ydney Film Festival is in it’s 61st year and they are featuring over 183 titles from 47 countries. The festival will present documentaries, short films, retrospectives, restorations, animation and much more. Head to page 10 for all the details. This year I’ve marked my diary to check out the big screen at Martin Place Amphitheatre, that is running for the entire festival, from 4th to the 15th of June. For all those sweet tooth readers, this week we have 8 great, easy recipes for any dessert lover(p22). how to build a raised vegie garden Growing your own vegetables will save you money and is great for your health. Setting up your own raised vegetable garden is easy and a fun project to do with the kids. It’s also a great way to teach them about nature. Size It doesn’t matter if you have a large garden, courtyard or balcony, you can create a raised vegetable garden to suit. Just custom-build a square or rectangular garden bed frame by fixing four pieces of treated pine together. There are also easy to assemble raised garden bed kits that come in a range of sizes and shapes including square, rectangular, triangular, L-shaped and hexagonal. You can even elevate smaller raised gardens by placing them on a stand or even just some bricks so that you don’t have to bend over too far when you’re planting or watering. Site When choosing where to put your vegetable garden, first consider how much sun it’ll get. Vegetables grow best with at least six hours of sun a day. It’s also important to have easy access to water. Put your raised garden bed somewhere you walk past or look at
every day. That way you’ll see how it’s growing and whether it needs watering, pruning, harvesting or fertilising. Soil Good quality soil gets the best results. Organically rich potting mix with added compost keeps the soil healthy and supplies the nutrients your plants need. Loose, fertile soil drains well and warms up earlier in spring. Plus, a layer of mulch helps reduce water loss from the soil and adds nutrients. Selection Beans, lettuce, peas and tomatoes are easy to grow but choose what you like to eat and what you use a lot of, like herbs. You should check out the Bunnings online Garden Calendar to make sure what you grow is in season. And keep the kids interested by growing things they can pick and eat every day like strawberries or cherry tomatoes. You’ll find a huge range of vegetable
seedlings, herbs and seeds at your nearest Bunnings Warehouse. Grow Up How much you can grow at once is determined by the size of your raised garden. But you can grow more by growing up. Try growing tomatoes, beans and peas on stakes or trellises at the back. Place them at the back of your garden so that they don’t block the sun from smaller plants. water Smart Your vegetable garden’s root system will grow well if you soak the soil deeply, not frequently. You can test it by sticking your finger in the soil. If it’s dry to your second knuckle, then it’s time to water deeply again. Soaker hoses are a great way to deliver water directly to your plants’ roots and can be easily connected to a timer.

Hills Shire Mayor Dr Michelle Byrne said that the proposed Pennant Hills Rd development was totally unaligned with the current and future character of the area. “This development is totally out of character for this part of Carlingford,” Mayor Byrne said. “The developer proposed a five-storey building next door to single-level houses with no setback from the property boundary. It’s totally unacceptable and not the kind of development we would settle for in the Sydney Hills.” Mayor Byrne said that while Council was committed to finding solutions to Sydney’s housing affordability crisis, it would not compromise fundamental development standards. “We need more housing diversity and www.homesguide.com.au
McClymonts increased densities to accommodate for the expected 100,000 additional residents over the next 25 years,” Mayor Byrne said. “But we want to work with developers to achieve the best possible outcomes for current and future residents. mini choc caramel dessert cakes INGREDIENTS 1/2 x 175g bag Caramello Nibbles 200g dark chocolate, chopped 125g butter, chopped 1 cup firmly packed brown sugar 3 eggs 3/4 cup plain flour 1/4 cup cocoa powder 1/4 teaspoon baking powder Choc-caramel ganache 1/2 x 175g bag Caramello Nibbles 100g dark chocolate, chopped 1/4 cup thickened cream

METHOD Preheat oven to 180째C/160째C fan-forced. Line a 12-hole, 1/3-cup capacity muffin pan with paper cases. Reserve 12 Nibbles. Finely chop remaining Nibbles. Place chocolate and butter in a large
heatproof, microwave-safe bowl. Microwave, uncovered, on medium (50%) for 2 to 3 minutes, stirring every minute with a metal spoon, or until melted and smooth. Whisk in sugar. Stand for 2 minutes. Add eggs, 1 at a time, whisking well after each addition. Sift flour, cocoa and baking powder over chocolate mixture. Whisk to combine. Whisk in finely chopped Nibbles. Spoon into paper cases. Top each with 1 reserved Nibble. Bake for 20 to 25 minutes or until a skewer inserted in centre of 1 cake comes out with crumbs clinging. Stand in pan for 5 minutes. Transfer to a wire rack to cool slightly. Make ganache Place Nibbles, chocolate and cream in a heatproof, microwave-safe bowl. Microwave on medium-high (75%) for 1 to 2 minutes, stirring with a metal spoon every 30 seconds or until melted and smooth. Remove cakes from paper cases. Drizzle ganache.

METHOD Make up the jelly according to packet instructions. Set aside to cool slightly. Divide the fruit among 6 small glasses. Pour the jelly evenly over the fruit. Refrigerate for 3-4 hours or until set. Step 2 Sprinkle the biscuits evenly over the jelly. Pour over the custard. Refrigerate for 2-3 hours to allow the biscuits to soften. quick chocolate cake INGREDIENTS 1 1/3 cups plain flour 1 teaspoon bicarbonate of soda 1/3 cup cocoa powder 1 cup caster sugar 1 cup buttermilk 2 eggs 125g butter, melted, cooled 1 teaspoon vanilla essence 125g blueberries Chocolate icing 1 1/3 cups pure icing sugar 1 1/2 tablespoons cocoa powder 20g butter, at room temperature, choppe METHOD Preheat oven to 180°C. Lightly grease a 6cm-deep, 20cm round cake pan. Line base with baking paper. Sift flour, bicarbonate of soda and cocoa
powder into a large bowl. Stir in sugar. Combine buttermilk, eggs, melted butter and vanilla in a jug. Make a well in centre of flour mixture. Pour in buttermilk mixture. Using an electric mixer, beat on low speed until combined. Increase speed to high. Beat for 3 to 4 minutes or until thick and creamy. Pour mixture into prepared pan. Bake for 40 to 45 minutes or until a skewer inserted in the centre comes out clean. Allow to cool in pan for 5 minutes. Turn out onto a wire rack to cool completely. To make chocolate icing sift icing sugar and cocoa powder into a bowl. Add butter and 1 tablespoon of boiling water. Stir until smooth. Spread icing over cake. Top with blueberries. easy truffles Sweet truffles made from coconut, cocoa and chopped walnuts INGREDIENTS 250g pkt plain biscuits (e.g. Milk Coffee) 1/3 cup cocoa powder 1/2 cup walnuts, (optional) chopped 1 cup desiccated coconut 395g can condensed milk
Spread the remaining coconut onto a plate. Roll level tablespoons of the mixture into balls then make slightly egg shaped. Roll in the coconut. Keep in an airtight container in the fridge. Source: www.taste.com.au

METHOD Place cream in a bowl. Whisk until soft peaks form. Stir through custard. Transfer to a 5cm-deep, 10cm x 20cm plastic container. Cover surface with plastic wrap. Freeze for 4 to 5 hours or until almost firm. Cut each passionfruit in half. Spoon pulp into a bowl. Place passionfruit shells, cut side up, in a 12-hole, 1 1/2 tablespooncapacity round-based patty pan. Remove cream mixture from freezer.
Process until smooth. Transfer to a bowl. Stir in 1/4 cup passionfruit pulp. Spoon 1 heaped tablespoon passionfruit mixture into 1 passionfruit shell. Repeat with remaining passionfruit mixture and passionfruit shells. Cover surface with plastic wrap followed by foil. Freeze overnight or until firm. Remove shells from freezer. METHOD Insert 1 peppercorn into each nashi wedge. Place the nashi, water, sugar and honey in a saucepan over mediumhigh heat. Stir until the sugar dissolves. Simmer for 10 minutes or until the nashi softens slightly. Use a slotted spoon to transfer the nashi to serving bowls. Drain, reserving 500ml (2 cups) of poaching liquid. Add reserved liquid to the pan and simmer over medium-high heat for 10 minutes or until reduced by half. Drizzle over the nashi and top with pine nuts.
rainbow ice-cream cake Create this stylish rainbow ice-cream cake for your next party or celebration. INGREDIENTS 2 x 300ml ctns double cream 395g can sweetened condensed milk 6 different food colourings 100g bought butter cake, cut into 1cmthick slices Hundreds and thousands, to decorate METHOD Line the base and sides of an 11 x 20cm (base measurement) loaf pan with baking paper, allowing 2 long sides to overhang. Combine the cream and condensed milk in a large jug. Pour one-sixth of the cream mixture into a small bowl. Use electric beaters to beat until soft peaks form, do not overbeat. Add one of the food colourings,
adding a few drops at a time and stirring until vibrant in colour. Spoon into the prepared pan and smooth the surface. Place in the freezer for 1 hour to chill or until firm. Repeat step 2, in 5 more batches, with the remaining cream mixture and 5 different food colourings to make 5 more layers. While the last layer of ice-cream is still a little soft, cover with the cake, trimming to fit. Freeze overnight. To remove the ice-cream cake, place the pan on a hot cloth for 30 seconds. Use the paper to pull the cake out of the pan. Place, cake-side down, on a platter. Press hundreds and thousands on top of the cake.

apricot and biscotti trifles With luscious layers of yoghurt and apricots, this make-ahead trifle dessert is truly tempting. INGREDIENTS 1 cup apricot jam 150g packet almond biscotti 825g can apricot halves, drained 550g tub vanilla yoghurt 1/2 cup caster sugar 1/4 cup slivered almonds, toasted METHOD Place jam in a small saucepan over low heat. Cook, stirring occasionally, for 3 to 4 minutes or until melted. Place apricots in a heatproof bowl. Add jam. Toss to coat. Arrange half the biscotti in six 1 1/2 cup-capacity serving glasses. Top with half the apricot mixture. Spoon over half
the yoghurt. Repeat layers. Cover. Refrigerate for 4 hours. Meanwhile, line a baking tray with baking paper. Place sugar and 2 tablespoons warm water in a saucepan over low heat. Cook, stirring, for 5 minutes or until sugar has dissolved (don’t boil). Increase heat to medium. Bring to the boil. Cook, without stirring, for 10 to 12 minutes or until deep golden. Remove from heat. Stir in almonds. Carefully pour mixture onto prepared tray. Stand at room temperature for 1 hour or until set. Break into small pieces. Top trifles with praline. Serve. onstantly crabby? Then make more stops to the water cooler. Habitual high-volume H2O consumption led to a better mood and a significant decrease in fatigue and sleepiness, finds new research from France. In the study, 30 people who drank little water each day—less than 1.2 liters— were asked to increase their water intake to more than 2.5 liters for three days. Not only were people getting their thirst quenched, but also participants reported feeling less fatigued, less confused, and more satisfied overall with their mood at the end of the study. Researchers also flipped the script and
had 22 people who regularly drank lots of water decrease their consumption. The reverse happened: Lowering how much
even mild dehydration affects the cognitive performance water they drank worsened participants’ moods, leading to negative effects such as headaches, confusion, and fatigue, says study author Nathalie Pross, Ph.D. So you know dehydration is bad for your body during exercise, but how does it rankle your mood 24/7? While it’s still unclear, previous research from
the University of Connecticut found that even mild dehydration affects the cognitive performance of men. Researchers believe one reason might be that neurons in your noggin detect an electrolyte imbalance or dehydration, and that affects parts of the brain regulating your mood. The Approval Of Others Who cares what other people think? If you are happy with the decisions you have made, then whose business is that but your own? Think of how much you could achieve if you stopped letting other people’s opinions dictate the way

you live your life. Engage in whatever actions you think might better your life. 2. Anger/Resentment Anger will eat at you from the inside. Learn how to make peace with those who have wronged you. While this can be a realistic goal for some, it is not something that can be achieved without hard work and dedication. Stop letting money be your sole motivator; find a career you are passionate about and immerse yourself in it completely. 7. The Idea That Good Fortune Will Arrive At Your Doorstep You need to go out into the world and actively look for fulfilment. You cannot take a backseat in life and expect things to happen for you. Appreciate the life you live, and be grateful for what you have. Value each minute of every day. Live like there’s no tomorrow, and make the most out of any situation. 8. Excuses Make no time for excuses. You want to work out, but you don’t have the time? Wake up early and get your gym on. Excuses are only rationalizations that make you feel better about yourself for not doing something you want/need to be doing. You desire results? Stop bitching, and start doing. 9. Thoughts Of Your Ex This person is your ex for a reason. If you are going to think of him or her at all, try and think only about the lessons the experience taught you. Do not linger on any old feelings, as this will only prevent you from being happy with someone else in the future.
10. Stubbornness I know it’s hard to admit, but sometimes you are just wrong. Other people have just as much capability as you do in providing the correct answer, so stop being stubborn and just embrace it. The less stubborn you act, the more open you are to learning new things. Think of all you could be exposed to if you stopped believing in opinions other than your own. 11. Procrastination Stop thinking you will finally get to whatever task is at hand tomorrow. Live in the present, and get your stuff done when it needs to be done. Maximize your time to the best of your ability. Complete each task you need to as soon as you can. This allows you to feel free from worry and stress by getting things out of the way as soon as possible. You also allow yourself more free time to enjoy the things you love.

You have no idea what is going on in another person’s life, so who are you to pass judgment on the way they act? 15. Jealousy Happiness is not having what you want; it’s wanting what you have. Stop envying others and learn to appreciate what you have. Everyone’s life is unique; you have certain things to offer that others cannot. When we act in a jealous manner, all we do is bring negative feelings into our lives. There is absolutely nothing to gain from behaving this way. 16. Insecurity Happy people tend to have extremely high levels of self-esteem. They accept who they are and work it everyday of their lives. They radiate confidence, flaunt their pride and give off positive vibes. There is no reason to be insecure in life. If there are things you are self-conscious about, go out into the world and seek to change them. Only you have the ability to create the best version of yourself. 17. Depending On Others For Happiness At the end of the day, the only person you can count on 100 percent of the time is yourself. Do not make the unfortunate mistake many people do and put your happiness in the hands of others. A relationship is not going to fulfil the void if you can’t even make yourself happy. You need to achieve happiness on your own before you can find someone else to share it with. This creates a detrimental dependency that will prevent you from becoming self-sufficient. 18. The Past Stop living in the past! There is virtually nothing you can gain if you wallow in mistakes you have previously made. Take past mistakes as lessons learned, and move forward. “CROSSFIT IS GOING TO transform your body. It’s going to transform your life in ways you can’t imagine.” This wasn’t a late-night infomercial. It was the ardent opinion of my former girlfriend. I had mentioned that I was thinking of trying CrossFit, and Becky, to my surprise, told me she was already a year into it, and that it had given her a “new lease on life” and a “whole new family.” On every other subject she sounded like the same levelheaded girl I used to live with. But when she talked about CrossFit, she sounded like a lunatic. Then she directed me to YouTube videos that showed her busting out pullups by the dozen and sporting the strong, sinewy physique of a martial artist. If that was madness, I wanted some. I scheduled a free demo session as soon as I hung up the phone.

THE APPEAL OF CROSSFIT A CONDITIONING program that mixes Olympic weightlifting, powerlifting, calisthenics, gymnastics, sprints, plyometrics, and a few hard-tocategorize exercises like rope climbing— is that the workouts are short, intense, and constantly changing. So they were nothing like the long, monotonous, and unsatisfying workouts I’d been doing for most of my adult life. And CrossFit is everywhere now. I counted 10 affiliates near my apartment in downtown Vancouver. I decided to try CrossFit Westside, which is within walking distance. Like the CrossFit facilities I’d seen in videos, this one didn’t look anything like a traditional gym. No mirrors, no machines to isolate muscles, no stationary bikes, no display cases full of expensive powders and bars. The box, as they call each of their gyms, was mostly open space, with a rubber floor, high ceiling, and equipment—barbells and plates, kettlebells, medicine balls, jump ropes, rowing machines—stacked neatly around the perimeter. The walls were bare, save for stenciled quotations attributed to Greg Glassman, CrossFit’s founder and frontman. “No, it doesn’t get any easier,” read one. “You wouldn’t want it to either.”
My initial assessment included a timed run through a typical CrossFit sequence during which I rowed, jumped, and did pushups and body-weight squats. The streams of sweat pouring off me left no doubt that I hadn’t been bringing my A game to my self-designed workouts. The assessment was followed by a series of “elements” classes, during which my fellow rookies and I learned the basic exercises. Then it was time to try the real thing. The highlight of each class was the workout of the day, or WOD. (A lot of these have been given women’s names—anybody up for a Cindy? How about a Fran?) My first WOD consisted of 12 “chest to deck” pushups, 9 deadlifts with 102 kilograms, and 15 jumps onto a 24-inch box. That was one round; the challenge was to complete as many rounds as possible in 15 minutes. The clock started, house music blared, barbells clanked, and my fellow CrossFitters grunted, groaned, and screamed encouragement at one another. Sweat flecked the gym floor. “Back to pushups! Chest to deck, let’s go!” screamed our trainer, Jenika Gordon, who also owned the gym. “Five minutes gone, so you’re a third of the way through!” I was oxygen-starved and confused

after three rounds, and I still had 10 minutes to go. And I wasn’t the only one suffering. Pushups around the room became increasingly bendy, jumps turned wobbly, deadlifts turned ugly. And even though some CrossFit crazies think vomiting during a workout is a badge of honor, I hoped I wouldn’t erupt my first time out. In my quarter-hour initiation, I’d made it through the three-exercise circuit—a “triplet” in CF-speak—just shy of six times. We called out our scores and Gordon posted them on a chalkboard. I was near the bottom of the class of a dozen men and women, some of whom outweighed me by at least 23 kilograms. One of the biggest surprises in this and subsequent classes was the range of body shapes, which didn’t seem in any way predictive of who would end up with the highest score. On any given day the doughy endomorph might outpace the cantaloupe-butt Amazon or the wiry guy with the anatomy-chart muscles. We limped off as another group stepped up. “How was the WOD?” someone asked. “Fifteen minutes of sheer hell,” I wheezed. “Awesome!” he said, without sarcasm. - Grant Stoddard
