fun things to do ILLAWARRA LIGHT RAILWAY MUSEUM SOCIETY Saturday 12th March 2016 Come and buy your afternoon tea and ride the train behind steam locomotive “Burra”. Steam train rides from 1:00pm to 5:00pm. Steam locomotives operate on the monthly running day but may be replaced by a diesel locomotive due to a total fire an or other operational requirements such as volunteer availability. The museum is open on Tuesdays, Thursdays and Saturdays between 9:30am and 3:30pm for visitors. These are our working days and public inspections are welcome, our standard fees and conditions apply for guided locomotive shed tours. The museum will be closed over Easter (25th, 26th, 27th, 28th of March).
The museum site is available for hire for “Railway theme” or experience for private functions such as Christmas Parties, Weddings or Social Club functions. Schools’ educational visits are a specialty and are very welcome. Other group visits such as seniors and motoring clubs can also be arranged. Site hire can be organised with or without the railway in operation. Depending on your budget, you may choose from the miniature railway, diesel or steam train or go for all the options! KIAMA COAST WALK The best way to experience the natural beauty around Kiama is on foot. Beginning at Minnamurra, this spectacular 22 km weaves past headlands, rivers and beaches to Blowhole Point, before pressing on towards the beautiful bays and beaches around Little Blowhole and the rolling escarpments of Gerringong. The Kiama Coast Walk is broken into three sections. he first is from Minnamurra to Blowhole Point and takes about three hours. Start at the mouth of the Minnamurra River before heading south and you’ll pass Jones Beach, Cathedral Rocks, Bombo Beach and Kiama Harbour. Continue until you get to the Kiama Lighthouse and Blowhole Point. Visit the Boneyard, Bombo Quarry and Spring Creek Wetlands on your journey. As well as walking, you’ll be able to swim or snorkel at various spots along the way. The second section from Blowhole Point to Kiama Heights is a 90 minute

walk through waterfront reserves - Storm Bay, Surf Beach, Kendalls Beach, Easts Beach and Loves Bay - connected by headlands. Take a break at the Little Blowhole midway along this route. The third section takes you from Kiama Heights past Werri Lagoon and Werri Beach and on to nearby Gerringong. This six kilometre stretch along cliff tops with ocean views takes about two hours to complete. Markers featured every kilometre explain the fascinating history and geology of the area. Upon reaching Werri Lagoon and Werri Beach, continue on a little further. Gerringong is another 2.5 km along Werri Beach and up the southern headland to the whale-watching platform, found at the end of the cemetery. This is a popular spot during whale season, between May and November. Continue a further 1.5 km down Belinda Street to the railway station to complete the loop, or continue on to Gerroa, which is another 45 minutes walk from Gerringong, and

HELENSBURGH MARKETS Sunday 13 March 2016 Helensburgh Markets is held on the second Sunday of each month, outside the Centennial Hotel at 112 Parkes Street, Helensburgh. Hours of operation run from 10:00am to 3:00pm. The markets have quickly become a popular attraction for both locals and tourists. They also provide the opportunity for local designers and businesses to come together to display their wares. The markets can hold up to thirty stalls, and new stallholders are always welcome. Goods being sold at the various stalls typically include: • Clothing and fashion items • Jewellery • Art and handmade items • Food and fresh produce • lants and cut o ers • Home wares • Crafts • Designer candles • Designer handbags and accessories There is usually also live music being performed, as well as entertainment provided for children. how to plant fruit trees Fruit trees not only look great, they can be a productive part of your garden. We’ll take you through the steps to plant a fruit tree and have it thriving in no time. Remember to select a site that gets plenty of sun, is well drained and has good quality soil for best results. STEP 1 STEP 1. DIG YOUR HOLE Citrus trees grow best in areas with plenty of sunlight. When digging your hole for the tree, make sure it is twice the size of the root base. It’s also good idea to give your tree some room to grow, so leave a clear area around the base. STEP 2. PLANT THE TREE Remove the tree from the pot by giving it a little tap on the edge. Tease out the roots of the tree and then place the tree in the middle of the hole. ackfill the hole ith your existing soil so it just covers the potting mix. Then compact your soil so there aren’t any air pockets within the hole. STEP 3. FERTILISE AND MULCH Following the instructions on the pack, add seaweed fertiliser to your watering can and drizzle on the plant. This will help the tree as it moves from the pot to the garden bed. Then spread 5-10cm of mulch around the base of the tree. This will help it retain water and help the tree retain heat in winter.

persian chicken and roasted plum salad Mix savoury with sweet in this tasty chicken and roast plum salad. INGREDIENTS • 1 cup (200g) pearl barley • 800g butternut pumpkin, seeded, peeled, cut into 2cm pieces • 2 tablespoons olive oil • 2 teaspoons cumin seeds • 4 just-ripe plums, quartered • 2 teaspoons sweet paprika • 1/2 teaspoon ground cinnamon • ta lespoon mint, finely chopped • 2 large (about 200g each) Coles RSPCA Approved Chicken Breast Fillets • 1/4 cup (35g) pistachios, toasted, coarsely chopped • 100g marinated fetta, coarsely crumbled • 1/2 cup mint leaves • cup at leaf parsley leaves • 1 lemon, zested, juiced METHOD Step 1 Preheat oven to 180C. Cook the barley in a large saucepan of boiling water for 20 mins or until tender. Refresh under cold water. Drain well. Step 2 Meanwhile, line a baking tray with baking paper. Scatter the pumpkin over the lined
tray. Drizzle with 1 tsp of the oil. Sprinkle with 1/2 teaspoon of cumin seeds and season. Roast for 15 mins. Add the plums to the baking tray and roast for a further 10 mins or until the pumpkin is tender and the plums are just softened. Step 3 While the pumpkin is roasting, combine the paprika, cinnamon, chopped mint, 1 tablespoon of remaining oil and the remaining cumin in a large bowl. Add the chicken and toss to evenly coat in the spice mixture. Season. Step 4 Place the chicken on a baking tray lined with baking paper. Bake with the pumpkin for the last 12-15 mins of cooking time or until cooked through. Cover the chicken with foil and set aside for 5 mins to rest. Coarsely shred the chicken. Step 5 Place the barley in a large bowl. Add the pumpkin, plum, chicken, pistachios, fetta, mint leaves and parsley. Drizzle with lemon juice and remaining oil and gently toss to combine. Divide the salad mixture among serving plates. Sprinkle with lemon zest to serve. Source: www.taste.com.au
orange chicken Tasty orange chicken is perfect with a pilaff scattered with dried fruit and nuts. INGREDIENTS • 4 oranges, halved • 2 x 1.5kg chickens, cleaned • olive oil cooking spray • 1/4 cup lemon juice • 1/4cup olive oil • 2 tablespoons medium dry sherry • 1 tablespoon caster sugar • cup at leaf parsley leaves, to serve

METHOD Step 1 Preheat oven to 180°C. Juice oranges. Set 3/4 cup of juice aside. Place orange skins into chicken cavities. Spray chickens with oil. Season with salt and pepper. Place onto a rack in a large roasting pan. Roast for 1 hour 10 minutes or until juices run clear when chicken

plum pudding ice-cream terrine Impress with this easy to serve version of a classic Christmas pudding. INGREDIENTS • 500g Christmas pudding • 2 litres good-quality vanilla ice cream, softened • 250g pitted prunes • 1 cup cold tea • 1/2 cup caster sugar • 1 cup dry Marsala (see note) • Finely grated zest of 1 lemon, plus 2 tablespoons lemon juice METHOD Step 1 Line a 1.75-litre loaf pan with plastic wrap, leaving enough overhanging to cover the top. Roughly chop the pudding and fold into the ice cream. Spoon ice cream mixture into the pan and press down well. Step 2 Cover with overhanging plastic wrap and freeze for 4 hours or overnight.
Step 3 Meanwhile, soak the prunes in the tea for 4 hours. Step 4 Combine the sugar, Marsala, lemon zest and juice in a saucepan over medium-low heat, stirring to dissolve sugar. Step 5 Add the prunes and simmer for 5 minutes, then remove the prunes with a slotted spoon and set aside. Step 6 Simmer the liquid for a further 5-6 minutes until slightly reduced and syrupy. Step 7 Return the prunes to the pan, allow syrup to cool, then chill until you are ready to serve the ice cream. raspberry & pistachio ice-cream pudding
This has all the things you love about pudding, fruit, nuts and a classic dome shape, plus what you want in a summer dessert -- ice-cream! INGREDIENTS • 2.25L Streets Blue Ribbon Vanilla IceCream, softened • 2 x 125g punnets fresh raspberries • 80g unsalted pistachio kernels, coarsely chopped • 1 teaspoon rosewater essence (see note) • Honey, to drizzle • Fresh raspberries, extra, to serve • Unsalted pistachio kernels, extra, finely chopped, to serve
METHOD Step 1 Line a 2.5L (10-cup) capacity pudding basin with a double layer of plastic wrap, allowing the sides to overhang. Step 2 Place the ice-cream in a large bowl. Gently fold in the raspberries, pistachio and rosewater.Transfer to the prepared basin. Cover the surface with overhanging plastic wrap. Place in the freezer for 8 hours or overnight until firm. Step 3 Place a serving platter in the freezer to chill slightly. Turn the pudding onto the platter. Remove the plastic wrap and place in the freezer for 20 minutes or until firm.
