getting your home ready for winter As it gets cooler, it’s a good idea to get your home ready for winter. It doesn’t take much to keep your home warm and dry, and you’ll save on your energy bills. Draft proofing Fixing draughts doesn’t cost much and is easy to do yourself. Here’s what to do: • Check all the seals on skylights, pipes and ductwork • Look for gaps between floorboards • Check your doors and flooring for draughts by holding a lit candle near the edges • Check your windows. If they rattle or you can see daylight around the edges, you’ve got air leaks • Seal off unused fireplaces • Check for cracks or holes in your home foundations You can fix most gaps and cracks with a caulking gun, available at your nearest Bunnings Warehouse. Adhesive weather strips are also great for sealing. You can also attach draught sweeps to the bottom of doors or use draught excluder door seals.

insulation Insulation can help cut heat loss by up to 60%. There are lots of different types, and the higher the R rating, the more energy efficient.

outDoors Winter is hard on your home so it’s worth spending a bit of time checking the outside to make sure little problems don’t become big ones.

Here’s some tips to get the most from your insulation: • Don’t squash or flatten insulation when installing it • The corners of ceilings, walls and floors must be properly covered - that’s where most heat leaks through. • Don’t leave any gaps - even if you leave only 5% uncovered and up to 50% of the benefit goes. When installing insulation, remember your safety comes first: • Get your wiring inspected by a licensed electrician to make sure it can be covered with insulation • Don’t install insulation within 90mm of hot flues or exhaust fans • Leave a 200mm gap around recessed light fittings and install downlight covers

Some things to look out for: • Check your roof - look for cracked and broken tiles and rusted or loose roof sheeting. • Clear gutters and downpipes of leaves and rubbish so they flow freely - install gutter mesh to reduce the problem in future. • Cut back any old, rotten or overhanging tree branches close to your house. • Check your fences are nice and solid • Make sure loose outdoor items like umbrellas, chairs, picnic tables, barbecues etc. are safely secured and not left out in the weather.

how to enjoy your outdoor area in winter Even if the weather is cold, you can still enjoy your outdoor area just as much as your indoors. There are plenty of ways to keep it warm and protected so that you can let the good times roll on all through winter.

Roofing Before you even think about heating, you need to protect yourself from the elements. Covering your outdoor entertaining area with a permanent roof will shelter you from rain and wind. Corrugated zinc steel roofs come in colours to suit any home. But you can also get translucent polycarbonate roofing in a range of colours, including clear, to let in more natural light. You can also install a shade cloth or shade sail, which are easy to put up and relatively inexpensive. outdooR Heating There are a number of ways to heat your outdoor area, from installing a slow combustion wood heater to building

your own fireplace. If those options are too big, there are fire pits and chimeneas that come in a range of sizes and styles to suit, and they can be easily moved to wherever want them. Freestanding gas heaters come in a range of sizes – large enough to warm all of your outdoor area or small enough to put on your table. There’s also a huge selection of electric outdoor heaters to choose from – large and medium sized freestanding ones, while others can be mounted on the wall or ceiling. Heat and eat Cooking outside with a BBQ or pizza oven will warm up your outdoor area, plus your family and friends get to enjoy some of your delicious home cooking.

Keep tHe Heat in Enclosing your outdoor area will keep more of the heat in. Bistro blinds are easy to install, and will keep the wind and rain out of your outdoor area. They come in clear PVC so you can enjoy the view over your backyard or in a range of colours to suit your décor. Candles Candles set the mood, adding atmosphere and warmth to an outdoor area. They come in a range of sizes, colours and scents. There are also candle lanterns, which make an attractive addition to any outdoor area.

n July 1960, at the age of 26, Jane Goodall traveled from England to what is today Tanzania and bravely entered the little-known world of wild chimpanzees. She was equipped with nothing more than a notebook and a pair of binoculars. But with her unyielding patience and characteristic optimism, she won the trust of these initially shy creatures. She managed to open a window into their sometimes strange and often familiar-seeming lives. The public was fascinated and remains so to this day. Today, Jane’s work revolves around inspiring action on behalf of endangered species, particularly chimpanzees, and encouraging people to do their part to make the world a better place for people, animals, and the environment we all share. The Jane Goodall Institute works to protect the famous chimpanzees of Gombe National Park in Tanzania, but recognizes this can’t be accomplished without a comprehensive approach that addresses the needs of local people who are critical to chimpanzee survival. Our communitycentered conservation programs in Africa include sustainable development projects that engage local people as true partners. These programs began around Gombe in 1994, but have since been replicated in other parts of the continent. Likewise, Jane Goodall’s Roots & Shoots, which Jane started with a group of Tanzania students in 1991, is today the Institute’s global environmental and humanitarian youth program for young people from preschool through university with nearly 150,000 members in more than 130 countries. Through our Africa Programs, we support conservation of chimpanzees and other Great Apes in Africa. Our community centred conservation programs include a range of activities spanning from education, water sanitation and health clinics, to park rangers who protect animals from poachers, and chimpanzee sanctuaries which provide a lifelong home for orphaned animals. Put simply, everything we do is underpinned by the ‘APE’ philosophy in which Animals, People and the Environment are considered in all decision making. Jane continues her work today by travelling an average 300 days per year speaking in packed auditoriums and school gymnasiums about the threats facing chimpanzees, other

environmental crises, and her reasons for hope that we will ultimately solve the problems that we have imposed on the earth. Jane continually urges her audiences to recognize their personal power and responsibility to effect positive change through consumer action, lifestyle change and activism. Jane Goodall is on the road more than 300 days per year. At any given time, she could be on any continent. On any given day, she could be speaking to a group of students, meeting with government officials to discuss conservation issues, sitting before television cameras being interviewed, or meeting with donors to raise money for JGI. Often, Jane holds public lectures during which she discusses her years at Gombe, the state of chimpanzees today, JGI’s programs, and each individual’s power to effect positive change. Jane is in great demand and known as an inspirational speaker who often moves her audiences

to tears. Some people say their lives have been changed by Jane’s message and her example. What about Gombe National Park – Jane’s favorite place on Earth? Does she spend much time there today? Jane generally gets back to Gombe at least twice per year, to “recharge her batteries” and see what her now-famous chimpanzees are up to. Jane has a special connection to young people. They respond not only to her passion for and curiosity about animals, but to her courage and hope for a better world. Reaching out to these young people is a high priority for Jane, and conservation education, as well as general education, is a critical part of JGI’s work today. Jane hears firsthand the voices of young people -- from Tanzania to China, North America to the United Kingdom – speaking of the need for change, their hopes, and their determination to make a better world. She carries their message to audiences all over the world. This is Jane’s life today – sometimes exhausting, but always driven by purpose. Jane is determined to use just about every minute she has working to save chimpanzees and to empower people -- young and old -- to do what they can for a better world.

This is a place where young chimpanzees can live together with as much freedom as possible, in the care of experienced and loving keepers. There is also a study underway to determine if the rescued orphans can be reintroduced to the wild. Protect important wild chimpanzee populations and address the root causes of the bushmeat trade by working with local people and governments to protect key areas of forests where wild chimpanzees live.

roots & shoots movement Jane Goodall’s Roots & Shoots is the youthled community action and learning pro-

gram of the Jane Goodall Institute. The program builds on the legacy and vision of Dr. Jane Goodall to place the power and responsibility for creating community-based solutions to big challenges in the hands of the young people. Through the program, young people map their community to identify specific challenges their neighborhoods face. From there, they prioritize the problems, develop a plan for a solution, and take action. In 1991, a group of 12 local teenagers met with Dr. Jane Goodall on her back porch in Dar es Salaam, Tanzania. They were eager to discuss a range of problems they knew about from first-hand experience that caused them deep concern. Dr. Jane was impressed by their compassion, their energy and their desire to develop a solution to problems. It was with these young people that Roots & Shoots was born. Today, the Roots & Shoots network has

blossomed into more than 150,000 members in over 130 countries, all working on local and global service projects.

That’s why Hills Shire Mayor Dr Michelle Byrne and Baulkham Hills State MP David Elliott decided to take a stroll with the students in the lead up to Walk Safely To School Day (Friday May 23). “Walk Safely To School Day is such a fantastic initiative that promotes a fit and healthy lifestyle,” Hills Shire Mayor Dr Michelle Byrne said. “The parents and students at Matthew Pearce set such a fantastic example to so many schools around the Sydney Hills.” Matthew Pearce Public School is part of the Walking Bus Program. The Walking Bus sees parent volunteers walk a group of students along a set route to school every day. “It is a great initiative and I would love to see other schools around the Sydney Hills give it a go,” Mr Elliott said. “For those parents and students who don’t normally walk to school, I 22

paprika chicken and prawn paella Follow this recipe for paella and have dinner on the table in less than an hour. INGREDIENTS 1 tablespoon olive oil 500g chicken thigh fillets, roughly chopped 1 red onion, finely chopped 2 long red chillies, 1 seeded and finely chopped, 1 thinly sliced, to serve 2 cloves garlic, crushed 1 tablespoon sweet paprika 300g (1 1/2 cups) long-grain rice 375ml (1 1/2 cups) chicken stock 12 green prawns, peeled with tails intact, cleaned 120g (1 cup) frozen peas Lemon wedges, to serve

METHOD Heat oil in a paella pan or large frying pan over high heat. Add half the chicken and cook, stirring occasionally,

for 3 minutes or until golden. Transfer to a bowl. Repeat with remaining chicken. Return all chicken to pan with onion, chopped chilli, garlic and paprika. Cook, stirring, for 2 minutes or until onion softens. Add rice and stir to combine. Pour over chicken stock and bring to the boil. Reduce heat to low, cover with foil and cook for 15 minutes or until liquid is absorbed and rice is tender. Sprinkle peas over paella and arrange prawns on top, then season with salt and freshly ground black pepper. Re-cover and cook for 5 minutes or until prawns and peas are just cooked. Remove from heat and set aside for 5 minutes to rest. Serve with chilli slices and lemon wedges.

METHOD Place vinegar, soy sauce, garlic, ginger, chillies, bay leaves, sugar, peppercorns, onion and 500ml (2 cups) water in a large bowl. Stir well to combine. Add chicken and stir to coat. Marinate at www.homesguide.com.au

room temperature for 30 minutes. Transfer chicken mixture to a large, heavy-based saucepan. Bring to the boil over high heat. Reduce heat to medium, cover loosely with foil, then simmer, stirring occasionally, for 25 minutes or until chicken is just cooked. Using tongs, remove chicken wings and transfer to a large bowl. Simmer sauce for a further 10 minutes or until reduced by half and thickened slightly. Return chicken to pan and stir to combine. Cook for a further 5 minutes or until chicken is cooked through. Cool for 5 minutes. Divide chicken adobo among bowls, spoon over sauce, then scatter with extra sliced chillies. Serve with steamed white rice.


coconut & kaffir lime panna cottas Fresh strawberries and kaffir lime leaves add a nice tang to Marion Grasby’s rich and creamy Italian classic dessert. INGREDIENTS 500ml (2 cups) coconut cream 375ml (1 1/2 cups) pouring cream 55g (1/4 cup) white sugar 8 kaffir lime leaves, thinly sliced 3 x 2g leaves gold-strength gelatine 250g strawberries, hulled, sliced Lime syrup 110g (1/2 cup) white sugar 1 lime, zested, juiced METHOD Place the coconut cream, cream, sugar and kaffir lime leaves in a saucepan over low heat. Bring to a gentle simmer and cook for 5 minutes. Remove from the heat and set aside for 30 minutes for the lovely kaffir lime flavour to infuse. Return pan to low heat and bring to a

gentle simmer, then remove from heat. Meanwhile, soak gelatine in a bowl of cold water until softened. Using your hand, squeeze out excess water. Whisk gelatine into coconut cream mixture until dissolved. Strain into a jug and discard lime leaves. Pour into glass tumblers, martini glasses or even plastic cups for a more laid-back affair. If you use about 125ml (1/2 cup) per serve you’ll have enough for six. Refrigerate for at least 4 hours or until set. To make lime syrup, heat sugar and 125ml (1/2 cup) water in a small pan over medium heat, stirring until sugar has dissolved. Remove from heat and stir through lime zest and 2 tablespoons lime juice. Just before serving, toss strawberries in the lime syrup. Top each panna cotta with a spoonful of the strawberries and a drizzle of the lime syrup.

after-dinner mint truffles Serve these fluffy liqueur-laced truffles with coffee or tea after dinner - they’ll satisfy even the most amorous of appetites. INGREDIENTS 480g pkt Double Choc Chip Butter Cake, coarsely chopped 125g bar Nestle Aero Peppermint chocolate, coarsely chopped 2 x 35g bars Nestle Peppermint Crisp, coarsely chopped 2 tablespoons Kahlua liqueur 375g pkt dark chocolate melts Nestle Peppermint Crisp, extra, finely crushed, to decorate METHOD Process the cake in a food processor until fine crumbs form. Place the Aero Peppermint chocolate in a heatproof bowl over a saucepan half-filled with simmering water (make sure the bowl doesn’t touch the water). Stir with a metal spoon until the chocolate melts and is smooth. Add the melted Peppermint

Crisp and Kahlua to the cake crumbs and process until well combined. Line a tray with non-stick baking paper. Roll 2 teaspoonfuls of cake mixture into a ball. Place on the prepared tray. Repeat with remaining cake mixture. Place in the fridge for 30 minutes or until firm. Meanwhile, place the dark chocolate melts in a heatproof bowl over a saucepan half-filled with simmering water (make sure the bowl doesn’t touch the water). Stir with a metal spoon until the chocolate melts and is smooth. Line a tray with non-stick baking paper. Divide the truffles into 3 batches. Remove 1 batch from the fridge. Use a fork or truffle dipper to dip truffles, 1 at a time, into melted chocolate to coat. Gently tap the fork or dipper on the edge of the bowl to allow excess chocolate to drip off. chillies rellenos (stuffed chillies) Pop these spicy chillies in your mouth and feel an explosion of flavour on your tongue. INGREDIENTS 1kg sweet potatoes, unpeeled 3 spring onions, thinly sliced 6 (100g each) 16cm-long banana chillies 75g fresh goat’s cheese 1/4 cup chipotle peppers in adobo sauce, finely chopped Baby coriander leaves, to serve

METHOD Preheat oven to 200°C. Roast sweet potatoes in a roasting pan for 1 hour or until very tender. Cool, halve lengthwise, then scoop flesh from skins into a bowl. Add onions and season with sea salt and freshly ground black pepper. Meanwhile, cook banana chillies on a preheated barbecue or chargrill, turning occasionally, for 12 minutes or until lightly charred all over. Cool slightly, then

peel skins. Cut a slit along the length of each chilli, carefully remove seeds and discard. Place chillies on an oven tray, stuff each with sweet-potato mixture, then crumble over goat’s cheese. Drizzle each chilli with 1/2 teaspoon chipotle peppers in adobo sauce. Bake for 15 minutes or until cheese is golden and chillies are heated through. Serve chillies rellenos warm or at room temperature scattered with baby coriander leaves.

balsamic chicken bake Here’s a super-smart dish that keeps on giving — a delicious meal one night, with leftovers and a recipe for the next night. INGREDIENTS 12 (2kg) chicken thighs (bone in, skin on), trimmed 600g chat potatoes, quartered 2 medium red onions, cut into thin wedges 6 garlic cloves, unpeeled 6 fresh thyme sprigs 1/4 cup balsamic vinegar 2 tablespoons olive oil 2 teaspoons brown sugar 250g cherry tomatoes

METHOD Preheat oven to 220°C/200°C fanforced. Arrange chicken, potato, onion, garlic and thyme in two large roasting dishes. Whisk vinegar, oil and sugar in a jug until sugar has dissolved. Drizzle over chicken mixture. Season www.homesguide.com.au

with salt and pepper. Bake for 40 minutes. Add tomatoes. Bake for 10 minutes or until chicken is cooked through. Serve 8 chicken thighs with half the vegetables. Cover and refrigerate remaining chicken and vegetables.


coconut and lime sorbet This frozen dessert is a refreshing treat. INGREDIENTS 500g (about 2 1/4 cups) caster sugar 1 cinnamon stick 1 piece pared lime rind 2 cups (500ml) coconut milk

METHOD Place sugar in a saucepan with 2 cups (500ml) water, and stir over low heat to dissolve sugar. Add cinnamon and lime rind, simmer for 5 minutes, then stir in coconut milk and remove from heat. Allow to cool completely. Pour mixture into a shallow container and freeze until frozen at the edges. Remove from freezer, beat with electric beaters then return to freezer. Repeat 2 or 3 times. (Alternatively use an ice cream machine following manufacturer’s directions.) Serve in glasses.

chocolate ice-cream truffles Like little chocky kisses, these icy truffles are the perfect accompaniment to a coffee for two. INGREDIENTS 1 x 500ml carton good-quality chocolate ice-cream 50g Plaistowe Rich Dark Cooking Chocolate 20g copha METHOD Line 2 large plates with non-stick baking paper. Place 1 plate in the freezer to chill. Dip a melon baller in a bowl of hot water and use to scoop out 1 ball of ice-cream. Place on the chilled plate. Insert a toothpick into the centre of the icecream ball. Repeat to make 5 more icecream balls. Place in the freezer for 2 hours or until very firm. Place the chocolate and copha in a small microwave-safe bowl. Cook on medium/500watts/50% for 1 minute or

until the chocolate and copha melt. Stir to combine. Set aside for 10 minutes to cool. Dip 1 ice-cream ball into the chocolate mixture and gently shake off excess. Place on the remaining lined plate and return immediately to the freezer. Repeat with the remaining ice-cream balls and chocolate mixture. Place in the freezer for 30 minutes or until very firm.

appiness seems so simple on the surface and yet more often than not it’s the most elusive thing in the universe. A survey done by the Australian Bureau of Statistics, shows that on a level of Life Satisfaction only 12% of people surveyed said they were “Delighted” with life and a further 35% said that they would consider themselves “Mostly Satisfied”. This seems very disappointing considering we live in the “Lucky Country”. Many of us are striving to get happier, within our own skin and within our own lives. Now I know that happiness is made up of a few components such as Environment, Government, and Finances just to name a few. But at the core when we strip all of those things away and we are left just as a singular human being full of light and energy on a cellular level what makes us truly satisfied and happy? A team of Scientists were commissioned to find out if general happiness had a formula – What they found was indeed

it did have a formula, and surprisingly what we think on a day to day level that would make us happy such as a new house, car, jet ski, in fact these items make up a very small component of our happiness. In a basic percentage structure the “Happiness Formula” = 50% is your bodies own set point for happiness, where you are content & comfortable with everything as it is in your life. 10% is conditions of living, shopping, consumer goods, and lifestyle. 40% is voluntary actions and choices you make in life. For example if you choose to be happier then in turn you will seek out ways in your life that will increase your happiness. So what if we are down in the dumps and want to boost our happiness? Really at the core of it, happiness stems directly from gratitude. Most people forget to be grateful for what they have got or for what they have been through to make them who they are today. If

we allow ourselves to really focus on one thing that we are grateful for and we sit in that moment of thinking how grateful we are and feel the feeling that gratitude gives us, that is our personal Happiness. The 5/2 diet: is it good for your body?

A

guy called Jesus once fasted for 40 days and 40 nights, and for centuries before and since, people have used fasting to enhance their spiritual and physical health. Most animals instinctively go off their food when they feel out of sorts, but for most humans the idea of giving up tucker is a hard one to swallow. Everyone’s talking about intermittent fasting, but what effect does it have on your body? What is a fast? A true fast involves abstaining from all food and drink other than water, and it lasts up to several weeks. However, the latest “next big thing” is the intermittent 5:2 fasting diet, in which you restrict your calorie intake to 25 per cent of your RDI (recommended dietary intake) for two days a week, and eat a normal diet for the remaining days. The fasting days can be consecutive, or not, and you choose when and what you eat, as long as you remain within the calorie allowance. The

average Australian adult consumes 2000 calories or 8700kJ a day, so 25 per cent of that would be 500 calories or 2175kJ. the fat equation Many people find the 5:2 diet works a treat because other than feeling peckish and possibly irritable on the fasting days, they don’t need to concern themselves with dieting for the rest of the week. For weight loss the benefit of the 5:2 diet is simply a mathematical equation: Eat less calories than the body requires for its daily metabolic needs, and fat will be burnt to provide the deficit. Happy days. When it doesn’t Work For people with blood sugar levels that oscillate between too high and too low, not eating for several hours will cause blood sugar levels to plummet, creating hypoglycaemic symptoms, which means that fasting days will be fraught with moodiness, headaches, dizziness, poor concentration and nausea. disciplined people may be tempted to gorge on the non-fasting days and eat foods such as cakes, chips and pies that are best avoided in any healthy diet. is it right for you? There’s no single fix-all diet that will suit everyone. Personal preference, lifestyle, home and work routine, and genetic predisposition all play their part in what works best for your body. The 5:2 diet might tick all the right boxes for some people who may find losing and maintaining a healthy weight a breeze (they may also experience other benefits, such as reducing their risk of heart disease, diabetes and some cancers). However, this diet isn’t recommended for pregnant or breastfeeding women, children or teenagers and people with diagnosed diabetes. alcohol and its impact on your fitness Why is the fitness industry as a whole so anti-alcohol? Isn’t there any room for a drink or two at major events? What kind impact does that really have?

The fitness industry’s anti-alcohol stance is due, in large part, to the (lack of) nutritional content contained in booze. Ethanol, the type of alcohol found in drinks, has toxic metabolic byproducts called acetaldehyde and acetate. Both by-products help create that queasy nauseous feeling you get when you’ve put a few too many back. Chronic ingestion of alcohol can also mess with your digestion, making it difficult for your body to absorb nutrients like amino acids and B vitamins, and impairs protein synthesis. One study also suggests that 2-3 beers per day can lower one’s testosterone levels. Alcohol consumption can also mess with a carefully planned-out diet. Many alcoholic drinks are calorically very dense and packed with sugar. If you’re mixing your alcohol with things like energy drinks or juices from concentrate, or even having a few glasses of wine, you are giving yourself a sugary rush with each sip. Move your Body Exercise not only helps to keep our arteries healthy but also directly affects the brain tissue. As we age our brain can actually shrink, yet we don’t see this in people who regularly exercise. Why? Exercise increases the number of connections in the brain, increasing its capacity to store information. Also, exercise triggers the release of BDNF (brain-derived

neurotrophic factor), which is like Miracle Grow for the brain. It keeps the neurons healthy and stops them dying. Get Fishy Regular intake of Omega-3 fish oils (through eating fish or taking a supplement) can reduce our chance of Alzheimer’s by 60 per cent. ife unfolds in the present. But too often, we can let the present slip away, allowing worries and daily stresses to dominate our minds as well as our precious time. But learning to embrace the present is as simple as observing your dog or cat. “While a dog loves to chew bones, the human mind loves problems,” says Eckhart Tolle, author of Guardians Of Being (Hay House). “Everything animal has important lessons to teach us if we would only stop, look and listen.” Here are five key lessons we can all learn from our pets.

Lose the mentaL noise Sure, our busy and demanding routines are a far cry from a dog’s daily schedule – eat, walk, play, nap – but a lot of what we do in between these essential activities is just mental noise.

surrender to the now Accept the moment for what it is and simply go with the flow. “Watching your dog or cat can take you out of your mind and bring you into the present, which is where the animal lives all the time,” Tolle says. Your dog doesn’t have problems related to the future or the past; animals just live in the moment.

Learn to enjoy stiLLness “We have forgotten what animals know – how to be still, to be ourselves, to be in the here and now,” Tolle says. Just like regular meditation, when we are in a state of active, open and intentional attention to the present, we are less stressed and we decrease depressive and anxious symptoms.

Find moments to just be “What so many people find enchanting about their pets is their being. It’s not covered up by the mind, as it is in most humans,” Tolle says. “Be alert as you watch a dog at play or at rest. Let it teach you to feel at home in the now, to celebrate life by being completely present.”
