BISCUITS INGREDIENTS • 125g butter, softened • 1/3 cup (75g) caster sugar • 3/4 cup (110g) plain flour • 1/3 cup (60g) rice flour • 1 cup (160g) pure icing sugar • 100’s & 1000’s, to decorate • 50g Coles Ready-to-Roll White Icing METHOD Step 1 Preheat oven to 180°C. Line 2 baking trays with baking paper. Use an electric mixer to beat the butter and sugar in a bowl until pale and creamy. Add the flour and rice flour. Stir until the dough comes together. Turn onto a lightly floured surface. Knead until smooth. Step 2 Roll out the dough on a lightly floured surface to a 3mmthick disc. Use a 5cm-diameter egg-shaped pastry cutter to cut out shapes. (Alternatively, trace an egg shape on baking paper and use as a template to cut out shapes.) Place in the fridge for 10 mins to chill. Bake, swapping trays halfway through cooking, for 10-12 mins or until light golden. Set aside on trays to cool. Step 3 Place the icing sugar in a small bowl. Add enough water to make a firm paste. Place the 100’s & 1000’s on a small plate. Spread 1 biscuit with a little paste. Dip, paste-side down, in the 100’s & 1000’s to coat. Return to the tray. Repeat with remaining biscuits, half the remaining paste and remaining 100’s & 1000’s. Set aside to set. Step 4 Roll the white icing out on a surface dusted with icing sugar to a 1mm-thick disc. Use egg-shaped cutter or template to cut egg shapes from icing. Use a small sharp knife to cut a zig-zag pattern along the centre. Attach to some of the biscuits using a little remaining paste to make eggshells. Set aside to set source: taste.com.au

METHOD Step 1 Combine the milk, yeast and 1 tablespoon of sugar in a small bowl. Set aside in a warm, draught-free place for 10 minutes or until frothy. Step 2 Combine the milk mixture, butter and egg in a jug and whisk to combine. Combine 4 cups (600g) of flour, salt, mixed spice and remaining sugar in a bowl. Add the sultanas, currants and mixed peel and stir to combine. Make a well in the centre. Pour in the milk mixture and use a wooden spoon to stir until just combined, then use your hands to bring the dough together.
HOT CROSS BUN INGREDIENTS • 1 1/2 cups (375ml) warm milk • 2 teaspoons (7g/1 sachet) dried yeast
Step 3 Turn onto a lightly floured surface and knead for 10-15 minutes or until smooth and elastic. Place the dough in a bowl and cover with a damp tea towel and place in a warm, draught-free place for 1 hour or until dough doubles in size.
• 1/4 cup (55g) caster sugar • 60g butter, melted • 1 egg, lightly whisked • 4 1/2 cups (675g) plain 00 flour • 1 teaspoon salt
Step 4 Preheat oven to 200°C. Grease a 23cm square cake pan. Punch the dough down with your fist. Turn dough onto a lightly floured surface and knead for 2-3 minutes or until dough is smooth and elastic. Divide dough into 16 even pieces and shape each portion into a ball. Arrange dough portions, side by side, in the prepared pan. Set aside in a warm, draught-free place for 30 minutes or until dough has risen 2cm
• 3 teaspoons mixed spice • 1 cup (170g) sultanas • 1/4 cup (45g) currants • 1/4 cup (50g) mixed peel • 1/3 cup (80ml) cold water • 1/2 cup (170g) apricot jam
Step 5 Meanwhile, mix the remaining flour and water together in a small bowl until a smooth paste forms. Place in a small plastic bag and snip off the end. Pipe a continuous line down the centre of each row of buns, lengthways and widthways, to form crosses. Bake in preheated oven for 10 minutes. Reduce heat to 180°C and bake for a further 20 minutes or until golden and cooked through (buns are ready when they sound hollow when tapped on the base). Step 6 Turn onto a wire rack. Place the jam in a small saucepan over high heat. Cook, stirring, for 2 minutes or until jam melts. Strain through a fine sieve. Brush hot jam over the buns. Serve warm with butter, or toasted source: taste.com.au

ORANGE REGIONAL GALLERY Where: Orange Regional Gallery 149 Byng Street, Orange. When: The Gallery is open every day 10am to 4pm The Orange Regional Gallery collection is founded on the Mary Turner Collection which was presented to the city of Orange, NSW in 1982. Since the Turner donation the collection has grown considerably to include over five hundred pieces by some of Australia’s finest artists. Many artists from the Central West of NSW are featured in keeping with the Gallery’s commitment to supporting and celebrating artists in the region. Significant recent developments have included a donation of major paintings from the Chroma Collection in 2012 and in 2013 the gallery became the custodian of the Kedumba Collection of Australian Drawings which is on loan for the next few years. Many of the works from these new additions are currently installed at Orange Health Service through the ground breaking Arts + Health strategy, of which the gallery is major partner. GUIDO PAINTS PORTLAND SILOS When; Thursday 29 March 2018 to Sunday 29 April 2018 Where: Williwa Street, Portland NSW 284 Australian-born, internationally renowned visual artist, Guido van Helten has been commissioned to paint a large-scale mural on the eight-bin silos that dominate the local landscape. Commissioned by AWJ Civil as an introductory aspect at The Foundations, a new development, van Helten will apply his unique process of community engagement, photography and mural painting to the town with a rich history and unique mix of art and
industry. From Brim to Coonalpyn and now to Portland: van Helten will transform the mid-century cement silos of the town and in turn bring renewed interest to the heritage location.
