f you’re planning to take on a big project over the summer, organising a working bee can really save you time, money and make the whole job a lot more fun. Working together with friends and family can be rewarding on its own. But it always helps to return the favour for everyone in your group and say thanks with a BBQ afterwards. Here are a few summer projects you can do together that will make a huge difference to any home and make it a summer to remember.

1. PLANT A VEGIE GARDEN Setting up a vegie patch is a fun summer project you can get people of all ages involved in. Whatever size outdoor area you have, you can grow your own healthy fruit and vege in anything from a simple planter box, to a raised garden bed, to a large garden plot. 2. LANDSCAPE THE GARDEN Landscaping your front or backyard is the perfect project for a big group. The more people that can get involved, the quicker and easier it will be, and you can split the job up between the planners, the heavylifters and the planters. A good place to start is with building a retaining wall. 3. BUILD A DECK Building a deck is a popular way to make the most of your outdoor space. With the right planning, and a few extra hands to help out, you’ll get it done in half the time and have a great space for the whole team to celebrate afterwards. 4. BUILD A PERGOLA A new pergola is another big outdoor project for you and your mates to take on. Once you’ve drawn up the plans and picked up all your materials, you can break the project down into stages and invite your mates over to share in the heavy lifting. 5. However, a particularly beautiful 43km section of mountain trail connecting the important Inca archaeological sites of Runcuracay, Sayacmarca, Phuyupatamarca, Wiñay Wayna and Machu Picchu has become popular with hikers in the last 30 years and has become known as the “Inca Trail to Machu Picchu”.

MACHU PICCHU

IGUAZU NATIONAL PARK The semicircular waterfall at the heart of this site is some 80 m high and 2,700 m in diameter and is situated on a basaltic line spanning the border between Argentina and Brazil. Made up of many cascades producing vast sprays of water, it is one of the most spectacular waterfalls in the world. The surrounding subtropical rainforest has over 2,000 species of vascular plants and is home to the typical wildlife of the region: tapirs, giant anteaters, howler monkeys, ocelots, jaguars and caymans.

FOR THE CLASSIC ROMANTIC BRUGGE, BELGIUM Bruges is the capital and largest city of the province of West Flanders, in the Flemish Region of Belgium. It has more than 110,000 population covering the area of 138,40 square kilometers. Bruges is all about the romance and it is possible to visit all the places by foot, which may give more value to your romantic travel, you can have a nice walk to the old part of the city and have a drink with your partner in the oldest café in Bruges. SORRENTO, ITALY An unashamed resort, Sorrento is still a civilized old town. Even the souvenirs are a cut above the norm, with plenty of

fine old shops selling ceramics, lacework and intarsio (marquetry items) – famously produced here. The main drawback is the lack of a proper beach; the town straddles the cliffs overlooking the water to Naples and Mt Vesuvius. Sorrento makes a good base for exploring the surrounding area: to the south, the best of the peninsula’s unspoilt countryside and, to the east, the Amalfi Coast; to the north, Pompeii and the archaeological sites; offshore, the fabled island of Capri. EIFFEL TOWER, FRANCE Scaling the Eiffel Tower is a once-in-alifetime experience not to be missed. The Paris landmark recently added children’s programming, which has made what was already a family-friendly attraction even better — and the views, as always, are magnifique. FOUNTAINS OF BELLAGIO, LAS VEGAS The spectacle of all Las Vegas Strip spectacles, the dancing fountains of the Bellagio use highly choreographed water cannons synchronized to music. Taronga Wild! Rhinos is a Wild in Art event that will bring businesses, artists and schools together to create a spectacular world-class sculpture trail from the Sydney Harbour foreshore through the Blue Mountains to Dubbo and the Central West region of NSW.


From February to April 2014 a huge herd of wildly colourful rhino sculptures painted by artists and their small calves decorated by local schools will charge into town as part of a mass public art exhibition to help raise awareness and valuable funds for Taronga’s world leading Black Rhino breeding program and in-situ conservation projects. How does the event work? Businesses, community groups, charities, education establishments and individuals are invited to sponsor a blank rhino sculpture – the canvas. Artists, well-known and undiscovered, young and old, are invited to submit their designs. The best designs will be selected by sponsors to feature on the Taronga Wild! Rhinos sculpture trail. Local schools will also be able to

sponsor and decorate their own rhino calf sculpture to feature on the trail, which will be theirs to keep. Up to 75 life-sized rhinos will go on display around Sydney, Dubbo and their surrounds for 10–12 weeks forming a spectacular sculpture trail for all to enjoy. After the event, each sculpture will be sold at auction with the net proceeds going to support Taronga’s Black Rhino breeding and in-situ conservation programs.

t’s bad, it’s tempting, it’s brown or white, and it’s heaven on earth. We’re talking about chocolate! Nothing says decadence like a chocolate dessert. Try out these chocolate recipes – great for any occasion! into a bowl, add the milk mixture and chocolate and mix, using an electric beater, until smooth. Scrape mixture into the prepared cake tin and smooth over the top. Bake for 1 hour in the middle of the oven, or until firm in the middle. When cooked, remove from the oven and leave to cool for about an hour. Melt the chocolate and butter in the microwave for 3 minutes, proceed in 30 second bursts. Stir until smooth then beat in the sifted icing sugar, then cream and vanilla essence. Cool for a few minutes (no more than 30mins or it will set). When the cake has cooled, halve it through the middle. Spread ¼ of the frosting on the bottom layer and stick the other layer on top. Cover the sides and top with the rest of the frosting.

EASY CHOCOLATE FUDGE CAKE INGREDIENTS CAKE: 100g plain chocolate (50% cocoa solids or more) 250ml milk 1 tablespoon red wine vinegar 100g softened butter, cut into small pieces 15g cocoa powder, sifted 300g self-raising flour, sifted 1 teaspoon bicarbonate of soda 225g caster sugar 2 large eggs 26

ICING: 225g plain chocolate 100g butter 142ml carton double cream 1 teaspoon vanilla essence 50g icing sugar METHOD Preheat oven to 180C°. Grease and line a 20cm cake tin. Melt the chocolate in the microwave for 2-3 minutes, proceed in 30 second bursts. Let cool a little. Mix the milk and vinegar in a jug. Put all the other cake ingredients www.homesguide.com.au

INGREDIENTS Oil, for greasing 175g dark chocolate, broken into pieces 6 eggs, separated 175g caster sugar Sifted icing sugar, for dusting FILLING: 85g white chocolate, broken into pieces 300ml double cream, whipped Raspberries, blueberries or blackberries METHOD Pre heat oven to 180°C. Lightly grease a 23x33cm Swiss roll tin, and line with baking paper. Put the 175g of chocolate in a small heatproof bowl, set over a pan of hot water. Heat gently, stirring occasionally, until melted. Leave to cool a little. Combine the egg yolks and sugar in a large bowl and whisk for about 5 minutes until pale


and creamy. Add the cooled melted chocolate and stir to blend evenly. In a separate bowl, whisk the egg whites until stiff but not dry. Using a large metal spoon, carefully fold into the chocolate mixture. Turn the chocolate mixture into the tin, tilting the tin so that the mixture spreads evenly into the corners. Bake for 20 minutes or until firm to touch. Remove from the oven. Leave to cool for a few minutes. Place a clean damp tea towel over the cake with a board on top. Invert, remove the tin and peel away the baking parchment. Roll up the cake with the damp tea towel to keep the sponge moist. Leave to stand for about 5 minutes. Meanwhile, make the filling. Put the white chocolate in a heatproof bowl set over a pan of hot water. Heat gently, stirring occasionally, until the chocolate has melted. Leave to cool a little. Quickly fold into the whipped cream, taking care the chocolate doesn’t split but sets to form a mousse. Unroll the cooled cake – don’t worry if it splits, as the mousse will stick it together again.

Leaving a 2cm margin all round, spread the chocolate mousse evenly over the cake. Sprinkle the fruit, if using, evenly over the filling. Carefully roll up the cake. Dust with sifted icing sugar before serving.

CHOCOLATE CREPES INGREDIENTS 2 cups milk 1½ cups flour ½ cup cocoa powder 6 tablespoons powdered sugar 2 large eggs 2 tablespoons butter, melted ½ teaspoon pure vanilla extract ¼ teaspoon salt 250ml thick cream or ice cream to serve

INGREDIENTS Melted butter, to grease 1 x 250g pkt Arnott’s Butternut Snap Cookies, broken 90g butter, melted 1 x 395g can condensed milk 3 tbs golden syrup 30g butter 200g dark chocolate, coarsely chopped 150ml pouring cream METHOD Preheat oven to 170°C. Brush 18 pans of a mini muffin tray with butter to grease. Place biscuit and butter in the bowl of a food processor. Process to combine. Divide among the pans. Press over bases and sides. Bake for 8 minutes or until golden. Meanwhile, place condensed milk, golden syrup and butter in a small saucepan over low heat. Stir until the butter melts. Divide the condensed milk mixture among the pans. Bake for 10 minutes or until golden. Set aside in pans for 10 minutes to cool before transferring to a baking tray to cool completely. Place chocolate and cream in a saucepan over low heat. Stir until the chocolate melts and the mixture is smooth. Pour over the caramel kisses. Place in fridge for 30 minutes to set.

Relaxation tips MEDITATE A few minutes of practice per day can help ease anxiety. “Research suggests that daily meditation may alter the brain’s neural pathways, making you more resilient to stress,” says psychologist Robbie Maller Hartman, PhD, a Chicago health and wellness coach. The process can be simple. Sit up straight with both feet on the floor. Close your eyes. Focus your attention on reciting -- out loud or silently -- a positive mantra such as “I feel at peace” or “I love myself.” Place one hand on your belly to synch the mantra with your breaths. Let any distracting thoughts float by like clouds.

BREATHE DEEPLY Give yourself a 5-minute break from whatever is bothering you and focus instead on your breathing. Sit up straight, eyes closed, with a hand on your belly. Slowly inhale through your nose, feeling the breath start in your abdomen and work its way to the top of your head. Reverse the process as you exhale through your mouth. “Deep breathing counters the effects of stress by slowing the heart rate and lowering blood pressure,” says psychologist Judith Tutin, PhD, a certified life coach.

BE PRESENT You rush through dinner, hurry to your next appointment, race to finish one more thing on your agenda. Now try something different: Slow down. “Take 5 minutes and focus on only one behavior with awareness,” says Tutin. Notice how the air feels on your face when you’re walking. Enjoy the texture and taste of each bite of food as you slowly chew. When you spend time in the moment and focus on your senses, you should feel the tension leave your body.

#1: Deep Fried Tarantula (Cambodia) When you think of a big, hairy, venomous tarantula, chances are, the last thing on your mind is to eat it. Well, in Cambodia fried spiders are a common and much appreciated delicacy. The spiders–“aping” or “Thai zebra” tarantula, a species that is about the size of a human hand, are tossed in garlic and salt before being deep fried until crisp. Most people only eat the legs and the upper body’s flesh– but the bravest also eat the abdomen, which contains a brown, runny paste and sometimes even eggs.

#6 Lutefisk (Norway) The Viking dish par excellence, lutefisk is made from dried white fish, usually cod or ling. Since lye is a poisonous and toxic substance, the process does not stop there: At this point, the lye-saturated fish could kill the one who eats it. In order to make it edible, the lutefisk is soaked in daily changed water for about a week, until most of the lye is gone. Lutefisk is often mocked for its strong, nearly unbearable smell. Because of the toxic products used in its making, it is nicknamed “weapon of mass destruction,” “rat poison” or “fork destroyer”…

#7. Raw Blood Soup (Vietnam) Tiet Cahn, or raw blood soup, is a traditional Vietnamese dish that contains very few ingredients: chicken gizzards and raw duck blood, topped with peanuts and herbs. Tiet Cahn is refrigerated before consumption: the blood then coagulates and has the texture of jelly…

#10 Casu Marzu (Italy) Granted, all cheeses are kind of gross, when you really take time to think about it: Fermented milk, full of bacteria and germs of all sorts. But the casu marzu goes beyond simple fermentation. It is closer to actual decomposition. This Italian pecorino—a.k.a. sheep milk cheese—is crawling with… live fly larvae. At the end of the making process, the cazu marzu’s crust is cut open, in order to let flies lay their eggs in the cheese. Once those eggs hatch, little larvae are born, making their way through the cheese and giving it its strong, unique taste. Live cobra hearts cannot be considered a common meal in Vietnam—but some people do eat them, mostly because they believe that by eating a snake live, they will inherit a part of its power and enhance their strength. The Sydney Striders 10K Series is held on the first Saturday of every month from February to November. There is a single fee for the full series; you don’t have to be a club member to participate but the entry fee is higher for non-members. There are refreshments and munchies afterwards, outright and lucky draw prizes, results published on the web usually on the same day and mostly traffic free courses. Australian vernacular photography The allure of the everyday

Australian vernacular photography considers how photographers have used their cameras to depict Australian life, and how ideas of the nation have been constructed through photographic images. Sixteen Australian photographers are represented by some 27 photographs taken from the 1960s to the 2000s. The photographs range from the more conventionally photo-documentary through to later works by photographers positioned more consciously in an art context. A selection of photography books of the period are also on display. Artists include: Jeff Carter, Ed Douglas, Peter Elliston, Gerrit Fokkema, Sue Ford, Fiona Hall, Robert McFarlane, Hal Missingham, David Moore, Trent Parke, Roger Scott, Glenn Sloggett, Ingeborg Tyssen, John F Williams, William Yang and Anne Zahalka. Each of these artists in their own way interweave personal, documentary and fictional aspects through their images. The works in Australian vernacular photography expose the sense of humour or larrikinism often seen as typical to Australia through showing aspects of beach and urban culture that hadn’t been imaged so bluntly before the 1960s. The characters that emerge range from

As photography struggled to gain recognition as an art form in the mid 20th century, the influence of exhibitions such as the Museum of Modern Art, New York’s Family of Man, which toured Australia in 1959, was vital in allowing Australian photographers to compare their work to that of their international peers. Throughout the 1960s and ’70s, photographers such as Jeff Carter, Sue Ford, David Moore, Roger Scott and www.homesguide.com.au

John F Williams worked in a photodocumentary mode that was less about staging a shot or creating formal harmony within the frame than about capturing a moment of lived reality. To this end, such photographs involved minimal intervention from the photographer, both before and after the shutter release. Subjects were often unaware of being photographed and extensive darkroom manipulation was frowned upon, the rawness of prints was supposed to signal authenticity. This approach resulted in images that seemed to offer a frank perspective on Australian culture, without the romanticising tendencies of earlier photography, which had sought to construct ideals rather than document what was actually there. As artists began to realise what they could do with the camera, so too did the images evolve. By the 1980s and ’90s photographers were making images that showed the subject’s awareness of being photographed, as with Gerrit Fokkema, or presented a harsh, even aggressive perspective on the depicted situations by removing people altogether, as with Peter Elliston. This signalled the increasingly selfconscious role of photographers themselves in the equation, suggesting the influence of post-modern theories of subjectivity and their effect on the images produced. By the time we reach the 2000s, artists such as William Yang, Anne Zahalka and Trent Parke are acutely aware of the photographer and photograph’s role in pointedly constructing a narrative around Australian identity and history.
