SCREEN WITH LATTICE Lattice is an ideal way to add privacy without closing off your backyard too much. easy ways to shade your garden Summer is a great time to enjoy your garden. You want to make sure there’s enough shade for the kids to play, and to enjoy a BBQ. A nice shaded area can also bring your garden temperature down, which is good for your plants. Where do you need shade? Watch how the sun moves through your garden to see which areas need shade most. Every garden needs some amount of shade. Gardens in dry climates, with long hot summers, need 75% shade. If you live in an area with warm summers and chilly winters, your garden needs about 50% shade and in tropical gardens about 80% shade. When it comes to shading your home, remember the sun shines hottest on your western side. Make sure you keep this area well shaded to keep the heat down in your home.

Pergolas and outdoor rooms Pergolas and outdoor rooms are great for shade or shelter from the rain, and add real value to your home. Pergolas are easy to build and can become a feature when you train climbing plants, like grape or star jasmine, over them. Be sure to choose a climber that suits your climate. uring my visit to the Hunter Valley I had the good fortune to once again call in at Marsh Estate Wines. Marsh Estate grows only the classic varieties of Semillon and Chardonnay in the whites and Shiraz, Cabernet Sauvignon and Merlot in the reds. The Lower Hunter Valley makes some of the best white wines in Australia and, for some enthusiasts, has the most regionally pronounced styled red wines in the world. Marsh Estate is unique in that the grapes are not irrigated and unlike some other wineries, all the grapes used for the wine making are grown on the property.

Planted in 1971, with the first labelled wines being released in 1978, the 100 acre property contains sandy loam soil on the flats surrounding Rothbury Creek with rich, fertile, red volcanic soil on the ridge. The grey sandy loam soil is a deposit from the Rothbury Creek and the great Semillons from the Hunter are famous because of these creek bed deposits. The red volcanic deposits are a perfect haven for Shiraz. Andrew Marsh spent his early life waiting to make wine at Marsh Estate where he now makes the wine at Marsh Estate and has been for some 20 years. As you drive through the gates the first blocks on the right are Semillon whilst on the left, over the small bridge, is the “Holly’s Block” Semillon. Chardonnay, Cabernet Sauvignon and Merlot also thrive in the sandy loam soils. The Vat S Shiraz is grown on the most easterly facing block which relies on the early morning direct sunlight to ripen whilst the Vat R Shiraz is grown on the more westerly facing block and relies on the afternoon filtered sunlight to ripen. The two wines I tasted that are worth discussing are the Private Bin Shiraz block www.homesguide.com.au

which is planted down the steep southeast block giving it a different aspect and drainage and the Cabernet Sauvignon Vat N which is planted to the left of the house and benefits from its southwest perspective.

2009 PRIVATE BIN SHIRAZ Made from 100% non-irrigated, low yielding Shiraz grapes are grown on red volcanic soil from the house block. The wine again displays classic varietal characters combined with regional distinctiveness. Stored in a selection of premium French oak for 12 months it is cellaring well.

2009 CABERNET The Cabernet Sauvignon VAT “N” is made from 100% Cabernet Sauvignon from the house block. It is medium, plum red in colour with lots of spice and cherry characters with soft, velvet tannins. Stored in French oak for 12 months it is worth buying a dozen or so. Article by Greg Bondar

I

am often asked about the Italian grape variety known as Nebbiolo. For the novice this is a red grape variety grown in the Piedmonte region of North West Italy. It is the variety used to make the highly regarded Barolo and Barbaresco wines, named after the villages of their origin. Nebbiolo thrives in these two villages producing majestic Italian DOCG wines coming from two appellations barely 20 kms apart. Barolos and Barbaresco must have 100% Nebbiolo to get the DOCG appellation. I was recently in both Barolo and Barbaresco as a guest of the Italian Government Tourist Office where I was invited to taste the best Nebbiolos in the world including those of Negro, Fontanafredda and many more such as Conterno, Bruno Giacosa, Bruno Rocca, Luciano Sandrone, La Spinetta and Voerzio. Not only are the Barbaresco’s and Barolo’s excellent but the Barbera’s and Dolcetto’s are great too. It is worthwhile noting that Barbera is a red Italian wine grape variety that, as of 2000, was the third most-planted red grape variety in Italy (after Sangiovese and Montepulciano).

Whilst in Piedmonte I stayed at probably the most beautiful Villa in all of Piedmonte with a view to take your breath away. Situated in Montforte D’Alba the villa is Agriturismo La Torricella (www. latorricella.eu) and almost overlooks the whole of Piedmonte wine regions. Nebbiolo makes wine with a distinct brownish colour and is sometimes offputting for the new comer to Nebbiolo. They are usually long lived and often reward cellaring for a decade or so and in some ways Nebbiolo wines resemble Pinot Noirs in the way that they age into wines with soft rich tannins. The wines have rich flavours with a nose most often described as ‘tar and roses’. Some other flavours and aromas to look for are spicy, chocolate, leathery and earthy flavours or think of a forest floor. Nebbiolo has the reputation of being a difficult grape to grow. It is a variety that needs to be matched closely with the appropriate microclimate. Barolo is produced in the heart of the Langhe hills in 11 different municipalities/ towns, the more important being Barolo, La Morra, Serralunga d’Alba and Monforte d’Alba. Other comunes included are Roddi, Cherasco and Diano d’Alba. Barbaresco, on the other hand, also consists of Neive, Treiso and a very small proportion in Alba. www.homesguide.com.au

Neive produces more DOCG Barbaresco than the town of Barbaresco. Interestingly, as in Burgundy, the terroir is quite different in different vineyards giving wines a different character from different sub-vineyards. Giovanni Negro, owner of Negro estate in Roero (www.negroangelo.it), and the President of the local wine promotional group in Roero, explained the need to respect the village names for appellation purposes. Likewise, Ornella Gallo, the Export Manager at Fontanfredda (www.fontanafredda.it) explained that for quality purposes cork was a requirement for their premium Serralunga d’Alba wines. In Australia this variety, like many other Italian wine varieties, is attracting some interest. Those growers and winemakers who have persisted have been rewarded with some excellent Australian Nebbiolo wines. There have been some excellent Award winning Australian Nebbiolo wines at the Alternative Varieties Wine Show (AAVWS) but two wines that may be worthwhile hunting down are 2006 Belebula Nebbiolo and the 2008 Brokenwood Nebbiolo. Some children don’t eat enough, whilst others only consume certain types of foods which is why the Sydney Dietetics team developed a specialised food education workshop program just for children - ’Kids Nutrition Workshop’. These workshops offer children invaluable nutritional advice and address common diet and nutrition myths. In particular, children will gain a better understanding of buzzwords and slogans like superfoods, low GI and low carbs and the hidden chemicals and preservatives found in processed and fast foods will be explored in a simplified manner. Through this unique series of workshops, the Sydney Dietetics team will help children view food as part of daily life; children will learn that food is nourishing, gives them energy and helps them grow and will explore a smorgasbord of colour, tastes and textures rather than just ‘good’ and ‘bad’ food. By participating in these workshops, children will understand the long-term health effects of excessive consumption of salt, fat and sugar and will learn to think critically about attractive food packaging and television advertisements. Each workshop will be facilitated by an Accredited Practising Dietitian (APD) and will include an interactive lesson which will involve completing a worksheet. While touring through Antarctica, they were victims of a devastating avalanche and were buried under two tons of sleet and snow - instantly freezing them alive. But thanks to global warming, they recently thawed out only to discover, that pop artists of various decades had stolen their music and passed it off as their own. Much to their shock and chagrin, songs including “Girls Just Want to Have Fun” (which was originally about the woman’s Suffragette movement), and “Drop it Like it’s Hot” (which was originally about the invention of the electric iron) had become hits for lesser artists. PROPOSED NORWEST HOSPITAL EXPANSION SUPPORTED BY COUNCIL Hills Shire Councillors have unanimously backed a proposed expansion of Norwest Private Hospital. Considered a state significant development application valued at more than $30 million, the proposal will be decided by the NSW Government. Hills Shire Mayor Dr Michelle Byrne said that Councillors were happy to support a proposal that would bring more medical facilities to the Sydney Hills. “Norwest Private Hospital is a valuable community asset and this proposed expansion would allow the hospital to care for more residents in need of care,” Mayor Byrne said. “It would require a significant investment of more than $30 million and that shows that there is a huge demand for medical services in the area.” The proposed expansion would include the construction of a new three level west wing above the existing ground level car park, providing an additional 51 beds. “This development would bring more jobs to Norwest Business Park and further boost the growing medical and health services sector.” “This development is a positive sign for Norwest Business Park, the health of our community and the health of our local economy.”

SPORTING COMPLEX PLANNED FOR ARNOLD AVENUE KELLYVILLE A sporting complex complete with a multi-purpose field, cricket oval, change rooms, kiosk, toilets, barbecues and a picnic area is being planned for the Balmoral Land Release Area in Kellyville. With the working title of Arnold Avenue Reserve, Kellyville – the sports complex will help cater for the additional residents that will populate the new land release area over the next years. Mayor Byrne said that as communities arise throughout the Sydney Hills, it would be important to keep open space and sporting facilities in mind. “There’s a direct link between open space and health. We know that physically it’s great for people to go out and participate in sports. We also know that mentally, people are happier when they’ve got plenty of open space around them,” Mayor Byrne said. “A new community will arise in the Balmoral Land Release area and we hope that they’re an active community, that’s why we want to provide some wonderful pubic recreational land for them.” The Reserve may also be home to a satellite depot for Council teams. “Last year Council moved to a place management model for our outdoor staff, meaning there are specific staff allocated to each ward, rather than having them all based at one centralised depot. This reserve

may become the home for one of our teams,” Mayor Byrne said. Mayor Byrne acknowledged that while there are never enough grounds, Council would do all it could to help sporting clubs grow throughout the Sydney Hills. “I want to see as many people as possible being given the opportunity to participate in sport. We will do everything we can to help local clubs field as many teams as possible to help us become a more fit, healthy and active Shire.”

REPLACEMENT OF PITT TOWN RD BRIDGES RUNNING ON SCHEDULE The replacement of two old timber bridges on Pitt Town Rd is running on schedule and beginning to take shape. Concrete girders have been installed at the Cataract Creek Bridge (pictured) and are expected to be installed at the Cattai Creek Bridge over the coming week. The new bridges will be higher and less prone to flooding than the old timber bridges. The road is expected to be re-opened by the end of March as planned, provided the weather is favourable. Motorists driving light vehicles can use a detour along Maguires Rd and McClymonts Rd, however this detour is not suitable for heavy vehicles. Truck drivers should consider alternate routes. Residents are thanked for their patience throughout the construction period.

clean up australia day 2014 Put yourself in the picture for Clean Up Australia Day on 2 March 2014.

T

wenty five years ago in 1989, Ian Kiernan AO, after sailing solo around the world and seeing the pollution and rubbish in what should have been pristine oceans, had a simple idea to make a difference in his own backyard - Sydney Harbour. The event received enormous public response with more than 40,000 Sydneysiders donating their time and energy to clean up the harbour. Rusted car bodies, plastics of all kinds, glass bottles and cigarette butts were removed by the tonne. The idea of a Clean Up Day ignited an enthusiasm and desire among the community to get involved and make a difference to their local environment themselves. The next year Clean Up Australia Day was born. Ian and his committee believed that if a capital city could be mobilised into action, then so could the whole nation. Almost 300,000 volunteers turned out on the first Clean Up Australia Day in 1990 and that involvement has steadily increased ever since with millions of Australians volunteering over the 24 years and removing over 288,650 tonnes of rubbish. Since then Clean Up Australia has evolved into an organisation that works with the community, government and business to provide practical solutions to help us all live more sustainably every day of the year.

simmering soups HEARTY MINESTRONE SOUP INGREDIENTS 6 cups of chicken stock 1 large onion, finely chopped 1 stick celery sliced 2 medium carrots finely sliced 1 leek washed and sliced 800 gram can tomatoes (no added salt) chopped. 2 tablespoons tomato paste (no added salt) 1 teaspoon dried basil 4 bay leaves 100 grams small pasta shells 440 gram can red kidney beans 4 cups vegetables (shredded cabbage, peas, spinach, sliced broccoli or cauliflower) 100 grams mushrooms, sliced 2 tablespoons torn basil leaves 2 tablespoons finely grated Parmesan cheese

METHOD In a large saucepan place stock, onion, celery, carrot, leek, tomatoes, tomato paste, basil and bay leaves. Bring to boil, add pasta and simmer for 5 minutes. Remove bay leaves. Add undrained beans, vegetables and mushrooms and simmer for a further 5 minutes. Ladle into bowls and sprinkle with basil and cheese. Serves 6.

BAKED FRENCH ONION SOUP INGREDIENTS 9 cups of beef stock 6 large white onions, thinly sliced 3-4 cloves garlic, finely minced 3 to 4 tablespoons olive oil ¼ teaspoon garlic powder ¼ teaspoon onion powder ½ teaspoon ground black pepper

8 slices Italian bread or French stick 1 cup shredded Parmesan cheese 8 slices gruyere or provolone cheese METHOD Preheat oven to 160°C. Bake bread slices until lightly golden and crisp. Set aside. Sauté sliced onions in oil over medium heat until translucent. Add minced garlic to onions, making sure garlic does not brown. Stir in beef stock and seasoning. Bring to boil, reduce heat and simmer for 30-40 minutes. Adjust seasoning to taste. Ladle the soup into oven-proof serving bowls. Cover soup with a slice of bread. Top with Gruyère or provolone and sprinkle with Parmesan. Place serving bowls under grill for 6-7 minutes on high until cheese is bubbly and brown. Serve with additional grated Parmesan cheese. Serves 8.


CREAMY PUMPKIN SOUP INGREDIENTS 1 litre of chicken stock ½ cup light sour cream 1 brown onion, chopped 750 grams pumpkin, peeled & chopped 500 grams parsnips, peeled & chopped 1 tablespoon parsley, chopped 1 teaspoon ground cumin 2 tablespoons olive oil 1 teaspoon crushed garlic Salt & pepper, to season

METHOD Heat oil in large saucepan over medium heat. Cook onion, garlic and cumin for 2 minutes. Add pumpkin and parsnips and cook, stirring for 3 minutes. Reduce heat to low and stir in stock. Cover and simmer for 30 minutes or until vegetables are very soft. Set aside for 5 minutes. Blend soup in batches until smooth. Return to the pan and stir over medium heat until almost boiling. Season with salt and pepper. Place soup in large bowls, top with sour cream and parsley and serve.

SLOW COOKER PAELLA SHRIMP, CHICKEN AND SAUSAGE DISH INGREDIENTS 500 gram boneless, skinless chicken, cut into strips 250 grams spicy Italian sausage, cut into pieces 250 grams medium shrimp, shelled and de-veined 1 large onion, cut into thick slices 1 can chicken stock 1 can un-drained tomatoes 1-2 garlic cloves, mashed and minced Salt and pepper to taste Saffron threads, for colour 1 teaspoon dried oregano 1 bay leaf 2 cups long grain rice 1 package frozen tiny peas, thawed 1 tablespoon capers METHOD Brown the sausage and chicken pieces, with the onion slices, in a little olive oil 34

in a non stick skillet and transfer to slow cooker. Pour in the broth and tomatoes and add spices. Stir in the rice and saffron threads. Cover with lid and cook on a high setting for 2-4 hours, or until meats are done and rice is fluffy. Add the shrimp and the peas; cover with lid and continue to cook until shrimp are opaque and done, approximately another hour. Sprinkle with capers, right out of the jar, just before serving. Serves 8.

TOMATO & AVOCADO BRUSCHETTA INGREDIENTS 8 thick slices Italian-style crusty bread 1 garlic clove, peeled 2 ripe tomatoes, chopped 1 small red onion, finely chopped 1 ripe avocado, peeled and chopped ¼ cup chopped fresh coriander 1½ tablespoons red wine vinegar Salt and ground black pepper, to taste METHOD www.homesguide.com.au

Preheat grill on medium. Place the bread on a baking tray and cook under preheated grill for 2-3 minutes each side or until golden. Rub both sides of the toasted bread with the garlic clove. Place the tomatoes, onion, avocado, coriander and vinegar in a medium bowl, and toss gently to combine. Season with salt and pepper. Spoon the tomato and avocado mixture over the toasted bread and serve immediately. Serves 4.

2 tablespoons freshly chopped thyme 1 tablespoon butter 80m olive oil METHOD Place each chicken breast between a double layer of plastic wrap and flatten slightly with the side of a meat mallet or a rolling pin. Cut each breast into 3 strips. Place flour in a shallow bowl and season with 1 teaspoon salt and pepper to taste. In a second bowl, lightly beat

milk and eggs together. Mix breadcrumbs, parmesan and herbs in a third bowl with salt and pepper to taste. Dip fillets in flour to coat, then in the egg mix and lastly in the breadcrumbs. Heat butter and olive oil in a large, non-stick frypan over medium heat. Place schnitzels in the pan (don’t overcrowd, cook in batches if necessary) and cook for 3-4 minutes on one side until golden brown. Turn and

alk about brain food: Eating a vitamin C-packed breakfast could lower your risk of one of the most deadly types of strokes, finds a new French study. The study compared 65 people who had an intra cerebral hemorrhage – a type of stroke where a blood vessel ruptures in the brain – to 65 healthy adults. In general, people who suffered a hemorrhage had lower blood levels of vitamin C compared to the control group, whose C status was normal. The researchers don’t say that lack of vitamin C can cause a stroke – it’s an association. But here’s why getting more C may help: It’s a powerful antioxidant that helps prevent the buildup of plaque in arteries, too little C is linked with high blood pressure – a risk factor for a brain hemorrhage – and C builds collagen that helps support blood vessels, says study coauthor Stéphane Vannier, M.D. Since there isn’t convincing evidence that vitamin C supplements lower disease risk, get C from foods, says Dr. Vannier. People with the highest dietary vitamin C intake slashed their stroke risk by 19 percent compared to those who

got the lowest amounts, one 2013 metaanalysis from China found. The recommended amount of C is 90 milligrams (mg) per day – about the amount of one cup of sliced strawberries (98 mg) or 1.5 cups of chopped raw kale (120 mg). However, there’s evidence that you might want to eat more C-rich foods. what to eat post-workout Everyone knows that athletes must plan and time their meals and snacks very carefully to reach their performance goals. But what about the rest of us? You try to squeeze in 30-60 minutes of exercise most days of the week. Do you have to be careful about what you eat before and after your workouts, too?

I

f you’re eating a healthy diet and getting enough calories to support your activity level, you can probably rely on your own appetite, energy levels, and experience to tell you whether you need to eat anything before or after exercise and what it should be. The basic rule here is: Find out what works best for you, and do that. There are some advantages to knowing how your body works and what it needs to perform at its best. The bottom line for healthy weight loss and fitness sounds simple: You have to eat fewer calories than you use up — but not fewer than your body needs to function at its best. The size, timing, and content of your pre and post-exercise meals and snacks can play an important role in your energy levels during your workout, how well your body recovers and rebuilds after your workout, and whether the calories you eat will be used as fuel or stored as fat. Here’s what you need to eat and drink to get the results you want!

Because heavy sweating also causes loss of minerals and electrolytes, consider using a sports drink with electrolytes if you need to replace more than 2-3 cups of fluid.

Most moderate exercisers will lose about one quart (4 cups) of fluid per hour of exercise, so try to drink about 16-20 ounces of water shortly after your workout to aid the recovery process. If you sweat a lot or the weather is hot and humid, consider weighing yourself before and after exercise, and drinking a litre of water if you have lost weight during the workout. 40

As long as you’re staying within your overall range for the day, you don’t need to be obsessive about matching the following calorie and nutrient ratios perfectly. Just be careful not to fall into the very common trap of thinking that it’s OK to eat anything and everything in sight because you just worked out. than you really need, or choose foods that won’t really help your body. Eating too much of the wrong thing can do the opposite of what you want and cause your body to store that food as fat instead of using your post-workout food to refuel and repair your muscles.

So what does the ideal meal or snack look like? Calories. Ideally, try to eat enough calories to equal 50% of the calories you burned during your workout. So if you burn about 600 calories during your workout, try to eat 300 calories afterward. Don’t worry about undoing the calorieburning benefits of your workout–that’s not how weight loss works. As long as you’re eating within your recommended calorie range (whether for weight loss or


maintenance), you’ll be on your way to reaching your goals. Carbohydrates Roughly 60% of the calories you eat at this time should come from carbohydrates. Contrary to popular belief, your body needs more carbohydrates than protein after a workout, to replace the muscle fuel (glycogen) you used up and to prepare for your next exercise session. Moderate exercisers need about 30-40 grams of carbohydrates after an hour of exercise, but high-intensity exercisers need more – around 50-60 grams for each hour they exercised. If you have some favourite high-carb foods that are lacking in the whole grains and fibre that are often recommended as part of a healthy diet, this is a good time to have them! Your body can digest refined carbohydrates faster during your “refuelling window,” but if you’re a whole foods foodie, don’t force yourself to eat processed foods.

These are displayed alongside a large-scale sculpture by Ricky Swallow titled Killing time 2003-04. A changing selection of works on paper focuses initially on watercolour, including works by Elisabeth Cummings, Kevin Lincoln, Brian Dunlop, Peter Godwin and John Bokor. In late October these will be refreshed by prints and drawings by Peter Booth, John Brack, Cressida Campbell and others.

ilmmakers across Australia and around the world have just days to finalise their submissions for the 61st annual Sydney Film Festival, which is set to offer up the best in world cinema from Wednesday June 4 until Sunday June 15, 2014. Entries across all submission categories will close at Close Of Business on Thursday February 27, 2014, and will need to be submitted through FilmFestivalLife. Festival Director Nashen Moodley said, “We are thrilled with the number of submissions that have come in so far and are looking forward to selecting the best of the best entries to screen at the 61st edition of the Festival.” “Entries have come from far and wide, with strong submission numbers being seen across all categories including features, short films and documentaries. We encourage all interested filmmakers to wrap-up their projects over the coming week and submit their films for consideration.” Last year, out of the total entries submitted, 192 films were invited to the Festival, screening to more than 140,000 attendees over 12 jam-packed days and nights. A highlight of the 2014 program will be the Australian short film competition which, in its 45th year, is the oldest short film competition in Australia. Since 1970, the competition has served as a unique spring board for acclaimed Australian film talent, launching the careers of multiple international awardwinners including Chris Noonan (Babe), Don McAlphine (Moulin Rouge), Jack Thompson (Sunday Too Far Away) and Phil Noyce (Rabbit-Proof Fence), among others. Entries are open to features, documentaries and short films (under 40 minutes) in all categories of the Festival program, including:
