INGREDIENTS • 200g chargrilled red capsicum • s all ucchini thinly sliced lengthways • 2 tablespoons tomato paste • 400g lean beef mince • 2 tablespoons chopped fresh oregano leaves • long red chilli finely chopped • 1 tablespoon toasted pine nuts • olive oil cooking spray • baby eggplant thinly sliced lengthways • 4 wholemeal bread rolls, halved • 80g salad leaves • sliced tomato and barbecue sauce, to serve (toddler) • basil cashew and pine nut chunky dip, to serve (adults)

Shape half the mixture into 2 patties. Add chilli and pine nuts to remaining mixture. Shape into 2 patties. Step 3 pray a barbecue plate or chargrill with oil. Heat over medium-high heat. Grill zucchini and eggplant slices for 2 to 3 minutes each side or until tender. Transfer to a plate. Cook patties for 4 to 5 minutes on each side or until cooked through. Step 4 Top roll bases with salad leaves, spiced patties, capsicum, zucchini, eggplant, dip and roll tops. Serve. Source: www.taste.com.au

Place in a large bowl. Add mince, onion, basil, breadcrumbs, egg, and half the garlic. Season with salt and

pepper. Mix well. Roll level tablespoons of mixture into balls. Place on a large plate. Step 2 Cook spaghetti in a large saucepan of boiling water, following packet directions, until tender. Drain. Step 3 Meanwhile, heat oil in a large non stick frying pan over ediu high heat. Cook meatballs, in batches, turning regularly for inutes or until browned. Transfer to a large plate. Step 4 Add remaining garlic to pan. Cook, stirring, for 30 seconds or until fragrant. Add tomatoes. Season with pepper. Cook, stirring, for 3 minutes or until tomatoes collapse. Step 5 Add meatballs. Cook for 4 to 5 minutes or until cooked through. Serve meatballs on spaghetti topped with basil and parmesan. Source: www.taste.com.au

how to lay instant turf Learn how to create a lush green lawn using instant turf. We’ll show you how to prepare the area and give you tips on drainage. Then you’ll see how to lay the turf and cut around trees and short edges. We also have some handy tips to help you take care of your new lawn. STEP 1. PREPARE THE AREA We’ve already prepared the area with some topsoil and some wetting agent to hold the moisture underneath the turf. There is sandy soil in this area so there’s really good drainage. If you have clay soil, dig down 100 to 150mm and add sandy loam and gypsum to improve the drainage. Use the rake to spread the topsoil evenly. Level it out with the soil spreader, which runs bars over the soil to give a really fine grading on the top. Spread the lawn builder or startup fertiliser. Start in one corner and work your way back for even coverage. Use the hose to wet it down and create a moist surface for the turf. STEP 2. LAY THE TURF Lay out the first piece of turf and butt it up hard into the corner. It’s important not to kneel on the turf or stretch it. Butt the heels of each piece of turf hard against each other to avoid air pockets and drying. To avoid lines lay each piece in a brick pattern. Use secateurs to cut turf to fit at each end. STEP 3. CUT AROUND TREE TRUNKS At the tree trunk lay the turf right up to the base of the tree and lay the excess up the tree trunk. Use secateurs to cut around the base of the tree. Repeat on the other side of the tree.

STEP 4. WATER IN THE NEW TURF Use the hose to water in the new turf. Give it a good soaking to encourage the roots to settle in. You need to keep the turf wet for the first 4 to 6 weeks. After that water less to encourage deep rooting. Keep foot traffic off the area for the first 4 weeks.
