, this worldrenowned exhibition showcases 100 awe-inspiring photographs, taken from beneath the freezing Antarctic ice to the shimmering heat of Okaukuejo Camp in Namibia.

Judged by a panel of industryrecognised professionals, images were taken by some of the world’s best nature photographers and selected for their creativity, artistry and technical complexity. One of the winning images is by Australian author, explorer and conservation photographer Michael Aw. His image, A whale of a mouthful, shows an imposing Bryde’s whale, ripping through a mass of sardines and gulping hundreds in a single pass. The international tour spans six continents and allows the images to be seen by millions of people. The competition was launched in 1965 and now receives over 42,000 entries from 96 countries highlighting its enduring appeal. There are 21

SYDNEY’S WINTER FESTIVAL Until 17 July 2016 St Mary’s Cathedral, St Mary’s Road, Sydney NSW 2000 Sydney’s Winter Festival has officially launched at St Mary’s Cathedral in the heart of the CBD as the forecourt was transformed into a wintery wonderland. Each work touches on a different aspect of the human-animal relationship including biodiversity, pollution, climate change, conservation and stewardship. Each work asks us to examine our responsibilities as fellow travellers on this planet. chicken antipasto pasta This quick and easy pasta dish makes Monday night’s dinner a breeze. INGREDIENTS • 375g dried penne pasta • 6 slices prosciutto • 1/2 large barbecued chicken, skin removed, shredded (see note) • 150g semi-dried tomatoes, chopped • 1/2 cup pitted black olives, chopped • 50g finely grated parmesan cheese • 1/4 cup Lupi extra-virgin olive oil • 2 tablespoons lemon juice • 1/3 cup finely chopped fresh basil leaves • basil leaves, to serve METHOD Step 1 Cook pasta in a large saucepan of boiling salted water, following packet directions, until tender. Drain and return to saucepan.

Step 2 Meanwhile, preheat grill on high. Grill prosciutto for 2 to 3 minutes each side or until golden and crisp. Set aside to cool. Break into pieces. Step 3 Add chicken, prosciutto, tomatoes, olives and parmesan to pasta. Toss to combine. Step 4 Combine oil, lemon juice, chopped basil and salt and pepper in a jug. Add to pasta mixture. Toss to combine. Serve topped with basil leaves. Source: www.taste.com.au

quick pasta and meatballs Meatball lovers will love this quick pasta dish of beef chevups and rich tomato. INGREDIENTS • 500g pkt beef chevups (skinless sausages) • 1 tablespoon olive oil • 700g bottle tomato passata (italian tomato pasta sauce) • 400g fettuccine • 1 carrot, grated • 1 zucchini, grated • Chopped parsley and shaved parmesan, to serve METHOD Step 1 Break each chevup into 3 pieces and roll roughly into balls. Heat half the olive oil in a large non-stick frying pan. Cook meatballs in 2 batches over medium

high heat until well browned; set aside. Step 2 Add carrot and zucchini to pan, stir over medium heat for 3 mins until soft. Add passata then pour 1 cup of water into the empty bottle. Put lid on tightly and shake. Pour liquid into pan, bring to the boil. Return meatballs to the pan and simmer, uncovered, for 15 mins. Step 3 Meanwhile, cook pasta according to packet instructions. Spoon meatball sauce over pasta, sprinkle with parsley and parmesan. Source: www.taste.com.au
